Abstract

In type 1 diabetes, when the body does not produce enough insulin or none at all. This causes blood glucose levels to remain high while the body's cells are starved for energy. As a result, the body turns to alternative energy sources, namely fat and muscle, leading to weight loss. Sargassum sp contains steroid, alkaloid, phenol, flavonoid, saponin and tannin compounds that can be antioxidant and antidiabetic. This study aims to determine changes in body weight of mice (Mus musculus) type 1 diabetes mellitus models treated with Sargassum sp. This study is an experimental study. Mice were divided into 6 groups, namely KN, K-, K+, P1, P2 and P3. Body weight was weighed on day 0, day 14 (post STZ induction) and day 28 (post drug administration). The data were analysed by ANOVA using SPSS program. The results showed that Sargassum sp extract can increase the body weight of DM mice.

Abstract

In Indonesia, foodborne disease is still a food safety issue. Bubur sumsum or jenang sumsum is a porridge made from rice flour processed with coconut milk and brown sugar. Testing a food to determine whether it is suitable for consumption, one of which uses the approach of the number of microbes contained in food products. One of them is the Total Plate Number (ALT) method. The Total Plate Numbers (ALT) method is widely used for calculating the number of microbes in products that show the quality of contamination and hygiene of a product during the production process. This study aims to determine the value of microbial contamination numbers in marrow porridge sold at Pasar Pasalaran Cirebon, determine the marrow porridge that does not meet the requirements of BPOM RI regulation No. 13 of 2019 regarding the maximum limit of microbial contamination of food, and determine the percentage of marrow porridge that does not meet the requirements of BPOM RI regulation No. 13 of 2019 regarding the maximum limit of microbial contamination of processed food sold at Pasar Pasalaran Cirebon. This research method is descriptive quantitative while the examination is by the total plate number of bacteria method. Sampling was done by accidental sampling method. The samples of this study were 5 samples of marrow porridge sold in Cirebon Pasalaran Market with the weight of each sample of 10 grams. Based on the results of the study, the value of Total Bacterial Plate Numbers in marrow porridge sold in Pasar Pasalaran Cirebon Regency was the highest at 3.8 x 105 colonies / g and the lowest at 2.5 x 103 colonies / g. There were 3 samples of marrow porridge sold in Pasar Pasalaran Cirebon Regency. There are 3 samples of marrow porridge that do not meet the requirements of BPOM RI regulation No.13 of 2019, namely samples A, D, and E. Abstract

Anchovies are widely consumed by the public and are served in various ways and flavors and variations to make them more attractive and desirable. However, the existence of anchovies today contains a lot of formalin preservatives to last long and not cause big losses. There are many ways to reduce formaldehyde levels in food, one way is to soak it in hot water, because one of the properties of formaldehyde is water soluble. This study aims to determine the formalin content of anchovies before and after soaking in hot water at various time variations and to determine the effect of anchovy soaking time in hot water on formalin content. The research method used in this study is pre-experiment with one-group pretest-postest design while the examination method uses uv-vis spectrophotometer. For data analysis using SPSS program one way anova test. The identification of formalin was done qualitatively using distillation with the addition of chromatopic acid and quantitatively using a spectophotometer with a wavelength of 570 nm. It was found that formalin levels before hot water immersion with a duration of 0 minutes in anchovy rice averaged 26.254 ppm. Samples of anchovy rice after immersion with hot water with the initial temperature of immersion 100°c with a duration of time of 5 minutes, 10 minutes, 15 minutes, 20 minutes, 25 minutes, and 30 minutes obtained the results of the highest decrease in formaldehyde levels at 30 minutes of immersion time averaged 64.25% or 9.385 ppm.
