Abstract

Purpose: This study aims to analyze the effect of adding pineapple juice at different concentrations on the viscosity, total solids, total dissolved solids, color, and consumer acceptance of soygurt. Methodology: A Completely Randomized Design (CRD) was used in this study, with the independent variable being the variation in the concentration of added pineapple juice (0%, 5%, 10%, 15%). Results: The results show that viscosity, total solids, total dissolved solids, and color are significantly influenced by the addition of pineapple juice. Findings: The consumer acceptance test indicated that the treatment with 10% pineapple juice had the best organoleptic value and was well accepted by consumers, with an average score of 4.11. Novelty: This research explores the enhancement of soygurt by adding pineapple juice, a novel approach to improving its taste and consumer appeal. Originality: The study provides a detailed analysis of the physicochemical and sensory characteristics of soygurt enhanced with pineapple juice. Conclusions: Adding pineapple juice to soygurt significantly improves its viscosity, total solids, total dissolved solids, and color, with 10% being the most favorable concentration for consumer acceptance. Abstract

Purpose: This study aims to determine the best inhibitory effect of water extracts from the ratoon root organs of sorghum plants grown on Inceptisol soil on the germination of test plants. Methodology: The study used a single-factor completely randomized design with four treatments: control, Numbu roots, Super 1 roots, and Suri 4 roots. The experiment units were petri dishes, and the experiment was repeated four times. The bioassay method in petri dishes was applied, with 10 ml of water extract added to each dish, and 25 Vima 1 mung bean seeds were incubated for three days. Results: The water extracts from the ratoon roots of Numbu and Suri 4, as well as all other sorghum ratoon root extracts, significantly inhibited the germination of test plants compared to the control. Findings: Sorghum ratoon root extracts exhibit potent bioherbicidal properties. Novelty: This research provides insights into the allelopathic potential of different sorghum varieties. Originality: The study offers a detailed analysis of the bioherbicidal effects of sorghum ratoon root extracts on seed germination. Abstract

Purpose: This study aims to investigate the effect of salt solution (NaCl) soaking on yam, focusing on food safety, organoleptic quality, and changes in chemical composition during the soaking process. Methodology: The method used was a factorial Complete Random Design with the following treatments: P0 = no treatment; P1 = soaking in 10 g/liter salt solution; P2 = soaking in 30 g/liter salt solution; P3 = soaking in 50 g/liter salt solution. Each treatment was repeated three times, resulting in 12 observation units. Results: The results indicated that higher salt solution concentrations led to increased water, ash, and starch content, while the solubility and swelling power of yam flour decreased. Findings: The study found that salt soaking positively affects the preservation and quality of yam by inhibiting pathogenic microorganisms and slowing down tuber rot. The increased concentration of salt solution was directly proportional to the increase in water, ash, and starch content. Novelty: This research provides new insights into the effects of salt soaking on yam, particularly on its chemical composition and potential benefits for food preservation. Originality: The study offers a detailed analysis of how different concentrations of salt solutions affect the quality and chemical properties of yam, contributing to the understanding of its implications for food safety and health. Conclusions: Soaking yams in higher concentrations of salt solution enhances their preservation by increasing water, ash, and starch content, while reducing solubility and swelling power. Abstract

Purpose: This study aims to determine the role of BUM Desa (village-owned enterprises) in increasing the income of small traditional snack businesses. Methodology: The research was conducted in Kedungsumur Village, Krembung District, Sidoarjo Regency, using a qualitative approach. The study was carried out from January 2023 to April 2023. The research location was selected using a perceptive method with key informants. Informants included all elements related to village governance and MSME actors. Results and Findings: The results indicate that BUM Desa can increase MSME income in traditional snacks by enhancing skills through training. This includes financial management training, product quality improvement training, digital marketing training in collaboration with external parties, and facilitating MSME legal permits. Novelty and Originality: This study provides evidence of BUM Desa’s effectiveness in boosting MSME incomes and community welfare through targeted training and support. Abstract

Purpose: This study aims to identify the partnership collaboration model at PG Madukismo, detailing the rights and obligations of both parties, and to understand the benefits and challenges within the partnership. Methodology: The research was conducted at PG Madukismo in Padokan Tirtonirmolo Kasihan, Bantul Regency. A qualitative case study approach was employed, with a sample size of 30 partner farmers from the Western and Eastern regions. Data were analyzed descriptively. Results and Findings: The partnership collaboration models at PG Madukismo include the Independent People's Sugarcane (TRM) model and the People's Sugarcane Partnership (KMT) model, each with specific rights and obligations. The benefits of the partnership include increased sugarcane productivity, guarantees of quantity, quality, and continuity, and reduced risks in sugarcane farming. However, challenges include insufficient support from PG Madukismo to enhance the welfare of partner sugarcane farmers. Novelty and Originality: This study provides a detailed examination of the partnership models and highlights specific benefits and challenges faced by the partner farmers, contributing to the understanding of agricultural partnerships. Conclusions: The partnership models at PG Madukismo offer significant benefits but are hindered by inadequate support from PG Madukismo. Addressing these challenges could enhance the effectiveness of such partnerships. Type of Paper: Empirical Research Article

Abstract

Purpose: This study aims to determine the optimal ratio of tembang fish flour addition to enhance the nutritional value of biscuits while maintaining their quality. Methodology: The research was conducted from June to July 2022 at the Applied Marine Product Processing Technology Laboratory and the Basic Laboratory of Politeknik Palu, Central Sulawesi Province. A Completely Randomized Design (CRD) was used for moisture content tests, and a Randomized Block Design (RBD) was used for organoleptic tests with five treatments of tembang fish flour addition: P1 (0 g), P2 (10 g), P3 (15 g), P4 (20 g), and P5 (25 g), each repeated three times. Results: The study found that the best addition of tembang fish flour in biscuits was P4, with a preference level of 'Like' (score 4) and moisture content below the maximum standard for biscuits (3.5% per 100 grams). Findings: Tembang fish biscuits are economical and significantly cheaper than other brands. Novelty: This research explores the use of tembang fish flour to diversify and enhance the nutritional profile of biscuits. Originality: The study offers detailed analysis and evidence of the nutritional and economic benefits of adding tembang fish flour to biscuits. Abstract

Purpose: This study aims to understand the motivations of coffee farmers, specifically those practicing the "petik pelangi" method, in Bukit Sari Village, Kabawetan District, Kepahiang Regency, Bengkulu Province. Methodology: The research employed a Likert scale method, sampling 35 respondents. Factors such as age, education level, and experience were analyzed to determine their impact on farmers' motivations. Results: The study found that internal factors such as age (34-59 years), education level (mostly higher education), and experience significantly influence farmers' motivation. Additionally, land ownership size and family dependents also affect motivation. Findings: Internal factors had a slightly higher average motivation score (17.6) compared to external factors (17.46). The price difference between "petik merah" and "petik pelangi" coffee reflects complex market dynamics. Despite the higher price of "petik merah" coffee, many farmers and the community prefer the "petik pelangi" method due to the motivation to harvest coffee when it is still colorful. Novelty: This research provides new insights into the motivations behind the "petik pelangi" coffee harvesting method, highlighting the factors that influence farmers' choices. Originality: The study offers an in-depth understanding of the internal and external factors affecting coffee farmers' motivations, with a focus on a unique harvesting method that is less commonly studied. Conclusions: Internal factors such as age, education level, and experience are significant motivators for coffee farmers practicing the "petik pelangi" method. Despite the higher market value of "petik merah" coffee, the colorful harvest method remains popular due to intrinsic motivations. Abstract

Purpose: This study evaluates the influence of green investment and green jobs on poverty reduction with sustainable development as a mediating variable. Methodology: Using a descriptive-quantitative method, secondary data from the Central Bureau of Statistics of South Sumatra from 2016-2020 were analyzed using a panel regression model. Results: The results indicate that green investment and green jobs affect poverty reduction through sustainable development in South Sumatra Province. Findings: Challenges include green infrastructure development and policies supporting green investment and job creation. Novelty: This research provides insights into the impact of green investment and green jobs on poverty reduction within the context of sustainable development. Originality: The study offers a detailed analysis of how green investment and green jobs contribute to poverty reduction and sustainable development. Conclusions: Green investment and green jobs have the potential to reduce poverty and achieve sustainable development but require collaboration among the government, private sector, and society. Abstract

Purpose: This research aims to determine the antioxidant activity of bamboo shoots used as raw material for making lemea, a local fermented food. Methodology: The antioxidant activity of bamboo shoots was tested using the DPPH method. The research involved creating ethanol extracts from bamboo shoots of Mayan bamboo (Gigantochloa robusta), Betung bamboo (Dendrocalamus asper), and yellow bamboo (Bambusa vulgaris). The extracts were analyzed using a spectrophotometer at a wavelength of 517 nm after 30 minutes of incubation. Results: The study found that bamboo shoots used as raw material for lemea exhibited weak to very weak antioxidant activity. The IC50 values were 387.608 ppm for yellow bamboo shoots, 666.907 ppm for Betung bamboo shoots, and 799.593 ppm for Mayan bamboo shoots. Findings: The antioxidant activity of the bamboo shoots varied, with yellow bamboo shoots showing the highest antioxidant activity among the three types tested. Novelty: This research provides new insights into the antioxidant properties of bamboo shoots, specifically those used in making lemea. Originality: The study offers a detailed analysis of the antioxidant activity of different bamboo shoots, contributing to the understanding of their potential health benefits. Conclusions: Bamboo shoots, the raw material for making lemea, have weak antioxidant activity, with yellow bamboo shoots exhibiting the highest activity. Type of Paper: Experimental Research Article

Abstract

Purpose: This study aims to determine the influence of household income, head of household education level, and number of family members on consumption patterns in Ogan Komering Ulu Regency. Methodology: The study uses quantitative descriptive analysis with multiple linear regression analysis tools. Results: The findings show that household consumption is influenced not only by regional typology but also by socioeconomic conditions. Multiple linear regression analysis reveals that household income, head of household education level, and number of family members positively correlate with food and non-food consumption patterns in Ogan Komering Ulu Regency. Findings: Hypothesis testing indicates that household income significantly affects food and non-food consumption patterns. The education level of the head of household also significantly affects both food and non-food consumption patterns. However, the number of family members significantly affects food consumption patterns but does not significantly affect non-food consumption patterns. Novelty: This research provides insights into how socioeconomic factors influence consumption patterns in a specific region. Originality: The study offers a detailed analysis of the relationship between household socioeconomic characteristics and consumption patterns. Conclusions: Household income and head of household education level significantly influence both food and non-food consumption patterns, while the number of family members significantly influences only food consumption patterns.
