Abstract

High food intake and unhealthy diet are one of the main factors of obesity. The aim of the study was to determine the association between fiber and sodium intake with the risk of obesity occurrence among elementary school children in the Andalas Public Health Centre, Padang City. This study used a case control design with location was on Elementary School No. 30 and Kartika 1-10. The amount of sample was 114 students (57 cases and 57 controls). Fiber and sodium intake was calculated by Semi-Quantitative Food Frequency Questionnaire (SQ-FFQ) and child obesity was based on weighing and then compared to age. The result showed that the mean of fiber intake among case (deviation, standard) was 16,89 g (more and less 9,46 g) while the mean of fiber intake among control was 17,4 g (more and less 33,66 g). Then, the mean of sodium intake among case was 1.624,53 mg (more and less 367,34 mg) while the mean of sodium intake among control was 1.353,48 mg (more and less 350,58 mg). The result also showed that there was not statistically significant fiber intake with the risk of obesity among elementary school children (p-value=0,677; OR=1,19). However, higher sodium intake has proved statistically will increase the risk of obesity 2,29 times among elementary school children than normal sodium intake. Multivariate analysis showed that fat intake is a confounding factor of the relationship between fiber and sodium intake with the risk of obesity. Based on the result, the school side should monitor food and beverages that on sale in the canteen and around school, also giving education to school children how to choose a healthy and nutritious food.ABSTRAKPola makan yang kurang sehat merupakan salah satu faktor utama terjadinya obesitas. Penelitian ini bertujuan untuk mengetahui hubungan antara asupan serat dan natrium dengan risiko kejadian obesitas pada anak sekolah dasar di wilayah kerja Puskesmas Andalas Kota Padang. Penelitian ini menggunakan desain case control dengan lokasi penelitian di SDN 30 dan SD Kartika 1-10. Jumlah responden penelitian sebanyak 114 orang (57 kasus dan 57 kontrol). Asupan serat dan natrium anak dinilai melalui Semi Quantitative Food Frequency Questionnaire (SQ-FFQ) dan status obesitas anak ditentukan berdasarkan hasil penimbangan kemudian dibandingkan dengan umur. Hasil analisis diketahui rata-rata asupan serat kasus (standar deviasi), yaitu 16,89 g (lebih kurang 9,46 g) sedangkan rata-rata asupan serat kontrol, yaitu 17,4 g (lebih kurang 33,66 g) kemudian rata-rata asupan natrium kasus sebesar 1.624,53 mg (lebih kurang 367,34 mg) sedangkan rata-rata asupan natrium kontrol sebesar 1.353,48 mg (lebih kurang 350,58 mg). Hasil penelitian juga menunjukkan tidak ada hubungan yang bermakna antara asupan serat dengan risiko kejadian obesitas pada anak sekolah dasar (p-value=0,677; OR=1,19) sebaliknya asupan natrium yang lebih secara statistik terbukti meningkatkan risiko kejadian obesitas sebesar 2,29 kali pada anak sekolah dasar dibandingkan asupan natrium yang cukup. Hasil analisis multivariat diketahui asupan lemak merupakan variabel confounding terhadap hubungan asupan serat dan asupan natrium terhadap risiko obesitas pada anak sekolah. Berdasarkan hal tersebut kepada pihak sekolah sebaiknya melakukan pengawasan terhadap jajanan yang dijual di kantin dan lingkungan sekitar sekolah serta memberikan edukasi kepada anak melalui kurikulum mengenai memilih makanan jajanan yang sehat dan bergizi.

Abstract

Anemia has adverse health effects on pregnant women and their fetuses. Anemia during pregnancy will be at risk of giving birth to children with anemia leading to an increased risk of stunted children. EMO DEMO is a form of nutrition education with a simple delivery method developed by GAINing. (Global Alliance for Improved Nutrition). This community service aims to determine anemia in pregnant women and introduce EMO DEMO nutrition education to 30 pregnant women and 5 Posyandu cadres. The EMO DEMO material used food source high in iron named ATIKA (heart, fish, chicken). The activity was carried out in July 2022 in the village of Burai (Ogan Ilir) as stunting locus. The results of measuring hemoglobin levels found that as many as 8 pregnant women (26,7%) had anemia. Pregnant women and cadres found it easy to remember food ingredients that were good sources of iron during pregnancy. After participating in this EMO DEMO, it was expected participants could consume foods high in iron to prevent anemia during pregnancy. Furthermore, cadres could use the EMO DEMO method to conduct nutrition education for other pregnant women.

Abstract

Gulo Puan, originating from Pampangan, South Sumatra, stands out as one of the region's specialties. Crafted from buffalo milk and sugar, Gulo Puan boasts a delightful combination of sweet and savory flavors. Locally embraced, this delicacy is commonly enjoyed as a snack or incorporated into various culinary preparations. This study's primary objective was to comprehensively analyze the proximate content, glycemic index, and glycemic load of Gulo Puan. Employing an experimental quantitative research approach, the proximate analysis took place in the GIS laboratory, while the study of glycemic load and glycemic index involved 15 participants selected through purposive sampling. The results of the proximate study, presented descriptively, revealed the following composition in Gulo Puan: total energy (417.44 kcal), carbohydrate (55.93%), fat (16.65%), protein (10.25%), ash (1.64%), and water (15.03%). Comparisons of glycemic index between Gulo Puan (88.69%) and brown sugar (95.05%) exhibited a statistically significant average difference (p-value 0.004 (<0.05)). Similarly, a comparison of glycemic load between Gulo Puan (44.34%) and brown sugar (47.52%) also demonstrated a significant average difference (p-value 0.004 (<0.05)).

Abstract

Product modification can be used as an intervention method to prevent nutritional problems. The addition of ingredients that have certain nutrients can be used in the modification process, thereby increasing the product's superiority and affecting the quality of the resulting product. It is necessary to analyze the nutrient content to decide whether the nutrients in the product are convenient with the specified nutritional adequacy claim. The purpose of this study was formulating suction puding made from high protein ingredients and analyzing the nutrient content. This research was a quantitative study included in the experimental design to determine the nutritional content of moisture, ash, fat, protein, and carbohydrate content in the formulation of suction puding. Formulation was carried out in dietetic and culinary laboratory and Analysis of nutrient content was carried out at the Laboratory of Chemistry and Microbiology of Agricultural Products, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University. Data analysis in this study is bivariate using ANOVA test if the data is normally distributed and Duncan's further test, while data that is not normally distributed uses Kruskall-Wallis test and Mann-Withney further test. The results was formulation samples consisted of four different recipes of suction puding formulations (A, B, C and D) then the bivariate analysis in this study showed significant differences in water, fat, protein, and carbohydrate content (p<0.05), while in ash content there was no significant difference in the various formulations (p>0.05).

Abstract

Background: Nutritional anemia is a condition where the hemoglobin level in the blood is below normal. Anemia education is very important because there are still many young women who do not know about anemia. This activity aims to increase knowledge about balanced nutrition and anemia among young women in Menanti Village. Methods: This activity is in collaboration with the Head of Menanti Village, Kec. Kelekar Muara Enim Regency with a total of 36 participants, using lecture and discussion methods. The activities carried out are measuring knowledge and providing education using the lecture method. Results: Nutrition and anemia education activities in Menanti Village, Kelekar District, Muara Enim Regency were carried out on Tuesday 11 June 2024 for 36 young women. Conclusion: Community service activities by lecturers at the FKM Nutrition Study Program at Sriwijaya University in the form of nutritional education regarding anemia in young women using leaflets as a medium increase female students' knowledge regarding anemia. Knowledge about applying the principles of balanced nutrition is one of the efforts to prevent anemia from an early age in adolescents.

Abstract

Sindrom metabolik mencakup indikator metabolik, vaskular, dan inflamasi yang menyebabkan seseorang mengalami peningkatan risiko penyakit kardio-metabolik. Ada beberapa definisi yang digunakan untuk menggambarkan dan mengkarakterisasi sindrom metabolik. NCEP ATPIII menyarankan perubahan gaya hidup terapeutik untuk mengurangi prevalensi sindrom metabolik diantaranya adalah pengaturan pola makan atau diet. Asupan diet Indonesia seringkali disalahartikan sebagai makanan yang tidak sehat karena dominan menggunakan santan dan olahannya. Padahal, makanan khas Indonesia pada umumnya kaya akan lemak jenuh dengan rantai pendek serta sedang yang baik untuk kesehatan. Penelitian menunjukkan bahwa makanan yang diberikan santan tidak menimbulkan efek merugikan pada profil lipid untuk populasi umum dan justru bermanfaat karena mereka mengalami penurunan LDL serta peningkatan HDL. Penelitian secara konsisten menunjukkan perbaikan dalam parameter metabolik, meskipun perbaikan tersebut tidak signifikan.

Abstract

Abstrak Kasus Diare selalu menjadi sepuluh besar penyakit yang selalu muncul di tiap puskesmas. Salah satu penyebabnya adalah kurangnya hygiene dari penjamah makanan. Beberapa studi menyebutkan bahwa penjamah makanan beranggapan tangan yang bersih adalah yang tidak terlihat kotor saja. Pemikiran seperti ini menjadi kekhawatiran pemerintah atas kondisi kesehatan masyarakat. Padahal kuman-kuman tak terlihat yang ada ditangan masih bisa menempel disana. Untuk memperbaiki anggapan yang keliru tentang tangan yang bersih hanya dari kasat mata, maka perlu dilakukan edukasi dengan konsep Emo-Demo agar masyarakat menjadi lebih paham tentang pentingnya cuci tangan pakai sabun (CTPS). Tujuan dari program pengabdian kepada masyarakat (PKM) ini adalah untuk meningkatkan pengetahuan dan kesadaran penjamah makanan dalam menerapkan kebiasaan CTPS. Metode PKM yang diterapkan berupa penyuluhan dan emo-demo disertai dengan evalusai melalui pre-test dan post-test.  Sasarannya ibu rumah tangga di Desa Babatan Saudagar, Kecamatan Pemulutan, Kabupaten Ogan Ilir. Hasil PKM ini menunjukkan bahwa pengetahuan tentang CTPS sebelum dan setelah penyuluhan terdapat peningkatan. konsep emo-demo juga membuat responden lebih memahami tentang pentingnya CTPS meskipun tangan terlihat bersih. Praktik baik dan pengetahuan yang meningkat diharapkan menjadi solusi untuk mengurangi kasus diare pada tingkat rumah tangga dan Indonesia pada umumnya. Kata kunci: Emo Demo; cuci tangan; pengetahuan; penjamah makanan. Abstract Diarrhea cases are always in the top ten diseases that always appear in every health center. One of the causes is the lack of hygiene of food handlers. Several studies have stated that food handlers assume that clean hands are those that do not look dirty. This kind of thinking is a concern for the government regarding the health conditions of the community. In fact, invisible germs on the hands can still stick there. To correct the mistaken assumption that hands are clean only from the naked eye, it is necessary to conduct education with the Emo-Demo concept so that the community becomes more aware of the importance of washing hands with soap (CTPS). The purpose of this community service program (PKM) is to increase the knowledge and awareness of food handlers in implementing CTPS habits. The PKM method applied is in the form of counseling and emo-demo accompanied by evaluation through pre-test and post-test. The target is housewives in Babatan Saudagar Village, Pemulutan District, Ogan Ilir Regency. The results of this PKM show that knowledge about CTPS before and after counseling has increased. The emo-demo concept also makes respondents more aware of the importance of CTPS even though hands look clean. Good practices and increased knowledge are expected to be a solution to reduce diarrhea cases at the household level and generally in Indonesia. Keywords: Emo-Demo; handwash; knowledge; food handler.

Abstract

Abstract: Stunting is a condition of impaired growth in children resulting from chronic nutritional deficiencies, with long-term consequences on cognitive development, immune function, and future productivity. Inappropriate practices of exclusive breastfeeding and complementary feeding (MP-ASI), often influenced by low maternal knowledge and attitude, have been identified as major risk factors for stunting. This study aims to analyze the relationship between exclusive breastfeeding practices, maternal knowledge and attitudes related to MP-ASI, and the incidence of stunting among children under five in Palembang City. A cross-sectional study design was employed using a quantitative approach. Data were collected from 196 mothers with children aged 6–59 months across four sub-districts in Palembang City through multistage random sampling. Validated questionnaires were used as research instruments, and data were analyzed using the chi-square test. No significant association was found between knowledge (p=0.265) and attitude (p=0.652) regarding MP-ASI and stunting incidence. However, children of mothers with poor knowledge had a 2.175 times higher risk of stunting. Exclusive breastfeeding practices also showed no significant association with stunting (p=0.915), although children who were not exclusively breastfed had a 1.097 times higher risk of experiencing stunting. Although not statistically significant, low maternal knowledge on complementary feeding and lack of exclusive breastfeeding may increase the risk of stunting. Educational interventions promoting appropriate infant feeding practices are essential to reduce stunting prevalence in Palembang City. Keywords: attitude, complementary feeding, exclusive breastfeeding, knowledge,stunting Abstrak: Stunting merupakan kondisi gagal tumbuh pada anak akibat kekurangan gizi kronis yang dapat berdampak jangka panjang terhadap perkembangan kognitif, imunitas, dan produktivitas di masa depan. Praktik pemberian ASI eksklusif dan MP-ASI yang tidak tepat, sering kali dipengaruhi oleh rendahnya pengetahuan dan sikap ibu, telah diidentifikasi sebagai faktor risiko penting terhadap kejadian stunting. Penelitian ini bertujuan untuk menganalisis hubungan antara praktik pemberian ASI, pengetahuan, dan sikap terkait MP-ASI dengan kejadian stunting pada anak balita di Kota Palembang. Penelitian menggunakan desain potong lintang (cross-sectional) dengan pendekatan kuantitatif. Pengambilan data dilakukan pada 196 ibu yang memiliki balita usia 6–59 bulan di empat kecamatan Kota Palembang menggunakan metode multistage random sampling. Data dikumpulkan melalui kuesioner yang telah divalidasi dan dianalisis menggunakan uji chi-square. Tidak ditemukan hubungan yang signifikan antara pengetahuan (p=0,265) dan sikap (p=0,652) terkait MP-ASI dengan kejadian stunting. Meskipun demikian, anak dari ibu dengan pengetahuan yang kurang baik memiliki risiko 2,175 kali lebih tinggi mengalami stunting. Praktik pemberian ASI eksklusif juga tidak menunjukkan hubungan signifikan dengan kejadian stunting (p=0,915), namun balita yang tidak menerima ASI eksklusif memiliki risiko 1,097 kali lebih tinggi untuk mengalami stunting. Meskipun tidak signifikan secara statistik, rendahnya pengetahuan ibu terkait MP-ASI dan tidak diberikannya ASI eksklusif berpotensi meningkatkan risiko stunting. Intervensi edukatif mengenai praktik pemberian makan yang tepat sangat penting untuk menurunkan angka stunting di Kota Palembang. Kata kunci: ASI eksklusif, MP-ASI, pengetahuan, sikap, stunting

Abstract

Santriwati (female Islamic boarding school student) are within the target age range for the 8000 HPK program, making it crucial to have sufficient protein intake to prevent stunting in future generations. Fish, being a good source of protein, is widely available in Islamic boarding schools due to its nutritional value and affordable price. However, protein intake among female students in these institutions often falls into the deficit category, primarily due to a lack of knowledge about the importance of fish as a protein source. This Community Service activity aims to enhance the knowledge of female students regarding nutrition and the role of protein through interactive classes. The interactive class includes nutrition presentation, games and coloring goodie bags with the slogan "". The activity was conducted at the Sabilul Hasanah Banyuasin Islamic boarding school involving 50 female students as respondents. The activity was carried out for 3 meetings in September 2024. The results of the paired showed a difference between knowledge before and after the educational activity was carried out (p <0.005). The female students showed great enthusiasm for the activity. Educational interventions through interactive sessions can effectively improve both the knowledge and enthusiasm of female students about the benefits of consuming fish.

Abstract

Background Probiotic banana milk is a product containing potassium from Ambon Banana developed to address gastrointestinal motility issues in surgical patients. However, two important parameters to be considered for surgical patients are viscosity and energy density.Objectives: To analyze the viscosity and energy density of probiotic banana milk and its potential as a nutritional intervention for surgical patients.Methods: This study employed an experimental design with a Completely Randomized Design (CRD) with 3 treatments and 3 replications in laboratory test. The treatment in this study was to differentiate the proportion between Green Ambon Bananas (Musa acuminata colla) and starter before cooking, which was divided into 3 formulations. Viscosity measurement was assessed using a digital viscometer NDJ-5 (Vevor, Shanghai, China) according to the manufacturer's recommendations. The energy density of probiotic banana milk was measured using the energy ratio formula [kcal] to weight (g). Energy density data were analyzed using ANOVA test.Results: The results showed that both the highest viscosity and density were in F3 (1630 m.pa.s with 0,35 kcal/g) and the lowest was in F1 (472 m.pa.s with 0,31 kcal/g). The ANOVA test showed a difference in energy density in the three formulations with a p-value of 0,003. The results of the post-hoc test showed that there was a difference between each formulation (F1 and F2; F1 and F3; F2 and F3).Conclusion: Sample F3 has the highest viscosity and energy density compared to F1 and F2, so it has the highest potential to be given to pre-and post-surgical patients to help speed up the recovery process.
