Abstract

Penggunaan energi biomassa sebagai sumber energi alternatif terbarukan diupayakan untuk mengurangi emisi CO2. Ampas kopi merupakan limbah biomassa yang dihasilkan dari proses produksi yang digunakan sebagai raw material dalam pembuatan biobriket. Limbah biomassa mempunyai calorific value yang relatif tinggi jika diolah menjadi biobriket dengan perekat. Jenis perekat yang digunakan adalah tepung tapioka dan getah pinus dengan komposisi tepung tapioka yang digunakan 0%, 10% dan 20% sedangkan jumlah perekat getah pinus 0%, 10%, 20%, dan 40%. Dengan mengetahui pengaruh jenis dan jumlah perekat dalam pembuatan biobriket menggunakan metode torefaksi, diharapkan limbah ampas kopi dapat menjadi biomassa sebagai energi alternatif. Penelitian dilakukan pada suhu torefaksi yaitu 200 oC, 250 oC dan 300 oC. Suhu torefaksi yang optimal untuk pembuatan biobriket dari ampas kopi adalah 300 oC dengan perekat getah pinus 40% yang menghasilkan biobriket lebih padat dan tidak mudah hancur dengan nilai kalori sebesar 6124 kal/gr.

Abstract

The Snakehead fish extract is one of the fish extracts that has many benefits and has been used in the health sector such as emulsifiers, skin health drugs, helping muscle formation and growth, accelerating wound healing, maintaining fluid balance in blood vessels, improving poor nutrition, and being healthy. for digestion so that the quality characteristics of the extract need to be researched and maintained to be used. This study aims to determine the quality characteristics of the liquid extract of snakehead fish (Channa striata) based on quality parameters such as protein molecular weight profile, heavy metal contamination of lead (Pb), and cadmium (Cd), and bacterial contamination of Escherichia coli. Snakehead fish extract was obtained using the steaming extraction method at a temperature of 60oC, for 6 hours to obtain albumin levels of 12.549 mg/g, protein molecular weight profile analysis detected 7 major bands and 1 minor band in the molecular weight range 19.05 kDa - 92, 72 kDa, where the molecular weight of albumin protein is suspected to be in band number 3 53.72 kDa, E.coli bacteria contamination < 3 APM/g and heavy metals lead (Pb), and cadmium (Cd) were not detected.

Abstract

Mata air pegunungan merupakan sumber air yang digunakan oleh masyarakatyang umumnya tinggal di dataran tinggi, termasuk di Desa Terobosan, Kota Cimahi. Namunsumber mata air tersebut belum layak untuk dikonsumsi secara langsung karena kandunganpartikulat dan pathogen yang berbahaya bagi kesehatan. Kegiatan pengabdian masyarakatini fokus pada penyediaan air siap minum dari mata air di Desa Terobosan menggunakanteknologi ultrafiltrasi (UF). Mata air yang difiltrasi dengan membrane UF memenuhistandard sebagai air siap minum sesuai dengan Peraturan Menteri Kesehatan RepublikIndonesia No.492/MENKES/PER/IV/2010 tentang Kualitas Air minum. Untuk keberlanjutankegiatan, instalasi UF membran untuk penyediaan air minum tidak hanya dilaksanakan diDesa Terobosan saja namun juga di daerah lainnya di Kota Cimahi.

Abstract

Kabupaten Karawang memiliki potensi perikanan yang menjanjikan, terutama dalam budidaya ikan patin. Namun, limbah tetelan ikan patin yang dihasilkan seringkali tidak dimanfaatkan secara optimal, sehingga menimbulkan masalah lingkungan dan pemborosan sumber daya. Kegiatan pengabdian masyarakat ini bertujuan untuk meningkatkan nilai tambah tetelan ikan patin melalui pelatihan pengolahan produk bernilai ekonomi, seperti nugget dan otak-otak. Metode yang digunakan adalah Participatory Rural Appraisal (PRA), yang melibatkan partisipasi aktif masyarakat dalam proses pelatihan. Kegiatan ini dilaksanakan di Desa Tambak Sari, Karawang, dengan sasaran utama kelompok wanita nelayan. Hasil evaluasi pelatihan diversifikasi Olahan Produk Perikanan Berbahan Tetelan Ikan Patin,  menunjukkan peningkatan signifikan dalam pengetahuan dan keterampilan peserta, dengan rata-rata nilai pengetahuan meningkat dari 60 (sebelum pelatihan) menjadi 90 (setelah pelatihan). Selain itu, peserta juga mampu mempraktikkan pembuatan nugget dan otak-otak secara mandiri, serta memahami pentingnya standar keamanan pangan dan strategi pemasaran. Dengan demikian, pemanfaatan tetelan ikan patin sebagai bahan baku produk olahan bernilai tambah dapat berkontribusi pada pengurangan limbah, peningkatan pendapatan, dan pemberdayaan ekonomi masyarakat lokal.

Abstract

Chlorella sorokiniana is a microalgae with an outstanding nutritional profile and numerous therapeutic substances that can be used as an immunostimulant, including in aquaculture. This research aimed to investigate and characterize peptides isolated from C. sorokiniana protein using TCA digestion and hydrolyzed enzymatically with trypsin. Peptides were then subsequently identified using Tandem LC-MS/MS and Mascot Distiller. Results showed that the percentage of pure protein yield following TCA digestion was 54.66%, and 12 peptides with lengths ranging from 7 to 23 sequences were discovered after trypsin digestion. These peptides originated from various enzymes and chloroplast proteins, including protein synthesis elongation factor TU, photosystem I iron-sulfur center, photosystem II 43 kDa, Ycf4, ATP-dependent zinc metalloprotease FtsH homolog, nitrate reductase, chloroplastic glucose-6-phospate dehydrogenase, and ATP synthase CF1 alpha chain. These findings demonstrated that C. sorokiniana might serve as a source of immunostimulant peptides and proteins, particularly for aquaculture biota.

Abstract

Snack cemilan sehat yang berbahan dasar ikan menjadi salah satu pilihan untuk menambah nilai gizi pada snack ekstrusi. Tujuan penelitian ini adalah mengembangkan snack ekstrusi serta menentukan formulasi terbaik dengan menggunakan jumlah penambahan lumatan daging ikan nila yang berbeda-beda yakni 5%, 10% dan 15% berdasarkan parameter mutu uji hedonik, uji proksimat (kadar air, abu, protein, lemak) dan analisis total cemaran mikroba (angka lempeng total). Snack ekstrusi dibuat melalui tahap penerimaan bahan baku, penyiangan, pencucian, lumatan daging ikan nila, preparasi bahan tambahan dan penimbangan, pengadonan, penggilingan dan cetak, penggorengan, penirisan dan pengemasan. Hasil analisis formulasi P2 snack ekstrusi dengan penambahan 10% lumatan daging ikan nila merupakan formulasi yang paling disukai oleh 25 panelis dengan nilai rata-rata 6,5, kenampakan 7 (suka), aroma 6 (agak suka), rasa 7 (suka), dan tekstur 6 (agak suka). Hasil uji proksimat menunjukkan bahwa jumlah penambahan lumatan daging ikan nila berbanding lurus dengan peningkatan kadar air, abu, protein dan lemak. Dimana formulasi P2, memiliki nilai uji proksimat kadar air 5,07%, kadar abu 1,81%, kadar lemak 31,47%, kadar protein 13,03%, dan nilai ALT <2,5 x 104 Cfu/ml.

Abstract

Tujuan penelitian ini adalah untuk mengetahui kualitas mutu ikan kembung (Rastrelliger sp) dengan melakukan pengujian mutu uji organoleptik dan kandungan TVB yang diperoleh dari pasar tradisional di Jakarta Timur. Pengujian organoleptik dengan parameter kenampakan mata, insang, lendir permukaan badan, bau, tekstur dan daging dilakukan berdasarkan SNI 2729 : 2013 dan kadar TVB-N berdasarkan SNI 2354.8:2009 di Balai Uji Standar Karantina Ikan, Pengendalian Mutu dan Keamanan Hasil Perikanan (BUSKIPM), Jakarta Timur. Pengambilan sampel menggunakan simple random sampling yang diperoleh dari 2 pasar dan dua pedagang di pasar tradisional Jakarta Timur. Hasil pengujian menunjukkan bahwa nilai organoleptik berbanding terbalik dengan nilai TVB-N. Nilai organoleptik terendah terdapat pada pedagang 2 Pasar Ciracas dengan rata-rata 6,0 untuk 3 pedagang lainnya di Pasar Ciracas dan Kramat Jati rata-rata nilai organoleptik 7,0. Nilai TVB-N tertinggi pada pedagang 2 di Pasar Kramat jati yaitu sebesar 25,20 Mg-N/100 g. Rata-rata nilai TVB pada pedagang 1 dan 2 Pasar Ciracas secara beturut-turut adalah 21,00 Mg-N/100 g dan 21,01 Mg-N/100 g dan pada pedagang 1 Pasar Kramat Jati yaitu 18,60 Mg-N/100 g. Hal ini menunjukkan bahwa mutu ikan kembung berdasarkan organoleptik dan nilai TVB di pasar tradisional Jakarta Timur masih dalam kualitas baik dan memenuhi persyaratan SNI serta layak konsumsi.
