Abstract

ABSTRACTThe objective of this study was to analyze the type and amount of food consumed at breakfast and its also contribution in daily nutrient intake of school children (6—12 years old). The data used for this study was the secondary data of the Basic Health Survey 2010 (Riskesdas 2010) conducted by the Research and Development Agency, Ministry of Health. The data of 24-hour recall of food consumption and socio-economic were obtained from 35 000 school age children. The results of the study shows that ten most populer food consumed during breakfast are rice, scramble egg, fried tempeh, vegetable soup, fried fish, instant noodle, fried rice, stir vegetable, and fried tofu; and the five most populer beverages consumed during breakfast are drinking water, sweetened tea, milk creamer, powder milk, and tea. Nearly half (44.6%) of the children breakfast with low nutritional quality. Approximately 44.6%, 35.4%, 67.8%, 85.0%, 89.4%, and 90.3% of child-ren consume only <15% RDI for energy, protein, vitamin A, iron, calcium, and fiber respectively. Based on these results and inline with one of the dietary guidelines messages – do breakfast everyday – the healthy breakfast for school children need further promoted intensively. It is suggested that the healthy breakfast should be able to fulfill 15—30% of daily nutrients requirements.

Abstract

Indonesia is the second country with the highest number of Diabetes mellitus (DM) in the Western Pacific region, which is 10 578 401 people. The prevalence of DM patients in Indonesia is 6-7% and this condition started with hyperglycemia. Increased risk of hyperglycemia can be caused by excess food consumption and oxidative stress. This oxidative stress can inhibit the taking of glucose in muscle cells and fat cells and disrupt ?-pancreatic cells in secreting insulin. Therefore, research is needed in relation to efforts to slow the increase of blood glucose and free radicals in the body by using various local foods that have low glycemic index values and high antioxidant activity.Local food is still rarely used from the three types of food, namely air potato (Dioscorea bulbifera L.), kidney beans (Phaseolus vulgaris L.), and strawberry tree (Muntingia calabura L.).These three foods are formulated into food products in the form of snackbar. The results obtained in the study include the percentage of rendement of extracts of 11.96%.The extracts were obtained by total phenol test, total flavonoid test, antioxidant activity test and ?-amylase inhibition test. The ethanol extract of 96% snackbar has a total phenolic content of 45 ppm + 3,512 GAE / g extract, total flavonoid content of 2,633 ppm + 0.779 QE / g extract, IC50 to DPPH of 1127.912 ppm ± 52.332 AEAC / g extract, and% inhibition with the concentration of 5 ppm and 20000 ppm against the enzyme ?-amylase are 27,83% + 1,284 and 38,61% + 0,599. Based on phytochemical results indicate that the snackbar has the potential to be further developed as a functional food lowering the risk of diabetes mellitus. Keywords: Diabetes mellitus, air potato, kidney beans, calabura, snackbar

Abstract

Availability of sufficient food can affect consumption and nutritional adequacy. Regions with high food availability will provide better nutritional adequacy and food consumption diversity. The direct cause of nutritional problems was the lack of food consumption. Lack of nutritional intake, especially those sourced from animal food, was one of the direct causes of increasing nutritional problems in an area. This research aimed to analyze the availability, situation and animal food consumption needs in Pangandaran District. This research used descriptive explanatory and prospective study design while the data was secondary data from related officials in Pangandaran district. The results showed that Pangandaran district in 2019 had the availability of animal food production, which was 46.5 g/cap/day. The contribution of the energy adequacy level (TKE) from the availability of animal food production was 29.4% and the contribution to the protein adequacy level (TKP) from the availability of animal food production was 42.6%. TKE and TKP from animal food consumption were 106.5% and 167.4% with score of desirable dietary pattern (PPH) was 24. To achieve the ideal PPH score, the target for animal food consumption in 2020-2024 is expected to have a declining growth rate of 1.25% per year. To meet the consumption target, it is necessary to have a growth rate of -0.25% per year to fulfill the need for animal food consumption in the same period. If the animal food consumption needs are only fulfilled from production, then there is still a gap in sufficed the animal food consumption needs of around 32.9 kg/cap/year or 14.53 thousand tons/year.

Abstract

Stunting represents a chronic nutritional problem that persists at a high prevalence (8%) in Cirebon. Intensive Mentoring Program for Healthy Children (PETIS) was implemented in Tukmudal, Cirebon, with the objective of addressing the issue of stunting. This program involves five stunted children selected by accident from two Posyandu with the highest prevalence of stunting. The methodology employed encompassed a range of techniques, including anthropometric measurements, 24-hour recall interviews to assess children's feeding practices, nutrition education, and supplementary feeding. Nutritional education was conducted in stages over a period of three weeks, with different topics addressed each week. These included balanced nutrition patterns, motor development, and clean and healthy living behavior (PHBS). The results of this programme demonstrate that intensive nutrition education can enhance mothers' awareness of the importance of a balanced diet and clean living behavior in stunting prevention. Furthermore, the mentoring programme succeeded in encouraging the growth of children's BW and PB/TB. However, dietary modifications among children remain constrained. Therefore, a more comprehensive and sustainable strategy is essential to achieve optimal nutritional advancement.
