Abstract

Indonesia memiliki potensi kerugian ekonomi yang besar akibat stunting. Tujuan penelitian ini adalah menganalisis potensi kerugian ekonomi (penurunan produktivitas dan biaya perawatan) serta anggaran penanggulangan stunting balita, dan perbandingannya di dataran rendah dan dataran tinggi Provinsi Sumatera Barat tahun 2022. Penelitian ini merupakan penelitian deskriptif kuantitatif dengan pendekatan cross-sectional dan konsep proyeksi keuangan. Hasil penelitian menunjukkan bahwa potensi kerugian ekonomi akibat penurunan produktivitas dan biaya perawatan pada balita stunting di dataran rendah Provinsi Sumatera Barat tahun 2022 adalah sebesar Rp291,00 miliar–Rp1.310,00 miliar (0,13%-0,59% PDRB) dan Rp500,00 miliar–Rp705,00 miliar (0,23%-0,32% PDRB), sedangkan di dataran tinggi adalah Rp79,00 miliar–Rp355,00 miliar (0,13%-0,57% PDRB) dan Rp135,00 miliar–Rp190,00 miliar (0,21%-0,30% PDRB). Tinggi rendahnya kerugian ekonomi akibat penurunan produktivitas dipengaruhi oleh prevalensi stunting dan jumlah kelahiran, sedangkan biaya perawatan akibat stunting dipengaruhi oleh prevalensi stunting dan jumlah balita stunting. Selain itu, potensi kerugian ekonomi per kapita akibat penurunan produktivitas di wilayah dataran rendah yang lebih besar juga disebabkan oleh PDRB per kapita yang lebih tinggi di wilayah tersebut.

Abstract

Masa remaja merupakan fase terjadinya perkembangan fisik serta psikis yang pesat. Asupan gizi yang sesuai sangat penting untuk menunjang proses pertumbuhan remaja. Body image sebagai bentuk manifestasi dari asupan makanan juga sangat diperhatikan oleh remaja. Remaja juga perlu mendapatkan pengetahuan terkait kesehatan reproduksi dan pencegahan pernikahan dini mengingat remaja juga berada di fase perkembangan seksual. Sebagai upaya dalam merespon hal tersebut, dilakukan kegiatan edukasi terkait gizi, body image, kesehatan reproduksi, dan pencegahan pernikahan dini. Pelaksanaan kegiatan edukasi dilakukan di SMAN 1 Pandeglang, Provinsi Banten, sebagai provinsi dengan prevalensi pernikahan dini dan stunting yang masih tinggi. Selain siswa, sasaran kegiatan ini adalah guru yang berperan sebagai fasilitator siswa. Tujuan kegiatan ini adalah meningkatkan pengetahuan siswa dan guru SMAN 1 Pandeglang terkait gizi, body image, kesehatan reproduksi, dan pencegahan pernikahan dini. Konsep kegiatan ini adalah training of trainer dengan metode ceramah dan diskusi interaktif. Sebagai upaya membangun program yang berkelanjutan, dibuat modul aktivitas serta poster yang menjadi panduan siswa dalam menerapkan materi edukasi yang sudah diberikan. Secara keseluruhan, terjadi peningkatan pengetahuan peserta kegiatan sebelum dan sesudah pemberian edukasi baik pada siswa (p=0,002) maupun guru (p=0,025). Secara rinci, terdapat perbedaan yang signifikan untuk tingkat pengetahuan gizi remaja (p=0,033), kesehatan reproduksi (p=0,001), dan pencegahan pernikahan dini (p=0,000) pada siswa antara sebelum dan sesudah mengikuti kegiatan. Sementara itu pada guru yang menjadi peserta kegiatan, perbedaan yang signifikan ditemukan pada tingkat pengetahuan gizi remaja (p=0,011) dan pencegahan pernikahan dini (p=0,026).

Abstract

         Meningkatnya angka kematian akibat penyakit kardiovaskular telah meningkatkan kesadaran masyarakat akan pentingnya menjalani gaya hidup sehat. Tren ini mendorong industri pangan untuk memproduksi makanan maupun minuman yang lebih sehat. Serbuk Minuman Tempe (SMT) merupakan salah satu produk olahan tempe yang berpotensi menurunkan kadar kolesterol dan menjaga tekanan darah tetap normal. Akan tetapi, studi terkait persepsi konsumen terhadap manfaat kesehatan SMT masih terbatas. Penelitian ini bertujuan untuk mengevaluasi persepsi konsumen terhadap SMT dengan metode survei menggunakan instrumen kuesioner. Data dianalisis secara kuantitatif menggunakan statistik deskriptif untuk menggambarkan karakteristik dan persepsi konsumen. Analisis chi-kuadrat dan korelasi Rank Spearman digunakan untuk mengidentifikasi hubungan antara karakteristik responden dan variabel penelitian. Hasil penelitian menunjukkan persepsi konsumen terhadap SMT sangat positif, ditandai dengantingginya minat konsumen untuk mencoba serta kesediaan mereka membayar lebih mahal untuk produk tersebut. Responden juga menyukai atribut rasa, aroma, tekstur, dan warna SMT, serta menilai sertifikasi produk sebagai aspek yang sangat penting. Karakteristik umur memiliki hubungan positif dengan minat mencoba produk SMT (Rs=0,171). Tingkat pendidikan berhubungan positif dengan preferensi tempat pembelian (Rs=0,171), sementara tingkat pengetahuan berhubungan positif dengan manfaat SMT (Rs=0,208). Selain itu, rentang pendapatan memiliki hubungan signifikan terhadap harga produk per kemasan (Rs=0,256). Hasil ini menunjukkan bahwa potensi pasar SMT yang menjanjikan sebagai produk kesehatan.             The increasing mortality rate due to cardiovascular disease has raised public awareness of the importance of living a healthy lifestyle. This trend has encouraged the food industry to produce healthier food and beverages. Tempe Drink Powder (TDP) is a processed tempe product that can potentially lower cholesterol levels and maintain normal blood pressure. However, studies on consumer perceptions of TDP’s health benefits remain limited. This study aimed to evaluate consumer perceptions of TDP using a survey method with a questionnaire instrument. Data were analyzed quantitatively using descriptive statistics to describe consumer characteristics and perceptions. Chi-square analysis and Spearman’s Rank correlation were used to identify relationships between respondent characteristics and research variables. The results showed that consumer perception of TDP were positive, marked by high consumer interest and willingness to pay more for the product. Respondents also liked TDP’s taste, aroma, texture, and color attributes and considered product certification a highly important aspect. Age characteristics positively correlated with interest in trying TDP products (Rs = 0.171). Educational level was positively related to purchase place preference (Rs=0.171), while knowledge level was positively related to perceived benefits of TDP (Rs=0.208). In addition, income range had a significant relationship with product price per pack (Rs=0.256). These results indicated that the TDP market potential is promising as a health product.

Abstract

Kebugaran jasmani perlu dimiliki oleh setiap atlet menyesuaikan dengan cabang olahraganya guna meningkatkan prestasi. Daya tahan otot merupakan salah satu komponen yang menunjang kebugaran jasmani. Tujuan penelitian adalah untuk mengetahui hubungan asupan energi dan protein, status gizi, status hidrasi, persentasi lemak tubuh dan massa otot terhadap daya tahan otot atlet pencak silat kategori tanding di Pusat Pelatihan Olahraga Pelajar DKI Jakarta. Penelitian ini menggunakan rancangan model penelitian cross sectional dengan jumlah sampel 12 orang. Sampel yang diambil menggunakan teknik total sampling. Analisis statistik yang digunakan dalam melihat hubungan antar variabel adalah uji Pearson dan uji Rank Spearman. Hasil penelitian menunjukkan tidak terdapat hubungan antara asupan energi (p=0,113) dan protein (p=0,310), status gizi (p=0,736), status hidrasi (p=0,232), persentasi lemak tubuh (p=0,153) dan massa otot (p=0,095) terhadap daya tahan otot atlet pencak silat kategori tanding di Pusat Pelatihan Olahraga Pelajar DKI Jakarta. Hasil penelitian menunjukkan bahwa tidak terdapat hubungan bermakna antara asupan energi dan protein, status gizi, status hidrasi, persentase lemak tubuh, serta massa otot terhadap daya tahan otot atlet pencak silat kategori tanding. Meskipun demikian, upaya peningkatan daya tahan otot tetap perlu dilakukan melalui pemenuhan asupan gizi yang sesuai, pemantauan komposisi tubuh, latihan yang konsisten, dan menjaga hidrasi dengan baik.

Abstract

Permasalahan obesitas, penyakit tidak menular, dan defisiensi mikronutrien di Indonesia terus meningkat sebagai konsekuensi dari pola konsumsi pangan yang kurang baik. Di sisi lain, sistem pangan merupakan salah satu kontributor utama dalam peningkatan emisi gas rumah kaca/greenhouse gas emissions (GHG-E) global, yaitu sebesar 33% dari total GHGG global. Perbaikan pola konsumsi masyarakat ke arah pola makan berkelanjutan diperlukan untuk kesehatan masyarakat dan kelestarian lingkungan. Penelitian ini bertujuan (1) Menganalisis perubahan pengetahuan dan sikap responden pre- dan post- pendidikan low carbon diet; serta (2) Menganalisis perubahan tingkat kecukupan gizi dan besarnya jejak karbon dari konsumsi responden pre- dan post- pendidikan low carbon diet. Metode yang digunakan adalah quasi-experimental wit pre- and post-test design melalui intervensi pendidikan dengan rancangan same subject design. Pendidikan low carbon diet pada mahasiswa IPB dapat meningkatkan pengetahuan dan sikap responden secara signifikan. Selanjutnya, terdapat penurunan jejak karbon responden sebesar 23,8% setelah intervensi. Selain itu, pendidikan low carbon diet tidak menyebabkan perbedaan signifikan pada tingkat kecukupan energi dan zat gizi makro responden. Dengan demikian, pola makan rendah karbon berpotensi untuk dikembangkan sebagai suatu pendekatan baru dalam upaya penanganan perubahan iklim di Indonesia.

Abstract

Rapid growth and development occur in school-age children. To deal with this, efforts that improve fish consumption in the community are expected to increase children's nutritional intake. In connection with this, this study aimed to analyze the relationship between socio-economic status and fish consumption with nutritional status of children in Sukajaya village. The design of this study was a cross-sectional study with 61 subjects who were selected by purposive sampling. This study was conducted in December-January 2021 at Sukajaya village in Lampung. There was no significant correlation between the contribution of fish protein to the level of protein adequacy (p>0.05). Nutritional status had no relationship with the amount of fish consumption (p>0.05). The results revealed that the relationship between fish consumption and socio-economic characteristics showed no significant relationship (p>0.05) between father's education, parent income, and family size. However, there was a significant relationship between fish consumption and maternal education (p<0.05). There was no significant relationship between nutritional status and socio-economic characteristics (p>0.05).

Abstract

Stunting has a detrimental effect on the development of the next generation of Indonesians and currently, it is still a serious health concern in Indonesia. One of the ways the stunting intervention program is implemented holistically up to the village/subdistrict level is by designating a place that is focused on stunting (lokus). The purpose of this study is to examine trends in stunting instances at both stunting lokus and non-lokus in Bogor City. The study used descriptive analysis models with secondary data from the 2021–2023 results of the Health Office about child under 59 months old body height/length database. The study's findings indicated that the prevalence of stunting has declined in 61 subdistricts, which are distributed across 8 locus subdistricts with an average decrease of 5.74% and 53 non-locus subdistricts with an average decreased of 3.81%. Meanwhile, the prevalence has increase in 7 non-locus subdistricts with an average increase of 1.12%.

Abstract

The aim of this study was to determine the effect of leaf maturity stage and extraction solvents on Total Phenolic Content (TPC), quercetin, and antioxidant activity of gandaria leaves as well as the relationship of TPC and quercetin content to antioxidant activity. In this study, leaves were extracted using maceration method with three different solvents (96% ethanol, ethyl acetate, and hexane) followed by evaporation using rotary evaporator to obtain Crude Extracts (CE). Tender and mature gandaria leaves from Indonesian Institute of Science were examined for TPC and quercetin content. Measurement of antioxidant activity were performed by Ferric Reducing Antioxidant Power (FRAP) method. The antioxidant compound analysis indicated that hexane extract of mature gandaria leaves contained the highest TPC and quercetin content (30.84±0.54 mg GAE/g and 4.36±0.23 mg QE/g, respectively). Meanwhile, the ethanol extract of mature gandaria leaves demonstrated the highest reducing power (5.62±0.38 mg FeSO4 equivalent/g). These findings showed positive correlation between TPC and reducing power as well as quercetin and reducing power from gandaria leaf extracts depending on their maturity stage and extraction solvents. In addition, mature gandaria leaves had better extraction yield, making it potential for development of functional food.

Abstract

This study was conducted to observe the relationship between consumers’ knowledge on nutrition labels and the purchasing behavior for processed food products among Indonesian consumers. A crosssectional study was conducted in August‒September 2018 in five different cities of three provinces (Jakarta, Bogor, Depok, Tangerang, and Bekasi). Data were obtained from 400 adult consumers by self-administered questionnaires. The results showed that almost 70% of consumers in Indonesia check food labels; however, from that number only 37.5% paid attention to the nutrition label of a food product prior to making a purchase decision; this was most probably due to their knowledge on nutrition labels that was still poor, as shown by the mean score of 7.7 out of 14 questions (55%). In terms of food groups, milk and dairy products were deemed important by the consumers and the nutrition labels were often checked. When it comes to making a purchase decision, almost all of the consumers (96.0%) had decided to buy food products with nutrition labels as compared to those without. Furthermore, when compared to similar products also bearing nutrition labels, consumers deemed the claims of low fat (28.7%) and low sugar (22.6%) as a sign that the products are healthier and have a better nutrition profile. Knowledge on nutrition labels (OR=1.139; 95% CI:1.016‒1.276; p=0.025) and purchase decision on products with nutrition labels (OR=3.426; 95% CI:1.220‒9.623; p=0.019) were significantly associated with purchase decision for healthier processed food. This study has shown the importance of increasing consumers’ knowledge on nutrition labels in order to achieve a larger impact on food selection, nutrition, and health.

Abstract

This research aimed to analyze the potency of purple okra-based products in improving the antioxidant status of healthy adults. Thirty adults with high body fat percentages were allocated into three groups: the first group was treated with 100 g of purple okra pudding/day, the second group was provided with a purple okra extract supplement that contained 3.80 g of extract/day, and the third group was a control group. The intervention was carried out for 28 days. All subjects were exposed to nutrition education, and data on their characteristics, food intake, and physical activity level were collected. The results showed that purple okra pudding and supplement had antioxidant activity of 0.39 and 455.39 mg AEAC/g extract, IC50 of 543.79 and 71.78 ppm, and total phenol of 6.21 and 24.49 mg GAE/g extract, respectively. There were significant differences among subject groups in energy, protein, and fat intake as well as physical activity level. The group treated with purple okra pudding showed a significantly higher ΔSOD after the intervention, most probably due to the role of antioxidants contained in purple okra in upregulating antioxidant defense. In contrary, there was a declining trend of ΔSOD in the group treated with purple okra extract supplement. The different effects observed between the two groups might be due to the different phenol contents between the two intervention products. This study showed that purple okra has the potential as a functional food and health supplement in improving the antioxidant status of healthy adults with high body fat percentages as indicated by a higher change of SOD level (0.08 u/mL) in comparison to the control (-0.07 u/mL).
