Abstract

Teaching Factory Nutrition Care Center (NCC) is a synergistic product of the Jember State Polytechnic and the world of business and industry (DUDI). The development of NCC supports student practice learning in conducting nutrition interventions. The research aims to develop an efficient and attractive NCC-promotive educational media. This research is a Research and Development (R&D) with the approach that is used design thinking. It requires a designer to be able to analyze a problem, express creative ideas, experiment in making a prototype, to collect the proper feedback regarding the media created. The study results show that the audio-visual media that will be developed are the NCC mascot, profile videos, and nutrition education videos. Through the ideate and prototype stages are an egg mascot called Si Nucca, an acronym for the Nutrition Care Center. The character of eggs describes foods with high nutritional value and are affordable by the community. The results of media validation by the material and media validators got good results ( score of 4.7). Acceptance test results show a score of 4.47 with a good interpretation on the aspects of effectiveness, attractiveness and efficiency. The conclusion is that the audio-visual media that has been developed is feasible to be tested on the public.

Abstract

Kukis adalah salah satu jenis makanan ringan/camilan yang sangat digemari masyarakat baik di perkotaan maupun di pedesaan. Beberapa bahan alternatif yang digunakan adalah bahan pangan lokal, yakni tepung singkong dan tepung sagu. Kedua bahan tersebut memiliki potensi sebagai bahan substitusi dalam pembuatan kukis. Bentuk substitusi kedua bahan dalam pembuatan kukis yakni sebagai tepung. Uji mutu hedonik meliputi warna coklat, aroma, rasa manis, rasa enak, dan tekstur perlu dilakukan pada pembuatan kukis. Penelitian ini bertujuan mengetahui uji mutu hedonik dan hedonik kukis sagu dan kukis singkong. Penelitian ini dengan membandingkan hasil formula terbaik antara dua jenis produk kukis melaui uji organoleptik. Uji organoleptik yang menggunakan metode preference test dengan mengevaluasi kesukaan dan kesan mutu produk oleh panelis. Jenis skala yang digunakan adalah skala likert. Hasil uji organoleptik mutu hedonik pada kukis sagu menunjukkan warna yang tampak adalah warna krem tua, aroma harum, rasa enak dan agak gurih serta tekstur renyah. Hasil uji hedonik pada kukis sagu menunjukkan panelis agak suka terhadap warna, aroma, rasa dan tekstur, penilaian keseluruhan secara hedonik agak suka. Sedangkan hasil uji mutu hedonik pada kukis singkong menunjukkan warna pekat, aroma harum, rasa agak manis dan enak serta tekstur renyah. Hasil uji hedonik menunjukkan panelis agak suka terhadap warna, aroma, rasa, dan tekstur, penilaian keseluruhan secara hedonik suka.Kesimpulan penelitian ini kukis singkong secara keseluruh lebih banyak disukai dibandingkan kukis singkong.

Abstract

Introduction: Adult obesity is a major nutritional concern, with a national prevalence of 21.8% and 22.4% in East Java Province and 19.9% in Pasuruan City, respectively. Consumption of energy- and protein-dense foods, combined with low physical activity and urban lifestyle patterns, were the main contributing factors. This study aimed to examine the association between energy density, protein density, and obesity among adults in the Tembokrejo Sub-District of Pasuruan City.Methods: This was an analytical observational study with a cross-sectional design involving 192 adult respondents selected through simple random sampling. The researchers and enumerators visited one of the residents houses, where several respondents were located within the same neighborhood unit. Energy and protein density were assessed using the 2 days of 24-h food recall method, while obesity was determined based on Body Mass Index (BMI) calculated from measured height and weight. Data analysis was conducted using the chi-square test.Results: There were 68.2% of women respondents in the study. About a third were aged 19.29 years, 30-50 years and > 50 years, respectively. Individuals consuming high-energy-dense foods were 14 times more likely to develop obesity (p=0.000), whereas those consuming high-protein-dense foods are 2 times more likely to develop obesity (p=0.001).Conclusion: Energy and protein densed food consumptions associated with obesity among adults in Tembokrejo Sub-District, Pasuruan City. It is recommended that the community regulates the consumption of high-energy and protein-dense foods as a preventive measure against obesity.

Abstract

The Nutrition Care Center (NCC) is a Politeknik Negeri Jember Teaching Factory (TEFA) that provides nutritional consultation services to clients. NCC aims to provide nutritional services to Polije employees and the wider community. However, NCC does not yet has an online nutrition consultation system that supports services for clients. The aim of this research was to design and implement an online nutrition consultation system (telenutrition) at NCC Politeknik Negeri Jember. The method used was Scrum which has the stages of user stories, product backlog, sprint planning, daily scrum (sprint execution), sprint review, sprint retrospective. Research informants consisted of the Head of NCC and NCC consultants for identifying user needs. The result showed that telenutrition facilitated clients to get services. Meanwhile, telenutrition also facilitated nutritionists to educate and monitor client nutrition. It can be concluded that the system has been designed and is ready to be implemented at NCC.

Abstract

Gluten, the primary protein in wheat and its derivatives, and lactose, the natural sugar in milk and dairy products, may trigger adverse health effects such as bloating, diarrhea, and metabolic disturbances in sensitive individuals. Gluten-free dietary interventions have also been reported as supportive therapy for certain health conditions, including autism. This study aimed to analyze consumer profiles, identify key preferences, and assess the potential local market demand for gluten- and lactose-free (GFLF) cookies. A descriptive observational study applying descriptive market analysis rather than predictive modeling was conducted among the general population in Jember, Indonesia. Using accidental sampling, data were collected from 120 respondents between July and August 2025 through an online questionnaire (Google Forms). The instrument assessed demographic characteristics, consumer awareness, product preferences, and purchase intentions. Data were analyzed descriptively using frequency distribution tables. The majority of respondents were young adults with income levels below the regional minimum wage. Approximately 78.4% expressed interest in GFLF cookies, and 65% indicated willingness to purchase them despite higher prices compared with conventional cookies. The main motivations for purchase were perceived health benefits (50%) and curiosity or willingness to try new products (30%). The acceptable price range was IDR 15,000–25,000 per 100 g. Estimated market demand ranged from 400 to 1,200 packages per month. These findings indicate a promising market opportunity for GFLF cookies in Jember, supported by increasing consumer awareness and interest in healthier food alternatives. Product development strategies should prioritize affordability, sensory quality, and consumer education to facilitate product downstreaming, commercialization, and sustainable market adoption of functional food products.

Abstract

Introduction: Hypertension is often referred to as a silent killer because it generally presents without any symptoms or complaints. The number of hypertension cases in Sumenep Regency increased from 70,870 in 2022 to 103,873 in 2023. Central obesity and fiber intake play important roles in hypertension. This study aimed to analyze the association between dietary fiber intake and central obesity with the incidence of hypertension in teachers.Methods: This analytical study used a cross-sectional design. A random sampling method was used to select 68 respondents for this study. A digital sphygmomanometer was used to monitor blood pressure, and a measuring tape was used to measure waist circumference to assess central obesity. Dietary fiber consumption was evaluated using a Semi-Quantitative Food Frequency Questionnaire. Chi-square test was used for statistical analysis.Results: Most respondents were mostly between 25-44 years, were non-smokers, and had no family history of hypertension. Sodium intake was mostly higher than the recommended level, and fiber intake was mostly inadequate. Most of the subjects had central obesity and normotension. The study showed no association between dietary fiber intake and the incidence of hypertension among the teachers (p = 0.248).  There was ans association between central obesity and the incidence of hypertension among teachers (p = 0.006), in which the ones wo had central obesity tended to had hypertension compared to the ones who had no central obesity.Conclusion: Central obesity is associated with hypertension among high school teachers in Sumenep.
