Abstract

Many people favor quail eggs because they contain good nutrients, and are easy to obtain at an affordable price. This research was conducted to study the effect of temperature and storage time on the quality of quail eggs. The samples in this study were 66 quail eggs which were divided into two groups, the first group (33 eggs) was stored at 27oC, and the second group (33 eggs) was kept at 5oC. This study used a completely randomized design with two factors, temperature and storage time. The observation was carried out on days 1, 7, 13, 19, 25, and 31 with triplicates. The parameters used in this study were air sac height, egg yolk index, white egg index, and Haugh Unit (HU). This study showed that temperature and storage time affected the quality of quail eggs. Eggs stored at 27oC showed a quality decrease indicated by higher air sac position, and lower egg yolk index and egg white index. Eggs kept at 5oC showed no significant degradation. The HU for both groups ranged between 76-81 which implied that the eggs had AA quality even after 31 days of storage.

Abstract

This study aims to determine the quality of eggs from Farm, distributors and retail stores. The sample used is 66 eggs with details taken randomly at the farm is 9 eggs, distributors is 27 eggs and retail stores is 30 eggs. The observed egg quality is the value of Haugh unit, Yolk Index and Albumin Index. The data obtained were analyzed descriptively. The results showed that the average Haugh value of egg units in farms, distributors and retail stores were 91, 72 and 7. The Yolk Index values for eggs in farms, distributors and retail stores were 0.45, 0.35. and 0.36. Meanwhile, the albumin index of eggs in farms, distributors and retail stores was 0.074, 0.050 and 0.046. Egg quality in farms, distributors and retail stores is in the category (grade) AA (HU value 72) and A (HU value 60-72). Based on the results of this study, it can be concluded that the quality of eggs traded in Banda Aceh and its surroundings is very good (included in the AA and A grade categories).

Abstract

Shrimp is an easily polluted material, so it requires good handling. Contamination can occur during harvest, handling, or transportation. This study aims to detect Escherichia coli contamination in vaname shrimp sold at TPI Lampulo Banda Aceh. A total of 10 samples of vaname shrimp were obtained from 10 merchants at TPI Lampulo. The research method used is observational, and the data analysis is done descriptively. The detection of E. coli contamination was carried out by the total plate count (TPC) test method. Based on the study results, two of the 10 samples of vaname shrimp merchant detected E. coli bacterial contamination, namely the results of sample 01 merchant indicated the number of TPC 2x102 CFU/g and in 09 merchants indicated the number of TPC 11x101 CFU/g. The TPC results were indicated by the growth of E. coli colonies on eosin methylene blue agar (EMBA) media after incubation for 24 hours at 37 ÂșC. The number of the two detected positive samples showed less than 1x103 CFU/g by the provisions of SNI 2332.3:2015. Thus, it can be concluded that E. coli contamination was detected in vaname shrimp sold by the merchant at TPI Lampulo but did not exceed the SNI threshold, so it was safe for consumption.
