Abstract

With the increasing scientific evidence of the contribution of GM to health and disease, various approaches are sought to maintain, restore or modulate the groups of beneficial bacteria in the digestive tract. Those approaches are mainly performed through three different ways including administration of probiotics, prebiotics, and fecal microbial transplantation. The probiotic approach is commonly attained through the consumption of live bacteria which can improve the health of the host, while prebiotic approach is the consumption of food ingredients or food components that increase the growth of beneficial bacteria inthe digestive tract. Meanwhile, fecal microbial transplantation (FMT) has been beginning to perform under certain conditions in which fecalmicrobiota is introduced into individuals with certain disease and has been showing encouraging results. Even though the application of probiotics (bacteriotherapy) in maintaining or modulating of GM yet to fully recognized by some countries, the approach has showed positive impact on humanhealth demonstrated in certain diseases prevention. Similar evidence was obtained from studies that revealed the beneficial outcomes of prebiotic and FMT intervention for human GM, which consequently improve human health. Therefore, it is noticeable that the composition of GM is a promising aspect which may need to be considered in developing an innovative intervention program to alleviate certain public health problem.

Abstract

Goat milk is produced by Tunas Mekar Goat farmer grout located at Sepang Village, Busungbisu, Buleleng. This product is highly potent to improve the income of the local farmers. Nevertheless, the use of goat milk as raw material for foods products is still limited. This program aimed to find out possible utilization of goat milk produced by local farmers at Sepang Village for the production varies of food products. Goat odors are the main problem in goat milk-based food products especially goat milk set-yogurt. Thus, the production of drink yogurt with the addition of pineapple juice is a promising technology to overcome goat odors in goat milk yogurt. This program was undertaken through sequential steps such as knowledge building of the housewives (the target population in this program) followed by training in yogurt making, drink yogurt making as well as product packaging and labeling. All programs were performed well as indicated by the active involvement of the participants. Throughout this program, the goat milk farmers group and housewives are now capable to produce drink yogurt to improve the value-added of their local produce goat milk, which possibly increase their economic income. Abstract

Background and purpose: The reoccurrence of food-borne parasitic outbreaks may be related to contamination by pathogenic strains of E.coli. As lawar (Balinese food) is a favorite of locals and tourists, there needs to be an examination into the presence of pathogenic strains of E.coli in lawar and its relation to hygiene and sanitation standards at food stalls in Kuta. Methods: Cross-sectional analytical study was conducted on 43 stalls that selling white lawar in North Kuta, Kuta and South Kuta. Observations and interviews to sellers were conducted to assess the personal hygiene practices, equipment/stall sanitation and sanitary facilities. Lawar samples were tested in the laboratory. Indicators of the food quality was the number of bacterial colonies with Total Plate Count (TPC), the presence of E.coli with fertilization techniques and the detection of E.coli virulence genes by PCR. Data were analyzed using univariate, bivariate and multivariate analysis. Results: As many as 44.2% of lawar contained bacterial colony >106 CFU/g; 46.5% of lawar positively contained E.coli, and 20% of those positive E.coli had the similar size band of Shiga Like Toxin Type I (SLT-I). The sellers with poor hygiene had higher risks of the presence of E.coli in the lawar compared with those having higher hygiene standards (adjusted OR=7.29; 95% CI 1.473-36.088). Conclusion: Lawar quality in Kuta was poor, as were hygiene practices and seller/stall sanitation.

Abstract

Tamarillo (Solanum betaceum Cav.) is a tropical fruit that has the potential to be developed into functional food in the form of fruit juice containing probiotics. In order to develop the probiotic-containing product, the suitability of fruit juice to support the growth of probiotics and the viability of probiotics during the fermentation and storage processes are the prime concerns. Therefore, this study aims to determine the viability of the local probiotic Lacticaseibacillus rhamnosus SKG34 and the characteristics of fermented Tamarillo juice during storage at 4oC. Fermented tamarillo juice containing L. rhamnosus SKG34 is produced by fermenting Tamarillo juice with L. rhamnosus SKG34 and then stored at a temperature of ±4oC for 30 days. Population of L. rhamnosus SKG34, total sugar, total acid, pH, vitamin C, antioxidant capacity, and sensory characteristics were determined at 0, 5, 10, 15, 20, 25, and 30 days. The results showed that the probiotic L. rhamnosus SKG34 in fermented tamarillo juice was able to survive for 30 days with a population of 2.58 x 1010 CFU/ml from the initial population of 9.54 x 1010 CFU/ml. However, considering that chemical characteristics and other functional properties also influence the acceptability of fermented tamarillo juice, the optimal storage time is 20 days at 4oC. Under this condition, the fermented tamarillo juice containing 3.6 x 1010 CFU/ ml of L. rhamnosus SKG34; 11.23% sugars; total acid 0.98% acids; pH 3.44; 31.76 mg/100 ml vitamin C; and 4,725 GAEC/100 ml of antioxidant capacity, with favorable sensory levels.

Abstract

BACKGROUND: Indonesian indigenous probiotics have been found to improve disruptions of tight junctions in the intestinal epithelium and reduce total cholesterol levels. Improvement in the tight junction could decrease the LPS level and further reduce the blood glucose and insulin resistance. The effects of indigenous Indonesian Lacticaseibacillus rhamnosus (Lr) probiotics on glucose metabolism and inflammatory marker levels in diabetic rats was studied to find if these probiotics are suitable as potential supplementation treatment in diabetes.METHODS: Sixteen female Wistar rats were induced with diabetes using streptozotocin and fed a high-fat, high-sucrose diet. The rats were separated into four groups: LrFBB81, LrFSMM22, LrSKG34, and a control group. Each intervention group got daily dosages of 1 mL probiotic suspensions containing 109 CFU/mL cells given orally for 14 days, whereas the control group received saline. Fasting blood glucose (FBG), insulin, homeostatic model assessment for insulin resistance (HOMA-IR), lipopolysaccharide (LPS), and body weight were evaluated.RESULTS: FBG was significantly reduced in LrFSMM22 group (Δ=120.75 mg/dL, p=0.035), while significant reduction was not observed from LrFBB81, LrSKG34, and control groups. No statistically significant differences were found in HOMA-IR before and after intervention in all groups, but Δ HOMA-IR from LrFSMM22 group was reduced more than the control group (-3.90 vs. 2.02, p=0.028). All groups showed no significant differences in LPS level, meanwhile statistically significant reduction in body weight was observed in all probiotic groups, LrFBB81 (Δ=-15.7 gram, p=0.040), LrSKG34 (Δ= -20.43 gram, p=0.006), and LrFSMM22 groups (Δ=-18.33 gram, p=0.037).CONCLUSION: The administration of L. rhamnosus could improve FBG, HOMA-IR, and reduce body weight without suppressing the LPS.KEYWORDS: diabetes, probiotic, Lacticaseibacillus rhamnosus, fasting blood glucose, HOMA-IR, lipopolysaccharide, insulin resistance

Abstract

Looking at the environmental and health problems caused by the irregular disposal of hazardous and toxic waste, it is important to manage B3 waste to prevent and overcome environmental pollution or damage caused by B3 waste and to restore the quality of the polluted environment so that it is following function back. In this case, every activity related to B3 must pay attention to environmental aspects and maintain environmental quality in its original condition and prevent disease. The main objective of this review is to identify and understand the impact of hazardous and toxic waste management. his review was conducted based on sources from Google Scholar, Pubmed, Emerald Insight, DOAJ with the types of journals published such as ELSEVIER, IJSDGE, PROCEEDINGS, ICCEM, HINDAWI, JPHE, JSTFT, JET, AJEST, JCH, WMR, BMC Health Services research and two reports from WHO (World Health Organization). Furthermore, screening of titles, abstracts, and content selection or content according to inclusion and exclusion was carried out which obtained 14 articles that were analyzed further. B3 waste management that enables sorting, storage, transportation, and processing at the final waste disposal site is one of the important strategies in B3 waste management.
