Abstract

The prevalence of pregnant women suffering from chronic energy deficiency (CED) in Indonesia remains a public health issue. Pregnant women experiencing CED may face complication related to pregnancy and are at risk of giving birth to low birth weight (LBW) infants. LBW is one of the risk factors for children to experience stunting. The protein needs of pregnant women can be fulfilled by utilizing plant-based food sources. Plant-based food have the potential to be used as additional protein sources. This research aims to develop a crispy brownie product using soybean flour and red bean flour as a source of protein food. The research design used a Complete Randomized Design (CRD) with 4 treatments and 2 replications. The treatments applied were the use of a base material of soybean flour and red bean flour with F1 (90%:10%), F2 (80%:20%), F3 (70%:30%), F4 (60%:40%). The analyses conducted were organoleptic characteristics, chemical analysis, nutrient contribution and production costs. Data analysis used the Kruskal wallis test and the Man-whitney follow up test. The hedonic quality results significantly differ in the color and texture parameters. Meanwhile, the hedonic test significantly differs in the color parameter. F2 is designated as the selected formula. The selected brownies crispy formula contains 4.3% moinsture content; 3,9% ash content; 26.5% protein; 39,3% fat; 30,2% carbohydrates. One serving of brownies crispy contributes 406 kcal of energy. Brownies crispy made from soy flour and selected red bean flour meet the requirements to claim as a source of protein. It is hoped that brownies crispy made from soybean flour and redbean flour can serve as a supplementary food source of protein for pregnant women

Abstract

Background: Anemia is a medical condition characterized by low hemoglobin levels in the blood. It remains a nutritional problem among adolescents, particularly among teenage girls. This condition can lead to decreased immunity, concentration issues in learning, and academic performance. One of the preventive measures against anemia is nutrition education that is engaging and tailored to the characteristics of adolescents, which can enhance knowledge and attitudes as a means of preventing anemia. Objective: This study aims to analyze the effect of nutrition education on the knowledge and attitudes of teenage girls regarding anemia using lecture and game media. Methods: The design used is a quasi-experimental Non-Equivalent Control Group Design involving 48 respondents from SMPN 15 Kota Cirebon, divided into two groups: the lecture education group and the game group. The variables analyzed include respondent characteristics, nutritional status, knowledge, and attitudes. Data analysis was performed using the Mann-Whitney test to examine differences between groups and the Wilcoxon test to assess differences before and after the education intervention. Results: There was a significant difference in knowledge scores between the lecture education group and the game group after the educational activities (p = 0.000). The increase in knowledge scores in the lecture group was significantly higher compared to the game group (p = 0.005). Additionally, this study showed no significant difference in attitudes between the two groups. Conclusion: Nutrition education can significantly improve knowledge about anemia among adolescents. The use of lecture media in this study was found to be more effective than game media.

Abstract

The prevalence of adolescent malnutrition in Indonesia is still high, namely stunting (23,7-24,1%), overweight/obesity (12,1-16,2%), and anemia (16,2%). One contributing factor is the consumption of unhealthy foods. This study aimed to develop a multigrain snack bar by adding tempeh flour and Spirulina, which provide protein, iron, and fiber, to prevent malnutrition. This study was conducted from March to May 2025 using a completely randomized design with tempeh flour and spirulina powder proportions of 95:5 (F1), 90:10 (F2), and 85:15 (F3). The product formulation was performed at the Nutrition Laboratory of Universitas Muhammadiyah Cirebon, Cirebon. The analysis included organoleptic (30 panelists), nutritional content, formula selection, and nutritional contribution analyses. Data were analyzed using ANOVA with Duncan’s test. There were significant differences in color, aroma, taste, overall, ash, fat, protein, carbohydrate, and iron content among the formulations (p<0.05). F1 was the optimal formulation, with 17,63% protein, 3,24 mg/100 g iron, and 3,86% fiber. One serving (20 g) contributed 4-5% of the energy requirement for adolescents (13-18 years). In conclusion, F1 was the most preferred and provided essential nutrients to meet the needs of adolescents. This study is novel in that it develops a product from tempeh and Spirulina as a potential innovative solution to address nutritional problems in adolescents.

Abstract

Introduction: Sleep disturbances are strongly associated with poor blood pressure control and can worsen the clinical outcomes of hypertensive patients. This study aimed to analyze the application of the Indonesian Nursing Diagnosis Standards (Standar Diagnosis Keperawatan Indonesia or SDKI) in identifying Sleep Pattern Disturbance among hypertensive patients as documented by nursing students. Methods: This descriptive retrospective study utilized secondary data from 169 final year nursing student report’s archived from the year 2023 to 2024. Data were derived from Diploma Nursing Program (D-III), Faculty of Nursing, Universitas Jember, Indonesia. Data were extracted and analyzed using descriptive statistics. Results: The results showed that all nine cases involved patients over 50 years of age, predominantly women (8 out of 9). The most frequent symptoms recorded were difficulty initiating or maintaining sleep (100%), non-restorative sleep (78%), changes in sleep pattern (78%), frequent awakenings (56%), and feeling unrested (56%). Poor sleep control was the primary contributing factor (78%), followed by environmental factors such as noise and unpleasant odors (11% each). All reports consistently documented Sleep Pattern Disturbance as the sole nursing diagnosis using SDKI. Conclusions: Nursing students have begun to apply standardized terminology; however, the limited range of diagnoses and contributing factors suggests a need to strengthen supervision, comprehensive assessment, and diagnostic reasoning skills in nursing education. Future studies with larger samples and primary data are recommended to explore further the integration of SDKI with interventions (SIKI) and outcomes (SLKI).
