Abstract

The purpose of this study was to determine effect of lime concentration in the gelatin manufacture from goat skins in terms of physico-chemical and to determine the best lime concentration that can be used for gelatin manufacture from goat skin. The materials used were 5 sheets of Ettawah crossbred goat skin aged 1.5-5 years and lime (Ca(OH)2). The results showed that different lime concentration in the curing process during the manufacture of goat skin gelatin had no effect (P>0.05) on the yield, viscosity, pH, water content, protein content and fat content. The best treatment was the use of 5% of lime concentration which resulted 12.82% of yield, 3.67 cP of viscosity, 2.7 of pH, 9.29% of water content, 73.58% of protein content and 1.77% of fat content.   Keywords: Gelatin, goat skin

Abstract

ABSTRACT: Hide a waste product of animal slaughter house is still can be utilized as food in the form of cracker. Cattle, buffalo, rabbit, chicken shank and fish skin can be used of raw materials for cracker production.  This process include hide selection, washing, immersing, liming, deliming, boiling, cutting, immersing in sauce, drying and frying.  In Indonesia, the skin cracker industriesare consentralised in certain area of west, central and east java provinces where Sumatra skin cracker are popular knows as “ kerupuk jangek”. Although skin cracker have a high protein content, however its quality are low comparedto other meat processed products.  The most dominant amino acid in this product is glycine. Some important issues such as it is not recommended for people suffering uric acid, addition of harmfull additives i.e. formalin and borax, containg chrome which originated from hide prosessing industry and unreligion system of slaughtering (is not halal). Abstract

Abstract : The objective of current research was to find out the precise combination between concentrations of vegetable oils (65%; 70%; 75%) and chicken egg of local chicken (6%; 9% and 12%) which produced mayonnaise with a good quality of physico-chemical properties. The results showed that the combination of concentration of vegetable oils and chicken egg of local chicken gave the difference significant on viscosity, moisture content and protein, however, has no effect on pH. Abstract

Chicken patties are one of the processed products that have a low fiber content and pale color, and are easily rancid because there are no added preservatives. This study aimed to determine the physicochemical and microstructural qualities of chicken patties using red beet peel flour (RBPF) as a source of fiber to increase the added value of RBPF. This research was conducted using experimental laboratory methods with a completely randomized design with 4 treatments and 4 replications. Treatment without the use of RBPF as a control (CP0), 1% (CP1), 2% (CP2), and 3% (CP3) used beetroot flour of the weight of material used. The variables measured were carbohydrates, texture, pH, fiber, organoleptic quality, and microstructure. Analysis of variance (ANOVA) was used as data analysis if there were differences in effect between the treatments, followed by Duncan's Multiple Range Test (DMRT). Using RBPF in chicken patties can improve the quality of chicken patties. The higher the use of RBPF, the higher the carbohydrate content, texture, and fiber, and lowered the pH of the patties. Panelists gave the highest rating score the higher the addition of RBPF in terms of color, taste, aroma, texture, and acceptability. The addition of RBPF with the best treatment was 3%. Based on the physicochemical quality, organoleptic quality, and microstructure, those addition has excellent nutritional content and RBPF which can be used to improve the texture of processed food products.

Abstract

Rambak crackers are made from cattle hides through the process of cleaning, threshing the hair and boiling. The research objective was to determine the physicochemical qualities of fresh cowhide, boiled cowhide, dried rambak crackers (krecek) and fried rambak crackers from 3 drying methods, namely, sun (M), oven (O), and sun oven (MO) drying methods. The material used was local cowhides from the slaughterhouse in Malang city. This experimental and counting method used a randomized block design with 3 treatments and 6 replications. The descriptive results showed that the average protein content in fresh cowhide, cecek and krecek was 36.18-84.97%, and the average ash content was 0.14-0.32%. The experimental results revealed k values of 170.40-217.54%, moisture contents of 16.55-18.22%, Aw values of 0.68-0.73, L values of 37.56-38.83, a* values of 0.58-1.26, and b* values of 6-6.98. The average fat content of the fried rambak crackers after sun, oven and sun oven drying was 5.83-29.06%, the average moisture content was 3.77-5.05%, the average aroma was 3.9-4.6, the average shape was 3.1-3.5, and the average preference was 2.5-3.3. In conclusion, 3 drying methods based on physicochemical and organoleptic properties can be applied and are preferred by panelists because drying using the oven method also has potential for cowhide crackers.
