Abstract

Tomato sauce is a popular processed food product often added with preservatives to extend shelf life. Sodium benzoate is one of the most commonly used preservatives; however, its use must comply with the maximum limit set by BPOM, which is 1000 mg/kg. Excessive intake may cause health problems such as carcinogenic benzene formation and nervous system disorders. This study aimed to identify the sodium benzoate content in tomato sauces sold in Dompu Regency and evaluate their compliance with food safety standards. A descriptive quantitative method with a cross-sectional approach was applied. Five brands of tomato sauce were randomly selected from markets and minimarkets, then analyzed at the Toxicology Laboratory of Universitas ‘Aisyiyah Yogyakarta using UV-Vis spectrophotometry. The results showed sodium benzoate levels of 69.25 mg/kg in sample A, 1,653 mg/kg in DB, 263.7 mg/kg in DM, 166.5 mg/kg in JT, and 1,028 mg/kg in ML. Two of the five samples (DB and ML) exceeded the maximum permissible limit. These findings indicate that some tomato sauce products in Dompu Regency do not meet food safety standards, highlighting the need for stricter supervision to protect consumers.

Abstract

Latar belakang.

Abstract

Background: Stunting and obesity remain major nutritional challenges among Indonesian children and adolescents, including Yogyakarta. While stunting reflects chronic undernutrition, prevalence of obesity during adolescence is increasing and is associated with metabolic disorders. The relationship between lipid profiles, total body fat, and nutritional status during adolescence require further investigation. Objectives: To analyze the relationships between total cholesterol levels, total body fat, and nutritional status based on BMI-for-age z-score (BAZ) and height-for-age z-score (HAZ) among early adolescents in Yogyakarta City. Methods: This cross-sectional study involved 116 elementary school students from Muhammadiyah elementary schools in Yogyakarta City selected through cluster-random sampling. Anthropometric measurements were obtained using a microtoise and Body Impedance Analysis (BIA), while biochemical parameters were assessed using Glucose, Cholesterol, and Uric Acid (GCU) meter. Data were analyzed using Pearson and Spearman correlation tests based on data normality. Results: There was no significant relationship between total cholesterol and nutritional status (BAZ or HAZ) in either sex. However, total body fat was significantly associated with BAZ in both males and females (r=0.67 and r=0.79, respectively; p-value<0.05). A significant association was also observed between total body fat and HAZ in males (r=-0.29, p-value=0.026). Additionally, BAZ and HAZ were significantly correlated (r=0.19, p-value=0.039), suggesting a link between stunting and obesity indicators. Conclusions: Total body fat is strongly associated with overweight and obesity (BAZ) in both males and females; and weakly associated with stunting (HAZ) in boys. Total cholesterol, however, is not a sensitive marker of nutritional status in this population.

Abstract

Miana leaves (Coleus scutellarioides (L.) Benth) are known to contain anthocyanin pigments with a reddish-purple color that have potential as natural dyes. Anthocyanins are organic compounds soluble in polar solvents, capable of producing varied colors depending on pH, and commonly found in leaves and fruits. This study aimed to evaluate the quality of miana leaf extract as an alternative stain to replace gentian violet in the staining of Propionibacterium acne preparations. This experimental research applied different concentration ratios of miana leaf extract and distilled water, namely 1:1, 1:2, and 1:3. The results showed that the 1:3 concentration produced stronger color intensity and was closest to the positive control using gentian violet. Meanwhile, the 1:1 and 1:2 concentrations were less optimal due to weaker intensity, making bacterial morphology details less visible. Statistical analysis with the Kruskal-Wallis test confirmed significant differences among the groups. This study concludes that miana leaf extract, particularly at a 1:3 ratio, is effective as a natural alternative dye in Gram staining, offering a safer and more environmentally friendly substitute for synthetic stains such as gentian violet, which are known to have negative impacts on both health and the environment.
