Abstract

Kota Ambon memiliki kawasan lindung yang ditetapkan untuk melindungi kelestarian lingkungan dan sangat sensitif terhadap dampak negatif untuk memenuhi kebutuhan manusia dalam penggunaan lahan. Penelitian ini bertujuan untuk menganalisis pola pengawasan kawasan lindung dalam bentuk data perubahan penutupan lahan pada 50 wilayah di Kota Ambon dengan menggunakan uji autokorelasi indeks Global Moran’s I dan Local Indicator of Spatial Association (LISA), selanjutnya melakukan peramalan pola spasial pada data perubahan penutupan lahan di tahun 2020. Penelitian ini menunjukkan terdapat autokorelasi spasial dari perubahan penutupan lahan untuk kawasan lindung tetapi korelasi melemah dengan nilai indeks Moran’s I berubah dari 0,283362665 menjadi -0,042523054. Peramalan tahun 2020 menunjukkan terdapat autokorelasi spasial pada tingkat perubahan penutupan lahan yang berkorelasi negatif dengan nilai indeks Moran’s I -0,011095491.

Abstract

Setiap manusia tentunya akan memerlukan makanan untuk kelangsungan hidupnya. Salah satu makanan yang dikonsumsi dapat berupa makanan gorengan. Hidangan yang digoreng tentunya menggunakan media untuk menggoreng yaitu minyak goreng. Minyak goreng bekas menggoreng suatu makanan biasanya dibuang begitu saja tanpa diolah lebih lanjut karena dianggap sebagai suatu limbah sehingga dapat mencemari tanah dan lingkungan. Selama ini, minyak goreng bekas belum digunakan untuk hal-hal yang lebih bermanfaat. Padahal minyak goreng bekas dapat dimanfaatkan sebagai sabun padat. Pemanfaatan minyak goreng bekas menjadi sabun padat serta pengemasannya dengan memanfaatkan hasil penelitian belum diketahui oleh warga desa. Penyuluhan, pelatihan, dan pengenalan proses pengolahan minyak bekas menjadi sabun padat dan cara pengemasannya diharapkan dapat meningkatkan nilai ekonomis dari minyak goreng bekas dan untuk menambah penghasilan keluarga.

Abstract

ABSTRACT Banana is the main product of a dry land farming at Gumbrih. The shelf life of fresh banana is very short and hence it is a great effort to find out how to preserve the banana for longer period. A method that can be applied is that by processing the fresh banana into processed foods, which has longer shelf life and easily to be modified into several products, which still retains the flavour of fresh banana. It was found that the knowledge of the local people (Gumrih villagers) on technology and banana processing was quite low and hence the recent program on course and practices of banana processing into dried banana (pisang sale) and banana powder (tepung pisang) is absolutely important. The activities were held at Desa Gumbrih, Kecamatan Pekutanan, Kabuapten Negara, on Friday, 16 September 2005, attended by 26 participants. Instead of course and practical works, the activities also have been conducted by active two-direction discussion between participants and tutor members. Since participants were curious to follow all the activities and we suggest that similar program is significant to be held on those banana producers around Bali and the short practical course would be more beneficial if it can be associated with marketing of the products.

Abstract

One of agricultural commodities produced at Sukadana Village is called siwalan. In order to maintain siwalan quality after being harvested, it is required an exact preparation-method. Preparation method which is not exact will cause the siwalan quickly rotten or become infected, therefore it cannot be used as cooking spices or raw industry material. Usually, the farmers sell the siwalan directly after harvesting, so in the siwalan season, the price is very low and the farmers suffer from great loss. Sukadana village peoples have not yet had knowledge about the exact after harvesting preparation method to maintain siwalan quality with the supporting equipment. Community service activity was carried out to develop the processing siwalan to be siwalan syrup and nata at Sukadana village, Kubu sub district, Karangasem on Friday, 08 October 2010. It was attended by 37 peoples with two ways discussion method therefore they are very active asking and responding the topic. The activity like this was very useful for the people in the village. So, the same activity needs to be conducted at the other villages having the same agricultural commodity.

Abstract

The objectives of this research were: to determine critical parameters and to estimate it’s shelflife using Accelerated Shelf-Life Testing (ASLT) with Arrhenius method. Rujak seasoning that packed in plastic bottle was stored at three storage temperature 35oC, 45oC, and 55oC. Each room storage was loaded with three samples. This research was carried out for 25 days and observation was done every 5 days. The parameters observed included pH and sensory parameters, namely flavor, color, and salak aroma of the seasoning. Results showed that the critical parameter of rujak seasoning was pH and all quality parameters of rujak seasoning such as pH, flavor, color, and aroma followed first reaction order. By using extrapolation, the shelf-life of rujak seasoning packed in plastic bottle which stored at room temperature 28oC was 167 days (5,6 months)

Abstract

ABSTRAK Penelitian ini bertujuan untuk mendapatkan konsentrasi terbaik gula dan cuka dapur (asam asetat) 25% sebagai larutan peraga untuk memperpanjang masa kesegaran bunga potong Gerbera (Gerbera Jamesonii). Penelitian ini di lakukan di Laboraturium Pascapanen Fakultas Teknnologi Pertanian Gedung Agrokomplek Universitas Udayana Sudirman Denpasar. Penelitian ini menggunakan metode Rancangan Acak Lengkap (RAL) dengan dua faktor perlakuan yaitu gula dengan konsentrasi (0%, 2%, 4%, 6%, 8%) dan faktor cuka dapur (asam asetat) 25% (0 ppm, 1 ppm, 2 ppm, 3 ppm, dan 4 ppm) dengan dua ulangan. Analisis sidik ragam menunjukkan bahwa interaksi perlakuan gula dan cuka dapur (asam asetat) 25% berpengaruh nyata (P<0,05) terhadap lamanya kesegaran bunga, persentase bunga layu, tingkat pencoklatan, total larutan terserap dan pH. Dalam penelitian ini ditemukan bahwa kombinasi perlakuan dengan konsentrasi gula 3% dan cuka dapur (asam asetat) 25 % 100 ppm merupakan kombinasi perlakuan terbaik. Perlakuan tersebut dapat menjaga kesegaran bunga dengan lama kesegaran bunga yaitu 9 hari dan secara efektif dapat mempertahankan presentase bunga layu yang terendah yaitu 24.99 % dengan larutan terserap tertinggi yaitu 326.5 ml. Pada perlakuan kombinasi perlakuan dengan konsentrasi gula 3% dan cuka dapur (asam asetat) 1 ppm juga menunjukan skor tertinggi terhadap warna Bunga atau pencoklatan bunga dibandingkan dengan perlakuan lainnya. ABSTRACT This research aims to obtain the best concentration of sugar and vinegar (acetic acid) 25% as a holding solution to prolong the freshness of Gerbera cut flowers (Gerbera jamesonii). This research was carried out at the Postharvest Laboratory, Faculty of Agricultural Technology, Udayana University. This study used a completely randomized design (CRD) method with two factors, the first factor was sugar with concentrations (0%, 1%, 2%, 3%, 4%) and the second factor was vinegar (acetic acid) 25% (0 ppm, 1 ppm, 2 ppm, 3 ppm, and 4 ppm) with two replications. Analysis of variance shows the effect of the interaction of sugar and vinegar (acetic acid) 25% binds was significantly different (P <0.05) on the length of the freshness of the flower, percentage of wilting flower, browning rate, total absorbed solution, and pH. In this research, a combination of 3% sugar and 1 ppm vinegar was found to be the best treatment combination. This treatment maintained the freshness of flowers for 9 days and effectively maintained the lowest percentage of wilting flowers (24.99%) with the highest absorbable solution that is 326.5 ml. The combination treatment with 3% sugar concentration and vinegar (acetic acid) 1 ppm also showed the highest score on the color of flowers or browning flowers compared to other treatments.

Abstract

This study was conducted to determine the effect of the concentration of dextrin and tween 80 in the drying process by using dryer cabinet and determine the concentration of dextrin and tween 80 which can speed up the drying process of aloe vera gel. This study used a Randomized Complete Design (RBD) with 2 factors. The first factor was the concentration of dextrin (10%, 14%, 18%, 22%) and the second factor was the concentration of tween 80 (0.3%, 0.4%, 0.5%) with the drying temperature of 70°C. The experiment was repeated three times. Observations were made every 2 hours until the sample weight did not decrease. Variables which observed were rate of drying, whiteness, yield, and pH of flour aloe vera. The results showed that concentrations of dextrin and tween 80 significantly affected water content, the degree of whiteness of the flour was affected by concentrations of dextrin. Treatment interaction between dextrin concentration and tween 80 did not significantly affect all parameters observed. The addition of dextrin will slow the drying process, on the contrary the addition of tween 80 will speed up the drying process. The highest yield at amount of 10.99% was obtained from the treatment interaction of 22% dextrin with 0.3% tween 80. The degree of acidity (pH) of the flour at 4.00 which was the highest value of pH was yielded form the treatment interaction of 10% dextrin with 0.5% tween 80. In this study, the best treatment resulting aloe vera flour that approaching the standards of quality of Terry Laboratories was a treatment interaction of 22% dextrin with 0.3% tween 80. The flour had a water content of 8.68%, the degree of whiteness 50.51, yield 10.99%, and the degree of acidity (pH) 3.65.

Abstract

Tujuan dari penelitian ini adalah untuk mengetahui kondisi kinerja mesin dari penggilingan gabah dan mengetahui berapa persen kapasitas yang terpakai dalam penggilingan gabah sehingga dapat mengukur dan menilai keberlanjutan dari produktivitas finansial pada usaha penggilingan gabah. Analisis keberlanjutan finansial menggunakan analisis menghitung NPV (Net Present Value), IRR (Internal Rate of Return), dan BCR (Benefit Cost Ratio). NPV (Net Present Value) adalah salah satu kriteria terpenting dalam evaluasi sebuah investasi, menunjukkan bahwa selisih jumlah kas yang dihasilkan proyek investasi dan nilai investasi yang diperlukan. IRR (Internal Rate of Return) adalah suatu investasi dapat dilakukan apabila laju pengembaliannya lebih besar daripada laju pengembalian investasi ditempat lain. BCR (Benefit Cost Ratio) merupakan suatu analisis yang diperlukan untuk melihat sudah sampai sejauh mana perbandingan antara nilai manfaat terhadap nilai biaya jika dilihat pada kondisi nilai saat ini PV (Present Value). Berdasarkan pada tabel Analisis kinerja operasional produktivitas didapatkan kontribusi terhadap kinerja pada PGK yaitu 21,1%, PGM 32.3% dan PGB 47,5%. Sehingga dalam penggilingan gabah berdasarkan hasil sampling rata-rata yang ada di Kecamatan Penebel untuk PGB mempunyai kontribusi terhadap kinerja operasional yang paling besar dan pada tabel kondisi kinerja mesin penggilingan gabah dalam Intensitas Operasi yang dikerjakan dimana pelaku usaha penggilingan gabah yaitu penggilingan kapasitas besar, menengah ini memiliki kegiatan investasi yang bisa dikatakan layak untuk dilanjutkan atau dikembangkan kembali namun tidak dengan kapasitas kecil karena penggilingan tersebut dikatakan tidak layak untuk dilanjutkan. Hal ini didasarkan pada hasil sampling rata-rata pada setiap kapasitas penggilingan gabah yang terpasang dengan analisis kelayakan finansial yaitu NPV (Net Present Value) yang setiap kapasitasnya berbeda yaitu kapasitas besar Rp. 306.400.273, kapasitas menengah Rp. 190.596.835 dan kapasitas kecil Rp. -15.890.115. IRR (Internal Rate of Return) kapasitas besar 48%, kapasitas menengah 24% dan kapasitas kecil 0.6%. B/C Ratio (Benefit Cost Ratio) kapasitas besar mendapatkan 2,18 dan kapasitas menengah mendapatkan 1,75 sedangkan kapasitas kecil hanya 1,0. The purpose of this study are to know the condition og grain milling machine performance and to know the percentage of capacity used in the machine, thus can measure and assess the sustainability of the financial productivity of the grain milling business. Financial sustainability analyzes use NPV (Net Present Value), IRR (Internal Rate of Return), and BCR (Benefit Cost Ratio) calculations. NPV (Net Present Value) is one of the most important criteria in the evaluation of an investment, indicating that the difference in the amount of cash generated by the investment project and the value of the investment required. IRR (Internal Rate of Return) is an investment can be done if the rate of return is greater than the rate of return on investment at another place. BCR (Benefit Cost Ratio) is an analysis required to see how far the comparison between the value of benefits to the value of the cost when viewed at the current value of PV (Present Value). Based on the table of operational performance of productivity analysis, contribution to performance on small capacity is 21,1%, medium capacity is 32.3%, and large capacity is 47,5%. Therefore, based on the average sampling results in Penebel Sub-district, grain milling with large capacity has the greatest contribution to operational performance and on the table of grinding machine performance conditions in the Operation Intensity done where the grain milling business actors namely the milling of large, medium, capacity has investment activities that can be said worthy to be continued or developed again but not with a small capacity because the milling is said to be inappropriate to continu. Based on the average sampling result on each grain milling capacity installed with a financial feasibility analysis of NPV (Net Present Value) has different capacity where large capacity is Rp. 306.400.273, medium capacity is Rp. 190.596.835, and small capacity is Rp. -15.890.115. In IRR (Internal Rate of Return) large capacity is 48%, medium capacity is 24%, and small capacity is 0,6%. In B / C Ratio (Benefit Cost Ratio), large capacity is 2.18, medium capacity is 1.75, meanwhile small capacity is 1,0.

Abstract

Sistem rantai pasokan ikan tribang saat ini belum memberikan kesejahteraan kepada para pelaku usaha khususnya pedagang kecil. Tujuan penelitian ini adalah (1) mengetahui struktur, mekanisme, dan kelembagaan rantai pasokan ikan tribang; (2) menemukan langkah strategis untuk meningkatkan kinerja rantai pasokan ikan tribang. Penelitian ini terdiri dari dua tahap, tahap pertama mengetahui struktur, mekanisme, kelembagaan rantai pasokan menggunakan analisis deskriptif kualitatif dan tahap kedua mengetahui prioritas rekomendasi menggunakan metode Analitycal Hierarchy Process (AHP). Pengambilan sampel pelaku rantai pasokan menggunakan metode purposive sampling, snowball sampling, dan non probability sampling. Hasil penelitian menunjukan bahwa rantai pasokan ikan tribang terdiri dari sembilan pola aliran rantai dimana mekanisme rantai pasokan ikan tribang bersifat tradisional dan kelembagaan rantai pasokan ikan tribang bersifat perdagangan umum. Berdasarkan metode AHP, prioritas rekomendasi dalam meningkatkan kinerja rantai pasokan ikan tribang yaitu kriteria meningkatkan nilai tambah produk, alternatif responsiveness (kemampuan reaksi rantai pasok), dan indikator siklus waktu pemenuhan pesanan menjadi prioritas yang paling berperan penting. Supply chain system of tribang fish currently does not provide welfare to people business, especially small traders. The purpose of this study are (1) to know the structure, mechanism, and institutional supply chain of tribang fish; (2) find strategic steps to improve the performance of tribang fish supply chains. This study consisted of two stages, the first stage knowing the structure, mechanism, institutional supply chain using qualitative descriptive analysis, and the second stage knowing the priority recommendations using the Analitycal Hierarchy Process (AHP) method. Sampling of supply chain actors uses purposive sampling, snowball sampling, and non probability sampling methods. The results showed that tribang fish supply chain consisted of nine chain flow patterns where the tribang fish supply chain mechanism was traditional and the tribang fish supply chain institution was general trading. Based on AHP method, priority recommendations to improving the performance of tribang fish supply chains are criteria of increasing product added value, alternative of responsiveness (supply chain reaction capabilities), and indicator of cycle order fulfillment are the most important priorities.
