Abstract

The Health Polytechnic of the Ministry of Health of Malang, as one of 38 Health Polytechnics of the Ministry of Health in Indonesia, has an important role in developing student entrepreneurship, but there has been no maximum effort in empowering student potential in entrepreneurship. Seeing this condition, we propose processing rejected Manalagi apples as an empowerment solution, considering that these apples are abundant in Malang Regency, especially during the main harvest. Rejected quality apples, which reach 10-20% of the harvest, are often wasted. In fact, green apples have health benefits, especially for diabetics, by helping to regulate blood sugar levels and increasing metabolism. Through this community service program, we process rejected apples into high-value products, such as syrup, jam, and pudding. This activity also involves children from the Sunan Ampel Orphanage as production partners. This is done to provide them with entrepreneurial skills and overcome the problem of high youth unemployment, while accelerating the physical, mental, and social-emotional development of the children in the orphanage. With this approach, we hope to increase community income, create job opportunities, and produce new, innovative entrepreneurs who will later be able to become independent entrepreneurs.

Abstract

Pengelolaan sampah domestik yang tidak adekuat menjadi permasalahan serius yang berdampak negatif terhadap kesehatan masyarakat dan lingkungan di wilayah pedesaan. Program pengabdian masyarakat ini bertujuan untuk mengembangkan dan mengevaluasi efektivitas program penyuluhan kesehatan lingkungan berbasis pendekatan promotif dan preventif guna meningkatkan literasi dan perubahan perilaku pengelolaan sampah di Desa Indu Makkombong. Metode yang digunakan meliputi penyuluhan interaktif, simulasi kelompok kecil, dan pemantauan perilaku pascaprogram. Hasil survei awal menunjukkan bahwa mayoritas rumah tangga belum memiliki fasilitas penyimpanan sampah yang memadai dan masih menerapkan metode pengelolaan konvensional yang merugikan lingkungan. Setelah pelaksanaan program, tercatat peningkatan signifikan dalam pemahaman masyarakat dan adopsi perilaku pengelolaan sampah yang lebih ramah lingkungan, seperti pemilahan sampah dan penggunaan tempat sampah terpisah. Skor evaluasi responden mulai menerapkan pemilahan sampah 70%,telah menyiapkan fasilitas penyimpanan sampah 60% dan mengurangi ketergantungan pada plastik sekali pakai.  Program ini juga selaras dengan tujuan pembangunan berkelanjutan (SDGs) dan peraturan pemerintah terkait pengelolaan sampah. Kesimpulannya, pendekatan penyuluhan yang berbasis kebutuhan lokal dan partisipatif efektif dalam mendorong perubahan perilaku berkelanjutan pada masyarakat desa.

Abstract

Kanker merupakan salah satu penyebab kematian utama yang sering disertai risiko malnutrisi akibat penurunan asupan dan gangguan metabolik. Kondisi ini menuntut adanya intervensi gizi yang adekuat dan berkesinambungan untuk membantu memenuhi kebutuhan energi dan zat gizi pasien kanker. Intervensi gizi melalui formula enteral menjadi penting untuk membantu memenuhi kebutuhan energi dan zat gizi pasien. Daun jambu biji (Psidium guajava L.) diketahui mengandung flavonoid, tanin, alkaloid, saponin, dan kuersetin yang berpotensi sebagai senyawa antikanker. Penelitian ini bertujuan mengembangkan formula enteral berbasis daun jambu biji serta mengetahui komposisi gizi, daya terima, dan viskositasnya. Penelitian ini merupakan penelitian observasional laboratorik yang dilakukan pada Juli 2025 dengan pengujian meliputi uji empiris, uji proksimat, uji organoleptik, dan uji viskositas. Formula disusun dari ekstrak daun jambu biji, maltodextrin, susu skim, susu full cream, dan gula halus. Analisis data menggunakan Microsoft Excel. Hasil uji empiris menunjukkan satu sajian (±52 g) mengandung 201,72 kkal energi, 9,78 g protein, 3,13 g lemak, 33,58 g karbohidrat, 0,03 g air, dan 0,22 g abu. Uji proksimat per 100 gram menunjukkan energi 361,76 kkal, protein 16,35%, lemak 0,24%, karbohidrat 73,55%, air 4,24%, dan abu 5,62%. Uji organoleptik menunjukkan penerimaan sangat baik, dengan skor rasa 86,90%, warna 84,52%, tekstur 82,14%, dan aroma 78,57%. Nilai viskositas sebesar 9,00 mPa.s termasuk kategori thin (cair). Simpulan penelitian ini menunjukkan bahwa formula enteral berbasis daun jambu biji memenuhi karakteristik gizi, sensori, dan viskositas yang sesuai, sehingga berpotensi dikembangkan sebagai dukungan nutrisi bagi pasien kanker.

Abstract

The success of breastfeeding is mediated by several variables, including maternal nutritional status. Moringa oleifera leaves are a nutrient-rich, locally available food source that may be cultivated as a functional snack for the maternal diet during pregnancy and lactation. Moringa dietary snack foods with acceptable sensory attributes are still limited in the market. This study attempted to produce a functional food product from moringa leaves (Ceremoringa Bar) and evaluate its sensory behavior for possible formulations with suitable acceptance. This experimental laboratory study was conducted at the Poltekkes Kemenkes Surabaya Food Processing Laboratory between August and October 2025. Nine Ceremoringa moringa formulations were prepared according to three processing processes (no heating, cooking without water addition, and cooking with water addition) added to dried apple, papaya, or strawberry. Sensory evaluation was conducted by 25 trained panelists using a 5-points hedonic scale covering color, aroma, taste, and texture. Data analysis relied on the Friedman test, followed by the Wilcoxon signed-rank test with Bonferroni correction. The participants assessed the sensory attributes significantly differently (p < 0.05). Post-hoc analysis was performed but found no differences between the formulation pairs. Formulation 3C also appeared to have the highest consistency of sensory acceptance, especially regarding texture, based on median and interquartile range assessments. In conclusion, Ceremoringa Bar displayed good sensory tolerance and can be used as a moringa-based functional snack to aid maternal nutrition. However, its biological effects on lactation have not yet been measured.
