Abstract

Purchasing decisions are closely related because before making a purchase consumers make attributes as important considerations in making purchasing decisions. If the product purchased is in accordance with what is desired, the consumer will make a purchase so that it can benefit the producer. Objective: From this study is to determine the analysis of food additives, the relationship of socio-economic characteristics, knowledge and acceptability with the decision to purchase the chili sauce. Method: This study is a cross sectional study. Sampling was done by purposive sampling technique obtained a total of 110 respondents. Data collected includes socio-economic characteristics of respondents, knowledge and acceptability. Bivariate analysis using chi square statistical tests. Results: The results showed the sodium benzoate content of A Sauce 822.84 mg / kg, B  Sauce 1.035.07 mg / kg, C Sauce 567.54 mg / kg. there is a relationship between the level of education (p=0,001), income (p=0,000), level of knowledge (p=0,011), acceptance (p=0,003) with the decision to purchase chili sauce. Conclusion: Sodium Benzoate in ABC Extra Spicy Sauce and Indofood Spicy Sauce meets SNI standards, Dua Belibis Sauce exceeds SNI standards and all negative chili sauce contains Rhodamin B. coloring if consumed in excess can cause stomach cramps, stomach irritation and digestive tract irritation. Keywords: purchasing decisions, socioeconomic characteristics, knowledge, acceptability

Abstract

Pendahuluan : Penganekaragaman konsumsi pangan dapat berupa penggunaan pangan fungsional. Ampas kelapa dan kedelai merupakan pangan fungsional yang berpotensi untuk dikembangkan menjadi roti tawar yang memiliki nilai gizi sumber protein.Tujuan :menganalisis daya terima, dan nilai gizi dari Pengembangan Roti Tawar Sumber Protein Dengan Penambahan Tepung Ampas Kelapa dan Tepung Kedelai. Metode :Penelitian ini termasuk dalam jenis penelitian eksperimental menggunakan Rancangan Acak Lengkap (RAL) dua faktor (AK = Tepung Ampas Kelapa dan K = Tepung Kedelai) dengan empat taraf perlakuan. Perbandingan tepung ampas kelapa dan tepung kedelai yang digunakan adalah F0 (0%AK:0%K), F1 (40%AK:60%K), F2 (50%AK:50%K) dan F3 (60%AK:40%K). Uji beda One Way Anova dan uji lanjut Duncan dengan taraf signifikan α=0,05 digunakan untuk menjawab tujuan.Hasil : Berdasarkan hasil nilai gizi, semua formulasi memiliki perbedaan secara nyata. Roti tawar sumber protein penambahan tepung ampas kelapa dan tepung kedelai yang paling disukai menjadi formula terpilih adalah F3 dengan perlakuan tepung ampas kelapa 60% dan tepung kedelai 40%. Roti tawar terpilih memiliki kadar protein 12,93%, kadar serat kasar 6,57%, kadar karbohidrat 49,16%, kadar lemak 2,8%, kadar air 38,67% dan kadar abu 1% serta tingkat kesukaan aroma, rasa, warna, tekstur dan keseluruhan secara berturut-turut adalah 3,20; 3,22; 3,20; 3,24 dan 3,42 (suka). Kesimpulan : Tepung ampas kelapa dan tepung kedelai dapat dikembangkan menjadi roti tawar sumber protein yang diterima dan hampir memenuhi SNI dan Direktorat Gizi Depkes.

Abstract

Pendahuluan; Pengelolaan pola makan berkaitan dengan kuantitas dan keseimbangan zat gizi makro merupakan salah satu tujuan utama dalam penatalaksanaan asuhan gizi pada pasien penyakit kronis seperti diabetes mellitus (DM). Tujuan; Untuk menganalisis korelasi kuantitas dan keseimbangan asupan zat gizi makro dengan kadar glukosa darah (GD) puasa pasien DM tipe II. Metode; Penelitian ini dilaksanakan dengan desain penelitian cross sectional. Lokasi pelaksanaan penelitian di Puskesmas Kebon Jeruk pada April-Mei 2019. Penarikan sampel menggunakan metode purposive sampling berdasarkan beberapa kriteria inklusi yaitu pasien DM tipe 2, umur 36-65 tahun, mampu berkomunikasi baik, dan berkenan untuk berpartisipasi tanpa paksaan. Sehingga didapatkan responden sebanyak 84 orang. Hasil; Karakteristik responden dalam penelitian ini sebagian besar berada di kelompok umur 46-55 tahun (57,1%), jenis kelamin perempuan (69%) dan memiliki kadar GD puasa tidak terkontrol (88.1%). Terdapat korelasi positif yang signifikan antara kadar GD puasa dengan tingkat kecukupan karbohidrat (p=0.025; r=0.245), namun tidak terdapat korelasi yang signifikan dengan tingkat kecukupan protein (p= 0.982; r=-0.003) dan lemak (p=0.651; r=0.050). Korelasi antara kadar GD puasa dengan keseimbangan zat gizi makro tidak signifikan secara statistik. Kesimpulan; Adanya korelasi positif yang signifikan dengan kadar GD menunjukkan bahwa semakin tinggi tingkat kecukupan karbohidrat berhubungan dengan semakin tingginya kadar GD puasa pasien.

Abstract

Teachers are one of the key factors determining the quality of education. Teacher’s work productivity might be influenced by their daily food intake and nutritional status. The objective of this study is to determine the relationship between daily food intake and nutritional status to the work productivity of teachers. This research used a cross-sectional approach that was carried out at SMK Pelita Ciampea Bogor. The research samples were 75 teachers selected by simple random sampling method. Characteristic data was obtained through interviews and filling out questionnaires. The instruments used to measure nutritional status were digital scales and microtoise. The daily food intake data were obtained from the interview results using the 1x24 hour food recall form. Work productivity data was obtained by filling out a questionnaire containing 25 closed questions. The data were analyzed using the chi-square test. The results showed that teacher's food intake was lower than their recommended dietary allowance. Most of the teachers were obese but had very good work productivity. Bivariate analysis showed that there was no significant relationship between nutritional intake and work productivity (p>0,05). In daily food intake, only fat intake had a significant relationship to work productivity (p=0,004). It could be concluded that fat intake had a significant relation to work productivity.

Abstract

Penyakit diare sendiri menjadi penyebab utama kematian anak berusia di bawah lima tahun di Indonesia. Lebih lanjut dikatakan bahwa mencuci tangan secara tepat dapat mengurangi resiko penyakit diare sebesar 42 sampai 47%. Perilaku hidup bersih dan sehat tatanan rumah tangga yang berkaitan dengan pencegahan dan pengendalian penyakit menular mencakup beberapa hal, yaitu pengolahan sampah, cuci tangan dengan sabun dan air bersih, penggunaan handsanitaizer, pengolahan masker sekali pakai. Tujuan program pengabdian kepada masyarakat ini adalah dapat menurunkan angka kejadian penyakit menular (COVID-19) atau permasalahan kesehatan yang ada di lingkungan rumah tangga dan meningkatkan pemahaman masyarakat akan pentingnya sanitasi dan higiene. Metode pengabdian masyarakat yang digunakan yaitu terdiri dari empat tahapan, tahapan persiapan, tahapan pelaksanaan, tahapan monitoring dan evaluasi dan tahapan pelaporan. Metode pelaksanaan pengabdian masyarakat dilaksanakan dengan edukasi pengelolaan smapah rumah tangga, prkatik pengolahan masker sekali pakai dan demonstrasi cuci tangan pakai sabun. Hasil pengabdian masyarakat adalah tingkat pengetahuan mengenai pengolahan sampah meningkat setelah adanya edukasi sebesar 100%, masyarakat dapat mempraktekan cuci tangan dan pengolahan masker sekali pakai dengan baik sehingga dapat meningkatkan kualitas hidup masyarakat.

Abstract

Down syndrome (DS) is a condition that occurs due to an abnormal number of chromosomes which is characterized by the presence of an additional chromosome. A child diagnosed with DS has three distinctive characters, namely having a low Intelligence Quotient (IQ), physical and mental limitations and having a weak immune system. Overweight and obesity are nutritional problems that often occur in people with DS, so it is necessary to study how the health risks that can be experienced by DS sufferers with obesity and how to overcome or minimize these risks. This Systematic Review study was conducted using the PubMed/Medline, Science Direct, and Google Scholar search databases. The search was limited to articles in peer-reviewed journals and literature reviews, which were written in English and Indonesian between 2012 and 2022. The study results showed that more than 40 percent of obesity occurred in children with DS. Obesity in people with DS can increase the risk of other health problems such as Obstructive Sleep Apnea (OSA) in adults with DS. In addition, dyslipidemia, hyperinsulinemia, NAFLD, Alzheimer's and tumors, and coronary heart disease are frequently reported in obese DS. Therefore, it is necessary to prevent nutritional problems by parents which includes parenting, feeding practices, and eating patterns. In addition, physical activity is needed for children with DS, especially for those who suffer from obesity. Fulfillment of nutrition and a healthy lifestyle throughout pregnancy is also needed to ensure the health of the child born and reduce the risk of having a baby with DS.

Abstract

Fish bone, as a food waste, and cowpea can be a high potential ingredient to develop a healthy snack food. This study aimed to compare and sensory properties of a snack food made from ratio of fish bone and cowpea. This experimental study manipulate fish bone (FB) and cowpea (CW) waste into four formula F0 (control), F1 (90g:20g), F2 (80g:30g). ) and F3 (70g:40g). Proximate and calcium analysis was carried out in an accredited laboratory, while the sensory analysis was evaluated by semi-trained and consumer panelists. One Way-Anova test with Post Hoc test was performedto answer research question. There is significant difference among all formulas (p<0.05) in the parameters of color, aroma, texture and taste. The snack bar F3 was the most preferred by the panelists. This formulation contains 12.06% protein and 5572 mg calcium and can be claimed as a calcium source snack. The greater the concentration of patin bone meal, the higher the calcium content of the snack bar. The hedonic test showed that increase in the concentration of patinbone meal had an effect on the texture, aroma and taste of the resulting snack bar.

Abstract

Background: High-protein milk is a complex food that contains several potentially bioactive compounds that might affect blood glucose and cholesterol. Epidemiological data indicate that high-protein milk consumption is associated with a decrease in the prevalence of metabolic disorders or maintaining metabolic health.Objective: This study aimed to analyze the effect of high-protein milk on cholesterol, low-density lipoprotein (LDL), high-density lipoprotein (HDL), triglycerides, and fasting blood glucose.Methods: This study used an experimental trial with the designed randomized controlled trial. The subjects were divided into two groups: 24 subjects in the treatment group and 23 subjects in the control group. The treatment group was given high-protein milk and nutritional education for 90 days. The control groups were given nutritional education.Results: The results showed that blood glucose did not have a significant difference between the two groups (p>0.05), but it decreased 1.75±3.6 mg/dl after high-protein milk intervention. Blood cholesterol and LDL showed significant differences between the two groups (p<0.05). HDL and triglycerides showed no significant difference between the two groups (p>0.05).Conclusion: Intervention of high-protein milk could significantly reduce cholesterol and LDL levels and reduce blood glucose after 90 days of intervention in the young adult age group. High-protein milk can be a recommendation to prevent metabolic syndrome.

Abstract

ABSTRAK Latar Belakang: Usia prasekolah di Indonesia berkisar antara 3-6 tahun yang dimana pada masa ini telah memasuki masa growth plateau. Pada usia inilah kebiasaan anak mulai terbentuk, salah satunya adalah kebiasaan makannya. Hasil Riskesdas 2018 balita di Indonesia memiliki prevalensi status gizi sangat kurus, gizi buruk 10.2% dengan rincian 3.5% sangat kurus, status gizi kurang 6.7%, dan gizi lebih 8%. Salah satu faktor yang mempengaruhi status gizi adalah asupan makanan dan saat ini masih banyak orang yang beranggapan bahwa anak bisa makan apa saja tanpa memperhatikan kualitasnya.Tujuan: Menganalisis hubungan antara kualitas konsumsi terhadap status gizi anak prasekolah di Kelurahan Sukabumi Selatan.      Metode: Desain penelitian yang digunakan adalah penelitian cross sectional dengan sampel 47 anak prasekolah dari TK An Nurmaniyah dan RA Al Ma’mur. Teknik analisis data menggunakan uji Chi Square. Pengumpulan data dilakukan dengan menggunakan Food Record 3x24 jam yang akan dianalisis menggunakan metode Diet Quality Index - International (DQI-I) dengan bantuan Microsoft excel 2013 dan untuk status gizi diukur menggunakan timbangan berat badan digital dan microtoise.Hasil: sebanyak 91,5% anak usia prasekolah dalam penelitian ini memiliki kualitas konsumsi yang rendah dan sebanyak 57,4% berstatus gizi normal dengan pendapatan orang tua dalam kategori lebih dari 4 juta sebanyak 51,1%. Hasil penelitian menyatkan bahwa tidak ada hubungan antara kualitas konsumsi dengan status gizi anak prasekolah di Kelurahan Sukabumi Selatan (p=0.298, p>0.05). Hal tersebut dikarenakan ada faktor lain selain kualitas konsumsi yang mempengaruhi status gizi anak prasekolah, seperti status infeksi, pola konsumsi rumah tangga dan akses pangan.Kesimpulan: Dapat disimpulkan bahwa kualitas konsumsi tidak berhubungan dengan status gizi anak prasekolah di Kelurahan Sukabumi Selatan KATA KUNCI: anak prasekolah; DQI-I; kualitas konsumsi; status gizi ABSTRACTBackground: Preschool age in Indonesia ranges from 3-6 years which in this period has entered a growth plateaua. Data was collected using a 3x24 hours Food Record which will be analyzed using the Diet Quality Index - International (DQI-I) method with the Microsoft Excel 2013 and nutritional status was measured using a digital weight scale and microtoise.Results: Most of preschool-aged children in these two kindergartens have low quality of consumption as much as 91.5% and have normal nutrition status as much as 57.4% with their parents’ income in the category of more than 4 million as much as 51.1%. The result stated there is no relationship between the quality of consumption and the nutritional status of preschool-aged children in Kelurahan Sukabumi Selatan. (p=0.298, p>0.05). This is because any other factors besides the quality of consumption that affect the nutritional status of preschoolers, such as infection status, household consumption patterns and access to food.Conclusion: It can be concluded that the quality of consumption is not relationship between the nutritional status of preschool children in Kelurahan Sukabumi Selatan. KEYWORDS: DQI-I; nutritional status; preschool children; quality of consumption.

Abstract

Salah satu indikator standar mutu penyelenggaraan makanan Rumah Sakit adalah sisa makan. Kurang dari 20% merupakan angka yang harus dicapai dalam tolak ukur keberhasilan dalam standar pelayanan makanan. Penelitian ini bertujuan untuk mengetahui hubungan banyaknya sisa makanan dan konsumsi makanan luar rumah sakit terhadap lama hari rawat pada pasien anak yang mendapatkan diit biasa di RSJ. Dr. H. Marzoeki Mahdi Bogor. Jenis penelitian ini adalah analisis deskriptif dengan menggunakan uji Chi-Square dengan sampel sebanyak 26 pasien. Sampling yang digunakan dalam penelitian ini yaitu Accidental Sampling. Hasil Analisis deskriptiff dengan uji Chi-Square berdasarkan sisa makan didapat nilai p-value 0,05 tidak memiliki hubungan yang signifikan dengan lama hari rawat dengan nilai p-value 0,280, 0,937, 0,583, 0,640, 0,271. Untuk makanan dari luar dan lama hari rawat dengan uji didapatkan nilai p-value 0,05 atau 0,275. Kesimpulan: Tidak ada hubungan bermakna antara  sisa makan dan konsmsi makanan dari luar dengan  lama hari rawat. Saran : Agar sisa makanan pada pasien anak tidak tinggi, perlu adanya evaluasi menu anak serta standar porsi yang sesuai dengan kondisi pasien.
