Abstract

Kegiatan pemulihan ekosistem terumbu karang di Kabupaten Bintan merupakan kegiatan pemulihan ekosistem terumbu karang berbasis masyarakat yang dilakukan dalam upaya perlindungan ekosistem terumbu karang, serta pemulihan kerusakan lingkungan pesisir dan laut melalui pemulihan kerusakan ekosistem terumbu karang berbasis masyarakat di Perairan Desa Pengudang, Kabupaten Bintan. Kegiatan sosialisasi pemulihan ekosistem terumbu karang di Perairan Desa Pengudang, Kabupaten Bintan melibatkan masyarakat Desa Pengudang, Pokdarwis Pengudang Bintan Mangrove, Yayasan Ecology, Dinas Lingkungan Hidup dan Kehutanan Prov. Abstract

One of the typical traditional products from the Riau Islands is “ikan tongkol asap”. These products are spread in several cities and regencies in the Riau Islands Province. Some areas that are famous for producing “ikan tongkol asap” traditionally are Natuna Regency, Bintan Regency and Tanjungpinang City. This study aims to determine the characteristics of “ikan tongkol asap” products based on the type of fish used, chemical composition, and organoleptic assessment. The research was conducted descriptively by taking samples of “ikan tongkol asap” products from several entrepreneurs on Bintan Island (Bintan and Tanjungpinang) and Bunguran Island (Natuna). The research stages were carried out by identifying the fish raw materials used for “ikan tongkol asap” products, morphometric analysis, organoleptic/sensory analysis, and proximate analysis of the product. In this study, it was found that the raw materials used for smoked fish were Thunnus tonggol, Auxis thazard, Euthynnus affinis, and Katsuwonus pelamis. Morphometrically, the fish used were 43.50-46.25 cm in length, and 1.25-1.85 kg in weight. In the sensory analysis with the parameters of appearance, aroma, taste, and texture, the overall products from the three regions were not significantly different. Based on the proximate analysis, each smoked fish product has its own value from each region with crude protein values ​​ranging from 34.04-45.28%. The sensory and proximate are in accordance with the SNI 2723:2013, except for the moisture content of "ikan tongkol asap" E. affinis from Tanjungpinang City and T. tonggol from Bintan Regency.

Abstract

Penelitian bertujuan untuk mendeskripsikan hubungan komposisi jenis, frekuensi kemunculan dan perbedaan hasil tangkapan bagan tancap berdasarkan periode bulan dan dilaksanakan pada Juli-Desember 2020 dan Juni-Oktober 2021 di perairan Selat Makassar Kabupaten Pangkep. Metode studi kasus pada satu unit bagan tancap dengan menggunakan lampu LED berkekuatan daya 450-500 watt. Data yang dikumpulkan sebanyak 76 trip operasi penangkapan dan dikelompokkan berdasarkan 4 periode bulan yaitu periode bulan gelap, gelap ke terang, terang, dan terang ke gelap. Hasil menunjukkan terdapat 28 jenis ikan yang tertangkap dengan frekuensi kemunculan didominasi cumi-cumi sebesar 100% selama penelitian. Komposisi jenis tertinggi pada setiap periode bulan yaitu lemuru yaitu 52,8% pada periode terang ke gelap, peperek 91,98% pada periode gelap, peperek 39,4% pada periode gelap ke terang dan cumi-cumi 40,1% pada periode terang. Hasil tangkapan bagan tancap menunjukkan perbedaan atas pengaruh periode bulan dengan hasil tangkapan tertinggi pada periode bulan gelap.

Abstract

Research on the inventory of clams (Tridacnidae) at Biang Beach, Matak Village, Kute Siantan District, Anambas Islands Regency, clams have been included in the CITES list, appendix II. The purpose of this study was to determine the physico-chemical parameters in the Biang Coastal Waters, Kute Siantan District, and to determine the types of clams found in the Biang Coastal Waters, Matak Village, Kute Siantan District. Knowing the Density of Kima in Biang Beach Waters, Matak Village, Kute Siantan District, this research was conducted in March 2021, located in Matak Village, Anambas Islands Regency. sampling using purposive sampling method which consists of 6 points determination of the point based on the distribution of coral reefs as the survival of clams. sampling of clams (Tridacnidae) using Bhentos Belt Transect (BBT), the results of measuring water parameters are still at the threshold of the quality standard of PP RI No. 22 of 2021, The highest density was in the clam species Tridacna crocea with a density value of 714.29 ind/ha at point 6 (six), then the lowest density value was at point 3 (three) with a value of 142.86 ind/ha, The highest density was at Kima Tridacna maxima species with a density value of 1,285.71 ind/ha at point 6 (six) then the lowest density value was at point 5 (five) with a density value of 500.00 ind/ha, while the density value at the clam species Tridacna squamosa, with a value of 142.86 ind/ha, was found at point 6 (six) and the density value of the species Hippopus hippopus with a value of 71.43 ind/ha was at point 3 (three).

Abstract

Meatballs are one of the most popular foods in today's society. Basically, the term meatball is followed by the name of the type of meat, such as: One of them is alginate. In this study, there were first his four normal or control treatments (F0) and (F1, F2, F3, F4), with different formulations of wheat flour and alginate addition. The purpose of this study was to find the optimal formulation of alginate-enhanced swordfish balls to produce fish balls that are nutritious and safe for consumption. As a result of the investigations carried out, the F3 sample was the best value given by the panelists and the approximate test results for the F3 treatment were 66.24% moisture content, 10.53% fat content and 2.21% ash content. became clear. 9.09% protein content, 0.12% carbohydrates. The texture profile analysis test results were a hardness value of 1060, adhesion of 27.99, cohesion of 0.70 and resilience of 50.0. The calculated nutrient adequacy (RDA) is 0.032 for carbohydrate, 14.66 for protein and 11.57 for fat.

Abstract

Padina sp. is a species of brown seaweed (Phaeophyta). Padina sp seaweed grows wild in the waters. Malangrapat waters in Bintan Regency are one of the habitats for Padina sp. This study aimed to observe the proximate content as well as amino acids and fatty acids in Padina sp. in order as a reference to maximize the utilization of Padina sp. The water content of Padina sp. 13.87%, ash content 39.41%, fat content 2.67%, protein content 5.94%, and carbohydrate content 38.12%. Meanwhile, the highest amino.acid content in Padina sp. Glutamic.acid has a value of 7640.89 + 10.20 mg/kg, Aspartic acid has a value of 6926.39 + 9.05 mg/kg, and Leucine has a value of 4223.59 + 1.68 mg/kg. As well as for the fatty acid content with the highest levels in brown seaweed Padina sp. are 1.55% saturated fat and unsaturated fatty acids which have a value of 1.11%.

Abstract

The abundance of fish in Natuna waters, especially tuna, so that many food products are produced such as crackers, kernas and mando tables. Mando table is a typical Natuna food made from smoked tuna and sago flour which is then mixed with grated coconut and other spices, boiled tuna, steamed tuna and fried tuna. The process of making mando tables includes preparation of raw materials, determination of mando table formulations, manufacture of mando tables, organoleptic testing, proximate testing and TPA (Texture Profile Analysis). The testing parameters of this research include organoleptic test, proximate testing and TPA (Texture Profile Analysis). From the results of the study from the Mando table, it can be used for organoleptic testing at T1 (30% smoked fish and 26% sago flour) has a yellow brown color, at T1 it has a stronger fish aroma, for T2 it has a savory taste and sufficient fish taste and T2 It has a dense and compact texture. The proximate test results in the Mando T1 table have the best treatment with parameters water content 33.24%, ash content 1.067%, fat content 13.189%, protein content 0.72% and carbohydrate content 50.884%. The results of the TPA (Texture Profile Analysis) test are the best values ??for hardness 2.820%, springiness 64.67%, cohesiviness 0.28% and adhesiveness 51.59% in T1 treatment.

Abstract

Daun beruwas laut (Scaevolla taccada) termasuk tanaman pesisir tumbuh yang umum ditemui di Kepulauan Riau. Berdasarkan penelusuran literatur daun beruwas laut (S. taccada) ini belum pernah diolah menjadi makanan ataupun cemilan. Daun beruwas laut ini memiliki potensi sebagai bahan utama untuk pembuatan Artificial nori karena memiliki warna hijau seperti nori komersial namun tanaman ini tidak menghasilkan gel sebagai pengikat untuk membentuk lembaran. Sehingga perlu ditambahakan bahan lain yaitu dengan penambahan tepung tapioka. Tujuan dari penelitian ini yaitu untuk menentukan formulasi terbaik dari artificial nori dari daun (S. taccada), menentukan karakteristik artificial nori dari daun (S. taccada) serta mengetahui kandungan proksimat artificial nori dari daun (S. taccada). Metode penelitian ini menggunakan rancangan acak lengkap (RAL) dengan menggunakan SPSS 26, yang terdiri dari 3 perlakuan yaitu F1 (6%), F2 (8%), F3 (10%). Hasil pengujian organoleptik menunjukkan bahwa F1 (6%) merupakan perlakuan terbaik memberikan nilai rata-rata terhadap parameter warna (2,53%), aroma (2,57%), rasa (2,73%) dan tekstur (2,40%). Nilai proksimat yang dihasilkan dari uji hedonik terpilih mendapatkan nilai rata-rata kadar air (8,81%), abu (5,06%), protein (13,6%), lemak (3,81%), karbohidrat (68,7%). Ketebalan 1,40 mm, ukuran 3,5x2,3 cm, dan berat 0,2881 gr.

Abstract

Penellitian bertujuan untuk menganalisis komposisi jenis jumlah hasil tangkapan dan frekuensi kemunculan ikan serta responsivitas ikan terhadap lampu dan ketahanan lampu Underwater Light Emitting Diode (U-LED) 75 watt warna hijau. Penelitian dilaksanakan pada bulan Oktober – Desember 2023 dengan mengikuti satu unit bagan tancap sebanyak 30 trip. Hasil penelitian menunjukkan komposisi jenis hasil tangkapan selama 30 trip sebanyak 14 spesies dengan jumlah hasil tangkapan sebanyak 759,4 kg. Jenis ikan dominan yaitu tembang (Sardinella fimbriata), cumi-cumi (Loligo sp.), peperek (Leiognathus equulus), selar kuning (Selaroides leptolepis) dan selar como (Atule mate) dengan komposisi jenis masing-masing secara berurut 21,4%, 20,8%, 14,2%, 8,7% dan 7,3% dengan frekuensi kemunculan jenis ikan hasil tangkapan tertinggi yakni Ikan tembang dan cumi-cumi 100%, peperek dan selar kuning 83%.  Lampu Underwater LED berwarna hijau 75 watt, selama penelitian memiliki ketahanan pencahayaan dan kondisi yang baik serta mampu menarik respon ikan dari berbagai jenis. Jenis ikan yang paling responsif yaitu tembang 100%, dan cumi-cumi dengan responsivitas sebesar 97%.
