Abstract

Perubahan garis pantai merupakan indikator penting dinamika pesisir yang dipengaruhi oleh proses alami dan aktivitas manusia, sehingga pemantauan abrasi diperlukan untuk menjaga stabilitas pantai dan keberlanjutan ekosistem, termasuk habitat peneluran penyu. Penelitian ini bertujuan untuk memetakan perubahan garis Pantai Kili-Kili serta menganalisis pengaruh kemiringan, topografi, tekstur pasir, dan roundness butir pasir terhadap dinamika garis pantai. Analisis dilakukan menggunakan citra satelit multi-temporal melalui Digital Shoreline Analysis System (DSAS) untuk memperoleh data EPR yang merepresentasikan perubahan garis pantai. DEM Copernicus 30 m digunakan untuk memperoleh data topografi dan kemiringan. Analisis tekstur dan roundness butir pasir dilakukan menggunakan metode pengayakan dan mikroskop optik. Analisis regresi linier berganda digunakan untuk menilai pengaruh variabel topografi dan kemiringan terhadap perubahan garis pantai. Hasil menunjukkan bahwa Pantai Kili-Kili mengalami abrasi rata-rata –3,4 m dengan laju –0,57 m/tahun. Pantai memiliki kemiringan yang tergolong landai (±17,4%). Hasil analisis regresi menunjukkan bahwa variabel kemiringan pantai berpengaruh signifikan dengan arah negatif terhadap EPR (B = –0,068; p = 0,047). Namun, nilai koefisien determinasi yang rendah (R² = 0,013) menunjukkan bahwa kontribusi variabel kemiringan terhadap perubahan garis pantai tergolong kecil. Sementara itu, variabel topografi pantai tidak berpengaruh signifikan (B = 0,088; p = 0,132). Distribusi tekstur pasir didominasi ukuran sedang–kasar (±0,25 mm) dengan kebulatan butir angular hingga sub-angular mengindikasikan bahwa energi gelombang relatif tinggi dan transport sedimen yang pendek. Temuan ini menegaskan bahwa dinamika garis pantai lebih dipengaruhi oleh variasi lokal kemiringan dan energi gelombang laut dibandingkan topografi pantai.Coastal line changes are a key indicator of coastal dynamics influenced by natural processes and human activities; therefore, monitoring erosion is necessary to maintain coastal stability and ecosystem sustainability, including sea turtle nesting habitats. This study aims to map changes in the Kili-Kili coastline and analyze the effects of slope, topography, sand texture, and grain roundness on coastal dynamics. The analysis was conducted using multi-temporal satellite imagery via the Digital Shoreline Analysis System (DSAS) to obtain EPR data representing shoreline changes. The 30-meter Copernicus DEM was used to obtain topographic and slope data. Analysis of sand grain texture and roundness was performed using sieving and optical microscopy methods. Multiple linear regression analysis was used to assess the influence of topographic and slope variables on shoreline changes. The results show that Kili-Kili Beach has experienced an average erosion of –3.4 m at a rate of –0.57 m/year. The beach has a relatively gentle slope (±17.4%). Regression analysis results indicate that the beach slope variable has a significant negative effect on EPR (B = –0.068; p = 0.047). However, the low coefficient of determination (R² = 0.013) suggests that the contribution of the slope variable to shoreline changes is relatively small. Meanwhile, the beach topography variable does not have a significant effect (B = 0.088; p = 0.132). The sand texture distribution is dominated by medium–coarse sizes (±0.25 mm), with angular to sub-angular grain roundness, indicating relatively high wave energy and short-range sediment transport. These findings confirm that shoreline dynamics are more influenced by local variations in slope and wave energy than by coastal topography.

Abstract

L. lentjan merupakan salah satu jenis ikan demersal yang memiliki nilai ekonomis dan dimanfaatkan oleh nelayan di Kepulauan Karimunjawa. Informasi mengenai status eskploitasi spesies ini masih terbatas khususnya di Kepulauan Karimunjawa sehingga diperlukan kajian untuk mendukung pengelolaan sumber daya yang berkelanjutan. Penelitian ini bertujuan untuk mengkaji tingkat eksploitasi L. lentjan di Kepulauan Karimunjawa berdasarkan parameter pertumbuhan, mortalitas, rekrutmen, dan eskploitasi. Pengambilan sampel dilakukan pada bulan Juni – Juli 2025 di Pulau Karimunjawa dan Pulau Kemujan dengan total 279 ekor hasil tangkapan nelayan menggunakan alat tangkap pancing ulur (handline). Analisis dilakukan menggunakan software FiSAT II berdasarkan data distribusi frekuensi panjang ikan. Hasil penelitian menunjukkan bahwa pola pertumbuhan L. lentjan bersifat allometrik negatif (b = 2,61; b < 3). Ukuran pertama kali ikan tertangkap (Lc 50%) sebesar 26,08 cm TL, sedangkan hasil estimasi menunjukkan bahwa puncak rekrutmen diproyeksikan terjadi pada bulan Juli sebesar 19,94%. Parameter pertumbuhan yang diperoleh yaitu panjang asimtotik (L∞) sebesar 51 cm dan koefisien pertumbuhan (K) sebesar 0,58 tahun-1. Nilai tingkat eksploitasi sebesar 0,72 mengindikasikan bahwa pemanfaatan L. lentjan di Kepulauan Karimunjawa telah melebihi tingkat optimum (overfishing), sehingga diperlukan upaya pengelolaan untuk mendukung keberlanjutan sumber daya. L. lentjan is a commercially important demersal fish species exploited by local fisheries in the Karimunjawa Islands. However, information regarding its exploitation status remains limited. This study aimed to assess the exploitation status of L. lentjan based on growth, mortality, recruitment, and exploitation parameters. Fish sampling was conducted from June to July 2025 at Karimunjawa and Kemujan Islands, yielding 279 individuals collected from handline fisheries. Length-frequency data were analyzed using FiSAT II software. The results showed that L. lentjan exhibited negative allometric growth (b = 2.61; b < 3). The length at first capture (Lc 50%) was 26.08 cm TL, while recruitment analysis estimated that the recruitment peak occurred in July (19.94%). The estimated asymptotic length (L∞) was 51 cm, while the growth coefficient (K) was 0.58 year⁻¹. The exploitation rate of 0.72 indicates that the utilization of L. lentjan in the Karimunjawa Islands, specifically on Karimunjawa and Kemujan Islands has exceeded the optimal level (overfishing), therefore that management efforts are needed to ensure the sustainability of the fish resources

Abstract

Udang vaname (Litopenaeus vannamei) merupakan komoditas unggulan bernilai ekonomi tinggi, namun sistem budidaya intensif memiliki risiko tinggi terhadap penurunan kualitas air dan infeksi Enterocytozoon hepatopenaei (EHP). Penelitian ini bertujuan untuk menganalisis prevalensi penyakit Enterocytozoon hepatopenaei (EHP) pada udang vaname dan mengkaji penerapan probiotik Bacillus sp. serta strategi pemuasaan sebagai upaya pengendalian infeksi EHP. Penelitian menggunakan metode deskriptif kuantitatif melalui pengamatan langsung terhadap proses budidaya dan parameter pertumbuhan. Hasil menunjukkan prevalensi EHP meningkat dari 20% (DOC 23) menjadi 40% (DOC 46) dan mencapai 100% (DOC 94), dengan kadar amonia tinggi (0,7 mg/L) diduga sebagai faktor pemicu utama infeksi EHP. Kombinasi penerapan pemuasaan dan pemberian probiotik Bacillus sp. diterapkan sebagai upaya pengendalian infeksi EHP. Meskipun prevalensi infeksi mencapai 100% pada DOC 94, udang tetap menunjukkan pertumbuhan hingga akhir masa pemeliharaan.Vannamei shrimp (Litopenaeus vannamei) is a superior commodity with high economic value, but intensive cultivation systems have a high risk of water quality degradation and Enterocytozoon hepatopenaei (EHP) infection. This study aims to analyze the prevalence of Enterocytozoon hepatopenaei (EHP) infection in whiteleg shrimp and examine the application of Bacillus sp. probiotics and fasting strategies as an effort to control EHP infection. This study used a quantitative descriptive method through direct observation of the cultivation process and growth parameters. The results showed that the prevalence of EHP increased from 20% (DOC 23) to 40% (DOC 46) and reached 100% (DOC 94), with high ammonia levels (0.7 mg/L) suspected as the main triggering factor for EHP infection. A combination of fasting and Bacillus sp. probiotics was applied as an effort to control EHP infection. Although the infection prevalence reached 100% in DOC 94, the shrimp continued to grow until the end of the rearing period.

Abstract

Plankton merupakan komponen penting dalam ekosistem tambak yang berperan sebagai produsen primer, penyangga kualitas air, serta indikator kesuburan perairan. Penelitian ini bertujuan untuk mengkaji hubungan dominansi fitoplankton dengan kualitas air, pertumbuhan, dan sintasan udang vaname (Litopenaeus vannamei) pada sistem budidaya intensif tambak komersial sebagai dasar pengelolaan plankton berbasis ekosistem. Penelitian dilaksanakan di tiga unit tambak komersial milik PT Bagja Barokah Sarerea, Kabupaten Tasikmalaya, Jawa Barat, selama satu siklus pemeliharaan. Parameter yang diamati meliputi struktur dan dominansi plankton, kualitas air (suhu, pH, salinitas, oksigen terlarut, kecerahan, COD, amonia, nitrit, dan nitrat), pertumbuhan bobot mutlak, laju pertumbuhan harian, serta sintasan udang. Analisis dominansi plankton dilakukan menggunakan indeks Simpson, sedangkan hubungan antar variabel dianalisis menggunakan uji korelasi Pearson. Hasil penelitian menunjukkan bahwa komunitas fitoplankton didominasi oleh Chlorophyta dan Cyanophyta dengan pola dominansi yang berbeda antar tambak. Kepadatan fitoplankton memiliki hubungan positif dan signifikan dengan pertumbuhan bobot mutlak udang pada seluruh tambak (p<0,01). Hubungan antara kepadatan fitoplankton dan laju pertumbuhan harian bersifat bervariasi, dipengaruhi oleh stabilitas kualitas air dan tingkat akumulasi bahan organik. Nilai sintasan udang tergolong tinggi (81,55–97,09%), dengan performa terbaik diperoleh pada tambak yang memiliki keseimbangan komunitas plankton dan kualitas air yang lebih stabil. Hasil penelitian ini menyimpulkan bahwa dominansi plankton yang terkelola dengan baik berperan penting dalam mendukung pertumbuhan dan sintasan udang vaname, serta menegaskan pentingnya pendekatan pengelolaan tambak berbasis ekosistem untuk meningkatkan produktivitas dan keberlanjutan budidaya udang intensif.Plankton plays a crucial role in pond ecosystems as primary producers, regulators of water quality, and indicators of trophic status. This study aims to examine the relationship between phytoplankton dominance and water quality, growth, and survival of Pacific whiteleg shrimp (Litopenaeus vannamei) in intensive commercial pond culture systems, as a basis for ecosystem-based plankton management. The study was conducted in three commercial shrimp ponds at PT Bagja Barokah Sarerea, Tasikmalaya Regency, West Java, during one production cycle. Observed parameters included plankton community structure and dominance, water quality variables (temperature, pH, salinity, dissolved oxygen, transparency, COD, ammonia, nitrite, and nitrate), absolute weight gain, daily growth rate, and shrimp survival. Plankton dominance was analyzed using Simpson’s dominance index, while relationships among variables were assessed using Pearson correlation analysis. The results showed that the phytoplankton community was predominantly composed of Chlorophyta and Cyanophyta, with different dominance patterns among ponds. Phytoplankton density exhibited a strong and significant positive correlation with shrimp absolute weight gain across all ponds (p<0.01). In contrast, the relationship between phytoplankton density and daily growth rate varied among ponds, reflecting differences in water quality stability and organic matter accumulation. Shrimp survival rates were relatively high (81.55–97.09%), with the best performance observed in ponds characterized by balanced plankton composition and stable water quality. This study concludes that well-managed plankton dominance plays a key role in enhancing shrimp growth and survival, highlighting the importance of ecosystem-based pond management to improve productivity and sustainability in intensive shrimp aquaculture.

Abstract

Sistem jaminan mutu digunakan untuk menjaga agar produk tetap dalam tingkat mutu yang diinginkan. Good Manufacturing Practices (GMP) dan Sanitation Standard Operating Procedure (SSOP) merupakan pengendalian mutu yang paling dasar. Pemilihan GMP dan SSOP didasarkan pada perannya sebagai program prasyarat (prerequisite programs) dalam penerapan sistem jaminan mutu dan keamanan pangan yang lebih kompleks. Sistem jaminan mutu dengan metode skoring dapat dilakukan menggunakan skala likert yang bertujuan untuk mengetahui sejauh mana industri pangan menerapkan sistem jaminan mutu yang sesuai dengan prosedur, sehingga dapat diambil tindakan koreksi apabila terjadi penyimpangan terhadap mutu dari produk yang dihasilkan. Penelitian ini bertujuan untuk mengevaluasi penerapan GMP dan SSOP di CV. X Kota Denpasar. Metode yang digunakan untuk evaluasi sistem jaminan mutu adalah menggunakan pendekatan skoring Likert untuk mengetahui atau mengukur persepsi responden terhadap penerapan sistem jaminan mutu di CV.X. Jumlah responden yang digunakan sebanyak 30 responden yang terdiri dari karyawan produksi, quality assurance, quality control, tally produksi, dan karyawan magang. Hasil evaluasi penerapan sistem jaminan mutu di CV. X menunjukkan nilai evaluasi rata-rata penerapan GMP sebesar 96,44%, SSOP sebesar 96,52%, dan pengendalian mutu terpadu sebesar 96,47% dengan kategori “sangat setuju”. Hasil ini menunjukkan bahwa sistem jaminan mutu telah diterapkan dengan sangat baik sesuai regulasi yang berlaku.A quality assurance system is used to maintain the product at the desired quality level. Good Manufacturing Practices (GMP) and Sanitation Standard Operating Procedure (SSOP) are the most basic quality controls. The selection of GMP and SSOP is based on their role as prerequisite programs in the implementation of a more complex quality assurance and food safety system. A quality assurance system with a scoring method can be carried out using a Likert scale which aims to determine the extent to which the food industry implements a quality assurance system in accordance with the procedure, so that corrective actions can be taken if there are deviations in the quality of the resulting product. This study aims to evaluate the implementation of GMP and SSOP at CV. X, Denpasar City. The method used to evaluate the quality assurance system is using a Likert scoring approach to determine or measure respondents' perceptions of the implementation of the quality assurance system at CV. X. The number of respondents used was 30 respondents consisting of production employees, quality assurance, quality control, production tally, and intern employees. The results of the evaluation of the implementation of the quality assurance system at CV. X showed an average evaluation value of the implementation of GMP of 96.44%, SSOP of 96.52%, and integrated quality control of 96.47% with the category "strongly agree". These results show that the quality assurance system has been implemented very well in accordance with applicable regulations.

Abstract

Rumpon merupakan alat bantu penangkapan ikan yang berfungsi menarik dan mengumpulkan ikan pada suatu lokasi tertentu sehingga memudahkan proses penangkapan. Salah satu komponen penting pada rumpon adalah atraktor, seperti pelepah sawit, yang dapat meningkatkan agregasi ikan. Penelitian ini bertujuan untuk membandingkan efektivitas atraktor pelepah sawit pada rumpon permukaan dan rumpon dasar dalam menarik ikan. Penelitian dilakukan secara eksperimen di Laboratorium Jurusan Perikanan Fakultas Peternakan Universitas Jambi pada April–Juni 2024 menggunakan ikan guppy (Poecilia reticulata) sebagai organisme uji. Dua perlakuan digunakan yaitu rumpon dasar dan rumpon permukaan. Pengamatan dilakukan terhadap jumlah ikan pada zona ketertarikan, distribusi vertikal ikan, serta perilaku ikan. Data dianalisis menggunakan uji Independent Sample t-test dan analisis deskriptif. Hasil penelitian menunjukkan bahwa rumpon permukaan lebih efektif dalam menarik ikan dibandingkan rumpon dasar. Rata-rata jumlah ikan yang tertarik pada rumpon permukaan mencapai 20 ekor dengan efektivitas 44%, sedangkan rumpon dasar hanya 12 ekor dengan efektivitas 25%. Ikan juga lebih banyak berada pada lapisan permukaan akuarium serta menunjukkan respons makan dan agregasi yang tinggi. Kesimpulannya, atraktor pelepah sawit pada rumpon permukaan lebih efektif dalam menarik ikan dibandingkan rumpon dasar karena lebih mudah dideteksi pada zona aktivitas utama ikan. Fish Aggregating Devices (FADs) are commonly used to improve fishing efficiency by attracting and concentrating fish in a particular area. Palm fronds are often used as natural attractors to increase fish aggregation. This study aimed to compare the effectiveness of palm frond attractors on surface and bottom FADs in attracting fish. The experiment was conducted at the Fisheries Laboratory, Faculty of Animal Science, University of Jambi from April to June 2024 using guppy (Poecilia reticulata) as the test organism. Two treatments were applied: surface FAD and bottom FAD. Observations included the number of fish in the attraction zone, vertical fish distribution, and fish behavior. Data were analyzed using Independent Sample t-test and descriptive analysis. Results showed that the surface FAD attracted more fish than the bottom FAD. The average number of fish around the surface FAD reached 20 individuals (44% effectiveness), while the bottom FAD attracted 12 individuals (25% effectiveness). Fish were mostly distributed in the surface layer and showed active feeding and aggregation behavior. In conclusion, palm frond attractors placed on surface FADs are more effective in attracting fish than those placed on bottom FADs.

Abstract

Koperasi Konsumen Pantai Prigi Credit Union (PPCU) merupakan lembaga keuangan berbasis keanggotaan yang berperan menyediakan layanan simpan pinjam serta unit usaha pendukung bagi masyarakat pesisir di Desa Tasikmadu, Kecamatan Watulimo, Kabupaten Trenggalek. Penelitian ini bertujuan menganalisis partisipasi anggota dan peran koperasi dalam pemberdayaan anggota, dengan fokus pada istri nelayan. Penelitian dilaksanakan pada Desember 2025 - Februari 2026 menggunakan mixed-methods. Data dikumpulkan melalui observasi, wawancara, kuesioner, dan dokumentasi, dengan 18 responden menggunakan teknik sampling jenuh. Analisis data dilakukan dengan model Miles dan Huberman serta pengukuran Skala Likert untuk menilai tingkat partisipasi dan peran koperasi. Hasil penelitian menunjukkan bahwa partisipasi anggota berada pada kategori tinggi, terutama pada pemanfaatan layanan dan keterlibatan dalam forum anggota, meskipun aspek pengawasan masih memerlukan penguatan. Peran koperasi secara akumulatif tergolong tinggi dalam mendukung pemberdayaan anggota, terutama melalui akses layanan, transparansi, dan tanggung jawab pengelolaan, sementara aspek peluang dan dukungan eksternal masih perlu ditingkatkan melalui penguatan pelatihan serta memperluas kerja sama.   Pantai Prigi Consumer Cooperative Credit Union (PPCU) is a membership-based financial institution that provides savings and loan services as well as supporting business units for coastal communities in Tasikmadu Village, Watulimo District, Trenggalek Regency. This study aims to analyze member participation and the role of the cooperative in member empowerment, focusing on fishermen’s wives. The research was conducted from December 2025 to February 2026 using mixed methods. Data were collected through observation, interviews, questionnaires, and documentation, with 18 respondents selected using a total sampling technique. Data analysis was performed using the Miles and Huberman model alongside Likert scale measurements to assess the level of participation and the cooperative’s role. The results indicate that member participation falls into the high category, particularly in service utilization and involvement in member forums, although the monitoring aspect still requires strengthening. Accumulatively, the cooperative's role is classified as high in supporting member empowerment, primarily through service access, transparency, and managerial responsibility. However, aspects of opportunities and external support still need to be enhanced through strengthening training and expanding cooperation.

Abstract

Sektor perikanan memiliki peranan strategis dalam mendukung perekonomian nasional, khususnya bagi masyarakat pesisir. Provinsi Jawa Timur, termasuk Kabupaten Malang, memiliki potensi perikanan tangkap yang besar dan menjadi sumber utama penghidupan masyarakat. Pantai Kondang Merak merupakan salah satu wilayah dengan sumber daya perikanan melimpah yang dimanfaatkan melalui kegiatan pengolahan dan pemasaran oleh Poklahsar Mina Jaya Mandiri. Dalam pengembangannya, peran penyuluh perikanan menjadi penting sebagai upaya pemberdayaan dan peningkatan kapasitas anggota. Penelitian ini bertujuan menganalisis fungsi dan peran penyuluh dalam pembinaan Poklahsar Mina Jaya Mandiri. Penelitian menggunakan pendekatan deskriptif kualitatif yang dilaksanakan di Pantai Kondang Merak, Desa Sumberbening, Kecamatan Bantur, Kabupaten Malang. Data dikumpulkan melalui observasi, wawancara, kuesioner skala Likert, dan dokumentasi, serta didukung data sekunder. Responden ditentukan secara purposive, melibatkan penyuluh dan anggota Poklahsar. Analisis data menggunakan model Miles dan Huberman yang meliputi reduksi, penyajian, dan penarikan kesimpulan, serta didukung perhitungan interval untuk memperoleh gambaran yang komprehensif. Hasil penelitian menunjukkan bahwa penyuluh telah menjalankan fungsi sesuai ketentuan dan berperan sebagai fasilitator, motivator, edukator, dan komunikator. Peran tersebut berdampak positif terhadap peningkatan pengetahuan, keterampilan, serta penguatan kelembagaan kelompok. Meskipun demikian, masih terdapat kendala seperti keterbatasan intensitas pendampingan, perbedaan partisipasi anggota, dan keterbatasan sumber daya kelompok. Secara keseluruhan, peran penyuluh dinilai cukup efektif dalam mendukung pengembangan dan kemandirian usaha Poklahsar. Disarankan agar penyuluh meningkatkan kualitas pembinaan melalui metode yang lebih inovatif dan partisipatif. Anggota Poklahsar diharapkan lebih aktif dan terbuka terhadap inovasi usaha. Pemerintah perlu memberikan dukungan berupa pelatihan, sarana prasarana, dan akses permodalan guna memperkuat keberlanjutan usaha. Penelitian ini diharapkan menjadi referensi bagi kajian selanjutnya terkait pemberdayaan masyarakat pesisir.   The fisheries sector plays a strategic role in supporting the national economy, particularly for coastal communities. East Java, including Malang Regency, has significant capture fisheries potential and serves as a primary livelihood source. Kondang Merak Beach is an area with abundant marine resources, where fish processing and marketing activities are carried out through the Fish Processing and Marketing Group (Poklahsar) Mina Jaya Mandiri. The role of fisheries extension officers is essential in empowering and enhancing the capacity of group members. This study aims to analyze the functions and roles of fisheries extension officers in developing Poklahsar Mina Jaya Mandiri. This research employed a descriptive qualitative approach conducted at Kondang Merak Beach, Sumberbening Village, Bantur District, Malang Regency. Data were collected through observation, interviews, Likert-scale questionnaires, and documentation, supported by secondary data. Respondents were selected purposively, involving extension officers and Poklahsar members. Data were analyzed using the Miles and Huberman model, including data reduction, data display, and conclusion drawing, supported by interval calculations to obtain a comprehensive overview. The results show that fisheries extension officers have performed their functions in accordance with regulations and acted as facilitators, motivators, educators, and communicators. These roles positively impact the improvement of members’ knowledge, skills, and institutional strengthening. However, challenges remain, including limited assistance intensity, varying participation levels, and limited group resources. Overall, the role of extension officers is considered effective in supporting business development and group independence. It is recommended that extension officers enhance the quality and intensity of assistance through more innovative and participatory approaches. Poklahsar members are expected to be more active and open to innovation. Government support in training, facilities, and access to capital is also needed to ensure sustainability. This study is expected to serve as a reference for further research on empowering coastal communities.

Abstract

Tuna (Thunnus sp.) viscera by-product, representing 12–18% (w/w) of total fish biomass, is an underutilized resource that poses environmental challenges if not well managed. However, its high protein content offers significant potential for the production of bioactive protein hydrolysates (FPH). This study aimed to evaluate the impact of bromelain-mediated enzymatic hydrolysis duration (0, 1, 3, and 6 hours) at 54°C on the chemical characteristics and antibacterial efficacy of the resulting hydrolysates against Escherichia coli and Staphylococcus aureus. Results indicated that while the 3-hour hydrolysis treatment yielded the highest protein content (85.109%), the 6-hour treatment provided the highest degree of hydrolysis (17.885%) and yield (9.113%). Notably, while initial screenings (Minimum Inhibition Concentration and Minimum Bactericidal Concentration assays) at 64–256 mg/mL shown no inhibitory activity, the 6-hour hydrolysate at a higher concentration of 1000 mg/mL demonstrated bacteriostatic activity. Using the disc diffusion method, this treatment produced inhibition zones of 1.735 mm against Staphylococcus aureus and 1.330 mm against Escherichia coli. These findings suggest that while tuna viscera protein hydrolysates possess antibacterial potential, their efficacy is highly dependent on both hydrolysis duration and concentration, providing a foundation for future valorization of fish processing by-products.

Abstract

This study aimed to evaluate the effect of (Sonneratia caseolaris) fruit flour incorporation on the physiochemical, sensory, and nutritional characteristics of snack bars. This study highlights the potential of mangrove-derived ingredients as functional components in value-added food products. The experiment employed a Completely Randomized Design (CRD) consisting of four substitution levels of pedada flour (0%, 5%, 10%, and 15%) with five replications. Snack bars were prepared by mixing dry and wet ingredients and baked at 120 °C for 20 minutes. Analyses included physical tests (hardness and color), sensory evaluation (taste, aroma, color, and texture), and chemical analyses (proximate composition, carbohydrate, tannin, HCN, and caloric content). The results demonstrated a statistically significantly effected (p<0.05) of pedada flour incorporation on all evaluated parameters. Hardness decreased with increasing pedada flour concentration, from 689.81 gF (0%) to 220.64 gF (15%). The best formulation was obtained at 5% pedada flour (TM2), with a hardness value of 495.34 ± 197.97 gF, a hue value of 73° (yellow-red), and the highest sensory scores for taste (3.34), aroma (3.28), and texture (3.06). Although the color score of TM2 was slightly lower than that of the control, it remained within the preferred color range. The proximate composition of the best formulation consisted of carbohydrates (55.97%), protein (9.71%), fat (9.08%), moisture (23.85%), ash (1.39%), and a caloric value of 344.44 kcal/100 g, with a yield of 65.1%. The 5% pedada flour addition produced the most balanced formulation in terms of physical quality, nutritional composition, and sensory acceptability.
