Abstract

This study aimed to develop high antioxidant cake product with red palm oil (RPO) content to substitute the use of margarine as a potential functional food. This study used a complete randomized design with four levels of RPO substitution for margarine, namely F0 (0:100), F1 (80:20), F2 (90:10), and F3 (100:0). Organoleptic results showed that high antioxidant cake F3 was best in which also contained the highest RPO addition level. The high antioxidant cake F3 had yellow colour, hardness of 650.67 gf, bulk density of 0.27 g/ml, 4.31% moisture, 1.48% ash, 21.66% fat, 9.76% protein, 62.80% carbohydrate, 40.74 ppm/100 g β-carotene, and the 470.44 mg/100 g antioxidant activity. Thus the product can be categorized as high in β-carotene. Therefore, this product has a potential to be a functional food options, especially for atherosclerosis prevention.

Abstract

The aimed of study was to evaluate the accuracy of Waist Circumference (WC) and Waist-to-Height Ratio (WHtR) for identification of excess adiposity in adolescents. The study design was diagnostic study. The subjects consisted of 620 adolescents (283 boys and 337 girls) aged 14-18 years. The classification of excess adiposity termed as overfat and obese was based on age-and sex-specific percent body fat cut-off values of body fat reference curves for children from the Growth Foundation. Receiver-operating characteristic (ROC) curve analyses was used to assess the accuracy of WC and WHtR as diagnostic tests of excess adiposity in adolescent. Area under curve (AUC) of WC and WHtR for the diagnostic of overfat were over 0.8 for boys and over 0.9 for girls. Whereas for obese, the AUC of WC and WHtR were over 0.9 for both sexes. The thresholds for defining overfat were 75.25 cm for WC and 0.45 for WHtR (Sensitivity (Se) and Specificity (Sp) >0.8) for boys, and 73.85 cm for WC and 0.49 for WHtR (Se dan Sp >0.8) for girls. The thresholds for defining obese were 86.45 cm for WC and 0.51 for WHtR (Se=1; Sp>0.9) for boys, and 75.60 cm for WC (Se and Sp >0.8) and 0.55 for WHtR (Se>0.8; Sp >0.9) for girls. WC and WHtR are accurate for screening of excess adiposity in adolescents.

Abstract

The aim of this study was to cluster the provinces based on the Food Consumption Patterns (FCP) of the Women of Reproductive Age (WRA). This study used secondary data from the 2014 Indonesia Total Diet Study conducted by the Ministry of Health Indonesia. The final subjects included 40.954 healthy WRA aged 15-49 years old. FCP was calculated based on energy adequacy of WRA of nine major food groups for each province. The hierarchical clustering with Ward's method was applied to cluster the FCP of WRA. The results showed that three clusters of FCP were found. The first cluster was characterized by higher intake of cereals and animal foods, but lower intake of tubers, vegetables, and fruits, which implies a high risk of vitamin B6 and C deficiencies. The second cluster was characterized by higher intake of pulses, oil and fat, oily seeds, and sugar, but lower intake of vegetables and fruits as well as animal source foods, which implies high risk in vitamin B1, B3, and B12 deficiencies and overweight. The third cluster was characterized by higher intake of tubers, fruits, and vegetables but lower intake of animal sources foods, pulses, added fat and oily seeds, which implies a high risk in animal protein, fat, calcium, iron, vitamin B2, and folic acid deficiencies.

Abstract

This study aimed to develop an organoleptic acceptable cream soup formula made from combination of black soybean (Glycine soja L. merrit) and red rice (Oryza nivara) which met the nutritional requirements and contained antioxidants in the form of snack as a functional food for menopausal women. This study used a completely randomized design (CRD) with three treatment levels combination of black soybeans and red rice, namely F1 (80:20), F2 (70:30), and F3 (60:40). The results of the hedonic organoleptic test showed that the selected formula was F1 functional cream soup product. The nutrient content analysis showed that the product contained 1.98% water, 1.88% ash, 4.00% fat, 13.36% protein, 78.76% carbohydrates, 17.87% total dietary fiber, 10.71% soluble dietary fiber, 162.59 μg/g total isoflavones, and 254.58 μg/g total anthocyanins. Each portion of the F1 product could contribute 10.66% and 11.73% of the recommended dietary allowances (RDA) for energy and protein for women of menopausal age, respectively. Each portion also had an antioxidant activity of 723.73 mg/100 g (AEAC). The product is safe to consume because its total microbial content was 3.4 x 102 colonies/g. The resulting product has the potential to be a functional food due to its fiber, total isoflavones, and total anthocyanins contents, as well as its antioxidant activity.

Abstract

The objective of this study were to analyze the effect of different compliance monitoring cards of iron supplementation and the determinants in female adolescents in Bogor. Design of this study was quasi experimental. There were 240 adolescent girls from 6 different schools in Bogor who participated and allocated into 3 groups: receiving either monitoring card from Health Department (M), monitoring card verified by teacher and parents (M+T), and monitoring card verified by teacher with additional information about anemia and iron supplementation (M+TP). The data of iron supplement consumption compliance, perception of iron supplementation, nutritional knowledge, motivation, parents and teacher support were collected. The results showed, that a significant difference on compliance level among the groups (p<0.05). The M+TP group had the highest compliance level. Weekly compliance rate was higher (15%) compared to compliance during which participants were menstruating. The most determining factor for compliance level was teacher support (p<0.05; OR=4.7; 95%CI;1.5-14.2). The developed monitoring cards can improve compliance of iron supplement consumption on female adolescents.

Abstract

The aims of the study were to analyze iron content, beta carotene content and organoleptic test of orange fleshed sweet potato cookies which had been fortified with NaFeEDTA. This reaserch used experimental method with one factor completely randomized design of iron with 100 ppm, 150 ppm and 200 ppm of NaFeEDTA. Analysis of iron content was conducted using Atomic Absorption Spectrophotometry and analysis of beta carotene was conducted by using spectrophotometry. Then, organoleptic test was conducted using hedonic test. The result of iron content in cookies is 27.97 ppm-53.42 ppm while beta caroten is 83.40 ppm-129.72 ppm. Organoleptic test results in terms of color, aroma, and texture, the fortified cookies were as well-liked as the control ones; taste, however, the panel found the fortified cookies more preferable. The highest level of iron content, beta carotene content and organoleptic test were orange fleshed sweet potato cookies fortified with 200 ppm NaFeEDTA.

Abstract

The objective of this study were to analyze the effect of nutrition education media based on android and website to behavior and their relationships with balanced nutrition in primary school students. The design of this study was quasy experimental. A pre-post intervention study was conducted in Tuban City, East Java-Indonesia and involved 144 grades 5 primary school students. The intervention was conducted at the school by applying nutrition education media such as poster, powerpoint presentation, android, and website. A self-administered measurement with a validated questionnaire was applied to assess balanced nutrition behavior before and after the program. The result showed that a total of 72.9% school children had good knowledge, 78.5% positive attitude, 54.9% good practices on balanced nutrition before intervention. After the education program, the good knowledge, the positive attitude, and the good practices on balanced nutrition increased by 11.8%, 5.5%, and 15.9%, respectively. The media of nutrition education based on android was better than the others. In conclusion, the balanced nutrition behavior could be improved by the nutrition education program.

Abstract

This study aims to examine the antihyperglycemic effect of white tea (Camellia sinensis) and Moringa oleifera when administered as a single component and as mixture in streptozotocin-induced diabetic rats. The study design was experimental. The first step was to analyze epigallocathecingallat (EGCG) content as standard with High Performance Liquid Chromatography (HPLC) method. The second step was intervention in Sprague dawley rats induced by streptozotocin 40 mg/kgBW. Intervention held for 21 days with given white tea (WT), M. oleifera (MO), mixture of white tea and M. oleifera (WT+MO) and green tea (GT) as positive control with reference dose 100 mg/kgBW EGCG. Rats blood glucose and body weight were measured. The results are WT having the highest content of EGCG (4.46%). MO and WT+MO only have 2.42% and 2.46% of EGCG while GT as control is the lowest (1.29%). Measurements of blood glucose and body weight in group that given WT or MO as single component showed no significant difference with control negative group (p>0.05). Blood glucose decreased significantly in group WT+MO (p<0.05). Administration of WT+MO was able to maintain a stable body weight during the intervention period (p>0.05). The combination of white tea and M. oleifera has better ability as an antihiperglycemic agent compared to single component.

Abstract

This study aimed to compare the effect of red dragon fruit extract (Hylocereus polyrhizus) and white dragon fruit extract (Hylocereus undatus) to total cholesterol levels in white rats (Rattus norvegicus). Total of 30 males white wistar strains were divided into five treatments i.e: (1) standard feed and Na-CMC 1% (K1), (2) standard feed and quail egg 10ml/kgBW (K2), (3) standard feed, quail egg 10ml/kgBW and simvastatin dose 0,72mg/day (P1), (4) standard feed, quail egg 10ml/kgBW and red dragon fruit extract dose 60mg/200gBW/day (P2), (3) standard feed, quail egg 10 ml/kgBW and white dragon fruit extract dose 120mg/200gBW/day (P3). The intervention was carried out for 14 days after 7 days acclimatization period. Data was analyzed by One Way ANOVA test and continued with Post Hoc Bonferroni test (p=0.05). In P2 group, there was a difference of total blood cholesterol level by 25.83 mg/dl compared with the positive control group and statistically significant (p<0.05). In P1 and P3 group there were difference in cholesterol levels of 9.5 mg/dl and 11.5 mg/dl compared with the positive control group, but not statistically significant (p>0.05). The comparison between red dragon extract group and white dragon extract showed a non-significant difference (p>0.05). Red dragon fruit extract and white dragon extract have a potential effect to improve hypercholesterolemia conditions.
