Abstract

Stunting is one of the health problems that has become a priority to address in Indonesia. Solodiran Village is one of the stunting-focus (locus) villages in Klaten Regency. Stunting prevention interventions need to be carried out as early as possible, even before the baby is born, starting from when women are still in their teenage years. Programs to support the reduction of stunting cases can be carried out by providing education to at-risk groups, such as women of childbearing age, pregnant women, breastfeeding mothers, and mothers of toddlers. The Dapur Sehat Atasi Stunting (DASHAT) program, launched by the National Population and Family Planning Board (BKKBN), is a program aimed at being a center for nutrition and services for children with stunting. This program includes a healthy menu that uses local products, which also helps empower and improve the welfare of the surrounding community. Solodiran Village has various local food sources such as various vegetables, chicken, and catfish, which can be utilized as healthy food sources to prevent stunting. The program offered for stunting prevention in Solodiran Village, by adopting the DASHAT program, which includes activities such as education using PowerPoint media about how to create DASHAT menus, followed by demonstrations on processing and serving DASHAT menus. This activity was carried out successfully with 20 participants. The results of the activity showed an increase in the participants' knowledge after attending the education, as indicated by an average post-test score of 8.7 (categorized good knowledge). Participants' understanding of processing balanced nutrition menus based on local food also improved after the demonstration on how to process and serve DASHAT menus. Through this program, it is hoped that the knowledge and skills of the target group in preparing healthy, balanced meals will improve, which could help reduce stunting cases, especially in Klaten Regency.

Abstract

This community service activity was carried out with involving partners from the Mount Muria Trekking Community in Rahtawu Village, Gebog District, Kudus Regency, Central Java. The activity was driven by the absence of an official trekking route map to the Natas Angin Peak and Puncak 29 of Mount Muria, as well as unclear locations of trekking posts, Shelters, water sources, and hazard zones. In fact, this route has significant potential to be developed as an official trekking path that could support the development of Rahtawu Village as a nature-based tourism village. In this activity, the team conducted a field survey using GPS tracking methods to collect position and elevation data at key points. Abstract

This community service program was conducted with the Benur Barokah Group (Tuban Regency), a producer of vannamei shrimp (Litopenaeus vannamei) post larvae at the PL-5 stage. Major constraints included inconsistent natural feed quality, water-quality management based mainly on experience, and limited marketing, leading to low harvest success (≈40% of stocked PL-5) and fluctuating survival rates. The program aimed to improve seed production by mentoring partners on Chlorella sp. microalgae culture as natural feed, training on routine water-quality monitoring, and providing measuring tools (digital thermometer and refractometer), supported by an operational culture module. A website was also developed to broaden marketing reach. Methods included site surveys, socialization and extension sessions, hands-on mentoring, and monitoring and evaluation. Outcomes included improved partner understanding of microalgae culture and key water-quality parameters, availability of monitoring instruments, and the establishment of digital promotional media. Questionnaire-based evaluation indicated highly positive partner responses. Sustainability will be supported by appointing responsible personnel, scheduling routine culture activities and water-quality record keeping, and periodically updating digital marketing content.

Abstract

The main problem faced by the community partners in Dusun Palur Kulon, Ngringo Village, is the limited knowledge of the health benefits of grape leaves, despite their existing cultivation in the area. As a result, grape leaves have not been optimally utilized as nutritious local food and lack health-based product branding. This community service program, conducted through a collaboration between lecturers and the Nutrition Student Association of Universitas Muhammadiyah Surakarta (UMS), aimed to improve community nutrition literacy through innovative utilization of grape leaves as healthy and value-added local food. The activity was carried out at the community’s request and consisted of an educational session, interactive discussions, a video demonstration on grape leaf chip processing, and a reflection session. A total of 37 community members participated actively. The materials covered nutritional value, health benefits, and proper processing techniques of grape leaves. The results indicated improved community understanding of the health benefits of grape leaves and increased interest in developing grape leaf–based food products. Evaluation through discussions and reflections showed that the interactive approach and audiovisual media were well received and easy to understand. Follow-up plans include continued assistance in product processing, strengthening health-based branding, and supporting the development of grape leaves as a sustainable local food product.

Abstract

The Mina Makmur Jaya Floating Net Cage (KJA) Group in Gampingan is a community group engaged in the breeding of Nile tilapia (Oreochromis niloticus) using the puddle system method, located in Gampingan Village, Pagak District, Malang Regency. The main problem faced in this business is the slow growth of fish fry, which results in suboptimal seed production. This condition is caused by several factors: water quality that is highly dependent on weather conditions, inappropriate breeding techniques, and inadequate nutrition or feed. The proposed solutions include conducting socialization activities and preparing a water quality management module based on Adaptive Water Management, providing water quality measuring instruments, organizing training and SOP development for seed breeding and packaging techniques, and conducting socialization on feed management for tilapia hatchery. The results of these activities showed an increase in partners’ technical skills, business management efficiency, and seed quality. In addition, outputs were produced in the form of SOPs, training modules, activity documentation, and new skills that help improve tilapia fry productivity, reduce operational costs, and expand distribution reach. Thus, this program contributes to strengthening food security, increasing economic value, and ensuring the sustainability of tilapia breeding enterprises at the local level.

Abstract

Based on reports from Ngemplak 1 Public Health Center (Puskesmas Ngemplak 1) in Sleman in 2023, the number of stunted children under five has not shown a significant decrease, although the prevalence has fallen below 14%. The prevalence of stunting was 12% in 2022 and decreased by only 0.2% in 2023. This figure is still below the Sleman District target, which requires a reduction to 7%. One of the groups at risk for stunting is pregnant women. The knowledge of pregnant women regarding food processing to improve the nutritional value of food products is crucial, as it is expected to positively influence their behavior in providing nutritious meals. Composite flour is a mixture of wheat flour and other types of flour aimed at enhancing the nutritional and sensory qualities of food products. Many pregnant women are still unfamiliar with how to process wheat-based products by incorporating composite flour to increase nutritional value. Therefore, this educational activity was conducted to improve pregnant women’s knowledge related to food processing using composite flour to enhance the nutritional content of wheat-based foods such as cookies, bread, and flakes. The health education session was delivered using lectures supported by PowerPoint media, videos, and leaflets. The results of the community service activity showed an increase in post-test scores compared to pre-test scores, indicating an improvement in knowledge about composite flour for enhancing the nutritional quality of food products for pregnant women.
