Abstract

Background: Indonesia is a country that has abundant local food ingredients. One of the local food ingredients that can be utilized and processed into bingkang cake is banana flour and pumpkin. Banana and pumpkin flour have good nutritional value for health. In addition to utilizing local food, this substitution of banana and pumpkin flour can also increase the nutritional value of bingkang cake.Objective: To determine the effect of substitution of banana kepok flour and pumpkin puree on the acceptability and content of carbohydrates and vitamin C in bingkang cake.Research Methods: This research is an experimental study, with the experimental design used is a completely randomized design, 3 treatments and 3 repetitions. Data processing and analysis was carried out using ANOVA (Analysis of Variance) andfurther Duncan's multiple testtest.Results : The substitution of banana kepok flour and pumpkin puree 25%, 50% and 75% significantly affected the organoleptic properties with a significant level (P value 0.05). On average, the panelists gave an assessment of likes and dislikes the taste, aroma, color and texture of the bingkang cake. The results of the analysis of the highest carbohydrate content were in the 75% treatment and the highest Vitamin C content was in the 25% treatment.Conclusion : The substitution of banana kepok flour and pumpkin puree has a significant effect on the texture, taste, aroma and color of the bingkang cake.Suggestion: It is hoped that further research will be conducted on the chemical properties of bingkang cake substituted with kepok banana flour and pumpkin puree.

Abstract

Background: the Level of fiber consumption of Indonesia's population in general is still low, so the need for innovation in product development of prepared foods that are high in fiber. Examples of materials that can be used can be used is black rice and red beans that have fiber content to 28.59 g% 35,44% g and allows to be added in the manufacture of snack bar. Objective: to determine the effect of various differences in the composition of rice flour and black bean flour red against the fiber content and the received power snack bar. Method: 1 factors, i.e. differences in the composition of rice flour and black bean flour red as well as 5 standard of treatment, i.e. the composition of A, B, C, D, and E and 3 times repetition. Fiber content was analyzed by using gravimetric method. Received power carried out by 20 panelists using hedonic test. Results: No influence of differences in the composition of rice flour and black bean flour red against the fiber content the snack bar (p= 0.016; p0,01). There is the influence of differences in the composition of rice flour and black bean flour red against the received power of the texture on the composition of A with D (p= 0.007) as well as a sense between the composition of B with D (p= 0.003) and B with E (p= 0.001) and no effect on the color and aroma of the snack bar. Conclusion: the Composition of the snack bar which is recommended to be developed is the composition C (50% rice flour and black bean flour red) with the donation of the fiber by 21,24 g%.

Abstract

Latar Belakang: Edukasi memberikan dampak positif dalam menurunkan tekanan darah, serta meningkatkan pengetahuan dan sikap pasien hipertensi. Diet DASH merupakan salah satu upaya pengendalian hipertensi. Penggunaan media pendidikan mempengaruhi hasil yang ingin diperoleh. Media audiovisual efektif meningkatkan pengetahuan, sikap, dan perilaku ke arah positif pada penderita hipertensi.Tujuan: Mengetahui pengaruh pendidikan gizi diet DASH dengan media audiovisual terhadap pengetahuan, sikap, dan perilaku gizi pasien hipertensi.Metode: Jenis penelitian ini adalah quasi eksperimen dengan desain pretest-posttest control group design. Jumlah responden pada masing-masing kelompok berjumlah 11 orang. Waktu penelitian selama 4 minggu. Data yang dikumpulkan adalah pengetahuan, sikap, dan perilaku gizi. Data pengetahuan dan sikap diperoleh dari bentuk pengetahuan dan sikap gizi. Sedangkan data perilaku gizi menggunakan bentuk FFQ Semi Kualitatif. Analisis statistik menggunakan uji Paired sample t-test dan Mann-Whitney Test.Hasil : Terdapat pengaruh pendidikan gizi diet DASH dengan media audiovisual terhadap pengetahuan gizi (p = 0,000). Terdapat pengaruh pendidikan gizi dengan media audiovisual terhadap sikap gizi (p=0,000). Tidak terdapat pengaruh pendidikan gizi diet DASH dengan media audiovisual terhadap perilaku gizi (p 0,05).Kesimpulan : Edukasi gizi pada diet DASH dengan media audiovisual meningkatkan pengetahuan dan sikap gizi pada pasien hipertensi. Namun hal tersebut tidak dapat memperbaiki perilaku gizi pada pasien hipertensi.

Abstract

Background: Agility is one of the important aspects to achieve maximum achievement. Player agility can be influenced by a combination of genetic factors, motivation, training, nutritional status, health status, and somatotype. In this study the things that will be examined in influencing agility are fat intake, percent body fat, and somatotype.Objective: To determine the relationship between fat intake, body fat percentage, and somatotype with the agility of soccer athletes in the Salatiga Training Center (STC) training.Method: This study was anstudy observational with adesign cross sectional. The sample used was all football athletes at the Salatiga Training Center (STC) and included in the inclusion criteria. The test used wasTest Chi Square to determine the effect of fat intake, percent body fat, somatotype on athlete's agility andtest Logistic Regression to determine how much influence fat intake, body fat percentage, and somatotype had on agility.Results: There was no relationship between fat intake and the agility of soccer athletes at the Salatiga Training Center (STC) training. There is no relationship between the percentage of body fat with the agility of soccer athletes at the Salatiga Training Center (STC) training. There is no relationship between somatotype and the agility of football athletes at the Salatiga Training Center (STC) training.Conclusion: There is no relationship between fat intake, percent body fat, and somatotype with the agility of soccer athletes at the Salatiga Training Center (STC) training.

Abstract

Tanda dan gejala Covid-19 dapat diminimalkan dengan upaya peningkatan daya tahan tubuh. Salah satu upaya yang dapat dilakukan adalah penerapan gizi seimbang. Penerapan kebiasaan makan seseorang dengan pedoman gizi seimbang diduga dipengaruhi oleh beberapa faktor. Pengetahuan seseorang merupakan salah satu faktor seseorang dalam menerapkan kebiasaan makan dengan pedoman gizi seimbang. Penelitian ini bertujuan untuk mengetahui hubungan antara tingkat pengetahuan tentang Covid-19 dengan perilaku penerapan gizi seimbang pada mahasiswa di Asrama Mahasiswa Kalimantan Utara, Yogyakarta, Indonesia. Penelitian ini merupakan penelitian observasional dengan pendekatan cross-sectional. Subjek penelitian terdiri dari 43 orang yang memenuhi kriteria inklusi eksklusi penelitian. Variabel bebas penelitian adalah tingkat pengetahuan tentang Covid-19, variabel terikatnya perilaku penerapan gizi seimbang. Data dianalisis statistik dengan uji Fisher Exact. Hasil penelitian menunjukkan sebanyak 83,7% subjek memiliki pengetahuan tentang Covid-19 dengan kategori tidak baik dan sebanyak 95,3% subjek memiliki perilaku penerapan gizi seimbang dengan kategori tidak baik. Hasil uji Fisher Exact untuk menganalisis hubungan antara tingkat pengetahuan tentang Covid-19 dengan perilaku penerapan gizi seimbang menunjukkan nilai p = 0,023 (p0,05). Kesimpulannya, tingkat pengetahuan tentang Covid-19 memiliki hubungan yang signifikan dengan perilaku penerapan gizi seimbang.

Abstract

Background : Eucheuma cottonii is seaweed containing carrageenan, soluble fiber compounds. Carrageenan could affect the absorption of monosaccharides and delaythe rate of increasing blood glucose levels. This study aims to determine the effect of Eucheuma cottonii seaweed pudding on postprandial blood glucose levels.Method : Study design was an experimental series, involving 10 students of Polytechnic of Health Semarang, based on the inclusion criteria. The subjects received two kinds of interventions. Firstly, subjects received complete meals. In the next week, was treated with complete meal plus Eucheuma cottonii seaweed pudding. Paired T-test was used to analyze differences of postprandial blood glucose levels.Results : Mean levels of fasting and postprandial blood glucose after complete meal is 92.5 mg / dl, minute-30 was 133 mg / dl, 1st hour was 118.5 mg / dl, 2nd hours was 107.2 mg / dl and 3rd hour 95.8 mg / dl, respectively. Blood glucose level after complete meal plus 100 gram seaweed pudding, is 87.7 mg / dl, postprandial 30 minute 120.9 mg / dl, 1st hour 112.9 mg / dl, 2nd hour 104 mg / dl and 3rd hour of 95.4 mg / dl. There is no significant difference on post-prandial blood glucose after fed with Eucheuma cottonii puding (p 0.05).Conclusion : Eucheuma cottonii seaweed pudding does not affect postprandial blood glucose levels on healthy subjects.

Abstract

Background : Uncontrolled diabetes could lead to serious complication. Diabetes therapy consists of four pillars where nutrition education is very important in managing the disease.Objective : To analyze the effect of nutrition education (Diabetes’ four pillars management) through android mobile application on the knowledge of Diabetes’ four pillars management in patients with DMT2.Method : A quasi experiment research with a pretest posttest control group design. Twenty-six participants were selected by simple random sampling method. Data were collected based on identity and knowledge which were done by interviewing with questionnaires. Changes on knowledge levels were determined by Mann Whitney test.Result : There were significant changes on knowledges related to diabetes (p=0.034), medical nutrition therapy (p=0.008) and physical exercise (0.014) between intervention and control groups, and there was an increase in pharmacological therapy knowledge but we did not observe any significant differences between intervention and control group (p=0.976).Conclusion : Nutrition education (Diabetes’ four pillars management) through android mobile application can increase knowledge of diabetes, medical nutrition therapy and physical exercise.

Abstract

Background: The glycemic index is a value that indicates the ability of a carbohydrate-containing foods in improving blood sugar. Previous research also done extensive research on the glycemic index of a food, but every meal we consume some foods and through various treatment processes This study will calculate the glycemic index prepared foods namely pecel distinguished from varieties of rice such as rice Ciherang that have a low glycemic index (55), brown rice has a medium glycemic index (59) and Sintanur rice has a high glycemic index (91). Based on this background, researchers interested in researching on the difference in value of glycemic index and glycemic load of rice pcel of three kinds of rice. Objective: To determine differences in the value of glycemic index and glycemic load on Ciherangpecel of rice, red rice, and rice Sintanur. Methods: This study used an experimental research design. There were three treatment groups each group consisting of 9 people. After 10 hours of fasting blood glucose measurements were taken and given 50 grams of carbohydrates such as white bread 95 grams. Blood glucose levels were measured again at minute 15, 30, 45, 60, 90 and 120. An interval of one week, the subjects were given pecelciherang rice, red rice and rice Sintanur, subsequently re-measured blood glucose as the first treatment. Results: The value of rice IG pecelCiherang rice was 86.67, 86.69 pecel brown rice and rice pecelSintanur 90.59. Pecel glycemic load of 43.82 Ciherang rice, red rice 43.95 and 45.38 Sintanurpecel rice.

Abstract

Background: Maternal Mortality Rate (MMR) is an indicator to see the success of maternal health efforts. The results of the 2018 Riskesdas stated that in Indonesia, 48.9% of pregnant women had anemia. 84.6% of anemia in pregnant women occurs in the 15-24 year age group. To prevent anemia, every pregnant woman is expected to get a blood supplement (TTD) of at least 90 tablets during pregnancy. The coverage of giving iron tablets to pregnant women in Indonesia in 2019 was 64.0%. This figure has not reached the 2019 Strategic Plan target of 98%. The low compliance of pregnant women in drinking iron tablets requires a meditation application to help remind them to drink iron tabletsThe aim of the study : was to analyze the effect of the Pregnant Women Friend Application (ASIH) on compliance with Fe tablets and anemia status of pregnant womenMethods: Design This study is an analytical study with experimental design. The population in this study were all pregnant women in Indonesia.Results: Adherence to taking iron tablets increased after being given the application. The statistical test proved that the application had an effect on adherence to drinking iron tablets (P value = 0.000). : Anemia status has decreased after being given the application. The statistical test proved that the application had an effect on anemia status (P value = 0.000).Conclusion: Compliance of pregnant women taking iron tablets and anemia status after using the application was higher, compared to before using the application

Abstract

Background  : Hypertension in children and adolescents can be defined as Systolic Blood Pressure (TDS) / Diastolic Blood Pressure (TDD) on repeated measurements obtained from values above 95 percentiles. The incidence of hypertension in Riskesdas 2013 data for the age group 15-17 years is 5.3%. The prevalence of hypertension in adolescents in the province of Central Java in the 2013 Riskesdas data was 12.8%. Prevention of increasing the value of hypertension prevalence in adolescents can be done with aerobic exercise activities such as jogging. Objective:  To determine the effect of giving aerobic exercise activities to changes in blood pressure in adolescents with hypertension. Method: Thistype of research is experimental with Randomized Control Trial Group Design. Sampling was done randomly to get 18 treatment subjects and 18 control subjects. Data collected were age, sex, weight, height, sodium intake, level of physical activity, blood pressure before and after treatment. Test the independent t-test wasused for data differences in blood pressure before and after treatment in both groups and paired t-test to determine changes in blood pressure before and after treatment, whereas the test ANOVA repeated measured is used to determine the effect of aerobic exercise (jogging)on blood pressure sample. Results: There were differences in systolic and diastolic blood pressure between the treatment and control groups (p 0.05). There is an effect of giving aerobic exercise activities to decrease systolic and diastolic blood pressure (p = 0,000 and p = 0.003) for each measurement at each meeting. Conclusion: The provision of aerobic exercise activities affects the decrease in diastolic systolic blood pressure in adolescents with hypertension.
