Abstract

Red Nile tilapia (Oreochromis niloticus) fillet is a highly nutritious aquaculture product but is prone to spoilage, thus requiring environmentally friendly preservation innovations. This study aimed to evaluate the effect of fermented rice washing water with varying vinegar concentrations on the organoleptic characteristics of red tilapia fillets during cold storage. The research was conducted experimentally at the Laboratory of Fishery Product Technology, Universitas Padjadjaran, using five vinegar concentration treatments (0%, 0.5%, 1%, 1.5%, and 2%), and organoleptic parameters observed included appearance, odor, mucus, and texture. Data were analyzed using the Friedman test and Bayesian analysis. The results showed that the treatments significantly affected fillet shelf life, particularly in maintaining appearance and mucus up to day 11 of storage. The 1% vinegar concentration was identified as the most effective treatment in preserving fillet freshness during refrigeration. In general, the combination of fermented rice washing water and vinegar can serve as a natural preservative alternative to extend the shelf life of fishery products.

Abstract

The purpose of this study was to evaluate the effectiveness of legume-based prebiotics in milkfish feed, with the hope of increasing growth rate, survival rate, and feed efficiency. The study was conducted using five feed treatments containing soybean flour, peanuts, green beans, red beans, and control. Feed was given at a percentage of 5% of fish biomass per day for 60 days. The results showed that feed containing red beans (Feed D) gave the best results, with a survival rate of 77.777% and the highest specific growth rate of 12.937%. However, the feed conversion ratio was not significant. Feeding containing red beans is thought to improve the performance of fish digestive microflora, contribute to improved health and feed digestibility, and support faster growth. However, although increased survival and growth were achieved, feed utilization efficiency (FCR) still needs to be improved. This study shows that red bean-based feed has the potential to increase milkfish cultivation results sustainably, but feed management and environmental factors are also very important to support cultivation efficiency.

Abstract

Research on fermented feed based on green coconut water combined with molasses and EM4 in the maintenance of tilapia (Oreochromis niloticus) fry in flooded soil ponds has not been conducted until now. Therefore, research using fermented feed needs to be conducted to obtain the right usage technique. This study aims to determine the effective dose of coconut water to improve the growth performance of tilapia fry maintained in soil ponds. This study used a completely randomized design (CRD) with four treatments and three replications. The treatments given in this study consisted of treatment A (Treatment without giving green coconut water, commercial pellet feed 1 kg + 200 mL boiled water + 20 mL molasses + 10 mL EM4 probiotic), B (Treatment commercial pellet feed 1 kg + 150 mL boiled water + 50 mL  coconut water + 20 mL molasses + 10 mL EM4 probiotic), C (Treatment commercial pellet feed 1 kg + 100 mL boiled water + 100 mL coconut water + 20 mL molasses + 10 mL EM4 probiotic), and D (Treatment commercial pellet feed 1 kg + 200 mL coconut water + 20 mL molasses + 10 mL EM4 probiotic). Tilapia seeds measuring 2.66-3.06 g were randomly spread into 12 hapa nets measuring 1x1x1 m3, which were installed in an earthen pond with a stocking number of 30 fish/hapa net. The test fish were kept for 28 days and given test feed with a frequency of 1 time/day. The research parameters consisted of harvest biomass (Bt), daily growth rate (DGR), feed conversion ratio (FCR), feed efficiency (EP), and survival rate (SVR). Providing fermented feed based on green coconut water with the lowest and highest doses did not provide optimum results on the growth of catfish. Optimum results were obtained in treatment B.

Abstract

This study aims to determine the most preferred percentage of indian mackerel surimi addition to mantou based on panelist evaluations. The research was conducted from December 2024 to March 2025 using an experimental method with four treatments (0%, 20%, 30%, and 40%) and 20 panelist as the retest. Panelist acceptance was assessed using a hedonic test and Bayes analysis. The hedonic test data were analyzed using the Friedman test. The most preferred mantou sample was further analyzed for its nutritional content through proximate analysis. The results showed no significant differences among treatments in terms of panelist preference. However, the control mantou (0%) and the mantou with 40% Indian mackerel surimi addition had the highest preference scores. The 40% treatment received the highest mean score for appearance (7.90), while the A (0%) control sample scored highest for aroma (8.10) and taste (8.00). Both treatments had the same texture score (7.80). The highest alternative value in the Bayes test was obtained by treatment D (40%) which amounted to 8.03. Proximate analysis revealed that the addition of mackerel surimi tended to increase the nutritional content of mantou, except for carbohydrates. The , 40% surimi mantou had 39.35% moisture, 1.13% ash, 5.17% fat, 10.49% protein, and 43.86% carbohydrates. Meanwhile, the control mantou contained 31.15% moisture, 0.98% ash, 4.57% fat, 8.28% protein, and 55.02% carbohydrates.

Abstract

Tilapia salin (Oreochromis niloticus) is one type of fish for consumption that has economic value and quite high market demand in Indonesia because of its savory meat taste (Baihaqi et al. 2024). In fisheries cultivation, one important aspect in fish farming activities is feed management. This is because it can affect the growth rate of fish and the resulting feed conversion ratio (FCR) value (Budayati et al. 2023). The feed conversion ratio (FCR) value is one of the parameters used to assess the efficiency of feed utilization by fish. This research method uses a qualitative descriptive method with a literature review approach that examines and describes the results of previous studies regarding the effect of cultivation methods on the feed conversion ratio (FCR) value in tilapia salin (Oreochromis niloticus) in Indonesia. This study shows that the cultivation method has a significant effect on the feed conversion ratio (FCR) value in tilapia salin (Oreochromis niloticus). The biofloc system provides the best efficiency with the lowest FCR value (up to 1.07), followed by the recirculation system (RAS) and floating net cages (KJA) with relatively low and stable FCR values. In contrast, the pond system shows the most variable FCR values, even tending to be high, especially if water quality and feed management are not maintained.
