Abstract

Dragon fruit is one of the plants that has a high antioxidant content. Consumption of red dragon fruit only utilizes the fruit, while the skin waste which amounts to 30-35% of the fruit weight is underutilized. This study aims to determine whether the addition of red dragon fruit peel flour in cereal foods can increase antioxidant content using the DPPH (2,2-diphenyl-1-1-picrylhydrazyl) method. The inhibition power against oxidation through the antioxidant content test of red dragon fruit peel flour is 50.84%, and the inhibition power against oxidation obtained through the antioxidant content test of red dragon fruit peel flour and cereal is 25.83%. The sensory test results conducted on the taste test of 20 untrained panelists proved that the red dragon fruit peel flour could be well received by the panelists. The antioxidant inhibition level which is not too high with a value of 51% provides an opportunity for red dragon fruit peel as a natural antioxidant ingredient in food. The test results of the addition of red dragon fruit peel flour still have potential as a food additive that contains antioxidants and can be well received by people. Keywords: Dragon Fruit, Antioxidants, Cereals

Abstract

Abstract

Anthocyanins are one of the natural color pigments in plants that have an important physiological function that can be used as a detector of synthetic substances that exceed the limit, especially the use of sodium nitrite in processed meat. Anthocyanins are found in purple sweet potatoes. Therefore, this study aims to maximize the use of Purple Sweet Potato skin as a biosensor of chemical content in food. This type of research is a descriptive research with quantitative laboratory testing using a UV-Vis spectrophotometer test and a qualitative test using whatmann filter paper No.42 as an indicator. The observed parameter was a discoloration that occurred on whatmann filter paper No.42 before and after dripping the tested sodium nitrite solution. The results showed that the skin of Purple Sweet Potato had anthocyanin levels of 119.56 mg / 100 grams, and from the six samples tested, there was no use of sodium nitrite that exceeded the threshold because after dripping the sample juice occurred a light light purple color on the indicator paper that did not show a discoloration to the positive control dripped sodium nitrite concentration of 5% and 10% which was dark blue. So the results show that purple sweet potato skin anthocyanins have the potential to be developed as natural biosensors for testing the content of chemicals in food, specifically in detecting the use of sodium nitrite that exceeds the threshold in processed meat products.  Keywords:      Anthocyanins, Purple Sweet Potato Skin, Sodium Nitrite, Processed Meats

Abstract

Artocarpus kemando Miq., a member of the Moraceae family, is found in tropical regions of Indonesia, including Karang Anyar, South Lampung. This study aimed to qualitatively analyze the phytochemical content and evaluate the antibacterial activity of the methanol extract of Pudau branch bark against Bacillus subtilis. The extraction was performed using the maceration method with methanol as the solvent. Phytochemical screening was conducted in triplicate and revealed the presence of alkaloids, flavonoids, terpenoids, and saponins, while steroids were absent. Antibacterial activity was assessed in triplicate using the paper disc diffusion method, with results showing moderate activity of the extract, indicated by an average inhibition zone diameter of 10.33 mm. Statistical analysis using one-way ANOVA revealed a significant difference in the average inhibition zone diameters among the treatment groups (methanol extract, negative control, and positive control) with a p-value of 0.000. Tukey HSD post hoc analysis confirmed that the methanol extract exhibited significantly higher antibacterial activity than the negative control, but significantly lower than the standard antibiotic amoxicillin (22.67 mm). These results highlight the potential of A. kemando Miq. Branch bark extract is a natural antibacterial agent, although its efficacy remains lower than the standard antibiotic (amoxicillin).

Abstract

Type 2 diabetes mellitus (DM) is a chronic metabolic disease characterized by increased glucose levels in the blood. Physical activity is one of the factors that can help control fasting blood glucose levels. This study aims to find out the description of fasting blood glucose levels in patients with type 2 Diabetes Mellitus based on physical activity. This study uses a quantitative descriptive design with a cross sectional approach. The results showed that 15 respondents (38.5%) had controlled fasting blood glucose levels (≤126 mg/dL), while 24 respondents (61.5%) had controlled blood glucose levels (>126 mg/dL). The average fasting blood glucose level of all respondents was 173 mg/dL. Based on physical activity levels, 11 respondents (28.2%) had moderate physical activity (600-3000 METs) and 28 respondents (71.8%) had high physical activity (>3000 METs). The conclusion of this study is that the majority of respondents have high physical activity, but blood glucose levels remain largely uncontrolled. This shows that physical activity alone is not enough to control blood glucose levels without thorough management such as diet, medical therapy, and other healthy lifestyles. Keywords: Type 2 Diabetes Mellitus, Fasting Blood Glucose, Physical Activity

Abstract

This study evaluates the adsorption performance of NaOH-activated cassava peel biochar (Manihot esculenta Crantz) for the removal of Pb²⁺ ions from aqueous solutions, with particular focus on the effects of solution pH and contact time. Cassava peel biochar was produced via pyrolysis at 180–350 °C and chemically activated using 0.1 M NaOH. Surface functional groups and morphology were characterized using Fourier Transform Infrared Spectroscopy (FTIR) and Scanning Electron Microscopy–Energy Dispersive X-ray (SEM–EDX). Batch adsorption experiments were conducted by varying solution pH (3–8) and contact time (30–120 min), while Pb²⁺ concentrations before and after adsorption were analyzed using Atomic Absorption Spectroscopy (AAS). The results showed that solution pH significantly affected Pb²⁺ adsorption, with the highest adsorption capacity of 9.94 mg/g achieved at pH 5. Contact time also influenced adsorption performance, and the optimum condition was obtained at 90 min, yielding a maximum adsorption capacity of 9.94 mg/g. These findings indicate that NaOH-activated cassava peel biochar exhibits stable and effective Pb²⁺ adsorption under slightly acidic conditions and moderate contact time, highlighting its potential as a low-cost and environmentally friendly adsorbent for Pb²⁺ removal from contaminated wastewater.

Abstract

Blood glucose levels are closely related to diabetes mellitus. Diabetes mellitus is a non-communicable disease where sufferers cannot automatically regulate glucose levels in their blood. Diabetes mellitus is also a chronic disease characterized by increased blood sugar levels (hyperglycemia). Lack of sleep can affect the function of the endocrine system, especially in impaired glucose tolerance, insulin resistance, and reduced insulin response, so that poor sleep quality can have an impact on student health and academic achievement. The aim of this research was to determine blood glucose levels in final year students of the D-III Health Analyst study program at Abdurrab University. The method used in this research is Point Of Care Testing (POCT) which uses capillary blood samples. The research results showed that 24 respondents had normal blood glucose levels, and 6 respondents had abnormal blood glucose levels. It can be concluded that respondents who have abnormal levels are because they often consume energy drinks  when  staying  up  late,  while  normal  respondents  do  not consume energy drinks. Keywords: Temporary Blood Glucose, Diabetes, Students
