Abstract

Introduction: Maternal Mortality Rate (MMR) and Infant Mortality Rate (IMR) are key indicators of a country's level of public health. One of the leading causes of maternal death during pregnancy and childbirth is Chronic Energy Deficiency (CED), which increases the risk of maternal mortality up to 20 times compared to pregnant women with adequate nutrition. In Baregbeg Health Center, Ciamis District, the prevalence of CED remains high, with 75 pregnant women affected in 2024, and a stunting prevalence of 4.75%. This situation is exacerbated by limited public knowledge about CED and stunting, as well as the lack of innovative nutritious food products. Objective: The purpose of this community service was to empower Posyandu cadres and local communities to improve maternal and child nutrition through education on CED and stunting prevention, and by developing an innovative local food product, keripik tapelur (crispy snacks made from tofu, tempeh, and eggs). Method: This public service activity was conducted in Dusun Jelat, Baregbeg Subdistrict, Ciamis Regency, through five stages: problem identification, program planning, implementation, evaluation, and documentation. Activities included educational sessions using e-leaflets and lectures, training for cadres and community members on making keripik tapelur, and evaluation of knowledge improvement and program sustainability. Result: Health education increased participants’ understanding of CED, stunting, and nutritious food processing. The community successfully produced keripik tapelur as a nutritious and practical complementary food. The product was well received and shows potential for further development as a community-based economic activity. Conclusion: Community empowerment through health education and innovative food processing can be an effective strategy to address CED and stunting. The development of keripik tapelur not only improves nutritional intake but also opens up local economic opportunities. This program supports Sustainable Development Goals (SDGs), particularly good health and well-being as well as economic growth.

Abstract

Urgensi penelitian ini adalah bahwa penanganan stunting yang tidak efektif dan sustainable akan menyebabkan gangguan jangka pendek dan jangka panjang pada sebagian besar balita di Indonesia. Maka, harus detail dan lebih perhatian dalam tahapan implementasi program di lapangan. Penelitian ini bertujuan untuk menganalisis implementasi program pemberian makanan tambahan (PMT) sebagai upaya penanggulangan stunting pada balita. Subjek penelitian ini adalah seluruh pihak yang terkait (stakeholders) dengan program PMT di posyandu desa Pombakka, kota Masamba kabupaten Luwu Utara. Stakeholder yang dimaksud adalah Dinas Kesehatan Masamba, kepala desa, pimpinan serta para nakes dan kader posyandu Desa Pombakka. Teknik pengumpulan data melalui observasi partisipatif, wawancara dengan pihak terkait, dan studi dokumen. Teknik analisis data menggunakan model Miles dan Huberman. Di mana data dikumpulkan, lalu direduksi, disajikan dan disimpulkan. Data yang terkumpul dianalisis secara interpretatif dengan memberikan makna dan kesimpulan. Teknik keabsahan data dengan melakukan triangulasi; sumber, waktu, dan data. Peneliti menjadi instrumen utama dalam penelitian ini. Berdasarkan enam parameter dari teori Van Meter dan Van Horn yang digunakan, hasil penelitian ini menunjukkan bahwa: Standar dan Sasaran Kebijakan dari program PMT telah tepat sasaran, meski masih menimbulkan kecemburuan sosial pada keluarga yang tidak masuk dalam kategori sasaran program. Kemampuan Sumber Daya: sumber daya manusia; finansial, sarana dan prasarana masih membutuhkan peningkatan dalam banyak sisi. Karakteristik pelaksana khusus bagi kader posyandu yang langsung turun lapangan juga masih memerlukan edukasi mengenai standar pola makan dan hidup sehat yang nantinya bisa disosialisasikan ke keluarga sasaran program PMT. Disposisi atau sikap pelaksana membutuhkan karakter yang tangguh dalam menghadapi tantangan di saat turun tugas. Dibutuhkan mental pengabdian tanpa batas. Komunikasi antar organisasi telah berjalan meski terkadang beberapa informasi terlambat sampai di para kader posyandu. Terakhir, lingkungan sosial, ekonomi, dan politik menjadi tantangan terberat. Sebab, sekuat dan bersemangat apapun para kader posyandu dalam mendelegasikan program PMT kepada masyarakat, tetap dibutuhkan umpan balik yang aktif dari masyarakat. Merekalah yang harus menyambut baik ikhtiar pemerintah sambil terus berusaha aktif mengontrol keluarga mereka agar tetap sehat dan jauh dari stunting.

Abstract

Purpose: The purpose of this study is to analyze the relationship between nutritional knowledge and attitudes toward food abstinence among postpartum mothers. Methods: This study employed a quantitative research design with a cross-sectional approach. Postpartum mothers in the working area of the UPTD Sadananya Community Health Center were selected using purposive sampling techniques. Data were collected using a structured questionnaire distributed through Google Forms to assess respondents’ nutritional knowledge and attitudes toward food restrictions. Data analysis was conducted using the Chi-Square test with a specified significance level. Results: The results showed that the majority of respondents had good nutritional knowledge and a positive attitude toward consuming nutritious foods. Statistical analysis indicated a significant relationship between nutritional knowledge and attitudes toward food abstinence. Respondents with higher levels of knowledge tended to demonstrate more rational behavior in food selection during the postpartum period. Conclusions: There is a significant relationship between nutritional knowledge and attitudes toward food abstinence among postpartum mothers. Therefore, continuous health education by healthcare professionals is essential to improve mothers’ understanding of balanced nutrition, support postpartum recovery, and promote the health of both mother and baby.
