Abstract

The aim of this community service is to train the readiness of the community and academic community of Poltekkes Kemenkes Surabaya in facing disasters in Indonesia. The implementation method took place on May 6, 2024, at the Nutrition Department of Poltekkes Kemenkes Surabaya, involving 100 participants, including lecturers, students, and local residents. The training utilized interactive methods such as discussions, role play, and disaster simulations to enhance participants' understanding and engagement. The outcomes showed a significant improvement in disaster nutrition management skills in the Surabaya region. Participants not only gained theoretical knowledge of disaster nutrition but also practical skills applicable in real-life situations. Recommendations from this initiative include enhancing the provision of more in-depth training materials, using advanced technology for simulations, and improving logistical support for smoother implementation of future activities. This community service significantly contributes to enhancing the readiness of Poltekkes Kemenkes Surabaya and strengthening community resilience to disasters in Indonesia. For future community service activities, it is recommended to conduct more comprehensive implementations and involve a wider range of participants.

Abstract

Heart disease is the leading cause of death in the elderly, mainly due to unhealthy diets and metabolic risk factors such as hypertension and diabetes. This nutrition education and dietary consultation program aims to increase the understanding and change of behavior of the elderly in implementing a healthy diet to prevent heart disease. The activity was held for one month in Gubeng District, Surabaya, involving 125 seniors, lecturers, and students. Intervention methods include interactive education, simulations, and personalized nutrition consultations. The evaluation results showed a significant increase in knowledge scores, changes in positive attitudes, and adoption of a healthier diet based on statistical analysis of the Paired t-Test and Wilcoxon Test (p < 0.05). Knowledge Improvement: The average knowledge score increased from 65.2 ± 10.1 to 82.7 ± 8.5, reflecting an increase of 26.9% (p < 0.05). Improved Attitudes: 85% of participants switched to a more positive outlook on adopting a heart-healthy diet, with the Likert scale rating increasing from 3.2 ± 0.8 to 4.5 ± 0.6 (p < 0.05).  This program effectively improves dietary knowledge, attitudes, and behaviors among the elderly in Gubeng Regency. The sustainability of the program is advised through technology-based education and family involvement to improve the quality of life of the elderly sustainably.

Abstract

This study aims to determine the potential of kalelo yogurt as supplementary feeding to prevent stunting. This type of research was pre-experimental with the Post-test only design method with the yogurt formula treatment. The statistical analysis used was Complete Randomized Design (CRD) 3 X 2 followed by Duncan test to see the difference in each formulation. And the organoleptic test of kalelo yogurt was processed using the Analysis Of Variant (ANOVA) test and Duncan test to see the level of difference significant at α level of 0.05. Results: The best formula of kalelo yogurt based on nutrient content was F1, which was consumed simultaneously with other foods to increase its nutritional value. While organoleptic tests showed F3 as the best product, with a rating level of (somewhat dislike-neutral). Based on the test results, the panelists still did not like kalelo yogurt very much, as it can be seen from the results of panelist evaluations ranging from somewhat dislike to neutral (4-5). This could be due to the aroma, taste and texture that were different from a solid yogurt. With increasing incubation time, microbial activity increases and the number of microbes increases, resulting in the pH of the medium decreasing. The best kalelo yogurt product from organoleptic and nutrient content was F3 and F1, respectively. The nutritional, energy and micronutrient content of the three formulas were not significantly different. To fulfill the nutritional needs of sufficient numbers requirements, pregnant women are advised to consume several times a day accompanied by other foods.

Abstract

Nutrition problems are still a major public health challenge, especially stunting which has a long-term impact on child growth and development. Based on the 2022 report of the TubanRegency Health Office, the prevalence of stunting in the work area of the Kawa Health Center reached 24.43%. Genaharjo Village is the focus of attention because the number of stunted toddlers has increased from 40 children (2023) to 45 children (14%) in 2024, while 66.7% of pregnant women are at high risk of experiencing Chronic Energy Deficiency (CED). This condition shows the need for intervention to support the achievement of the national target of reducing stunting by 14%. This Community Service aims to evaluate pre-post changes in the knowledge of cadres and mothers of toddlers, anthropometric skills of cadres and the processing of toddler menus by mothers after a two-session intervention in Genaharjo". The activity was carried out in August-September 2025 with evaluation through pre-test and post-test for knowledge, observation of cadre skills, assessment of mothers' ability in food processing, and urine examination of toddlers using the pyridinium crosslink rapid test. The results showed an increase in cadre knowledge from an average of 9.25 to 11.25 and mothers of toddlers from 9.6 to 11.1. Cadres are able to perform anthropometric measurements correctly, while mothers of toddlers are skilled in planning menus and processing 20 nutritious recipes based on local ingredients. Of the 20 urine samples of stunted toddlers, two showed positive results. This intervention is effective in increasing community capacity, but a comprehensive approach is needed including nutrition education, health monitoring, and sanitation improvement for the sustainability of stunting prevention.

Abstract

Anemia is a common health problem among adolescents, especially girls, due to increased iron requirements during puberty. Inadequate iron intake can lead to decreased hemoglobin levels and a higher risk of anemia during pregnancy. This study aimed to determine the effect of nutrition education and iron tablet supplementation (Tablet Tambah Darah/TTD) on knowledge and hemoglobin levels among adolescent girls at MTsN 3 Surabaya. This study used a quasi-experimental design with a nonrandomized pretest–posttest control group. A total of 80 respondents were selected using proportional stratified random sampling. Data were analyzed using the Kruskal-Wallis and Wilcoxon tests. The findings showed a significant effect of nutrition education on knowledge improvement (p = 0.002) and a significant effect of iron tablet supplementation on hemoglobin levels (p = 0.001). Nutrition education and iron tablet supplementation significantly improved knowledge and hemoglobin levels among adolescent girls. Schools and health centers are encouraged to provide regular counseling and monitoring of iron tablet consumption to prevent anemia.

Abstract

Indonesia merupakan negara dengan tingkat risiko bencana tinggi, sehingga diperlukan tenaga kesehatan yang memiliki kesiapsiagaan dalam menghadapi kondisi darurat, termasuk mahasiswa gizi. Namun, keterlibatan mahasiswa gizi dalam pelatihan tanggap bencana masih terbatas. Kegiatan pengabdian ini bertujuan untuk meningkatkan kompetensi kesiapsiagaan bencana mahasiswa gizi melalui pelatihan berbasis simulasi yang aplikatif dan kontekstual. Metode pelaksanaan meliputi empat fase, yaitu persiapan dan koordinasi, penyusunan modul pelatihan, simulasi lapangan, serta evaluasi dan tindak lanjut. Kegiatan melibatkan 135 mahasiswa dan 10 warga relawan yang berpartisipasi dalam pelatihan logistik pangan, Rapid Health Assessment, penyelenggaraan makanan darurat, dan konseling gizi. Hasil kegiatan menunjukkan peningkatan keterampilan mahasiswa dalam asesmen cepat, distribusi logistik, serta edukasi gizi bagi kelompok rentan. Selain itu, partisipasi masyarakat juga meningkat dalam memahami pentingnya kesiapsiagaan pangan dan gizi saat bencana. Simpulan kegiatan ini menegaskan bahwa pembelajaran berbasis simulasi efektif dalam membangun kapasitas mahasiswa dan masyarakat terhadap penanganan gizi darurat serta dapat dijadikan model pengembangan pendidikan kebencanaan di bidang kesehatan.

Abstract

According to the AKG (2019), the potassium requirement of adults is 4,700 mg. If a snack is given 10% of the requirement, then 470 mg is obtained per snack meal. To meet this need, an innovation of high-potassium snacks was carried out by formulating red beans in the form of flour into pancakes. The purpose of this study to determine the acceptability and potassium content of red bean pancake formulation as an alternative snack for people with hypertension. This study was an experiment on 4 different formulations with a ratio of wheat flour and red bean flour 100: 0 g, 85: 15 g, 70: 30 g, 50: 50 g, then tested for acceptability and tested for potassium levels. The highest acceptability test was in formulation 3 (PKM 3), which was 3.59 in the preferred category with a potassium content of 447.5 mg/100g. One serving of red bean pancake snack based on caloric needs obtained 80 grams for adult men with 358 mg of potassium and 67 grams for adult women with 300 mg of potassium. The highest acceptability test was in formulation 3 (PKM 3). One serving of red bean pancake snack can not meet the needs of potassium

Abstract

Growth trends of children under five are affected by several factors including mother’s knowledge and mother’s visit compliance to Integrated Service Post Program. During the COVID-19 pandemic mother’s visit to Integrated Service Post Program decreased, so this study to analyse the corrrelations of mother’s knowledge and mother’s visit compliance with growth trends of children under five post pandemics at Integrated Service Post Program in Sidoarjo District. The sample of 49 children under five. Collected data through interviews and observing growth chart to see growth trends. In this study, the average age of mothers under five was 31 years old, had a Diploma/Bachelor degree, had less knowledge, had a good level of visit compliance to Integrated Service Post Program, but most of the growth trends of childrens under five are not matched. The study shows that there is relationship between knowledge and mother’s visit compliance to the Integrated Service Post Program with the post-pandemic growth trend of children under five. Therefore, it is hoped that Integrated Service Post Program cadres can educate mothers under five about the importance of Integrated Service Post Program and mother can learn about how to read growth trends of children under five.

Abstract

Anemia is a condition in which blood hemoglobin levels are lower than normal in certain age and gender groups. Hemoglobin is the pigment in the blood that carries carbon dioxide and oxygen around the body. To confirm the results of a study on the acceptability and iron content of Gyo Yam (spinach dumplings) as an alternative snack to anticipate anemia in young women. Because this type of research aims to study the effect of one variable on other variables, or to test whether there is a change between one variable and another. This type of research is true experimental research. In this study, a laboratory test was conducted to test the formulation using the method used, namely ICP-OES (Inductively Coupled Plasma-Omission Spectroscopy) to measure iron levels. Result, each dumpling weighs 50 grams and contains 2.2 milligrams of iron.Conclusion, Gyoyam (Spinach Gyoza) Formula 3 can be used as an alternative snack to prevent anemia in young women.

Abstract

Chronic Energy Deficiency (CED) is a state of imbalance in energy and protein intake that lasts for a long time. One of the influencing factors is preconception nutritional knowledge and the level of energy consumption. The purpose of the study was to determine the relationship between preconception nutrition knowledge and the level of energy consumption with the incidence of CED in class XI SMA IPIEMS Surabaya. Research method, using analytical survey design with cross sectional. The sample of this study was 50 female students. The results of the study, the majority of female students were 17 years old and experienced CED. Have a deficient level of preconception nutritional knowledge and a severe deficit energy consumption level. There is a relationship between preconception nutrition knowledge with CED incidence (p = 0.005) and energy consumption level with CED incidence (p = 0.008) in class XI SMA IPIEMS Surabaya. The conclusion of this study is that there is a relationship between preconception nutrition knowledge, the level of energy consumption with the incidence of CED in class XI students of IPIEMS Surabaya High School, efforts that must be made are given counseling on proper nutrition from an early age to increase knowledge.
