Abstract

Sufficient food availability in an area does not guarantee household food security. Household food security is a condition for the fulfillment of food for every household both in terms of quantity and quality. The purpose of this research was to determine the factors related to household food security in Medan City.  The research design used was a cross-sectional design. The location was in Medan Kota and Medan Denai District that chosen purposively with criteria for poverty level is 15-20 percent. The household sample was taken randomly as 120 households with the criteria prosperity (Pra KS and KS 1,2,3). The result of the research shows that 67,5% of households were household food insecurity, and 32,5% of households were household food security. Household expenditure has a relationship with household food security (p= 0,000), while the age of the household head, number of family members, and education level did not show any relationship (p> 0,05). In conclusion, that household expenditure has a direct effect on the status of household food security in Medan City. There needs to be a strategy and active participation from the local government in overcoming the problem of household food security in Medan City.

Abstract

Stunting is a condition of chronic growth failure experienced by toddlers that can cause children to experience difficulties in achieving optimal growth and development according to their age. Stunting can be minimized if the factors that affect stunting in the region can be controlled properly. Many factors are thought to influence the incidence of stunting, one of which is food security. If food insecurity occurs in a household, this can increase the proportion of stunting events that are increasing which can directly increase the national stunting incidence rate and will continue to be a major health problem in Indonesia. Indonesia. The purpose of this study was to analyze the relationship between household food security and household social factors with the incidence of stunting. The research was conducted in Palembang City, precisely at the 11 Ilir Health Center in Palembang. The research method used is a cross-sectional design. The determination of the research sample was carried out by purposive sampling based on the inclusion and exclusion criteria of the sample that had been determined in this study. The research sample was toddlers aged 0 – 59 months totaling 40 people. Analysis of the data used is chi-square with = 0.05. In this study, it was found that there was a significant relationship between household food security (p = 0.031), and household size (p = 0.000) with the incidence of stunting, while for the variable mother's age (p = 0.393) and mother's education level (p = 0.283) is known to have no significant relationship with the incidence of stunting. Household food security is directly related to the incidence of stunting, families in households who are not food insecure tend to have children under five who are classified as stunting, this is due to the lack of nutritional intake received both in terms of quantity and quality and does not meet the nutritional adequacy standard for stunting toddlers. It is hoped that to reduce the incidence of stunting, the government needs to add a local food-based work program in reducing the incidence of stunting.

Abstract

Cleanliness is an essential factor in supporting health programs in Indonesia, one of which is handwashing with soap (CTPS). The application of CTPS in everyday life in the community is able to prevent various diseases. Knowledge of CTPS among the elderly is still relatively low and is often neglected. Meanwhile, the highest number of deaths by age in Indonesia is at the age of 60 years (elderly) due to a drastic decline in the immune system in the group. Therefore, increasing knowledge of CTPS in the elderly and education in the health sector is necessary. The main objective of this community service program was to improve the attitudes, knowledge, and skills of the elderly in social institutions in maintaining health, especially on hygiene. Accordingly, this is expected to increase life expectancy for the elderly. The methods in this service program were through tutorials and mentoring practices. This community service activity was conducted for the elderly at the Tresna Werdha Teratai Social Home in Palembang. The results were reflected by the enthusiasm of the elderly participants who attended. The result showed the improved posttest score in the average knowledge of the elderly from the initial score of 54 to 71 points. Increasing the knowledge and skills of the elderly towards CTPS can be applied in everyday life, thereby reducing susceptibility to various diseases.

Abstract

Background: Stunting is nutritional problem that influence the growth of toddlers to be not suitable for their age. Main problem of stunting divided into several factor among other is the level of nutritional adequacy from macro and micronutrients, such as social and economic factors that influence it. Objective: This study aims to determine and analyze the relationship between poverty and nutritional adequacy (energy and protein) of children under five with the incidence of stunting at Puskesmas 11 Ilir Palembang. Methods: This study used a cross-sectional design, sample of 33 children aged 2-5 years. The sample was selected by purposive sampling using the Lemeshow formula. Measurement of nutritional adequacy using 2x24 hour recall. Data processing was carried out using Excel, WHO-Anthro, and SPSS with Chi-Square test. Results: The energy adequacy level of stunting toddlers is mostly in the moderate deficit category (51.5%), there is a significant relationship between energy adequacy level and incidence of stunting. Protein adequacy level of stunting in the good category with 72.7% from total sample. The analysis of the poverty level of the families of children under five was found that the majority were below the poverty line with a percentage of 78.8% of the total sample. The research found that poverty is directly related to the incidence of stunting (p = 0.023). Conclusion: The status of poverty and the level of nutritional adequacy of both Energy and Protein in infants can be used as an indicator in analyzing the problem of stunting in children underfive.Keywords : Energy, nutritional adequacy, poverty, protein, stunting AbstrakLatar Belakang: Stunting merupakan masalah gizi kronis yang menyebabkan pertumbuhan balita menjadi tidak optimal. Masalah utama dalam stunting dapat dilihat dari berbagai faktor salah satunya adalah tingkat kecukupan gizi dan indikator kemiskinan. Tujuan: Penelitian ini bertujuan untuk mengetahui dan menganalisis hubungan kemiskinan dan kecukupan gizi (energi dan protein) balita dengan kejadian stunting yang terjadi pada balita di Puskesmas 11 Ilir Palembang. Metode: Penelitian ini menggunakan desain cross- sectional study, sampel yang diambil berjumlah 33 orang berusia 2-5 tahun. Sampel dipilih dengan cara purposive sampling dengan menggunakan rumus Lemeshow. Pengukuran kecukupan gizi balita menggunakan recall 2x24 jam. Pengolahan data dilakukan menggunakan Exel,WHO-AnthroPlus dan SPSS. Analisis data dilakukan dengan uji Chi-Square. Hasil: Tingkat kecukupan energi balita stunting sebagian besar berada dalam kategori defisit sedang (51,5%), terdapat hubungan signifikan antara tingkat kecukupan energi pada balita dengan kejadian stunting. Tingkat kecukupan protein balita berada dalam kategori baik (72,7%) dari total sampel. Hasil analisa tingkat kemiskinan keluarga menjelaskan bahwa mayoritas berada di bawah garis kemiskinan (78,8%). Pada penelitian ini didapatkan hasil bahwa kemiskinan berhubungan langsung dengan kejadian stunting (p=0,023). Kesimpulan: Status kemiskinan dan tingkat kecukupan gizi baik Energi dan Protein pada balita dapat dijadikan indikator dalam menganalisis masalah stunting pada balita.

Abstract

Lifestyle about balanced nutrition dramatically affects the health status and life expectancy of the elderly. This community service activity aims to provide basic knowledge and skills to the elderly about the importance of balanced nutrition and its relation to degenerative diseases that often suffer the elderly. The service was carried out at the auditorium of the Pentecostal Church in Indonesia (GPDI) Segaran Palembang. A team of lecturers carried out the method of activity by providing material in the form of lectures, discussions, and video screenings. Based on the frequency distribution results of the number of participants who attended, it was found that many older people had degenerative diseases such as hypertension and obesity (overweight). The community service activities carried out were welcomed by the participants. This was seen by a large number of participants present, the enthusiasm of the participants in preparing a balanced nutrition menu and actively participating in discussion activities on balanced nutrition. Education and counselling are vital to do for the elderly. This will increase their knowledge of the elderly about balanced nutrition guidelines that can be used to prevent and overcome the problem of degenerative diseases in old age. For both private and government agencies, it is necessary to be more prompt in providing continuous counseling regarding dietary regulation, especially for the elderly with a history of degenerative diseases.

Abstract

Hypertension is one of the causes of premature death worldwide or better known as the “silent killer,” because people with hypertension often do not feel any symptoms. The prevalence of hypertension in the community is included in the high category, which is 34.1%. The general purpose of this community service is to improve the knowledge and skills of nutrition alumni who are members of IKAGIZI. The specific goal is to foster an entrepreneurial spirit by producing infused water as a functional food product made from celery. These efforts can have health and economic value for the community. Programs and activities are carried out through training and practice in making celery-based infused water products. The service produced commercial functional food products and was expected to be the main solution to reducing hypertension in the community.

Abstract

The problem of obesity in adolescents is a common problem that often occurs in several regions in Indonesia. In 2018, it was informed that there was a 20% increase in the prevalence of obesity and overweight in adolescents. Seaweed has long been known to have high fiber content, the total fiber content is important for teenagers who want to lose weight like obese teenagers. Seaweed dumplings (siomay) are an alternative high-fiber snack for obese teenagers because it tastes good and is liked by all ages. The purpose of this research was to determine and analyze specifically the chemical content in the form of proximate and fiber analysis in seaweed siomay products. This research is experimental-based research with the experimental design used being a non-factorial Completely Randomized Design (CRD), chemical analysis was carried out at PT Saraswanti Indo Genetech Bogor. The results showed that seaweed dumplings (Eucheuma cottonii) can be used as a recommendation for healthy snacks that are high in fiber, with a contribution of 3-6 grams of fiber per serving. The results of the analysis also showed that the proximate content of seaweed dumplings per 100 grams contained water 61.48% (%ww), ash 1.39% (%bk), fat 0.79% (%bk), protein 4.48% (%bk), carbohydrates 31.86% ( %bk), 152.4 kcal of energy. The results of this analysis stated that the seaweed siomay in this study were following the standards by Standar Nasional Indonesia (SNI) for dumplings products.

Abstract

Background : Wasting is a lack of weight for height so that the child body is not proportional (low weight for height). Data obtained from UNICEF/WHO/World Bank Group ini 2017 shows that in 2016 the prevalence of wasting was 7,7%. The high prevalence is still needed, one of which is the provision of additional food. Purple potatoes (lpomoea batatas var A) is a type of tubers high in energy sources for the body while tempeh is a source of protein that is easily digested by the body. So both of these foods can be used as a modification to provide additional food for children under five. This pre test and post test research with control group Purpose : aims to determine the effect of PMT fitbar bingu (purple sweet potato) on weight changes of under five wasting at under five wasting at Sako Health Center, Palembang City. Methods :The research is toddlers who are weighed at Sako Health Center and wasting totaling 93 people. Data collection was carried out using digital scales, microtoice, and a 24 hour recall form. The data analysis used was univariate and bivariate analysis.The results showed that some of the respondents were male 61,6% with age 18-57 months. From the result of statistical tests, the avarage body weight in the treatment group was 10,18 kg to 11,12 kg, while the comparison avarage body weight was 10,51 kg to 10,61 kg. The difference in body weight change in the treatment group was 0,24 kg while the comparison group was 0,10 kg, with the results of statistical tests (t independent p value = 0,000) Conclusioin : changes in weight of wasting children at Sako Palembang Health Center. Suggestion: Further research needs to be done to see changes in the nutritional status of children by giving additional food with a fitbar for a longer time so that it will look more significant.

Abstract

Latar Belakang: Diabetes melitus merupakan gangguan metabolik ditandai dengan hiperglikemia kronik dan gangguan metabolisme karbohidrat karena kerusakan insulin atau tubuh tidak bisa merespon insulin atau keduanya. Penderita dianjurkan mengonsumsi serat sesuai anjuran yaitu 20-35 g/hari. Puding Tepung Beras Hitam dan Buah Naga Merah adalah salah satu terapi non farmakologis tinggi serat dan antosianin, serta memiliki indeks glikemik rendah yang dapat membantu menurunkan kadar glukosa darah. Tujuan: Untuk mengetahui pengaruh pemberian puding tepung beras hitam dan buah naga merah terhadap kadar glukosa darah DM tipe 2 di Puskesmas Padang Selasa Palembang. Metode: Penelitian ini merupakan penelitian kuantitatif dengan desain quasi eksperiment. Analisa data menggunakan paired t-test dan t-independen. Pengambilan sampel secara accidental sampling sebanyak 60 orang. Data asupan makanan responden diperoleh dengan wawancara metode food recall 24 jam. Pengukuran kadar GDS memakai alat digital glucometer. Hasil: Hasil penelitian menunjukkan rata-rata kadar glukosa darah sebelum intervensi pada kelompok perlakuan 264.23 mg/dl pembanding 265.6 mg/dl. Setelah dilakukan intervensi pada kelompok perlakuan rata-rata kadar glukosa darah 178.5 mg/dl, dan pembanding 219.6 mg/dl. Hasil uji statistik (uji t-independent) menunjukkan p-value 0.001. Simpulan: Ada pengaruh pemberian puding tepung beras hitam dan buah naga merah terhadap kadar glukosa darah pada penderita DM Tipe 2 di Puskesmas Padang Selasa Palembang. Kata Kunci: Diabetes melitus, kadar glukosa darah, puding tepung beras hitam dan buah naga merah.
