Abstract

Peningkatan tekanan darah atau biasa disebut hipertensi sampai saat ini masih merupakan penyebab utama dan faktor risiko yang penting terhadap penyakit kardiovaskular, serebrovaskular, penyakit jantung, dan gagal ginjal. Tujuan umum dari penelitian ini menganalisis kandungan natrium dan daya terima mandai goreng rendah natrium sebagai makanan alternatif bagi penderita hipertensi. Metode yang digunakan dalam penelitian ini adalah metode eksperimen menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari atas 4 perlakuan dan 3 kali replikasi dengan perlakuan kontrol F0 (fermentasi menggunakan garam dapur 10%), F1 (fermentasi menggunakan garam rendah natrium 2%), F2 (fermentasi menggunakan garam rendah natrium 6%), F3 (fermentasi menggunakan garam rendah natrium 10%). Kadar natrium diuji dengan metode AAS (Atomic Absorption Spectroscopy), sedangkan uji daya terima dengan metode Hedonic Scale Scoring..  Analisis data kadar natrium menggunakan one way anova dan data daya terima menggunakan analisis friedman.  Hasil penelitian menunjukkan bahwa nilai rata-rata kadar natrium terendah adalah mandai pada perlakuan F1 dengan konsentrasi 2% yaitu sebesar 0,87% dengan hasil uji statistik (p=0,000<α=0,05), yang artinya ada pengaruh terhadap kadar natrium mandai goreng. Nilai tertinggi daya terima yang terdiri dari warna 3,32 (F1), aroma 3,20 (F1 dan F3), tekstur 3,12 (F1) dan rasa 3,28 (F1). Mandai rendah natrium berpengaruh terhadap daya terima rasa yang dihasilkan karena p=0,015<α(p<0,05). Rekomendasi produk mandai yang dapat dijadikan alternatif bagi penderita hipertensi adalah mandai rendah natrium dengan perlakuan F1 yaitu 0,87% yang setara dengan 870mg/100g dengan konsentrasi garam rendah natrium 2%.Kata kunci : Mandai, Kadar natrium, Daya terima mandai goreng

Abstract

This study aimed to analyze the relation of mothers’ nutrition knowledge and attitudes and dietary patterns of children under five to the incidence of stunting among children under five in the working area of Puskemas Guntung Manggis. This study used a case-control design. It was conducted from January to August 2021. A total of 58 children under five and their mothers (29 children and their mothers in the case group and 29 in the control group) participated in this study. The data were collected through interviews using questionnaires. The data were analyzed using the chi-square test. Mothers’ nutrition knowledge had a significant association (p=0,002) with the incidence of stunting in children under five. Mothers with low nutrition knowledge had 8,089 times higher risks (95% CI: 1,996-32,787) of having stunted children. Mothers’ nutrition attitudes (p=0,313) and dietary patterns of children under five consisting of consumption frequency of staple foods (p=0,792), fat sources (p=0,793), protein sources (p=0,430), vegetables (p=0,293), and fruits (p=0,793) had no significant relationships with the incidence of stunting in children under five. It can be concluded that mothers’ nutrition knowledge was associated with the incidence of stunting in children under five in the working area of Puskesmas Guntung Manggis.

Abstract

Candida albicans is one of the most pathogenic species and often causes vaginitis in women with the main symptom of vaginal discharge. As many as 75% of women in Indonesia have experienced vaginal discharge at least once in their life and half of them have experienced vaginal discharge twice or more. This study aims to calculate the percentage of Candida albicanss in the urine of adolescents at the Putri Orphanage in Banjarmasin. This type of research is quantitative and descriptive with a cross-sectional design. The research sample was 21 urine sample teenagers at the Orphanage in Banjarmasin. The sampling technique used was purposive sampling. Laboratory examinations included macroscopic observations of Candida colonies growing on Sabouraud Dextrose Agar (SDA) media, and microscopic observations using the Germ Tube test to distinguish Candida albicanss species from Candida non-albicanss. And by filling out a questionnaire to determine the level of knowledge about vaginal discharge and personal hygiene. The results showed 33% of respondents were positive for Candida albicanss. Based on the results, overview Candida albicans in adolescents at the Putri Asri Orphanage in Banjarmasin, it can be concluded that there are 7 samples (33%) positive for Candida albicans. Personal hygiene and environmental sanitation can affect the growth of Candida albicans which can cause vaginal discharge in adolescent girls.

Abstract

Stunting is a condition of failure to thrive in children under five due to chronic malnutrition so that the child is too short from his age. The results of the Basic Health Research in 2018 showed the prevalence of stunting reaching 30.8%. Based on the results of Monitoring the Nutritional Status in 2017 in the province of South Kalimantan the prevalence of stunting was 34.2%. This prevalence rate has increased compared to the 2016 results of 31.1% while the WHO limit is <20%. Efforts to overcome nutritional deficiencies that occur in toddler need the Supplementary Feeding. The purpose of this study was to analyze the macro nutrient content of biscuits with catfish flour and soy flour formulations. This research is an experimental research with a completely randomized design with 4 formulations and 3 replications. The dependent variable in this study is the content of macro nutrients (carbohydrates, protein and fat), while the independent variables, namely the formulation of wheat flour, soy flour, catfish flour. Data analysis techniques used statistical analysis of variance analysis (one way ANOVA). The results showed the highest average carbohydrate content in the P0 formulation (control), namely 57.65%, the highest protein content in P3 formulation (25% catfish flour: 5% soy flour), which was 11.33%, while the highest fat content in P2 formulation(20% catfish flour: 10% soy flour), which is 19.65%. Based on statistical tests, it is proven that there are differences in the macro nutrients content (carbohydrates, proteins and fats) of biscuits to catfish flour and soy flour formulations. The best biscuit formulation in terms of macro nutrient content to stunting prevention efforts is P3 formulation (25% catfish flour: 5% soy flour).

Abstract

Examination of the leukocyte count is a routine examination to assess the condition of the immune system and inflammation levels in the body. There are two types of examinations to count blood cells, one of which is leukocytes, using manual and automatic methods. Manual examination was carried out by thinning the blood using Turk's reagent. Under certain conditions, Turk reagents are often not available. This study aimed to determine the number of leukocytes with modified lime juice (Citrus aurantifolia Swingle) and vinegar as an alternative to the composition of the Turk solution. This experimental study used a completely randomized design (CRD) consisting of three treatments and five replications. The samples in this study were 5 samples of venous blood from patients in the level three Dr. R. Soeharsono Hospital in Banjarmasin. This study used a simple random sampling. The treatment used in this study was to use Turk rule, lemon juice (Citrus aurantifolia Swingle) with a concentration of 2%, and vinegar with a concentration of 5%. The results of this study showed that there was no difference in the value of the leukocyte count between the Turk solution (control) and the modified treatment of 2% lime juice and 5% vinegar. Based on these results, it can be concluded that 2% lime juice and 5% vinegar can be used as an alternative to Turk's solution.

Abstract

Anemia is a condition in which the levels of hemoglobin in the blood is lower than normal according to the threshold values of age and sex. Banjar District Health Office, in January of 2013 doing examination of hemoglobin levels for the second time, from a total of 81 adolescent girls are 22 or 35,8% were affected by anemia and 59 adolescent girls or 64,2% were not anemic. Before examination, adolescent girls given iron suplemen tablet, so many adolescent girls that not anemic. Adolescent girls are prospective students who are candidates for future leaders, prospective workers who will be the backbone of national productivity, as well as the prospective mother will give birth to the next generation and the key to the future care of the child. This study aims to find the relationship of consumption pattern iron and consumption of iron supplements tablet with anemia status at class VIII MTs Negeri Model Martapura working in the District Banjar Health Department. This research uses the analytical method with cross sectional design and was conducted on 81 respondents who had examined levels of hemoglobin by the District Health Office Banjar. Based upon the results of the statistical test using the chi-square indicates that the pattern of consumption of iron obtained p value = 0.04 and consumption of iron supplement tablet obtained p value = 0.00. Its means the relationship between consumption patterns and consumption of iron supplements tablet with anemia status at class VIII MT school girl model work area Martapura in Banjar District Health Department is significant.

Abstract

Chicken and the heart banana is a resource with the possibility of producing a new food products that rich in proteins contained from chicken meat and crude fiber contained in the heart of the banana favorable economic value and high, because the consumption of plant fibers directly even less attractive company. This study aims to analyze the influence of the proportion of the chicken (Gallus gallus) and banana (Musa paradisiaca) on the content of protein, crude fiber, the water and acceptability of shredded. This study was experimental with randomized design. This study used four treatments and three times replication for analyze content of protein, fiber, and 2 times replication for the water content. Test methods for acceptability were hedonic organoleptic method (hedonic test). Method for analyze protein contents was Kjedahl, while crude fiber and the water content was the gravimetric method, statistical tests for acceptability using Friedman test. Data content of protein, crude fiber, and water content is one way ANOVA. Search results obtained any influence between the proportion of chicken and bananas in the protein shredded (p = 0.049) in the treatment p0 (43.05%) and p3 (30.45%), crude fiber content (p = 0.007) in the treatment p0 (6.66%), p3 and (13.72%) and water levels p = 0.000 for treatment p0 (5.82%) and p3 (30.85%). There is influence of color acceptability p = 0.001 in p0 treatment: 3,08 and 72% p3, there is no effect on the treatment p0 p1 p2 and p3 aroma (p = 0.188) , texture (p = 0.501), and taste (p = 0.138) shredded. Referring to the ISO standard on quality required of proteins are already qualified, while the crude fiber and the water do not meet the quality requirements.

Abstract

Data of Riskesdas 2013, prevalence of anemia in pregnant women in Indonesia is 37,1%. Based on a preliminary survey of Banjar health districts in 2014, Mean of prevalence anemia in pregnant women from 23 health center are 10.82%. And the highest is in the Sambung Makmur health center is 28.06%. This research aims to know the correlation of the pattern consumption of iron and consume Fe tablets compliance with the incidence of anemia in pregnant women in Sambung Makmur health center 2015. This research used analytic survey with cross sectional approach. This research conducted on 43 pregnant women respondents. Based on statistic test on multiple variables by using the chi-square show that iron consumption the pattern p value = 0.003 and compliance to consume Fe tablets p value = 0.001 that means there is a significant correlation between consumption patterns and compliance to consume Fe tablets with anemia. Suggested to the health centers to provide counseling about the consumption the both iron and tablets Fe to avoid the incidence of anemia in pregnant women.

Abstract

Iron-deficiency anemia is a common nutritional problem in the world. The prevalence of anemia in Indonesia is still quite high, which is 26,50% on female teenagers. Lot of female teenagers suffer from anemia, because adolescence is a period of growth which requires high nutrients including iron, protein also plays an important role in iron transportation inside the body, as well as increased consumption of vitamin C as much as 25-250 mg may increase the absorption of an iron 2-5 times. Based on the results of hemoglobin concentration (Hb) in MTs Al-Amin schoolgirl Martapura there are 90 students that 48,89% or 44 girls who suffer from anemia. This study aims to know intake of iron, protein and vitamin C as a risk factor for anemia in MTs Al-Amin schoolgirl Martapura Banjar District in 2013. This research using case control observations design. Samples as much as 88 students, 44 female students suffering from anemia (cases) and 44. variables using chi-square shows, iron intake obtained p = 0,01 and protein intake obtained values p = 0,00 which means that there is a relationship of iron and protein intake with the occurrence of anemia. At the same case the intake of vitamin C obtained p value = 0,13 which means that there is no relationship of vitamin C intake with anemia.
