Abstract

Microcrystalline Cellulose (MCC) is a modified of cellulose widely used as an additive in food and pharmaceutical industry. MCC is used in the pharmaceutical field as an excipient compound in the manufacture of tablets. Raw materials for MCC are of high cellulose content, such as Eucheuma cottonii seaweed. This study was aimed to determine the characteristics of MCC from seaweed E. cottonii. The MCC was obtained by hydrolyzing of α-cellulose from seaweed E. cottonii using HCl solution with three different concentrations: 2, 2.5 and 3 N. The chemical compositions (water, ash, protein, lipid, and carbohydrate) of red seaweed flour were determined. The moisture, ash, sensory, yield, and pH of the MCC were also analysed. The results showed that E. cottonii seaweed flour had moisture, protein, fat, ash, and carbohydrate content 3.88%, 0.85%, 2.4%, 3.44%, and 89.4% respectively. HCl concentrations had a significant effect on the moisture and ash content. The MCC had a yield of 35.8-38.00%, pH 5.73-6.82, moisture content 4.09.6, ash 0.94-4.90%. The characteristics of the MCC was in accordance with the standards of the British Pharmacopeia except the ash content.

Abstract

Rumput laut cokelat (Sargassum plagyophyllum) berpotensi sebagai antioksidan alami karena memiliki kandungan flavonoid dan fenolik. Penelitian ini bertujuan untuk menentukan komposisi proksimat, mengidentifikasi komponen bioaktif, dan aktivitas antioksidan ekstrak kasar S. plagyophyllum. Penelitian ini menggunakan metode eksperimen dengan melakukan ekstraksi S. plagyophyllum menggunakan beberapa pelarut organik, antara lain: n-heksana, etil asetat, dan metanol. Parameter analisis terdiri atas analisis proksimat, rendemen, fitokimia, dan aktivitas antioksidan menggunakan metode DPPH. Hasil penelitian menunjukkan komposisi kimia (kadar air, abu, protein, lemak, karbohidrat, dan total serat kasar) berturut-turut sebesar 15,98 (bb); 21,38%; protein 9,05%; 0,88%; 68,69%; 22,24% (bk). Rendemen ekstrak heksana, etil asetat, dan metanol adalah 0,6; 0,28; dan 0,31%. Hasil ekstraksi dengan pelarut heksana didapatkan senyawa steroid/triterpenoid; pelarut etil asetat didapatkan senyawa alkaloid, flavonoid, steroid/triterpenoid, saponin, dan fenolik; sedangkan ekstraksi dengan pelarut metanol didapatkan semua komponen bioaktif kecuali flavonoid. Aktivitas antioksidan ekstrak S. plagyophylum dengan heksana, etil asetat, dan metanol dihasilkan nilai nilai IC50 1105,58 ppm; 532,42 ppm; dan 777,79 ppm.

Abstract

Niboshi is a Japanese traditional of dried of fish products and Gisuke-ni is resulteding from the continued processing of niboshi. This study was aimed to determine the effect of seasoning formula on the sensory and chemical qualitiesy of gisuke-ni, as well as isothermic absorption water and bound water. The design used wais a completely randomized design non factorial complete random design with the different seasoning formulations treatments. The research was carried out consisting of on several stages, namely producing the making of niboshi, followed by the making of gisuke-ni by giving seasoning (sweet, spicy, and salty). Analysis parameters consist ofincluding proximate, organoleptic, sorbpsi isothermic curves of water, and bound water were performed. The results of the analysis of chemical composition (moisture content, protein, ash, fat, and carbohydrate) Niboshi were 21.9, 69.7 (wb), 17.1, 3.2 and 9.8% (ddb), respectively. Gisuke-ni salted seasoning (P1) The levels of moisture, protein, ash, fat, and carbohydrate content on gisuke-ni salted seasoning (P1) were respectively 4.5, 59.8, 16.4, 4.4, and 19.2% (bkdb), respectively, while the . Gisuke-ni sweet seasoning (P2) moisture, protein, ash, fat and carbohydrate content on gisuke-ni sweet seasoning (P_2) were respectively 6.1, 68.3, 13.1, 6.4, and 12.1% (db), respectively. In addition, Spicy Gisuke-ni (P3) contained the moisture content, protein, ash, fat and carbohydrate levels were respectively 8.5, 77.5, 13.3, 6, and 3.0% (db), respectively. The spicy Gisuke-ni spice (P3) The content of primary, sekunder and tersier bound water capacity were 3.51% at aw 0.26, 4.0% at aw 0.79 and 30% at aw 1.0, respectively.

Abstract

Listeria monocytogenes and Pseudomonas aeruginosa are pathogenic bacteria that must be inhibited and killed using antibacterial compounds. Sargassum sp. is one of the type of brown seaweed which has bioactive compounds as antibacterial. The research was aimed to determine the bioactive compounds and antibacterial activities of Sargassum plagyophyllum extract. This research consisted of maceration and characterization of S. plagyophyllum which included phytochemical screening and gram positive and negative antibacterial analysis at different concentrations of extract (2, 4, and 6% w/v). Methanol extract of S. plagyophyllum had a yield of 1.32±0.04% and contained bioactive compounds such as alkaloids, steroids, saponins, and phenolics. Based on antibacterial activity, S. plagyophyllum extract had the inhibition zone diameter both for gram positive bacteria (L. monocytogenes) and gram negative bacteria (P. aeruginosa), Nevertheless, the inhibition zone diameter of gram negative bacteria (6.67±0.58 mm) was greater than gram positive bacteria (4.67±0.58 mm) at the highest concentration of extract (6%).

Abstract

Catfish oil is rich in omega-9 fatty acids but low in omega-3 fatty acids. Meanwhile, shark liver oil has a relatively high omega 3 fatty acids content. This study was aimed to determine the characteristics and chemical properties of catfish oil and the fatty acid profile of the catfish oil and shark liver mixture. TBbelly fat of catfish was extracted by dry rendering resulting crude and purified oil. The refined catfish oil ismixed with shark liver oil with a ratio of 1: 1, 2: 1 and 2: 1. The analysis parameters consisted of chemical characteristics (free fatty acid, acid value, peroxide, iodine, p-anisidine, saponification, total oxidation/TOTOX), and fatty acid profile. The results showed that the combination of catfish oil and shark liver produced free fatty acids ranging from 1.59-2.19%, acid number 2.86-3.00 mg KOH/g peroxide value15.50-18.32 meq/kg, iodine number 63.46- 84.42 gI2/100g), p-anisidin value 21.53-24.16, saponification 142.21-162,28 mg KOH/g, and TOTOX 53.33-69.43. Palmitic acid, oleic acid, and linoleic acid were the most dominant saturated, monounsaturated and polyunsaturated fatty acid, respectively. The chemical properties meet the IFOMA's standards. The combination of shark liver oil and catfish with a ratio (2:1) resulted in the highest content of omega-3 (0.65%) and omega-6 (29.75%).

Abstract

Ikan patin (Pangasius hypophthalmus) adalah salah satu ikan air tawar dengan nilai ekonomi tinggi. Pengasapan ikan patin di Kecamatan XIII Koto Kampar menghasilkan lemak isi perut. Mayoritas minyak dari limbah ikan patin merupakan lemak perut. Tingginya rendemen minyak mendorong pemanfaatan sebagai produk pangan, seperti mayones. Penelitian ini bertujuan untuk meningkatkan kualitas dari minyak ikan patin dan uji sensori mayones. Minyak diekstraksi dari pemanasan lemak perut ikan patin di suhu 65°C selama 7 jam dengan pemurnian magnesium silikat (magnesol) konsentrasi (1, 2, 3, 4, dan 5%) dalam mengadsorpsi warna dan aroma dari minyak ikan patin. Hasil sidik ragam memperlihatkan bahwa konsentrasi magnesol 3% berpengaruh nyata dalam menurunkan karakteristik minyak antara lain viskositas, kadar ALB, bilangan peroksida, dan bilangan TBA dari 61,83 menjadi 37,00 cP; 0,70 menjadi 0,15%, 3,03 menjadi 1,94 meq.O2.kg-1, dan 9,58 menjadi 6,79 mg.mal.kg-1. Mayones dengan minyak murni konsentrasi magnesol 3% berwarna kuning cerah, tidak beraroma amis, bertekstur agak kental, dan berasa minyak ikan patin. Secara keseluruhan, mayones agak disukai oleh panelis berdasarkan penilaian hedonik.

Abstract

Sargassum cinereum brown seaweed contains phytochemical compounds such as alkaloids, flavonoids, steroids, saponins and phenolics, which are quite high. Different types of solvents can dissolve the bioactive components according to the polarity of the solvent used. Methanol solvent has a more effective level of polarity in dissolving all phytochemical compounds, one of which is flavonoids so as to produce the highest flavonoid compounds. Butanol extract only showed negative results in the flavonoid and saponin test. The hexane extract showed negative results only for the saponin test while the ethyl acetate extract showed positive results in all tests.

Abstract

he objective of research was to get the chemical composition of red algal(E. spinosum) from different coastal of water that have the potensial as a sourceof carrageenan. The analysis was conducted to analyze the chemical content ofthe algal (E. spinosum) of three coastal water were moisture content, ash content,protein content, fat content, carbohydrate content and dietary fiber content. Theresults of analysis chemical composition of red algal from different waters hadshowed that content of moisture content 19.55-21.27% , ash content 18.55-18.95%, protein content 4.85-5.59% content, fat content of 0.06-0.1% andcarbohydrate content 53.44-55.52 % while the total dietary fiber content of redalgal (E. spinosum) was 12.78-15;92%. The chemical composition of red algal E.spinosum of three coastal water no real effect unless total dietary fiber contentwas significantly diffrence between the coastal water.

Abstract

Senyawa karaginan hasil ekstraksi dari rumput laut jenis Eucheuma adalah suatu fikokoloid yang merupakan senyawa polisakarida serat makanan. Penelitian ini bertujuan untuk mengetahui potensi kemampuan kappa karaginan dari rumput laut merah (Eucheuma cottonii) sebagai antioksidan dan inhibitor enzim α-glukosidase menggunakan metode FRAP dan secara in vitro. Hasil penelitian menunjukkan bahwa komposisi kimia E. cottonii kering adalah kadar air (14,23%), kadar abu (38,63%), kadar protein (5,12%), kadar lemak (0,81%), kadar serat kasar (22,18%), dan kadar karbohidrat (32,47%) sedangkan untuk hasil penelitian E. cottonii yang diekstraksi dengan larutan Kalium hidroksida (KOH) 8% menjadi kappa karaginan meliputi karakterisktik kimia adalah kadar air (8,97%), kadar abu (24,76%), kadar abu tidak larut asam (0,93%) dan kadar sulfat (24,50%), karakteristik fisik meliputi rendemen (52,00%) dan viskositas (52,53 cP). Hasil kappa karaginan E. cottonii dibagi menjadi 3 (tiga) kosentrasi yakni (3%, 5% dan 10%). Aktivitas antioksidan paling tinggi penelitian ini terdapat pada kosentrasi 10 g (0,0643 mg TE/g) dengan persen inhibishi enzim α-glukosidase (58,5085 mg/mL) dibandingkan dengan kappa karaginan E. cottonii pada kosentrasi 3 g dan 5 g (0,0200 mg TE/g dan 0,0515 mg TE/g) dengan persen inhibshi α-glukosidase (38,6386 mg/mL dan 474474 mg/mL). Berdasarkan nilai IC50 kosentrasi 5,46 g/mL kappa karaginan E. cottonii telah memiliki potensi kemampuan sebagai inhibitor enzim α-glukosidase. Penelitian ini menunjukkan bahwa kappa karaginan E. cottonii memiliki potensi kemampuan sebagai antioksidan dan inhibitor enzim α-glukosidase.

Abstract

Eucheuma spinosum, red algae, contains secondary metabolites that act as antibacterial. It can be used as an active compound in the production of alcohol-free hand sanitizer. This research was aimed to determine the gram-positive and gram-negative antibacterial activity, pH, and viscosity of alcohol-free hand sanitizer containing E. spinosum extract. The results showed that the alcohol-free hand sanitizer containing 8% E. spinosum extract had characteristics in the form of a gel with the antibacterial activity of gram-positive bacteria (Bacillus subtilis) of 8.83±0.76 mm and gram-negative bacteria (Escherichia coli) of 8.67±0.58 mm, pH appropriate to pH of skin human (5.83±0.29), and viscosity following the hand sanitizer standard (2708 cps).
