Abstract

Penelitian ini bertujuan untuk membandingkan sifat fisik, organoleptik dan kandungan asam lemak pada tempe mete serta membandingkannya dengan tempe berbahan dasar kacang kedelai. Penelitian dilakukan secara eksperimental dengan rancangan acak lengkap satu faktor pada[A1] [A2]  tempe kedelai dan tempe mete. Penelitian eksperimen ini terdiri dari 2 (dua) kelompok perlakuan. Tiap kelompok perlakuan dilakukan 3 (tiga) kali ulangan, sehingga diperoleh 6 satuan percobaan. Berdasarkan 6 percobaan tersebut, dilakukan analisis secara duplo meliputi analisis sifat fisik (kadar air dan rendemen). Kadar air, rendemen dan asam lemak masing-masing diuji menggunakan metode gravimetri, metode penimbangan dan metode kromatografi gas. Mutu organoleptik diuji pada parameter warna, rasa, aroma dan tekstur. Analisis statistik data menggunakan Independent t-test dan Mann-Whitney. Kadar air tempe mete (36,97±0,38%) lebih rendah dari tempe kedelai (63,86±1,46%). Penampakan fisik tempe mete berwarna putih dengan tekstur yang kompak seperti tempe kedelai. Rendemen tempe mete (136,67±6,11%) lebih rendah dari tempe kedelai (169,44±5,85%). Warna, rasa, dan tekstur kedua tempe setelah digoreng tidak memiliki perbedaan yang tampak. Asam oleat dan asam linoleat tempe mete masing masing sebesar 21,52±0,58% dan 6,09±0,03%, lebih tinggi dari tempe kedelai yang mengandung asam oleat 2,19±0,02% dan asam linoleat 4,96±0,03%. Tempe mete memiliki kadar air dan penampakan fisik yang sesuai dengan standar tempe, namun rendemen yang dihasilkan lebih rendah. Dapat disimpulkan bahwa tempe mete memiliki mutu sesuai standar dengan kandungan asam lemak yang lebih tinggi dari tempe kedelai.Analysis of Physical, Sensory and Fatty Acid Properties of Tempeh Made from Cashew Nut and SoybeanAbstractThe aim of this study was to compare the phsycal and organoleptic properties, fatty acid content between cashew and soybean tempeh. The research was a one-factor completely randomized experimental design on soybean tempeh and cashew tempeh. This experimental study consisted of 2 (two) treatment groups. Each treatment group was repeated 3 times, so that 6 experimental units were obtained. Based on these 6 experiments, a duplicate analysis was carried out including the analysis of physical properties (moisture content and yield). Moisture content, yield and fatty acid were analyzed respectifly using gravimetric method, weighing method, and gas chromatography. The organoleptic quality was tested on the parameters of color, taste, aroma, and texture. Statistical analysis of data using independent t-test and Mann-Whitney. The moisture content of cashew tempe (36,97±0,38%) was lower than that of soybean tempe (63,86±1,46%). The physical appearance of cashew tempeh was white with a compact texture like soybean tempeh. The yield of cashew tempe (136,67±6,11%) was lower than that of soybean tempe (169,44±5,85%). The color, taste, and texture of the two tempeh after being fried did not differ remarkably. The oleic acid and linoleic acid of cashew tempeh were 21,52±0,58 % and 6,09±0,03 %, respectively, higher than soybean tempeh which contained 2,19±0,02% oleic acid and 4,96±0,03%. linoleic acid. Tempe cashew had a moisture content and physical appearance in accordance with tempe standards, but the yield was lower. It can be concluded that cashew tempeh had quality according to standards with higher fatty acid content than soybean tempeh.

Abstract

Background: Irregular menstrual cycles are a risk factor for developing type 2 diabetes mellitus (DM) in women. Objective: This study aimed to evaluate irregular menstrual cycles as a risk factor of type 2 DM in women of childbearing age with body fat percentage, waist-hip ratio, diet quality, and physical activity as confounding factors.Methods: This was a case-control study. Its subjects were subjects with type 2 diabetes mellitus (n=31) and subjects without any clinical evidence of abnormal glucose regulation (n=31) who attended Puskesmas (Community Health Centre) Rowosari, Tembalang, Semarang with over 30 years of age. Based on their menstrual cycles, they were divided into two groups: women with irregular menstrual cycles, and those with regular menstrual cycles. Cochran Mantel-Haenszel test was used to control their confounding factors. Results: There was an association between irregular menstrual cycles and type 2 DM (p<0.05) with a 7.2 greater risk on women of childbearing age (OR = 7.2, 95% CI=2.18-23.75). By the Cochran Mantel-Haenszel test, the association was still significant; women with over percentage of body fat and central obese with irregular menstrual cycle had 4,85 times and 4,37 times of sequentially greater risk on type 2 DM (OR = 4.85, 95% CI=0.98-23.95 vs OR = 4.37, 95% CI=0.93-20.51).Conclusion: The irregular menstrual cycles was a risk factor of type 2 DM, especially in obese women of childbearing age.

Abstract

Mahasiswi memiliki kecenderungan mengonsumsi makanan tinggi energi dan tinggi lemak. Secara jangka panjang dapat menyebabkan obesitas dan perubahan profil metabolik yang meningkatkan resiko terjadinya penyakit kardiovaskular. Beberapa penelitian menunjukkan diet berbasis plant based diet efektif dalam menurunkan trigliserida (TG) dan meningkatkan HDL-C. Diet fleksitarian merupakan plant based diet yang sesekali masih diperbolehkan mengonsumsi daging dalam jumlah sedang. Penggunaan rasio TG/HDL-C terbukti lebih baik dibanding pemeriksaan lipid sederhana untuk mengetahui abnormalitas lipid aterogenik. Penelitian ini bertujuan untuk menganalisis pengaruh diet fleksitarian terhadap perubahan rasio TG/HDL-C. Desain penelitian ini adalah quasi experimental berupa pre-post group. Subjek merupakan mahasiswi obesitas berusia 19-25 tahun sebanyak 16 orang yang diambil dengan metode purposive sampling dan dibagi dalam dua kelompok yaitu kelompok perlakuan dan kelompok kontrol. Kelompok perlakuan diberikan edukasi gizi dan diet fleksitarian sebesar 1500 kkal setiap hari senin-jumat selama 4 minggu sedangkan kelompok kontrol hanya diberikan edukasi gizi. Asupan makan subjek selama intervensi diperoleh menggunakan food recall 24 jam sebanyak 3 kali/minggu dan aktivitas fisik menggunakan Physical Activity Questionnaire (IPAQ). Analisis statistik menggunakan independent t-test, mann whitney dan paired t-test. Hasil menunjukkan terdapat penurunan trigliserida  sebesar 8,1 mg/dL dan HDL-C sebesar 2,4 mg/dL serta peningkatan rasio TG/HDL-C  sebesar 0,01 pada kelompok perlakuan setelah diberikan diet fleksitarian tetapi tidak berbeda signifikan dengan sebelum intervensi (p>0,05). Antara kelompok kontrol dan kelompok perlakuan tidak terdapat perbedaan yang signifikan pada rerata perubahan TG, HDL-C dan rasio TG/HDL-C (p>0,05). Kesimpulannya, diet fleksitarian cenderung dapat menurunan trigliserida dan HDL-C serta meningkatan rasio TG/HDL-C pada mahasiswi obesitas.

Abstract

Central obesity is closely related to various metabolic diseases such as diabetes mellitus (DM). Several studies examined the correlation between central obesity parameters such as waist circumference (WC) and waist-to-height ratio (WtHR) with fasting blood glucose (FBG) levels. One of the parameters of central obesity that is still rarely used in Indonesia is a conicity index (CI). This study analyzed the correlation between CI, WC, and WtHR with FBG levels among 59 subjects aged 35 – 59 years who were selected by consecutive sampling. Venous blood samples were collected for the FBG profile. Data on energy intake and physical activity were taken by interview using the SQ-FFQ and GPAQ. Data were analyzed by Rank Spearman, Mann-Whitney, and linear regression test. Most of the subjects (69,5%) were obese but FBG levels (57,62%) were normal. There was a significant correlation between CI, WC, and WtHR with FBG levels (p0,05, r=0,313, r=0,336, r=0,389) respectively. To date, WC was the most closely related variable to FBG levels (p0,001). Keywords: conicity index, fasting blood glucose, waist circumference, waist-to-height ratio ABSTRAK  Obesitas sentral berkaitan erat dengan berbagai penyakit metabolik seperti diabetes melitus (DM). Beberapa penelitian mengkaji hubungan parameter obesitas sentral seperti lingkar pinggang (LP) dan rasio lingkar pinggang-tinggi badan (RLPTB) dengan kadar glukosa darah puasa (GDP). Salah satu parameter obesitas sentral yang masih jarang digunakan di Indonesia yaitu conicity index (CI). Penelitian bertujuan untuk menganalisis hubungan CI, LP, dan RLPTB dengan kadar GDP pada dewasa dengan subjek 59 orang berusia 35 – 59 tahun yang dipilih secara consecutive sampling. Sampel darah melalui vena diambil untuk mendapatkan profil GDP. Data asupan energi dan aktivitas fisik diambil dengan wawancara menggunakan kuesioner ­SQ-FFQ dan GPAQ. Data dianalisis menggunakan uji korelasi Rank Spearman, Mann-Whitney, dan regresi linear. Sebagian besar subjek (69,5%) memiliki status gizi obesitas, namun kadar GDP (57,62%) tergolong normal. Korelasi signifikan positif ditemukan antara CI, LP, dan RLPTB dengan kadar GDP  (p0,05, r=0,313, r=0,336, r=0,389). Uji multivariat menunjukkan LP merupakan variabel yang paling berpengaruh terhadap kadar GDP yang dibuktikan dengan nilai p0,001.Kata kunci: conicity index, glukosa darah puasa, lingkar pinggang, rasio lingkar pinggang-tinggi badan

Abstract

Security Unit (SATPAM) is a profession that demands good endurance. During a pandemic, online education is one way that can be done to provide information about health and nutrition that can improve work performance and body resistance of security guards. This study aims to determine the effectiveness of providing online education to increase knowledge of health and nutrition in a security unit during a pandemic. This research is a quantitative study with a pretest-posttest design which was carried out on 68 security guards at the Diponegoro University campus. Online educational media used via Whatsapp. This research was in the form of providing a nutritional knowledge pretest, nutritional education and nutritional knowledge posttest to see the level of knowledge of the security unit. The pretest and posttest knowledge data analysis used paired t-test if the data distribution was normal and if the data distribution was not normal will use Wilcoxon. The results of statistical analysis showed that there was a significant difference in pretest and posttest nutritional knowledge (p = 0.002), with the median and average value of the Undip security guards’ nutritional knowledge from a median of 72.5 (45-85) to 80 (50-95) with the average of 70.96 before education and after education increased to 75.88. There is an effect of providing online nutrition education on increasing security knowledge of health and nutrition.  Abstrak: Satuan Pengaman (SATPAM) adalah salah satu profesi yang menuntut daya tahan tubuh yang baik. Di masa pandemi, edukasi online merupakan salah satu cara yang dapat dilakukan untuk memberikan informasi mengenai kesehatan dan gizi yang dapat meningkatkan performa kerja dan daya tahan tubuh satpam. Penelitian ini bertujuan untuk mengetahui efektivitas pemberian edukasi online untuk meningkatkan pengetahuan kesehatan dan gizi pada satuan pengamanan (satpam) di masa pandemi. Penelitian ini merupakan penelitian kuantitatif dengan rancangan pretest posttest design yang dilakukan pada 68 satpam kampus Universitas Diponegoro. Media edukasi online yang digunakan melalui Whatsapp. Penelitian ini berupa pemberian pretest pengetahuan gizi, edukasi gizi dan posttest pengetahuan gizi untuk melihat tingkat pengetahuan satpam. Analisis data pengetahuan pre dan posttest menggunakan paired t-test apabila distribusi data normal dan wilcoxon apabila distribusi data tidak normal.  Hasil analisis statistik menunjukkan bahwa terdapat perbedaan signifikan pengetahuan gizi pre dan posttest (p=0,002), dengan nilai median dan rata-rata terdapat peningkatan pengetahuan gizi satpam Undip dari median  72,5 (45-85) menjadi 80 (50-95) dengan rata-rata 70,96 sebelum edukasi dan setelah edukasi naik menjadi 75,88. Terdapat pengaruh pemberian edukasi gizi online terhadap peningkatan pengetahuan kesehatan dan gizi satpam.

Abstract

Gangguan menstruasi banyak terjadi pada atlet daripada populasi umum. Hal tersebut dapat dipengaruhi oleh zat gizi makro dan persen lemak tubuh. Siklus menstruasi yang tidak teratur dapat mengganggu performa atlet. Penelitian dilakukan tahun 2022 di GOR Tri Lomba Juang Semarang dan GOR Gemilang Magelang dengan desain cross-sectional. Sebanyak 60 atlet remaja putri usia 15-19 tahun dari beberapa cabang olahraga menjadi subjek penelitian. Pengambilan data kecukupan gizi menggunakan form Semi-Quantitative Food Frequency (SQ-FFQ). Persen lemak tubuh diukur dengan Bioelectrical Impedance Analysis (BIA). Analisis statistik menggunakan uji Chi-Square. Sejumlah 5% atlet memiliki persen lemak tubuh rendah dan 16,7% tinggi. Selain itu 1,7% atlet mengalami polimenorea dan 23,3% mengalami oligomenorea. Kecukupan karbohidrat berhubungan dengan siklus menstruasi pada atlet putri (p = 0,001). Namun, tidak terdapat hubungan antara kecukupan protein (p = 0,261), lemak (p = 0,821) dan persen lemak tubuh (p = 0,836) dengan siklus menstruasi atlet putri. Abstract

ABSTRAKLatar belakang: Olahraga dengan instensitas yang tinggi dapat mengakibatkan peningkatan kadar asam laktat. Konsumsi jus bit-nanas pada atlet dapat meningkatkan kadar oksida nitrat (NO) yang memiliki berbagai fungsi berkaitan dengan aliran darah, pertukaran gas, biogenesis, efisiensi mitokondria,dan penguatan kontraksi otot sehingga mencegah peningkatan kadar asam laktat.Tujuan: Menganalisis pengaruh pemberian jus bit nanas terhadap kadar asam laktat pada atlet sepakbola Kota Semarang.Metode: Penelitian true experimental dengan desain pre-post test with controlled group design. Subjek penelitian adalah 32 orang atlet laki-laki sekolah sepak bola PERSISAC dan Akademi New Tugu Muda berusia 15-16 tahun. Pemberian jus bit-nanas pada kelompok perlakuan 200 ml, sedangkan kontrol diberikan air mineral 200 ml. Pemberian intervensi dilakukan satu kali pada pagi hari sebelum latihan. Pengukuran kadar asam laktat diambil dua kali, sebelum intervensi dan setelah melakukan test RSAT (Running Sprint Test Anaerobic). Data dianalisis menggunakan uji paired-t-test, independent-t-test, one way anova dan mann-whitney.Hasil: Sebagian besar subjek memiliki asupan (energi, karbohidrat, lemak, protein, vitamin C) yang kurang. Tidak terdapat perbedaan (p>0,05) rerata kadar asam laktat antara subjek dengan status gizi underweight, normal dan overweight. Terdapat perbedaan signifikan (p<0,05) antara kadar asam laktat sebelum dan setelah  pemberian jus bit-nanas pada kelompok perlakuan, namun tidak ada beda pada kontrol. Kadar asam laktat pada kelompok perlakuan lebih rendah dibandingkan kelompok kontrol.Simpulan: Pemberian jus bit-nanas sebelum latihan berpengaruh secara bermakna terhadap kadar asam laktat atlet sepak bola Kota Semarang.Kata kunci: atlet sepak bola; jus bit-nanas; kadar asam laktat ABSTRACTBackground: Exercise with high intensity result an increase in lactic acid. The consumption of beet-pineapple juice in athletes can increase nitric oxide (NO) levels that serve a variety of functions related to blood flow, gas exchange, biogenesis, mitochondrial efficiency, as well as strengthening muscle contractions and preventing the increase in lactic acid levels.Objective: This study aimed to analyze the effect of pineapple-beet juice (Beta vulgaris L, Ananas comosus) on lactate acid among football athlete.Methods : Design of true experimental research with pretest-post test control group design. Subject were thirty-two male athletes of PERSISAC and New Tugu Muda Academy football school aged 15-16 years. The treatment of pineapple-beet juice give consist of treatment group consumed 200 ml, while control consumed 200 ml of water. Intervention was given once in the morning before training. Lactic acid measurements was taken twice, before intervention and after RSAT test (Running Sprint Test Anaerobic). All data were analyzed using paired-t-test, independent-t-test, one way anova and mann-whitney.Results: Most subjects had intake (energy, carbohydrate, fat, protein, and vitamin C) inadequate categories. No differences (>0,05) of lactic acid levels average between subjects with BMI in the underweight, normal and overweight categories. There was a significant difference (p<0.05) between lactic acid levels average before and after the consumption of beet-pineapple juice in the treatment group, but there was no difference in the control group. The treatment group were lower  in lactic levels than the control group.Conclusion: Consumption of beet-pineapple juice before exercise shows significant impact on the lactic acid levels of Semarang football athletesKeywords: beet-pineapple juice, football athletes, lactic acid levels

Abstract

ABSTRACTBackground: The label on the food packaging contains the content, type, nutrients information, expiration date and other important informations. Reading food labels will affect the consumer in selecting the food products in the market. This study aimed to determine the relationship between the level of knowledge and attitudes toward compliance with reading food labels in college students.Methods: This study was designed using a cross-sectional survey. The consecutive sampling method is used in selecting the subject. Research data was obtained by sending research questionnaires to 106 Diponegoro University students and conducted between May and June 2022. The research data was obtained using a questionnaire that included questions about demographic characteristics, level of knowledge about nutrition and food labels, attitudes towards food labels, and level of adherence to reading food labels. Data then analyzed by a bivariate correlation test using Spearman's rank correlation.Result: There is a significant correlation between knowledge about nutrition labels and attitudes towards food labels (p=0.019), as well as attitudes towards food labels and reading food labels compliance (p<0.001). There is no significant correlation between knowledge and compliance to reading food labels (p=0.26). Reading food labels compliance is influenced by attitudes, age of respondents, and expenditure on food.Conclusion: Reading food labels compliance relates with attitudes, respondent’s age, and expenditure on food. Knowledge about nutrition label relates with the attitudes towards food labels.Keywords: food label, knowledge, attitude, compliance ABSTRAKLatar belakang: Label pangan berisi tentang informasi mengenai komposisi, nilai zat gizi, jenis, tanggal kadaluarsa dan keterangan penting lainnya. Kebiasaan membaca label pangan akan mempengaruhi keputusan seseorang dalam membeli makanan yang akan dikonsumsi. Penelitian ini bertujuan untuk menganalisis hubungan pengetahuan dan sikap terkait label pangan dengan kepatuhan mahasiswa Universitas Diponegoro dalam membaca label pangan.Metode: Desain penelitian cross sectional dengan jumlah subjek 106 mahasiswa Universitas Diponegoro, berlangsung pada bulan Mei-Juni 2022. Metode pengambilan subjek dengan consecutive sampling. Data penelitian diperoleh dengan menggunakan kuesioner yang meliputi pertanyaan mengenai karakteristik demografis, tingkat pengetahuan, sikap terhadap label pangan, dan kepatuhan membaca label pangan. Analisis bivariat dengan uji  korelasi spearman.Hasil: Terdapat hubungan antara pengetahuan tentang label pangan dengan sikap terhadap label pangan (p=0,019), serta sikap terhadap label pangan dan kepatuhan membaca label pangan (p<0.001). Abstract

Background: Obesity in female students affects metabolic profiles and reproduction. Consuming a plant-based diet can inhibit the synthesis of fatty acids and cholesterol, thereby reducing the risk of obesity. The lipid profile plays a crucial role in metabolism and includes high-density lipoprotein (HDL), which has a protective effect against cardiovascular disorders, obesity, hypertension, and dyslipidemia.Objective: To analyze the effect of flexitarian diets on changes in serum HDL levels in obese female students.Methods: A quasi-experimental design with pre-post-test control group was employed. Twenty-two female students aged 19-25 years were selected using consecutive sampling. The subjects were divided into intervention and control groups. The intervention group received a flexitarian diet for 4 weeks consisting of three meals and two snacks totaling 1500 calories per day. Both groups were provided with educational leaflets about obesity and balanced nutrition. Food intake was assessed using a 3x24-hour food recall, while physical activity was measured using the IPAQ-SF questionnaire. Serum HDL levels were analyzed enzymatically before and after the intervention. Statistical analysis was conducted using SPSS 25, including the Shapiro-Wilk test for normality, paired t-tests, independent t-tests, and the Mann-Whitney test.Results: There was a significant decrease in serum HDL levels in the intervention group (2.00 ± 2.83 mg/dL), while serum HDL levels in the control group increased (3.27 ± 8.25 mg/dL), although this increase was not statistically significant. There was no significant difference between the two groups in terms of the mean change in HDL levels (p > 0.05).Conclusion: A flexitarian diet for 4 weeks can lead to a significant reduction in serum HDL levels.

Abstract

Background: Family characteristics, food security, expenditure, and diversity are indirectly associated with children's nutritional status. Objectives: This study aimed to examine the differences between food security, expenditure, and diversity among children under five with and without concurrent wasting and stunting (WaSt) in Semarang City. Methods: This study utilized an observational analytic approach with cross-sectional design. Subject selection using a consecutive sampling method obtained 72 subjects consisting of 18 subjects in each group of normal, stunted, wasted, and concurrently wasted and stunted (WaSt). Structured questionnaires collected data on the characteristics of fathers, mothers, and families. Interviews were conducted using the Household Food Insecurity Access Scale (HFIAS), which was obtained to measure food security among families. In contrast, the Individual Dietary Diversity Score (IDDS) was used to obtain food diversity. Differences were analyzed using one-way ANOVA and the Kruskal-Wallis test. A confidence level of 95% was utilized, and the results were significant, with a p-value<0.05 Results: There were significant differences in age, maternal nutrition knowledge, family income, food security, food expenditure, and food diversity between children under five with and without WaSt (p-value=0.010; 0.002; 0.026; 0.001; <0.001; 0.021). Conclusion: The WaSt group has a different age composition, maternal nutritional knowledge, family income, food security, food expenditure, and food diversity from other groups.
