Abstract

The dietary acid load was associated with metabolic syndrome and mental health among obese college studentsBackground: The prevalence of metabolic syndrome has been increasing every year in the young population. The western diet is one of the causes that makes excess acid in the body called a dietary acid load. On the other hand, the high dietary acid load was associated with decreased mental health status.Objective: To examine the association between dietary acid load and the risk of metabolic syndrome and mental health.Methods: This was a cross-sectional study conducted with 115 female students in Semarang aged 18-22 years. The dietary acid load was evaluated through a potential renal acid load (PRAL), the risk score for metabolic syndrome was calculated by Metabolic syndrome risk score. Mental health status was assessed through levels of self-esteem and levels of anxiety. The level of self-esteem was measured by the Rosenberg Self-Esteem Scale questionnaire, while the level of anxiety was measured by the State Anxiety Inventory questionnaire. Multiple linear regression models with adjustment for a potential cofounding variable were used to evaluate the association between dietary acid load with metabolic syndrome scores, self-esteem scores, and anxiety scores.Results: The mean PRAL score was 6.11 ± 9.72 mEq/day indicated the intake of the subjects was the dietary acid load. 13% of subjects had metabolic syndrome, and 87% had a pre-metabolic syndrome. 36.5% of the subjects have low self-esteem scores. The anxiety level score calculation shows that 59.1% of the subjects are at high risk of anxiety. Pearson test showed that PRAL scores were correlated with anxiety scores (r=0,669; p<0,001). The linear regression test showed that PRAL scores were correlated with metabolic syndrome scores (β=0.899; p<0.001) and self-esteem scores (β =-0.069; p=0.047).Conclusions: High dietary acid load may be a risk factor related to the development of metabolic disorders and decreased mental health status in females with obesity.

Abstract

Background: Women of reproductive age are potentially to have double-burden malnutrition due to poor diet quality. Obesity-related anemia affects iron homeostasis (hypoferremia) through low-grade inflammation.Objectives: This study aimed to analyze the differences of iron status among women of reproductive age based on obesity status and diet quality based on iron and obesity status.Methods: A cross-sectional study of female students, aged 18-22 years old that classified as obese (n=25) and non-obese (n=25). Subjects were selected by proportional random sampling. This study used iron status and diet quality as variable datas. Blood samples were taken to determined iron status (Fe serum). Diet quality was analyzed by SQ-FFQ and DQI-I. Statistical analysis using Independent-T Test, One-way ANOVA, Kruskal Wallis, Mann Whitney tests.Results: There were 20% of obese subjects had low iron status and majority (94%) had low diet quality score (52.04±5.2). Iron status of obese women (83.9±20.7 µg/dl) significantly differed to non-obese women (99.2±26.1 µg/dl), p=0.027. Obese group with low iron status had lower diet quality and moderation component score, however adequacy score was higher than other groups, p<0.05. There were no significant differences in variation and overall balance among all groups, p>0.05.Conclusions: Iron status of obese women was significantly different than non-obese women. Obese group with low iron status had lower diet quality and moderation component score, however adequacy score was higher than other groupsABSTRAKLatar Belakang: Wanita Usia Subur (WUS) rentan terkena masalah gizi ganda akibat kualitas diet yang buruk. Obesitas terkait anemia disebabkan inflamasi tingkat rendah yang mempengaruhi homeostasis zat besi (hipoferrimia). Tujuan: Penelitian ini bertujuan untuk menganalisis perbedaan status besi WUS berdasarkan status obesitas, dan perbedaan kualitas diet berdasarkan status besi dan obesitas. Metode: Penelitian ini menggunakan desain cross-sectional, dengan subjek mahasiswi berjumlah 25 orang obesitas dan 25 orang non-obesitas, dipilih menggunakan teknik proportional random sampling. Data yang diambil berupa status besi (kadar Fe serum) melalui pengambilan sampel darah, dan kualitas diet menggunakan wawancara SQ-FFQ dan analisis DQI-I. Analisis menggunakan uji Independent-T Test, One-way ANOVA, Kruskal Wallis, dan Mann Whitney.Hasil: Sebanyak 20% WUS obesitas memiliki status besi rendah dan mayoritas subjek (94%) memiliki kualitas diet rendah (52,04±5,2). Status besi WUS obesitas (83,9±20,7µg/dl) berbeda signifikan dibandingkan WUS non-obesitas (99,2±26,1µg/dl), p=0,027. Kelompok WUS obesitas dengan status besi rendah memiliki skor kualitas diet dan komponen moderasi lebih rendah, namun memiliki skor kecukupan lebih tinggi dibandingkan kelompok lainnya, p<0,05. Komponen variasi dan keseimbangan keseluruhan pada semua kelompok tidak menunjukkan perbedaan signifikan, p>0,05.Kesimpulan: Status besi WUS obesitas signifikan lebih rendah dibandingkan WUS non-obesitas. Kelompok WUS obesitas dengan status besi rendah memiliki skor kualitas diet dan moderasi lebih rendah, namun memiliki skor kecukupan lebih tinggi dibandingkan kelompok lainnya.

Abstract

Background: Tempeh gembus is a food that high in protein and fiber but low in fat. The low content of fat in tempeh gembus is good for adolescent with obesity. Tempeh gembus cookies could be the alternative snack for adolescent girls with obesityObjectives: To analyze the effect of the substitution of tempeh gembus flour on the nutrient content of tempeh gembus cookies and the acceptability of the best formula on the tempeh gembus cookiesMethods: This was an experimental research with one factor complete randomized design, which was the formulation of cookies with tempeh gembus flour of 0%, 25%, 50%, and 100% as the variation of substitution, then analyzed the nutrients and acceptance. The statistic method used were One-way Anova test to analyze the nutrients and Friedman test to analyze the acceptanceResults: There were significant effects the formulation of cookies with tempeh gembus flour on total fat, carbohydrate, total crude fiber, ash content, and reducing sugar. In acceptance test, there were significant effects of tempeh gembus cookies formulation on color, appearance, tenderness, aroma, and flavorConclusions: Cookies with tempeh gembus flour formulation of 100% was the best formulation to meet total energy, carbohydrate, low fat and high fiber acceptance which were good for adolescent girls with obesity. Whereas cookies with tempeh gembus flour formulation of 25% and 50% based on acceptance were still acceptable and preferred

Abstract

Background: Based on the duration and intensity of the exercise, sports can b classified into two types: endurance and non endurance (strength and power). Endurance sports is a high risk sport with low diet quality, nutritional status (body mass index (BMI) and body fat percentage), and haemoglobin level. Objectives: The aimed of this study is to analyze the differences of diet quality, nutritionl status, and haemoglobin level of female adolescent athletes in endurance  and non endurance sports. Methods: An observational study with a cross-sectional design was conducted on 23 endurance athletes and 21 non endurance athletes in BBLOP Central Java, UNNES swimming and athletic sports club, and Salatiga atlhetic sports club. Subjects were selected by purposive sampling. BMI and body was measured by Bioelectrical Impedance Analysis (Tanita DC-360). Haemoglobin level was assessed by cyanmethemoglobin method. Diet quality was measured by semi quantitative food frequency questionnaire (SQ-FFQ) and diet quality index-international (DQI-I) form. Data was analyzed by independent t-test and Mann-Whitney. Results: The majority of nutritional status based on BMI and perventage body fat in endurance and non endurance athlete were normal. About 9,5% of non endurance athlete had anemia. There were significant difference in diet quality (p=0,029) and variety of protein source, iron, vitamin C, and empty calorie foods intake (p<0,001; p=0,028; p=0,045; p<0,001) of endurance and non endurance athletes, but no significant difference in body fat percentage (p=0,573) and haemoglobin level (p=0,714).  Conclusion: There were significant difference on diet quality, variety of protein source, iron, vitamin C, and empty calorie foods intake between endurance and non endurance athletes.

Abstract

Latar Belakang: Belum banyak penelitian yang membandingkan pengaruh diet tinggi serat larut air dan diet tinggi serat tidak larut air terhadap tingkat satiety.Tujuan:Menganalisis pengaruh pemberian diet isokalori tinggi serat terhadap tingkat satiety pada kelompok usia dewasa awal status gizi normal.Metode: Penelitian eksperimentaldengan rancangan pre-post group design. Subjek penelitian adalah 16 orang dewasa awal usia 20-23 tahun (10 perempuan dan 6 laki-laki) yang diambil secara consecutive sampling. Semua subjek diberikan 2 jenis diet isokalori dengan rasio serat larut air : serat tidak larut air sebesar 3:2 dan 1:3 dengan masing-masing wash out period selama 1 hari. Energi yang diberikan sebesar 20% dari total kebutuhan masing-masing subjek. Variabel yang diukur adalah tingkat satiety yang terdiri dari tingkat desire to eat, hunger, fullness dan prospective food consumption/PFC menggunakan kuesioner Visual Analogue Scale. Analisis statistik menggunakan paired t-test, wilcoxon, mann-whitney dan independent t-test.Hasil: Diet tinggi serat larut air memiliki efek lebih lama 1 jam dalam menekan hunger dan desire to eat dan memiliki efek lebih lama 30 menit dalam menekan PFC dibandingkan diet tinggi serat tidak larut air, namun kedua diet tersebut sama-sama baik dalam meningkatkan fullness hingga 3 jam setelah intervensi.Kesimpulan: Pemberian diet tinggi serat dapat menekan tingkat desire to eat, hunger, PFC dan meningkatkan fullness. Diet tinggi serat larut air mempunyai efek lebih lama terhadap tingkat satiety dibandingkan diet tinggi serat tidak larut air.

Abstract

Background: Neck circumference could describe upper-body subcutaneous fat, correlated with obesity and diabetes mellitus.Objective: The purpose of this study was to determine the correlation between percent body fat and neck circumference with fasting blood glucose in obese female college students.Methods: The study was cross-sectional, conducted at Diponegoro University in June-August 2019. 119 participants were female, aged 17-21 years selected using the purposive sampling method. Measurement of waist circumference was used as an indicator of obesity. Percent body fat was measured using Bioelectrical Impedance Analysis (BIA), and neck circumference was measured using a met line. Fasting blood glucose was examined after the subject fasted for 8-12 hours, the amount of blood taken was 5 cc. Data were analyzed with the Rank-Spearman correlation test.Results: As many as 84% of subjects had excess percent body fat. The median neck circumference was 32.5 cm. The median fasting blood glucose was 87 mg / dL. There was a significant correlation between percent body fat with fasting blood glucose (r = 0.231) (p = 0.012). There was no correlation between neck circumference with fasting blood glucose (r = 0.137) (p = 0.137).Conclusion: Percent of body fat had a significant relationship with fasting blood glucose, and the greater the circumference of the neck, the greater fasting blood glucoseKeywords: Obesity, Neck Circumference, Percent Body Fat, Fasting Blood Glucose

Abstract

Background: Santriwati (Islamic female student), women of reproductive age, were susceptible to experienced Chronic Energi Deficiency (CED). CED reflects the low energy availability of someone who can risk reducing bone density. Objectives: This study aimed to analyze the differences in body mass index, body fat percentage, hemoglobin levels, energy availability, and bone mineral density of female students who experienced CED risk and not experienced CED risk.Materials and Methods: The research design was a cross-sectional study, with 101 female students as subjects who were selected by random sampling. The research was conducted from February to March 2019 at the Kyai Galang Sewu Islamic Boarding School, Semarang. CED risk data was taken using the upper arm circumference measurement. Percent body fat and BMI data were taken using BIA. Energy availability data is obtained from the difference between energy intake (energy intake) and energy output (energy expenditure through physical activity) divided by Fat-Free Mass (FFM). Energy intake data was taken using the SQ-FFQ questionnaire, and energy expenditure was calculated using the 24-hour activity record form. Anemia data were collected using strip hemoglobin measurements. Bone density data were taken using the Osteosys Sonost 3000 densitometer. Bivariate analysis used the Independent T-Test.Results: A total of 57.2% of subjects experienced anemia. Subjects who had underweight nutritional status were 20.8%. Santriwati experienced osteopenia as much as 13.9%. There was no difference in bone density and hemoglobin levels between female students who were at risk of CED and not CED risk (p> 0.05), but there were differences in energy availability, body fat percentage, BMI between those at risk of CED and not CED risk (p <0.05)Conclusion: subjects at risk of CED (Lila <23.5 cm) had lower energy availability, body fat, and BMI than subjects who were not at risk of CED.

Abstract

Background: Chronic energy deficiency (CED) that occurs at risk preconception women during pregnancy increased low birth weight (LBW) in infants. Household food security and diet quality are factors that cause CED. Therefore, this study aims to determine the relationship between household food security and diet quality with CED preconception women.Materials and Methods: We used a cross-sectional study design. The subject of 70 preconception women aged 16-35 years registered in the religious affairs office in Sumowono and Pringapus Subdistrict were selected by consecutive sampling method. Weight and height were measured to assess body mass index to determine CED. Household food security was measured using the Household Food Security Scale Module (HFSSM). Food intake data were obtained using the Semi-Quantitative Food Frequency Questionnaire (SQ-FFQ) and DQI-I (Diet Quality Index-International) to measure diet quality. Bivariate analyses were tested using Rank Spearman and Pearson Product Moment.Results: The prevalence of subjects with CED risk was 48.6% and subjects with  CED was 15.7%. 38.6% of subjects married at the age of 16-20 years, 75.1% of subjects had low household food security and 80% of subjects had low diet quality. There was no significant relationship between household food security and diet quality with CED, namely (p = 0.537) and (p = 0.711). The components of diet quality, namely variation, adequacy, moderation and balance also did not show a significant relationship with CED, respectively with p-value (p = 0.711), (p = 0.523), (p = 0.412), (p = 0.604 )Conclusions: There was no correlation between household food security and CED, also no correlation between diet quality and CED.

Abstract

Penelitian ini bertujuan untuk membandingkan sifat fisik, organoleptik dan kandungan asam lemak pada tempe mete serta membandingkannya dengan tempe berbahan dasar kacang kedelai. Penelitian dilakukan secara eksperimental dengan rancangan acak lengkap satu faktor pada[A1] [A2]  tempe kedelai dan tempe mete. Penelitian eksperimen ini terdiri dari 2 (dua) kelompok perlakuan. Tiap kelompok perlakuan dilakukan 3 (tiga) kali ulangan, sehingga diperoleh 6 satuan percobaan. Berdasarkan 6 percobaan tersebut, dilakukan analisis secara duplo meliputi analisis sifat fisik (kadar air dan rendemen). Kadar air, rendemen dan asam lemak masing-masing diuji menggunakan metode gravimetri, metode penimbangan dan metode kromatografi gas. Mutu organoleptik diuji pada parameter warna, rasa, aroma dan tekstur. Analisis statistik data menggunakan Independent t-test dan Mann-Whitney. Kadar air tempe mete (36,97±0,38%) lebih rendah dari tempe kedelai (63,86±1,46%). Penampakan fisik tempe mete berwarna putih dengan tekstur yang kompak seperti tempe kedelai. Rendemen tempe mete (136,67±6,11%) lebih rendah dari tempe kedelai (169,44±5,85%). Warna, rasa, dan tekstur kedua tempe setelah digoreng tidak memiliki perbedaan yang tampak. Asam oleat dan asam linoleat tempe mete masing masing sebesar 21,52±0,58% dan 6,09±0,03%, lebih tinggi dari tempe kedelai yang mengandung asam oleat 2,19±0,02% dan asam linoleat 4,96±0,03%. Tempe mete memiliki kadar air dan penampakan fisik yang sesuai dengan standar tempe, namun rendemen yang dihasilkan lebih rendah. Dapat disimpulkan bahwa tempe mete memiliki mutu sesuai standar dengan kandungan asam lemak yang lebih tinggi dari tempe kedelai.Analysis of Physical, Sensory and Fatty Acid Properties of Tempeh Made from Cashew Nut and SoybeanAbstractThe aim of this study was to compare the phsycal and organoleptic properties, fatty acid content between cashew and soybean tempeh. The research was a one-factor completely randomized experimental design on soybean tempeh and cashew tempeh. This experimental study consisted of 2 (two) treatment groups. Each treatment group was repeated 3 times, so that 6 experimental units were obtained. Based on these 6 experiments, a duplicate analysis was carried out including the analysis of physical properties (moisture content and yield). Moisture content, yield and fatty acid were analyzed respectifly using gravimetric method, weighing method, and gas chromatography. The organoleptic quality was tested on the parameters of color, taste, aroma, and texture. Statistical analysis of data using independent t-test and Mann-Whitney. The moisture content of cashew tempe (36,97±0,38%) was lower than that of soybean tempe (63,86±1,46%). The physical appearance of cashew tempeh was white with a compact texture like soybean tempeh. The yield of cashew tempe (136,67±6,11%) was lower than that of soybean tempe (169,44±5,85%). The color, taste, and texture of the two tempeh after being fried did not differ remarkably. The oleic acid and linoleic acid of cashew tempeh were 21,52±0,58 % and 6,09±0,03 %, respectively, higher than soybean tempeh which contained 2,19±0,02% oleic acid and 4,96±0,03%. linoleic acid. Tempe cashew had a moisture content and physical appearance in accordance with tempe standards, but the yield was lower. It can be concluded that cashew tempeh had quality according to standards with higher fatty acid content than soybean tempeh.

Abstract

Background: Irregular menstrual cycles are a risk factor for developing type 2 diabetes mellitus (DM) in women. Objective: This study aimed to evaluate irregular menstrual cycles as a risk factor of type 2 DM in women of childbearing age with body fat percentage, waist-hip ratio, diet quality, and physical activity as confounding factors.Methods: This was a case-control study. Its subjects were subjects with type 2 diabetes mellitus (n=31) and subjects without any clinical evidence of abnormal glucose regulation (n=31) who attended Puskesmas (Community Health Centre) Rowosari, Tembalang, Semarang with over 30 years of age. Based on their menstrual cycles, they were divided into two groups: women with irregular menstrual cycles, and those with regular menstrual cycles. Cochran Mantel-Haenszel test was used to control their confounding factors. Results: There was an association between irregular menstrual cycles and type 2 DM (p<0.05) with a 7.2 greater risk on women of childbearing age (OR = 7.2, 95% CI=2.18-23.75). By the Cochran Mantel-Haenszel test, the association was still significant; women with over percentage of body fat and central obese with irregular menstrual cycle had 4,85 times and 4,37 times of sequentially greater risk on type 2 DM (OR = 4.85, 95% CI=0.98-23.95 vs OR = 4.37, 95% CI=0.93-20.51).Conclusion: The irregular menstrual cycles was a risk factor of type 2 DM, especially in obese women of childbearing age.
