Abstract

AbstrakTurmeric (Curcuma domestica Val.) Is a plant with a rhizome that many are, both in the scale of household or industrial scale. Concomitant development of technology, the production of ready-made mealsfavored by society, one of which is tumeric. This research was carried out with the aim to do bacteriologicaltesting of tumeric (Curcuma domestica Val.) Of some traditional market in Padang, implemented in June2013 at the Laboratory of Microbiology Department of Biology, University of Andalas Padang. The research was conducted with descriptive methods, purposive sampling is done at 5 sampling traditional marketsnamely Padang city, Bandar Buat market, Gaung market, Lubuk Buaya market, Simpang Haru market, andSiteba market. Further bacteriological testing done with these steps: 1. Test estimation (Presumtive test), 2. test assertions (Confirmed test) and 3. completion test (Completed test) using the MPN method (MostProbable Number) by using a combination of 5:1:1. Results obtained from this study tumeric samples containing bacteria with a total range of 23 x 105  cells / ml - 155 x 105  cells / ml. Highest total bacteria recovered in tumeric sold at Gaung market in sample 1 while the lowest total bacteria recovered in tumeric Siteba sold in markets in the sample 1. Tumeric samples from five traditional market in Padang city has coliform bacteria MPN value range from 2.0 to 240.0 ml sel/100 and bacteria E. coli from 4.0 to 240.0 ml sel/100. This proves that tumeric being sold from a number of traditional markets in the city of Padanggenerally not eligible consumed because they contain bacteria E. coli > 3 colonies / g and coliform bacteria >100 colonies / g.

From research got by result of all of garlic sample mill to containbacterium with amount of gyration 39 x 107 cell / ml - 143x 107 cell / ml. Garlic Sample mill from five traditional market at Padang Town have gyration assess MPN bacterium of koliform 2,2 - 240 cell / 100 sample ml and bacterium E. coli 0 - 4 cell/ 100 sample ml. The conclude that garlic mill which is sold from some traditional market in at Padang City generally is improper consumed bybecause containing bacterium E. coli > 3 colony / g bacterium and g of koliform > 100 colony / g.

This case could lead to contamination of ground coffee is marketed by microorganisms especially fungi carried by air. This research aims to determine the types of mold found in coffee powder of several traditional markets in district of Pasaman. The research was conducted at the FMIPA Microbiology Laboratory, Andalas University from July until August 2013. This research uses purposive sampling method by selecting a place or market sampling by certain characteristics. The result in the identification using reference book Samson and Hoekstra (1988) subsequently described. The Samples were taken by 5 types of ground coffee samples from different manufacturers as well as traders. The results of this research showed that the samples of ground coffee found 7 types of A. niger, A. flavus, A. ustus, A. ochraceus, A. oryzae, Aspergillus sp 1 (suspected Aspergillus fumigatus), and Aspergillus sp 2. Penicillium genus there are 2 types of Penicillium glabrum and Penicillium sp. (allegedly Penicillium citrinum). There is only one genus Mucor Mucor hiemalis type. Rhizopus genus there is only 1 type of the Rhizopus oryzae. Genus Syncephalastrum there is 1 type that is Syncephalastrum racemosum.

The number of outstanding condiment packaging pecal feared pengkontaminan contain bacteria such as E. coli and Coliform that comes from the ingredients and mixing water and Process are not hyegienic that will impact health eating. This study aimed to test the bacteriological content of spice packaging pecal circulating in the city of Padang. This study was conducted in July-August 2013 in the laboratory of Microbiology, State University of Andalas Padang. The method used was a descriptive survey. The samples tested were some seasoning pecal packaging consisting of 5 different brands with the brand code G , S , B , C , and R. Testing is done is to calculate the total number of bacteria ( ALT ) and see the amount of gas positive tubes using tables MPN ( Most Probable Number ) by the series 5-1-1. Three types of tests performed is the test estimation, test and test complementary assertion. The results showed that of the 5 brands tested, namely G , S , B , C , and R positive for coliform , and brand G , B , C , and R are E. coli and S brand just is not there E.coli. Total plate count test showed that the highest number was found on total bacterial brand of R with  49x 106 cfu/g. In accordance with the Decree of the Minister of Health Nomor1098 / Minister / SK / VII/89 on the Limits of Microbial Contamination in Food, number of bacteria E. Required coli cells per gram of sample 0 food and 0 cells per 100 ml of sample drinks as well as total plate count (total bacteria) by the Indonesian BPOM about the type and maximum limit microbial contamination in food HK.00.06.1.52.40011 numbers in 2009 for the number of bacteria colonies / gram sample is 1x104 cfu / g.

Abstract

ABSTRACTStarfruit ( Averrhoa bilimbi, L ) is a plant that most organs have high medical value, starting from the roots, stems, leaves to fruit. The fruits used as traditional medicine for cough, bleeding gums, canker sores, cavities pain, acne, tinea versicolor, high blood pressure, strokes, improve digestive function. Starfruit has active substances such as tannins, saponins, and flavonoids which can be used as an antimicrobial agent. Escherichia coli is a bacteria found in human colon as normal flora, but E. coli for many years regarded as a cause of diarrhea. Research has been conducted in order to determine the inhibition of starfruit juice ( Averrhoa bilimbi, L ) on the growth of E. coli. This research was conducted at the Laboratory of Biology X Kopertis of West Sumatra in May-June 2013. This research used Completely Randomized Design ( CRD ) with 6 treatments and 4 replications. Concentration of strat fruits juice was 10 %, 20 %, 30 %, 40 %, 50 %, and 10 % Amoxylin as control. The result showed that the largert diameter of clear zone present in a concentration of 10 % that is 3.74 mm, while the lowest diameter at a concentration of 30 % which is 3.29 mm and the control amoxilin gained an average of 4.13 mm. The results showed that the starfruit juice ( Averhoa bilimbi, L ) affected the growth of E. coli bacteria. At a concentration of 10 % with an average diameter of the clear zone is 3.74 mm was able to inhibit the growth of bacteria E. coliÂ
