Abstract

The consumption pattern of the community, including adolescents, has shifted to consuming ready-to-eat or packaged foods. This phenomenon needs to be controlled because these foods are generally high in sugar, salt and fat which are bad for health. This habit can arise partly due to low compliance to read nutritional value information labels. This study aims to analyze the factors associated with adolescent behavior in reading nutritional value information labels. The research method used cross sectional design with proportional stratified random sampling. The research sample was SMAN 1 Singaparna students, with a total of 328 people. Data were collected using a questionnaire instrument and analyzed by Chi Square Test. The results showed that there was a relationship between knowledge and the behavior of reading nutritional value information labels (p value = 0.009; OR = 1.859; 95% CI = 1.190-2.903) Media exposure also had a relationship with the behavior of reading nutritional value information labels (p value = 0.000; OR = 6.128; 95% CI = 2.857-13.137). However, there was no relationship between attitude (p value = 0.376), ability to read labels (p value = 0.264), special diet (p value = 0.130), gender (p value = 0.357) and pocket money (p value = 0.434) with the behavior of reading nutritional value information labels. Based on the results of this study, it can be concluded that knowledge and media exposure affect the behavior of reading nutritional value information labels, as well as being a risk factor. Therefore, it is recommended that students make it a habit to read nutrition labels before choosing packaged food products.

Abstract

The teenage age group is vulnerable to obesity problems. The consumption pattern of foods high in fat and low in fiber is starting to increase, especially fast food, so that the need for balanced nutrition cannot be met. Instant noodles are a food that is often chosen because they are easy and quick to cook. Providing fortification in noodles is an alternative for reducing obesity rates. Sorghum is a source of high fiber from local food which can be used as an ingredient in making noodles. The addition of sorghum flour in making dry noodles is carried out as an effort to increase the nutritional value of food, especially dietary fiber and to utilize local food which is still underused in some areas. This research aims to examine the acceptability and dietary fiber content of dry noodles with the addition of sorghum flour. The design of this research is experimental. The design in this study used a factorial Completely Randomized Design (CRD) with a ratio of wheat flour to sorghum flour of 100:0 (F0), 90:10 (F1), 80:20 (F2), and 70:30 (F3). The analysis used for organoleptic data was Kruskal-wallis with the Mann-Whitney test. Food fiber content was tested using the enzymatic gravimetric method. The results of the research show that the acceptability results based on organoleptics which include color, aroma, texture and taste of dry sorghum flour noodles show significant differences in taste, texture and color, but not significant differences in aroma. The best treatment for sorghum flour dry noodles based on acceptability is F1 which is a 10% sorghum flour formula with a dietary fiber content of 7.24% and can be said to be a functional food source of dietary fiber.

Abstract

Gizi kurang pada balita dimulai dari berat badan yang kurang sehingga ibu harus peka untuk mendeteksi perubahan berat badan anak, melalui Growth Monitoring and Promotion (GMP) di Posyandu. Hasil temuan di lapangan menunjukkan rendahnya partisipasi masyarakat dalam pemantauan pertumbuhan di Posyandu, kegiatan Posyandu dianggap monoton dan kegiatan kegiatan meja ke-4 sering tidak dilakukan. Kami berkontribusi melalui pengabdian masyarakat tentang pemberdayaan masyarakat dalam pelaksanaan Growth Monitoring and Promotion (GMP) pada Masyarakat Panglayungan. Program pengabdian masyarakat bekerjasama Posyandu Naluri dan Posyandu Kencana. Kegiatan yang dilakukan meliputi kegiatan edukasi, pelatihan dan pendampingan pelaksanaan GMP di Posyandu. Evaluasi dilakukkan dengan pre-test post-test, dan kemampuan melakukan GMP di Posyandu. Kegiatan edukasi dan pelatihan GMP dilakukan pada hari Sabtu tanggal 28 Juli 2024 di Aula Yayasan Al Ikhlas. Pendampingan GMP di Posyandu Naluri dilakukan tanggal 9 Agustus 2024 dan di Posyandu Kencana pada tanggal 10 Agustus 2024. Peserta pada kegiatan ini adalah kader dan sasaran Posyandu Naluri dan Kencana dengan jumlah 60 orang. Hasil edukasi dan pelatihan menunjukkan adanya peningkatan skor pengetahuan sebelum dan sesudah kegiatan dilakukan, yang dibuktikan dengan dari hasil uji Wilcoxon didapatkan nilai p=0,000. Pemberdayaan Masyarakat melalui kegiatan edukasi, pelatihan dan pendampingan yang dilakukan berhasil meningkatkan skor pengatahuan peserta tentang pelaksanaan GMP, namun masih ada pelaksanaan GMP terutama pengukuran TB dan PB yang masih perlu diperbaiki. Perlu dilakukan refreshing terkait dengan pelaksanaan GMP secara berkala.

Abstract

Pola makan remaja putri yang merupakan salah satu penyebab terjadinya anemia sangat tergantung pada keluarga. Peningkatan pengetahuan keluarga yang memiliki remaja putri tentang pangan lokal kaya zat besi diperlukan agar remaja putri terhindar dari anemia. Tujuan kegiatan ini adalah peningkatan pengetahuan keluarga yang memiliki remaja putri tentang pangan lokal kaya besi untuk mencegah kejadian anemia pada remaja putri. Peserta kegiatan sebanyak 100 keluarga yang tinggal di Desa Santanamekar, Kecamatan Cisayong, Kabupaten Tasikmalaya. Kegiatan meliputi tiga tahap, yaitu perencanaan, edukasi dan evaluasi. Perencanaan untuk mendapatkan kesepakatan jadwal, peserta dan tempat kegiatan. Edukasi berupa penyampaian materi dan diskusi, sedangkan evaluasi dilakukan dengan menganalisis perbedaan skor pengetahuan sebelum dan sesudah pemberian edukasi. Hasil pengabdian masyarakat menunjukkan rata-rata umur peserta 45 tahun dan lebih dari separuh nya tidak bekerja (57%). Rata-rata skor pengetahuan sebelum edukasi sebesar 3,55 meningkat menjadi 6,46 setelah pemberian edukasi. Hasil kegiatan menunjukkan terjadinya peningkatan skor pengetahuan peserta sebesar 2,91. Evaluasi kegiatan pengabdian kepada masyarakat menunjukkan adanya perbedaan skor pengetahuan sebelum dan sesudah kegiatan edukasi dengan p=0,000. Pemberian edukasi pangan lokal kaya zat besi mampu meningkatkan pengetahuan peserta sehinggai dapat dijadikan langkah awal untuk meningkatkan asupan pangan kaya zat besi pada keluarga yang memiliki remaja putri.

Abstract

ABSTRACTBackground: Access to food differs between school-age children in rural and urban areas which is thought to have an impact on differences in the eating patterns and nutritional status of school-age children. The purpose of this study was to analyse differences in food pattern and nutritional status of school-age children in rural and urban areas.Methods: This research is a cross-sectional design. SDN I Benda which is located in Tasikmalaya City represents an urban area and SDN 3 Sukasari in Ciamis represents a rural area. The number of subjects in rural areas is 38 students and in urban areas is 40 students. Differences in eating patterns in rural and urban areas were analysed using independent t-test and Mann-Whitney at significance (p0.05).Results: The average food diversity of school-age children in rural areas (4) is less than in urban areas (4.5). The intake of energy (1636.8 vs 1526.1 kcal), protein (47.2 vs 43 g), fat (71 vs 62.8 g) and carbohydrates (214.1 vs 120.8 g) of school-age children in rural areas is slightly higher than in urban areas. This study showed that there were differences in the food diversity of school-age children in rural and urban areas (p=0.003); but there was no difference in energy (p=0.280), protein (p=0.593), fat (p=0.154), and carbohydrate (p=0.308) intake of school-age children in rural and urban areas.Conclusion: The food diversity of school-age children in rural areas is less than in urban areas, therefore efforts are needed to increase food diversity in rural areas

Abstract

Women and children are at risk of suffering iron deficiency anemia. The scoping reviews were aimed to examine experimental research articles that were published last than 10 years ago or from 2008. The searching articles results through 11 electronic search engines (Medline, CINAHL, PubMed, etc.) found 668 articles. After the screening process based on the specified inclusion criteria, 51 articles will be examined. The result of articles review that we had done showed 35 articles had positive impact after they were given an intervention with fe fortification in various types of food for all subjects. However, there were still 16 articles that showed no significant changes after being given an intervention. This review of the studies still required statistical analysis of the data found to provide a better results

Abstract

Many various of things was be done to improve the nutritional status of toddlers with stunting, one of which is complementary feeding (PMT) for recovery. However, an evaluation is needed in the form of parental responses to the PMT recovery program to assess the sustainability of the program. This study aims to capture the perceptions/responses of parents who have stunted toddlers who receive the PMT recovery program. The research method is descriptive qualitative with a case study approach. The research informants were parents who had 5 stunted toddlers and health workers as managers of the stunting management program. Data were analyzed descriptively and presented as a series of information in the form of narratives. The results of the study showed good perceptions/responses from parents who had stunted toddlers towards the provision of PMT recovery. Parents felt helped by the existence of PMT recovery to improve the health of their toddlers. In addition to receiving PMT, parents also received education about stunting and improving the health of toddlers so that they grow and develop well, which was carried out by health center officers. Suggestions were given to parents not to rely on the PMT recovery program and to choose local food ingredients that are more affordable for nutritious food intake for stunted toddlers.

Abstract

Overnutrition among adolescents is a growing public health concern both globally and nationally. It is closely associated with high consumption of ultra-processed foods (UPF) and low levels of physical activity. Adolescents tend to prefer convenient, energy-dense foods and lead sedentary lifestyles, which can trigger an energy imbalance and lead to fat accumulation. Objective: This study aimed to analyze the differences in UPF consumption patterns and physical activity based on overnutrition status among adolescents. Methods: This quantitative study used a cross-sectional design. The sample consisted of 87 students from grades VII and VIII at SMP Negeri 8 Tasikmalaya, selected using proportionate stratified random sampling. UPF consumption was measured using the Semi Quantitative Food Frequency Questionnaire (SQ-FFQ), and physical activity was assessed using the Global Physical Activity Questionnaire (GPAQ). Nutritional status was determined by measuring body weight (kg) and height (cm), and assessed using BMI-for-age based on Z-scores. Data analysis was conducted using univariate and bivariate analysis with the Mann-Whitney test. Results: There were significant differences in the amount of UPF consumption (p=0.000), frequency of UPF consumption (p=0.000), and physical activity (p=0.002) based on overnutrition status. Conclusion: There are significant differences in the amount and frequency of UPF consumption and levels of physical activity based on overnutrition status among adolescents. Educational efforts and targeted interventions are needed to reduce UPF intake and promote physical activity to prevent overnutrition in adolescents.Gizi lebih pada remaja merupakan masalah kesehatan masyarakat yang semakin meningkat secara global maupun nasional. Gizi lebih berhubungan dengan tingginya konsumsi ultra processed food (UPF) dan rendahnya aktivitas fisik. Remaja cenderung memilih makanan yang praktis dan tinggi energi, serta menjalani gaya hidup sedentari, yang dapat memicu ketidakseimbangan energi dan menyebabkan penumpukan lemak tubuh.Tujuan: Penelitian ini bertujuan untuk menganalisis perbedaan pola konsumsi UPF dan aktivitas fisik berdasarkan kejadian gizi lebih pada remaja. Metode: Penelitian ini merupakan penelitian kuantitatif dengan menggunakan desain penelitian cross sectional. Sampel pada penelitian ini berjumlah 87 siswa kelas VII dan VIII di SMP Negeri 8 Tasikmalaya yang diambil menggunakan teknik proportionate stratified random sampling. Variabel pola konsumsi UPF diukur menggunakan kuesioner Semi Quantitative Food Frequency Questionnaire (SQ-FFQ), sedangkan variabel aktivitas fisik diukur menggunakan kuesioner Global Physical Activity Questionnaire (GPAQ). Status gizi diukur dengan penimbangan berat badan (kg) dan tinggi badan (cm) dan ditentukan menggunakan IMT/U berdasarkan Z-score. Analisis data dilakukan secara univariat dan bivariat menggunakan uji Mann Whitney. Hasil: Terdapat perbedaan antara jumlah konsumsi ultra processed food berdasarkan kejadian gizi lebih pada remaja (p=0,000), terdapat perbedaan antara frekuensi konsumsi ultra processed food berdasarkan kejadian gizi lebih pada remaja (p=0,000), terdapat perbedaan antara aktivitas fisik berdasarkan kejadian gizi lebih pada remaja (p=0,002). Kesimpulan: Terdapat perbedaan signifikan antara jumlah dan frekuensi konsumsi UPF serta aktivitas fisik berdasarkan kejadian gizi lebih pada remaja. Diperlukan upaya edukasi dan intervensi untuk menurunkan konsumsi UPF serta meningkatkan aktivitas fisik guna mencegah gizi lebih pada remaja.

Abstract

Determinants of dietary diversity among female adolescents in Tasikmalaya CityBackground: Poor diet quality is the root cause of nutritional problems in adolescent girls, and dietary diversity is a determinant of diet quality.Objective: This study aimed to analyze the determinants of dietary diversity among female adolescents, encompassing individual, parental, and family factors.Methods: The research design employed a cross-sectional approach. Seven (30%) public junior high schools in Tasikmalaya City were randomly selected as research locations. Of the 391 female students selected as research subjects using proportional random sampling, 367 successfully participated in the research and completed the data analysis. The food diversity variable was measured using the Individual Dietary Diversity Score (IDDS) instrument, based on the results of two 24-hour non-consecutive recall methods. Determinants were measured using a structured questionnaire. Bivariate analysis employed Spearman's rank and chi-squared tests, while multivariate analysis utilized logistic regression modeling.Results: Most participants had a non-diverse diet (78.8%). Green, leafy vegetables and vitamin A-rich fruits were food groups consumed by fewer than a third of the subjects. The results of statistical tests revealed that variables such as pocket money, screen time duration, maternal education, maternal employment status, and family income were significantly related to the dietary diversity of adolescent girls (p < 0.05).Conclusions: The length of time female adolescents spent in front of screens (screen time) was the most significant variable influencing the dietary diversity of female adolescents. Therefore, it is necessary to promote healthy snacks made from vegetables and fruit that can be consumed while engaging in activities in front of the screen.

Abstract

Indonesia saat ini sedang menghadapi triple burden of malnutrition, yang ditandai dengan koeksistensi kekurangan gizi (malnutritisi), kelebihan berat badan (overweight) dan defisiensi zat gizi mikro. Berdasarkan Dinas Kesehatan Kota Tasikmalaya pada tahun 2020, angka kasus stunting di Kota Tasikmalaya mencapai 7.731 atau 17,58. Produksi ikan di Kota Tasikmalaya mencapai 9.334 ton ikan. Salah satu kecamatan yang paling banyak terdapat rumah tangga usaha pembudidaya kolam ikan adalah Kecamatan Kawalu sebanyak 1.652 rumah tangga. Nugget merupakan salah satu bentuk produk makanan beku siap saji yang banyak disukai anak-anak dan menjadi sumber protein hewani. Tujuan pengabdian pada masyarakat ini yaitu bagaimana memberikan pelatihan mengenai pembuatan nugget ikan lele kepada masyarakat terutama keluarga yang beresiko stunting, sehingga mereka dapat menerapkan produk ini untuk pengolahan pangan di tingkat rumah tangga. Permasalahan tentang balita stunting dapat diatasi dengan adanya edukasi gizi dan pengolahan pangan berbasis ikan lele yang mudah dibudidayakan dan mudah untuk diolah. Berdasarkan hasil perhitungan rata-rata skor pre-test peserta adalah 6,6 dan hasil rata-rata post-test peserta adalah 8,05. Hasil pengujian statistik menunjukkan bahwa ada perbedaan signifikan antara nilai pre-test dan post-test atau ada pengaruh pemberian materi terhadap peningkatan pengetahuan kader tentang pelatihan nugget ikan lele untuk mencegah balita stunting. Dari hasil kegiatan ini, disarankan yaitu agar penanganan balita stunting segera teratasi melalui pengolahan nugget ikan lele dan program yang dilakukan efektif setelah kegiatan ini selesai dilakukan dengan adanya pendampingan melalui Kader Posyandu yang akan dipantau melalui grup WhatsApp.
