Abstract

At the age of six months to two years, infant need breast milk complementary food. Mothers' ignorance about providing nutritious complementary foods can lead to low nutritional intake which ultimately results in stunted growth. This community service activity aims to increase mothers' knowledge about making breast milk complementary food through education. Participants in this activity were 70 mothers who had children under two years old in two posyandu (Cempaka and Edelweiss) at the Karuripan Community Health Center, Tasikmalaya City. The methods used in this activity include needs assessment, creating educational materials, implementing education (explaining and providing examples of how to make complementary food) and evaluation by administering pre-tests and post-tests. The results of this activity have a positive influence on increasing mothers' knowledge about making MP ASI, so that similar activities need to be carried out regularly.

Abstract

High consumption of food snacks can cause decreased of food intake of children aged 0-5 years. It is due to the children feel full so they refuse meal. Impact of this behaviour is decreasing level of energy adequacy and level of protein adequacy so eventually decreasing their nutritional status. Food snacks contain much of sucrose and salt but a little protein. In addition  food snack often contains  food additives and also not guaranteed of its safety. To solve this problem, mothers can make food snack by themselves from local foods. Promoting local food is very important to introduce and to increase of understanding of mother about composition and nutritional contain of local food. The aim of this activity was changing mother perception about used of local foods (breadfruit and Tilapia fish) as raw materials of food snack for children aged 0-5 years. This activity used Emo Demo method with theme “cheap food snack, Rich of nutrition”. Subjects were 30 mothers who had child aged 0-5 years and also always came to Posyandu in Sukarame, Tasikmalaya. Change of perception was measured by comparing pre test and post test results,and wilcoxon was used to analyze the difference of pre test and post test results. Mean of pre test score was 9,2 and post test score was 12,9. The result of wilcoxon test shown there was the difference of pre test and post test (p < 0,001). Based on this activity, the suggestion was to continue this activity with training so the subjects were able to make foods snack using local foods (Breadfruit and Tilapia fish) as raw materials.

Abstract

ABSTRACTBackground: Access to food differs between school-age children in rural and urban areas which is thought to have an impact on differences in the eating patterns and nutritional status of school-age children. The purpose of this study was to analyse differences in food pattern and nutritional status of school-age children in rural and urban areas.Methods: This research is a cross-sectional design. SDN I Benda which is located in Tasikmalaya City represents an urban area and SDN 3 Sukasari in Ciamis represents a rural area. The number of subjects in rural areas is 38 students and in urban areas is 40 students. Differences in eating patterns in rural and urban areas were analysed using independent t-test and Mann-Whitney at significance (p0.05).Results: The average food diversity of school-age children in rural areas (4) is less than in urban areas (4.5). The intake of energy (1636.8 vs 1526.1 kcal), protein (47.2 vs 43 g), fat (71 vs 62.8 g) and carbohydrates (214.1 vs 120.8 g) of school-age children in rural areas is slightly higher than in urban areas. This study showed that there were differences in the food diversity of school-age children in rural and urban areas (p=0.003); but there was no difference in energy (p=0.280), protein (p=0.593), fat (p=0.154), and carbohydrate (p=0.308) intake of school-age children in rural and urban areas.Conclusion: The food diversity of school-age children in rural areas is less than in urban areas, therefore efforts are needed to increase food diversity in rural areas

Abstract

Kualitas sumber daya manusia menjadi salah satu indikator untuk mengukur kemajuan suatu bangsa, sehingga Indonesia menempatkan pembangunan sumber daya manusia (SDM) sebagai isu, program dan strategi pembangunan yang utama. Balita dengan anemia akan menjadi stunting, menjadi bagian dari sumber daya manusia yang tidak sesuai dengan sasaran pembangunan SDM. Anemia dapat dicegah dengan memprioritaskan asupan dari pangan kaya besi hem yang diperoleh dari protein hewani. Tasikmalaya merupakan salah satu wilayah di Provinsi Jawa Barat dengan kebiasaan makan masyarakat cenderung didominasi oleh pangan nabati. Berdasarkan hal tersebut, kami melaksanakan kegiatan pengabdian masyarakat skema Program Peningkatan Kesehatan Masyarakat (PbM-PPKM) Promosi Konsumsi Pangan Kaya Besi Hem untuk Mencegah Anemia pada Balita Stunting. Promosi pangan kaya besi hem merupakan upaya untuk mencegah agar balita tidak menderita anemia. Pelaksanaan kegiatan PbM-PPKM bekerjasama dengan dua Pos Pelayanan Terpadu (Posyandu) di Puskesmas Kahuripan Kota Tasikmalaya yaitu Posyandu Cempaka dan Edelweis sebagai mitra. Upaya pencegahan terjadinya anemi pada balita yang dilakukan adalah  berbagi cerita asupan besi hem pada balita melalui metode pemicuan, promosi makanan kaya besi hem, dan demonstrasi penyusunan menu makanan kaya besi hem. Pengabdian sudah dilaksanakan dengan dilakukan sebelumnya ada pre-test dengan hasil rata-rata skor 3,8 dan post test dengan nilai 4,7 dari 5.

Abstract

Babies over 6 months of age need complementary foods with high protein content. Tilapia fish and Moringa leaves have a high protein content, so they can be used as food to food fortification in making cookies. The aim of this research is to analyze the acceptability and protein content of cookies fortified with tilapia fish meal and moringa leaf flour. The research design used was Research and Development (R&D) with a Completely Randomized Design (CRD), using four treatments and two replications. The selected formula is determined based on the average value of acceptability of color, aroma, taste and texture. Analysis of protein content using the Kjeldahl method. There was a difference in the acceptability (preference for color, aroma, taste and texture) of cookies fortified with tilapia fish meal and moringa leaf flour compared to the control formula. The selected formula based on the average value of color, aroma, taste and texture was formula F3 (87g wheat flour, 6g tilapia fish meal and 2g moringa leaf flour). The selected formula, namely formula F3, contains protein per 100g, 2.85g higher than the control formula (F0). It is necessary to analyze macronutrients and other micronutrients so that the entire nutritional content of cookies can be known

Abstract

Dietary diversity plays a role in meeting nutritional needs to prevent undernutrition in children. This study aims to analyze the relationship between food diversity and the incidence of undernutrition in children aged 6-23 months in Sukarame Village, Sukarame District, Tasikmalaya Regency in 2022. This research method is observational with a cross-sectional design. The research subjects were 74 children who were selected based on the proportional random sampling technique. Data analysis used descriptive statistical tests and Fisher’s tests. The results of the univariate analysis found that the incidence of stunting, underweight, and wasting were 10.8%, 8.1%, and 8.1%, respectively. Most of the subjects in this study consumed various foods (55.4%). Statistical analysis showed that dietary diversity was significantly associated with underweight (p=0,03), but there was no association between dietary diversity and stunting (p=0.725) and wasting (p=0.216) in children aged 6-23 months. Adequate portions and amounts of food must accompany the consumption of food diversity to meet nutritional needs.

Abstract

Anak sekolah merupakan salah satu usia yang rentan akan permasalahan gizi. Status gizi anak dapat dipengaruhi oleh beberapa hal diantaranya yaitu kebiasaan sarapan dan kebiasaan jajan anak. Penelitian ini bertujuan untuk menganalisis hubungan antara kebiasaan sarapan dan jajan dengan status gizi pada siswa di SDN Karang Tengah 04 Kabupaten Bogor. Penelitian ini merupakan penelitian observasional dengan rancangan cross sectional. Penelitian ini dilakukan di SDN Karang Tengah 04 Kabupaten Bogor pada bulan Juli 2022. Jumlah sampel dalam penelitian ini sebanyak 49 siswa, pengambilan sampel menggunakan teknik purposive sampling. Data kebiasaan sarapan dan kebiasaan jajan menggunakan instrumen berupa kuesioner. Data tinggi badan dan berat badan menggunakan microtoice dan digital weight scale. Analisis data yang digunakan yaitu uji Chi Square. Hasil penelitian menunjukan bahwa sebagian besar siswa (51%) memiliki kebiasaan sarapan yang tidak baik dan sebagian besar siswa (61,2%) memiliki kebiasaan jajan yang baik. Hasil uji statistik menunjukkan adanya hubungan yang signifikan antara kebiasaan sarapan dengan status gizi siswa di SDN Karang Tengah 04 Kabupaten Bogor dengan nilai p-value = 0,027 (p0,05) dan adanya hubungan yang signifikan antara kebiasaan jajan dengan status gizi siswa di SDN Karang Tengah 04 Kabupaten Bogor dengan nilai p-value = 0,011 (p0,05).

Abstract

Pengetahuan gizi dan citra tubuh dinilai sebagai faktor yang dapat memengaruhi status gizi pada remaja. Tujuan penelitian ini untuk menganalisis hubungan tingkat pengetahuan gizi dan citra tubuh dengan status gizi remaja putri Pondok Pesantren Tahfidzul Qur’an Ibadurrohman Tasikmalaya tahun 2022. Penelitian ini menggunakan pendekatan cross sectional dan merupakan studi observasional. Pengambilan sampel pada penelitian ini menggunakan teknik purposive sampling. Dari 64 orang remaja putri, sebanyak 63 orang memenuhi kriteria inklusi serta menjadi sampel penelitian. Instrumen yang digunakan untuk mengambil data terkait tingkat pengetahuan gizi yaitu berupa soal tes pengetahuan gizi, sedangkan Body Shape Questionnaire (BSQ-34) digunakan untuk mengambil data citra tubuh. Data berat badan didapatkan dengan mengukur berat badan menggunakan timbangan digital dan tinggi badan menggunakan microtoice. Analisis data pada penelitian ini menggunakan fisher’s exact test. Pada penelitian ini sebagian besar responden memiliki status gizi baik (82,5%), tingkat pengetahuan gizi baik (85,7%), citra tubuh positif (84,1%). Hasil menunjukkan tidak ada hubungan yang signifikan antara tingkat pengetahuan gizi dengan status gizi remaja putri p-value = 0,184 (p-value 0,05). Ada hubungan yang signifikan antara citra tubuh dengan status gizi remaja putri p-value = 0,001 (p-value 0,05). Berdasarkan hal tersebut perlu adanya edukasi gizi dan pentingnya citra tubuh positif terhadap remaja putri.

Abstract

The consumption pattern of the community, including adolescents, has shifted to consuming ready-to-eat or packaged foods. This phenomenon needs to be controlled because these foods are generally high in sugar, salt and fat which are bad for health. This habit can arise partly due to low compliance to read nutritional value information labels. This study aims to analyze the factors associated with adolescent behavior in reading nutritional value information labels. The research method used cross sectional design with proportional stratified random sampling. The research sample was SMAN 1 Singaparna students, with a total of 328 people. Data were collected using a questionnaire instrument and analyzed by Chi Square Test. The results showed that there was a relationship between knowledge and the behavior of reading nutritional value information labels (p value = 0.009; OR = 1.859; 95% CI = 1.190-2.903) Media exposure also had a relationship with the behavior of reading nutritional value information labels (p value = 0.000; OR = 6.128; 95% CI = 2.857-13.137). However, there was no relationship between attitude (p value = 0.376), ability to read labels (p value = 0.264), special diet (p value = 0.130), gender (p value = 0.357) and pocket money (p value = 0.434) with the behavior of reading nutritional value information labels. Based on the results of this study, it can be concluded that knowledge and media exposure affect the behavior of reading nutritional value information labels, as well as being a risk factor. Therefore, it is recommended that students make it a habit to read nutrition labels before choosing packaged food products.
