Abstract

Female students are a group of women of childbearing age (WUS) or preconception. Obesity in WUS or the preconception period can interfere with future pregnancies and interfere with metabolism and hormones. Obese women with obesity need to change their behavior so that it needs increased knowledge and motivation as a basis for behavior change. This research objective was to determine the effect of nutrition education and motivation classes on the practice of healthy weight loss in obese women. This quasi-experimental research with pre-posttest control group design on 24 female women who met the inclusion criteria was divided into 2 groups using the simple randomization method. The independent variable is the Instagram Nutrition School program for 1 month, consisting of nutritional counseling with a motivational interviewing strategy and social media-based nutrition education classes on Instagram, while the control group is given education through leaflet media. The dependent variable is knowledge of healthy weight loss, quality of diet and changes in anthropometric profiles, namely body weight, body mass index, waist circumference and percent body fat. Independent T-test and Mann Whitney test were used to assess differences in knowledge scores on healthy weight loss, diet quality, and differences in anthropometric deltas. There was a significant difference in knowledge score (p= 0.002), score of moderation (p= 0.001), total physical activity score (p= 0.002), and moderate physical activity (p less than 0.001), mean waist circumference (p = 0.047), and waist circumference (p= 0.032) after intervention. The Instagram Nutrition School Program has been proven to increase nutritional knowledge, change eating behavior, and increase physical activity. Abstrak: Mahasiswi merupakan kelompok Wanita Usia Subur (WUS) atau prakonsepsi. Obesitas pada WUS atau periode prakonsepsi dapat mengganggu kehamilan di masa depan dan mengganggu metabolisme dan hormonal. WUS obesitas perlu merubah perilaku sehingga dibutuhkan peningkatan pengetahuan dan motivasi sebagai dasar perubahan perilaku. Penelitian ini bertujuan untuk mengetahui pengaruh edukasi gizi dan kelas motivasi terhadap praktik healthy weight loss pada WUS obesitas. Penelitian quasi-experimental with pre-post test control group design pada 24 WUS yang memenuhi kriteria inklusi dibagi menjadi 2 kelompok dengan metode simple randomization. Variabel bebas adalah program Sekolah Gizi Instagram  selama 1 bulan, terdiri dari konseling gizi dengan strategi motivational interviewing dan kelas edukasi gizi berbasis sosial media Instagram, sedangkan kelompok kontrol diberikan edukasi melalui media leaflet. Variabel terikat adalah pengetahuan healthy weight loss, kualitas diet dan perubahan profil antropometri yaitu berat badan, indeks massa tubuh, lingkar pinggang dan persen lemak tubuh. Independent T-test dan Mann Whitney Test digunkaan untuk mengkaji perbedaan skor pengetahuan healthy weight loss, kualitas diet, dan perbedaan delta antropometri. Terdapat perbedaan yang signifikan pada skor pengetahuan (p=0,002), skor moderasi (p=0,001), skor total aktifitas fisik (p=0,002), dan aktifitas fisik sedang (p kurang dari 0,001), rerata lingkar pinggang (p=0,047), dan lingkar pinggang (p=0,032) setelah intervensi. Program Sekolah Gizi Instagram terbukti meningkatkan pengetahuan gizi, merubah perilaku makan, dan meningkatkan aktivitas fisik.

Abstract

Salah satu faktor risiko utama dari stunting yaitu asupan gizi yang kurang dalam waktu cukup lama akibat pemberian makanan yang tidak sesuai. Pemenuhan kebutuhan gizi balita dapat dioptimalkan salah satunya dengan pemberian makan yang responsif. Saat ini pengetahuan, sikap dan praktik Responsive Feeding di Indonesia masih sangat rendah (≤30%), demikian pula di Kota Semarang. Upaya peningkatan pengetahuan, sikap, dan praktik Responsive Feeding pada balita perlu dilakukan melalui strategi Komunikasi Informasi Edukasi (KIE) terpadu meliputi edukasi dan Small Group Discussion (SGD). Program dilaksanakan selama 8 bulan (April-November 2022) di wilayah Puskesmas Lamper Tengah, Kota Semarang. Media yang digunakan yaitu modul edukasi, power point presentation, dan kartu edukasi. Kartu edukasi Responsive Feeding terdiri dari 5 kartu yang menggambarkan praktik pemberian makan Responsive Feeding. Sasaran program adalah ibu balita. Edukasi berjalan dengan lancar dan diakhiri dengan diskusi dan tanya jawab antar peserta dan pelaksana pengabdian masyarakat. Hasil dari program menunjukkan bahwa terdapat peningkatan rerata skor pengetahuan, sikap, dan praktik responsive feeding setelah program dilaksanakan. Rerata skor pengetahuan sebelum intervensi sebesar 18,72 meningkat menjadi 20,15. Rerata skor sikap sebelum intervensi sebesar 91,2 meningkat menjadi 94,2. Rerata skor praktik sebelum intervensi sebesar 10,22 meningkat menjadi 10,5. Sebelum dilaksanakannya program, praktik Responsive Feeding dilaksanakan secara lengkap (meliputi 5 indikator) oleh 22% ibu balita. Setelah program dilaksanakan, praktik Responsive Feeding secara lengkap dilaksanakan oleh 27% ibu balita.

Abstract

ABSTRACTBackground: Adolescent girls anemia in Indonesia is still quite high. One of the effective alternatives for preventing anemia is nutrition education through snakes and ladders games and booklets, which are able to attract attention and stimulate curiosity.Objective: The aim of this research is to analyze the effect of nutrition education through snakes and ladders games and booklets on increasing knowledge, attitudes, and practices for preventing anemia in adolescent girls.Methods: A quasi-experimental study with a pre-post group design was conducted on 34 adolescent girls subjects at SMP Ma'had Islam Semarang, which were selected by total sampling. Then it was divided into two groups by quota sampling. The first group was given nutrition education through snakes and ladders games, the second group through booklets. Knowledge, attitude, and practice data were obtained through a structured questionnaire, and evidence of practice data was obtained through interviewing for food intake with the FFQ method. Effect analysis using a paired t-test and an independent t-test.Results: There were differences in the average knowledge (p<0.001), attitudes (p<0.001), and practice (p<0.001) of anemia prevention before and after nutrition education through snakes and ladders games and booklets. However, knowledge (p = 0.179), attitude (p = 0.231), and practice (p = 0.179) of anemia prevention between the two groups have no difference. Conclusion: There is an effect of nutrition education through snakes and ladders games and booklets is equally effective in increasing knowledge, attitudes, and practices of anemia prevention in adolescent girls.Keywords: nutrition education snakes and ladders games, knowledge, attitudes, practices, anemia ABSTRAKLatar Belakang: Anemia remaja putri di Indonesia masih cukup tinggi. Salah satu alternatif efektif dalam pencegahan anemia, yaitu edukasi gizi melalui permainan ular tangga dan booklet yang mampu menarik perhatian dan menstimulus rasa keingintahuan.Tujuan: Tujuan penelitian ini adalah untuk menganalisis pengaruh edukasi gizi melalui permainan ular tangga dan booklet terhadap peningkatan pengetahuan, sikap, dan praktik pencegahan anemia pada remaja putri.Metode: Penelitian quasy experimental dengan pre-post group design dilakukan pada 34 subjek remaja putri di SMP Ma’had Islam Semarang yang dipilih secara total sampling. Lalu dibagi menjadi dua kelompok dengan quota sampling. Kelompok pertama diberikan edukasi gizi melalui permainan ular tangga, kelompok kedua melalui booklet. Data pengetahuan, sikap, dan praktik diperoleh melalui kuesioner terstruktur, serta data bukti praktik diperoleh melalui wawancara asupan makan dengan FFQ. Analisis pengaruh menggunakan uji paired t-test dan independent t-test.Hasil: Terdapat perbedaan rerata pengetahuan (p<0,001), sikap (p<0,001), dan praktik (p<0,001) pencegahan anemia sebelum dan sesudah edukasi gizi melalui permainan ular tangga dan booklet. Namun pengetahuan (p=0,179), sikap (p=0,231), dan praktik (p=0,179) antara kedua kelompok tidak terdapat perbedaan. Simpulan: Edukasi gizi melalui permainan ular tangga dan booklet sama efektifnya dalam meningkatkan pengetahuan, sikap, dan praktik pencegahan anemia pada remaja putri.  Kata Kunci: edukasi gizi ular tangga, pengetahuan, sikap, praktik, anemia

Abstract

Household Double Burden Malnutrition dapat terjadi dalam satu rumah tangga. Salah satunya dikenal dengan fenomena Stunted Children and Overweight/Obese Mothers (SCOM). Penelitian ini bertujuan untuk menganalisis perbedaan karakteristik balita dan keluarga Normal Children Overweight/Obese Mothers (NCOM), Normal Children Normal Mothers (NCNM), Stunted Children Normal Mothers (SCNM) atau Stunted Children and Overweight/Obese Mothers (SCOM. Penelitian dilakukan dengan desain kasus-kontrol. Jumlah subjek penelitian adalah 72 anak usia 6-36 bulan di kota Semarang (36 subjek balita stunting dan 36 subjek balita normal). Subjek stunting dipilih secara sampel purposif dan subjek kontrol dipilih dengan mencocokkan usia dan jenis kelamin dengan subjek stunting. Data karakteristik diperoleh melalui wawancara menggunakan kuesioner, pengukuran antropometri anak meliputi pengukuran BB dan PB (anak usia ≤2 tahun) atau TB (anak usia >2 tahun), dan pengukuran antropometri ibu meliputi BB, TB, LP, dan LiLA. Data dianalisis secara kuantitatif meliputi analisis univariat dan bivariat (one way Anova/ Kruskall-Wallis test). Terdapat perbedaan hasil pengukuran antropometri balita pada kelompok SCOM, SCNM, NCOM, dan NCNM yang meliputi  indikator  BB aktual,  LiLA, z-score BB/PB atau BB/TB, z-score BB/U, dan z-score PB/U atau TB/U (p < 0,001). Terdapat perbedaan pendidikan ayah dan ibu antara kelompok balita stunting (SCOM dan SCNM) dengan kelompok balita normal (NCOM dan NCNM) (p = 0,009 dan p = 0,036). Terdapat perbedaan pengukuran antropometri aktual (BB, IMT, dan Lingkar pinggang), dan pengukuran antropometri selama kehamilan (BB sebelum hamil dan LiLA selama hamil) pada 4 kelompok (p < 0,05). Tidak terdapat perbedaan karakteristik lain pada balita, ayah, dan ibu pada 4 kelompok. Kelompok NCNM memiliki antropometri anak dan ibu yang lebih baik dibandingkan kelompok NCOM, SCOM, dan SCNM. Pendidikan orang tua pada kelompok SCOM cenderung lebih rendah dibandingkan kelompok lainnya.

Abstract

Background: Food consumption practices in preschool children play a crucial role in shaping their dietary habits in later years. Effective nutrition literacy strategies are essential to foster healthy and nutritious food consumption among preschoolers. Aims: To identify problems, interviews were conducted with members of the kindergarten community, including teachers, parents, and students, and observations of the school environment. Methods: Community service with problem-based learning activities were conducted at At Tiin Kindergarten in Semarang City from July to September 2024. The participants in this initiative included 52 preschool children attending Class A at At Tiin Kindergarten. Participants were divided into two groups: a control group (Class A1) receiving a single storytelling session with story books and an intervention group (Class A2) receiving repeated storytelling sessions with story books. Results: The identified issues among the preschoolers included overnutrition (WHZ 17%; WAZ 7%; and BAZ 12%), undernutrition (WHZ 4%; WAZ 10%; BAZ 7%), and stunting (HAZ 4%). Following the implementation of storytelling and storybook-based interventions, children's nutritional literacy improved, especially in the intervention group (16 children), who participated in repeated storytelling sessions, compared to the control group (13 children), who only received one session. Conclusion: Repeated storytelling sessions led to greater gains in balanced nutrition knowledge and improved understanding of the MyPlate guidelines in preschool children. Suggestion: To further enhance nutritional literacy and promote balanced nutrition practices among preschool children, it is recommended that periodic activities be implemented to address and mitigate the issue of malnutrition in this age group.

Abstract

Excessive weight gain during pregnancy is a risk factor, which can be modified to prevent pregnancy and postpartum complications. Gestational weight gain (GWG) is also influenced by the regulation of nutritional intake and physical activity, especially during the COVID-19 pandemic. This study aimed to analyze the relationship between nutritional intake and physical activity in overweight pregnant women with gestational weight gain. This cross-sectional study was conducted in May and November 2022. A total of 66 overweight/obese pregnant women aged 20 – 40 years at the Public Health Center in Semarang were recruited using a consecutive sampling technique. Data were collected using interviews, questionnaires, and anthropometric measurements.  Data analysis was performed using the Pearson’s correlation, Spearman’s correlation, and linear regression. Pregnant women who were overweight or obese gained an average of 0,42 kg of weight each week, with the bulk of this gain deemed improper (68,2%). Parity (p=0,011; r=-0,309) and sufficient protein consumption (p=0,031; r=-0,266) were associated with GWG. The conclusion is that there will be less weight gain during pregnancy if the protein intake is high.

Abstract

Consuming low glycemic index (GI) foods is crucial for managing glycemic control in people with diabetes mellitus (DM). Meanwhile, taro (Colocasia esculenta L. Schott) flour, recognized for low GI and resistant starch content, along with gembus flour, rich in fiber and protein, are potential substitutes in the formulation of dried noodle designed for DM diets. This study aimed to investigate five formulations namely F0 to F4 with varying percentages of taro and gembus flour using a completely randomized design. The parameters analyzed include energy content, proximate composition (carbohydrates, protein, fat, moisture, ash), dietary fiber, resistant starch, starch digestibility (using Kjeldahl, Soxhlet, and AACC 66-50 methods), as well as cooking quality. Statistical analysis used Kruskal-Wallis, Mann-Whitney, and one-way analysis of variance (ANOVA) with post-hoc tests to assess differences. Organoleptic quality was evaluated using hedonic and Just About Right (JAR) scales, while GI and glycemic load (GL) were determined by comparing glucose response curves. The results showed that higher gembus flour content reduced energy content, carbohydrates, starch digestibility, and GL, while increasing protein, fat, ash, dietary fiber, resistant starch, and cooking loss. The optimal formulation, F4 (20% taro flour, 20% gembus flour), was favored due to the balanced nutritional profile indicated by lower levels of carbohydrates and fat with higher levels of protein and fiber, as well as consumer preference. In conclusion, substituting taro and gembus flour in dried noodle significantly impacts nutritional composition, cooking quality, organoleptic attributes, and glycemic response, making both suitable alternatives for managing DM dietary needs.

Abstract

Food neophobia, defined as the avoidance of unfamiliar or familiar foods due to fear and negative perceptions, can significantly influence children’s dietary variety and nutritional adequacy. Previous studies have highlighted inconsistent findings on its relationship with protein intake, yet limited evidence exists in Indonesia. This study aimed to examine the association between food neophobia and animal protein consumption among toddlers aged 3–5 years in Semarang City, Indonesia. An observational analytic study with a cross-sectional design was conducted from May to July 2024. Data were collected through interviews with parents/caregivers using the Child Food Neophobia Scale (CFNS) and a Semi-Quantitative Food Frequency Questionnaire (SQ-FFQ). Statistical analysis applied Chi-Square tests and logistic regression at a 95% confidence level (p < 0.05). A total of 73 toddlers participated in the study. Findings revealed a significant correlation between food neophobia and frequency of dairy product consumption (p < 0.001), with neophobic children being 13.4 times more likely to consume dairy products than food-neutral children. However, no significant associations were observed with the adequacy or frequency of seafood, poultry, or red meat consumption. These findings indicate that while food neophobia may restrict dietary variety, the preference for dairy can serve as a compensatory nutrient source, particularly for calcium and protein, supporting growth and development. In the Islamic perspective, the inclusion of milk as a wholesome and pure food aligns with Quranic teachings, reinforcing family health practices that integrate both nutritional and spiritual well-being.

Abstract

Metabolic syndrome is still a global health problem, especially in Indonesia. Oxidative stress is related to metabolic syndrome because it is triggered by hyperglycemia. Synbiotic yogurt containing the whole red dragon fruit has antioxidant and synbiotic potential. This study aimed to determine the effect of synbiotic yogurt with whole red dragon fruit on fasting blood glucose (FBG) and malondialdehyde (MDA) levels in rats with metabolic syndrome. The design of this study was true-experimental, with a pre-post test and randomized control group design. A total of 24 male Sprague Dawley rats were divided into four groups (K-, K+, P1, P2). Groups K+, P1, and P2 were fed a high-fat, high-fructose diet (HFHFD) for 2 weeks. Groups P1 and P2 were administered synbiotic yogurt intervention of 0,009 mL/gBB/day and 0,018 mL/gBB/day, respectively, for 4 weeks. GOD-PAP method for FBG analysis and TBARS method for MDA analysis.  Data were analyzed using the paired t-test and One-Way ANOVA test. The P1 and P2 groups experienced a significant decrease in FBG levels by 63,45% and 76,07%, respectively (p<0,001), and a significant decrease in MDA by 26,1% and 37,2%, respectively (p<0,001). In conclusion, the administration of synbiotic yogurt at 0,018 mL/gBB/day (200 mL/day for humans) for four weeks was effective in reducing FBG and MDA levels.

Abstract

Muscle dysmorphia (MD) has several impacts on the decline in social and health functions. This study aimed to determine the correlation between MD with eating behaviors and exercise loading among fitness center members and analyze the factors affecting it. This study used a cross-sectional design with 100 subjects chosen by a consecutive sampling method at three fitness centers in Semarang City. The subjects were all male members of an active fitness center between 17 and 45 years. The data of MD were obtained using the Drive Muscular Scale (DMS), while eating behavior data were obtained using the Eating Attitude Test-40 (EAT-40) and the training load data, including the duration and frequency of weight training data. Social influence data, self-esteem data, and perfectionism data were obtained using a questionnaire. The findings revealed that 61% of the subjects experienced MD, 80% experienced impaired eating behavior, and 80% consumed supplements. There was a correlation between the occurrence of MD with eating behavior with PR = 2.56 and consumption of supplements with PR = 2.56. The most influential factor on MD was a social influence.
