Abstract

The aims of this research was to determine the effect of the ratio of rice flour to pumpkin flour on sumping characteristics and to find the right ratio between the amount of rice flour and pumpkin flour to produce sumping with the best characteristics. The research design used was a completely randomized design with the treatment ratio between the amount of rice flour and pumpkin flour each as follows: 100%: 0%, 90%: 10%, 80%: 20%, 70%: 30%, 60%: 40% and 50%; 50% The treatment was repeated three times so obtained 18 experimental units and the data were analyzed by analysis of variance. If there is an influence on the measured variable, proceed with the Duncan test. The results showed that the ratio between the amount of rice flour and pumpkin flour significantly affected the water content, fat, ?-carotene, color, aroma, taste, texture and overall acceptance. The ratio of rice flour and pumpkin flour that produces sumping with the best characteristics is P5 (50%; 50%), with the following characteristics: 39.53% moisture content 2.57%, ash content 8,16%, protein content 8.16%, fat content 7,32%, carbohydrate content 45.29%, ?-carotene content 28.04%, and sensory properties namely: color, aroma, taste, texture, and overall acceptance are accepted by liking criteria.

Abstract

This study aims to determine the effect of soursop juice on the characteristics of edamame yogurt and to determine the optimal concentration of soursop juice to produce edamame yogurt with the best characteristics. This study used a Randomized Block Design (RBD) with the treatment of soursop fruit juice concentration consisting of 5 levels, namely 0%, 5%, 10%, 15% and 20%. Each treatment was repeated 3 times, resulted in 15 experimental units. The data were analyzed by the Analysis of Variance (ANOVA) and if the treatment significantly affected the variables, the Duncan Multiple Range Test (DMRT) was performed. The results showed that the concentration of soursop juice significantly affected total LAB, total acid, pH, antioxidant activity, viscosity, sensory hedonic test on texture and sensory scoring test on texture and taste. The edamame yogurt with 15% soursop juice had the best characteristics with the following characteristics: total LAB 1.01 x 1011 CFU/ml, total acid 0.86%, viscosity 310 cP, antioxidant activity 35.47%, pH 3.72 and the sensory properties of neutral scents, neutral appearance, a rather thick texture, a rather like taste, a slightly sour taste and a rather like overall reception. Abstract

The purpose of this research were to determine the temperature and duration of dried time on characteristics of the matcha herbal tenggulun leaves tea, as well as to determine the appropriate temperature and dried time to produce matcha herbal tenggulun leaves tea with the best characteristics. Experimental design that used on this research was Completely Randomized Design (CRD) with factorial pattern. This research was repeated 2 times so obtained 18 trial units. The parameters observed in this research were : water content, the total amount of flavonoid, fenol, and tannin, antioxidants activity based on IC50, The result of this research showed that temperature and drying time of tenggulun leaf matcha herbal tea had a significant effect on water content, the total amount of flavonoid, fenol, tannin, and antioxidants activity based on IC50 and affects of color, aroma, and overall acceptance.The best characteristic matcha herbal tenggulun leaves tea resulted from dried process at 60oC for 120 minutes with the total amount of flavonoid 0.64 mg QE/g, total amount of fenol 9.61 mg GAE/g, total amount of tannin 4.52mg TAE/g, and antioxidants activity based on IC501253.99 ppm, green color, somewhat preferred aroma, and overall acceptance liked.

Abstract

This study was conducted to determine the effect of time extraction using ultrasonic method on the antioxidant activity of tempuyung leaves ethanol extract and to find out the exact time to get tempuyung leaves ethanol extract with the highest antioxidant activity. The experimental design used in this study was a completely randomized design with time extraction as a treatment. The treatment consisting of five levels, which is 10 minutes, 20 minutes, 30 minutes, 40 minutes, 50 minutes using ultrasonic method with temperature 45oC and frequency 37 kHz. All treatments were repeated three times so that they were obtained 15 experimental units. The data obtained were analyzed of variance and if the treatment had significant effect followed by Duncan’s Multiple Ring Test. The results showed that the time extraction treatment had a very significant effect (P<0.01) on yield, total phenol, total flavonoids, total tannin, and antioxidant activity from tempuyung leaves ethanol extract. The best treatment was 30 minutes which produced highest antioxidant activity of 58,60 % with IC50 262,82 mg/L included in the weak category, yield 18,60%, total phenolic 55,05 mg GAE/g, total flavonoid 38,14 mg QE/g, total tannin 8,82 mg TAE/g.

Abstract

The aim of this research to determine the concentration of flavonoid and anthocyanin compounds in sappan wood extract (Caesalpinia sappan L.), as well as to determine the concentration of inhibitory power against the growth of Vibrio cholerae. This experimental design study uses 5 kind of concentration, which are 20%, 40%, 60%, 80%, 100%. The analysis were repeated 3 times and resulting in 15 experimental units. The data were presented in descriptive statistic with tables, drawings and discussed. The results showed that the extract of sappan wood contained flavonoid compounds of 6,02%, anthocyanin compounds of 2,43% and was able to inhibit the growth of Vibrio cholerae with optimal concentration at a concentration of 80% with an average 20,1 mm and very strong inhibition categories.

Abstract

This research aims to find out the effect of fermentation time on the characteristics of soyghurt drink which was fermented by Lactobacillus rhamnosus SKG 34 and to identify the right fermentation time to produce soyghurt drink with the best characteristics. This research uses a Completely Randomized Design (CRD) with time of fermentation as the main factor that consists of 6 levels that are 0, 5 10, 15, 20 and 25 hours. Each treatment was repeated 3 times resulting 18 experimental units. The data were analyzed by analysis of variance (ANOVA) and if the treatment has a significant effect (P<0,05), then proceed with the Duncan Multiple Range Test. The results showed that the fermentation time had a significant effect on total LAB, total acidity, pH, aroma, sweet and sour flavor, overall accaptance, but had no significant effect on total sugar and color of soyghurt drink. The 5 hours fermentation time treatment produced the best characteristics of soyghurt drink, with the following characteristics: total LAB 9.47 log CFU/ ml, total sugar 9.64%, total acid 0.45%, pH 5.17, white color, with slightly sweet and sour taste, slightly liked aroma and liked overall acceptance.

Abstract

This research was conducted to determine the effect of sugar contentration and fermentation time to the charateristics of mung bean probiotic drink with the addition of Lactobacillus rhamnosus SKG 34. The Randomized Complete Block Design (RCBD) with two factors was used in this research. First factor was the sugar concentration which consists of three levels 2.5%, 5%, 7.5%. Second factor was the fermentation time which consists of five levels 8 hours, 10 hours, 12 hours, 14 hours and 16 hours. The parameters observed in this research were sugar level, total lactic acid, pH, total lactic acid bacteria (LAB), and sensory acceptances such as colour, flavor, taste and overall acceptance. The result of this research showed that the sugar concentration had significant effect to the total sugar but had no significant effect to the total lactic acid and pH. The fermentation time had significant effect to the pH, total lactic acid and total sugar. The interaction of sugar concentration and fermentation time had no significant effect to the characteristic of pH, total lactic acid, total sugar, color, flavor, taste and overall acceptance. Mung bean probiotic drink with the best characteristic was obtained at 5% of sugar concentration and 8 hours fermentation time with criteria sugar concentration levels at 8.06 %, total lactic acid 0.27 %, pH at 5.29, and 1.6 x 108 CFU/ml total LAB with sensory results state that the colour was slightly liked, the flavor was slightly liked, the taste was preferred and slightly sweet, and overall acceptance was preferred.

Abstract

This research was conducted to determine effect of the kinds solvent and maceration time on flavonoid content and antioxidant activity of avocado leaf extract and to obtain maceration conditions that can produce flavonoid extract with the highest antioxidant activity. The experimental design used in this research was a randomize block design, which consisted of two factors. The first factor was the kinds of solvent, which consisted of 4 kinds namely aquades, acetone 90%, ethanol 90% and methanol 90%. The second factor was the time of maceration, which consisted of 4 level namely 18, 24, 30 and 36 hours. The treatment was repeated twice to obtain 32 units of the experiment. Data were analyzed with analysis of variance, followed by Duncan test. The results showed that the best treatment of avocado leaf extract is maceration by ethanol 90% for 30 hours which the highest resulted rendemen was 27,84%, total flavonoid was 64,12 mgQE/g dry weight sampel, antioxidant activity was 82,75%, and the IC50 value 417 mg/L.

Abstract

Research aims to find the effects of acetic anhydride concentration and soaking time on thephysico-chemical properties of modified cocoyam starch and to determine the optimal concentration ofacetic anhydride and a soaking time that can produced the best physico – chemical properties of modifiedcocoyam starch.This study was an experimental study designed by Randomized Block Design (RBD), with afactorial experiment, comprised of two factors there was acetic anhydride concentration (factor I)consisting three levels (1%, 2% and 3%), and soaking time (factor II) consisting three levels (95, 105,and 115 minutes. Parameters observed were substitution degree, starch content, amylose content, swellingpower, solubility and clarity of pasta.The results showed that concentration of acetic anhydride and a soaking time highly significanteffeted the physico-chemical properties of modified cocoyam starch. Acetylation modifications improvedthe characteristics of modified cocoyam starches such as degree of substitution, starch content, amylosecontent, solubility, and swelling power. The best physico chemical properties of modified cocoyam starchwas produced by 3% of acetic anhydride concentration, and soaking time for 115 minutes with a degreeof substitution of 1.0585, starch content of 91.82%, amylose content of 34.82%, solubility of 29.80%,swelling power of 21.57 %, clarity of pasta on the first day was 0.66, and clarity of pasta on eighth daywas 0.23.

Abstract

The aims this research was to determine the caffeine content of coffee powder, pH value and characteristics flavor and aroma steeping pea berry coffee and flat beans coffee type arabica and robusta. The research is an experimental research and the data were analyzed with descriptive method and variance, if significantly different to the observed variable, then continued with Duncan test. Description method used to reviewing the differences between caffeine content of coffee powder, pH value, flavor characteristics steeping pea berry coffee and flat beans coffee from arabica and robusta. The results showed that caffeine content of arabica coffee powder lower than robusta coffee powder, which 1.20 % in pea berry arabica coffee powder and 1.77 % in flat beans arabica coffee powder, whereas 2.01 % in pea berry robusta coffee powder and 1.99 % in flat beans robusta coffee powder. The pH value of the steeping coffee arabica lower than steeping coffee robusta, which pea berry Arabica coffee 5.23 and flat beans arabica coffee 5.16, whereas pea berry robusta coffee 5.69 and flat beans robusta coffee 5.61. Pea berry Arabica coffee flavor best compared with flat beans Arabica coffee, pea berry robusta coffee and flat beans robusta coffee.
