Abstract

This study was conducted to evaluate the performance level of halal slaughter in slaughterhouse category II as center of excellent. The study was performed in October 2015 to February 2016. The evaluation of halal slaughter-man competency and human resources competencies were conducted by observation form according to Indonesian Competency Standard (SKKNI) No 196/2014 and Indonesian Republic’s Regulation of Health Ministry No 13/OT.140/2010 regarding Slaughterhouse rules and Meat Cutting Plant Unit. Data obtained was analyzed descriptively. The result of Halal slaughter-man competency had met the Indonesian Competency Standard (SKKNI) and human resources competencies also were around the Regulation of Agriculture Ministry No. 13/2010.

Abstract

The demand for premium quality meat continues to grow along with changes in the lifestyle of the upper middle class community, the increasing number of tourists and expatriates from abroad. The premium meat must be imported from abroad to meet the needs of special markets such as hotels, restaurants and supermarkets. Some Indonesian cattle cannot produce meat that meets the premium quality criteria, especially tenderness. The hardness of the flesh can be overcome by aging. This study aims to determine the physical and microbiological quality of bali beef with different aging times. This study used bali cattle. The treatments were aging for 1, 21 and 42 days and three different muscle types (Longisimus dorsi, Gluteus medius and Semitendinosus). This study used a completely randomized design (CRD) with a 3 x 3 factorial pattern. If the data obtained were significantly different, it would be continued with the Least Square Means test. The results showed that the combination of aging treatment for 21 days and muscle type (Longisimus dorsi, Semitendinosus) showed the best and most efficient steak tenderness results. Abstract

ABSTRACT. Kebutuhan domestik daging sapi dan kerbau sebagian besar disuplai dari ternak lokal. Tujuan penelitian ini adalah karakterisasi produktivitas sapi Bali, sapi PO, dan kerbau serta nilai ternak di pasar tradisional berdasarkan kondisi ternak hidup, karkas dan non karkas serta komponen karkas dan non karkas. Penelitian ini menggunakan 17 ekor sapi lokal dan kerbau jantan, meliputi sapi Bali 6 ekor, sapi PO 6 ekor, dan kerbau 5 ekor dengan umur I2-I4. Data dianalisis menggunakan analysis of covariance dengan prosedur general linear model dan least square mean. Peubah yang diamati meliputi bobot potong, bobot dan persentase karkas, bobot komponen karkas, bobot dan persentase non karkas, bobot komponen non karkas, serta nilai ternak di pasar tradisional di daerah Bogor. Hasil penelitian menunjukkan ternak lokal dengan produktivitas karkas dan daging tertinggi yaitu sapi Bali, diikuti sapi PO dan kerbau. Persentase karkas sapi Bali 50,39%, sapi PO 49,96%, dan kerbau 46,41%. Sapi Bali memiliki persentase total daging tertinggi yaitu 72,23%, diikuti sapi PO 69,54%, dan kerbau 67,61%. Namun, kerbau memiliki hasil non karkas tertinggi, diikuti sapi PO dan sapi Bali. Berdasarkan bobot karkas dan komponen karkas, sapi Bali memiliki nilai ternak tertinggi, sedangkan sapi PO memiliki nilai ternak yang tinggi pada non karkas. Sapi Bali dan sapi PO memiliki nilai ternak lebih tinggi dari kerbau. Sapi dan kerbau akan mempunyai nilai tambah tertinggi pada saat diolah menjadi komponen karkas dan komponen non karkas.(Productivity and economic value of local cattle and buffalo in traditional markets)ABSTRAK. Domestic beef and buffalo supply mainly comes from local livestock. The purpose of this study was to compare the productivity of Bali cattle, PO cattle, and buffaloes, and their economic values for traditional markets based on live weight, carcass weight, and carcass and non-carcass component weights. This study used 17 heads of local bull and male buffaloes, comprising 6 Bali cattle, 6 PO cattle and 5 local buffaloes aged I2-I4. Data were analyzed using Analysis of Covariance, with the general linear model and least square mean procedures. Parameters observed included slaughter weight, weight and percentages of carcass, carcass components, non-carcass, non-carcass components, and their prices according to Bogor traditional market. The results showed that the local cattle with the highest productivity and meat yield were Bali cattle, followed by PO cattle and buffalo. The carcass percentage of Bali cattle were 50.39%, PO cattle were 49.96%, and buffalo were 46.41%. Bali cattle produced the highest meat yield 72.23%, followed by PO cattle 69.54%, and buffalo 67.61%. However, buffalo had the highest non-carcass productivity, followed by PO and Bali cattle. Based on carcass and its component weights, Bali cattle had the highest economic value, whereas PO cattle had the highest value on non-carcass weights. Bali cattle and PO cattle had higher economic value than buffalo. The ruminant animal had its highest added value when processed into carcass and non-carcass components.

Abstract

ABSTRAK. Penelitian ini dilakukan untuk mengetahui kemampuan pakan konsentrat yang mengandung tepung daun murbei terhadap performa sapi peranakan ongole. Percobaan ini menggunakan rancangan acak kelompok, dengan 4 perlakuan dan 4kelompok. Perlakuan terdiri dari P1 (Pakan hijauan berupa rumput lapang dan pakan konsentrat berupa murbei dan konsentrat komplit), P2 (Pakan hijauan berupa rumput lapang dan pakan konsentrat berupa murbei dan konsentrat jagung), P3 Pakan hijauan berupa rumput lapang dan pakan konsentrat berupa murbei dan konsentrat dedak padi, P4 (Pakan hijauan berupa rumput lapang dan pakan konsentrat berupa murbei dan konsentrat onggok). Parameter yang diukur adalah konsumsi pakan, pertambahan bobot badan harian, efisiensi pakan, Income Over Feed Cost (IOFC), dan R-C rasio. Hasil penelitian menunjukkan bahwa tepung daun murbei pada konsentrat yang berbeda tidak memberikan pengaruh yang nyata (P 0,05) terhadap pertambahan bobot badan harian, konsumsi pakan, efisiensi pakan, Income Over Feed Cost (IOFC), dan R-C rasio. Kesimpulan penelitian ini bahwa konsentrat yang mengandung tepung daun murbei dapat dikombinasikan dengan konsentrat tunggal seperti jagung, onggok atau konsentrat komplit.(Performance of local cattle (Peranakan Ongole-PO) feed concentrates containing mulberry leave meal)ABSTRACT. The research has been conducted to study the ability of mulberry leaves that mixed in concentrates feed on the performance of Local cattle. A randomized block design, with 4 treatments and 4 blocks applied. The treatments consisted of 4 different mix of feed which were P1 (native grass and concentrate feed in the form of mulberry leaves and concentrate complete), P2 (native grass and concentrate feed in the form of mulberry leaves meal and corn concentrate), P3 (native grass and concentrate feed in the form of mulberry leaves meal and rice bran concentrate), P4 (native grass and concentrate feed in the form of mulberry leaves meal and tapioca waste concentrate). Parameters measured were feed consumption, daily body weight gain, feed efficiency, Income Over Feed Cost (IOFC), revenue cost ratio. The results showed that the mulberry leaves meal in different concentrate not significantly (P0,05) affect daily body weight gain, feed consumption, feed efficiency and Income Over Feed Cost (IOFC), and revenue cost Ratio. It is concluded that based on the nutrient content, mulberry leaves meal concentrate can be combined with a single ingredient of concentrate feed such as corn, cassava waste meal or complete concentrate.

Abstract

The presentation of this superior product, green bean jelly, aims to provide an alternative to processed green beans for Posyandu mothers. By looking at the ingredients in it, it is hoped that it can help the process of improving nutrition for children, pregnant women, and mothers after giving birth. Apart from that, the ingredients in green beans can also help prevent stunting. Seeing the relatively high stunting rate in Carangrejo Village was the reason for choosing this superior product, green bean Jelly.

Abstract

Stakeholder analysis is required to determine the roles of each stakeholder in satisfying the meat supply needs of Samarinda City, East Kalimantan Province. The purpose of this study was to assess and categorize the influence and interests of stakeholders in the beef cattle supply chain. Primary data was collected via a survey method, involving questionnaires and interviews with 49 respondents representing farmers, slaughterhouses, government officials, traders, and consumers. A stakeholder analysis was carried out utilizing an influence−interest matrix. The results indicated two main groups: Farmers and traders are major stakeholders in the meat supply chain, with enormous power and interest. In contrast, the mob, which includes customers, the government, and slaughterhouses, has significantly less power and interest. Farmers, as primary producers, and traders, as mediators between customers, play critical roles in guaranteeing meat availability and quality. While the government has regulatory power, its role as a facilitator must be expanded to encourage stakeholder participation. This study provides collaborative solutions for aligning stakeholders' views and objectives with the goal of enhancing beef availability and quality in Samarinda City.
