Abstract

Nira tebu dan minyak sawit merah (MSM) merupakan bahan alami yang memiliki kadar gizi tinggi dan senyawa fitokimia yang menguntungkan. Pada nira tebu mengandung octacosanol sedangkan pada MSM mengandung karotenoid. Gula merah yang dibuat dari nira tebu memiliki keuntungan yang lebih dibandingkan dengan bahan lain terlebih jika ditambahkan MSM yang dapat digunakan sebagai sumber provitamin A. Penelitian ini bertujuan untuk mengetahui pengaruh penggunaan MSM pada karakteristik kimia terutama kandungan provitamin A gula merah tebu serta mengetahui konsentrasi terbaik MSM yang ditambahkan pada gula merah tebu. Pada penelitian ini menggunakan 5 perlakuan dengan tingkatan penambahan MSM yang berbeda (0 ml, 2 ml, 4 ml, 6 ml, dan 8 ml) dan 3 ulangan. Data yang diperoleh dilakukan analisis statistika menggunakan Analysis of Varian (ANOVA) dan dilanjutkan dengan uji Duncan’s New Multiple Range Test (DNMRT) pada taraf nyata 5%. Hasil penelitian menunjukkan bahwa konsentrasi MSM yang berbeda tidak berpengaruh nyata terhadap kadar air, total gula, dan pH tetapi berpengaruh nyata terhadap total karoten dan kadar abu. Berdasarkan analisis karakteristik kimia dan total karotenoid perlakuan E (MSM 8 ml) merupakan produk terbaik dengan total karoten sebesar 3691,8 mg/100g dan total gula sebesar 53,33%.Kata kunci : gula merah, karoten, minyak sawit merah, nira tebu

Abstract

Pemasaran produk saat ini telah banyak dilakukan melalui media internet atau yang dikenal dengan nama digital marketing. Digital Marketing dijadikan sebagai salah satu strategi promosi dan penjualan karena sejumlah manfaat yang didapatkan seperti meningkatkan lapangan kerja dan kemudahan ruang dan waktu yang tidak terbatas karena internet sebagai wadah transaksi jual beli. Namun manfaat digital marketing ini tidak digunakan dengan baik oleh UMKM Uberrr Kota Solok. Hal ini terjadi karena banyak faktor seperti latar belakang pendidikan para pelaku usaha yang masih rendah, faktor umur dimana kebanyakan para pelaku usaha UMKM di Kota Solok merupakan orang yang sudah tidak muda lagi dan kurangnya pengetahuan seputar teknologi dan internet. Tujuan pengabdian ini yaitu menerapkan digital marketing pada UMKM Uberrr sehingga dapat meningkatkan penjualan  dan memperluas pemasaran. Metode yang diganakan dalam penelitian ini adalah metode pengumpulan data penggunaan digital marketing pada saat ini dan menerapkan pelatihan digital marketing pada UMKM Uberrr. Tim Matching Fund memberikan pelatihan digital marketing untuk para pelaku usaha UMKM Kota Solok dengan menggunakan aplikasi sosial media, aplikasi marketplace, dan platform berbagi.link. Hasil dari pemberian pelatihan ini, UMKM Uberrr telah memiliki beberapa media pemasaran secara online yaitu whatsapp business, instagram business, shopee, pemantapan penggunaan website E-UMKM manjua dan penggunaan platform berbagi.link.

Abstract

The Aur Serumpun farmer group is one of the growing farmer groups with their corn farming business. This farmer group is in Simpang Alahan Mati District, Kab. Pasaman, West Sumatra Province. So far, farmers only sell corn that has been dried directly. The processing of corn is a basic need for members of farmer groups in order to have product diversification which can ultimately increase the economy of these farmers. In the community service activities that were carried out previously (in 2019), processed products from corn were introduced, namely tortilla chips. In the 2020-2022 activities, business development will be carried out from Aur Serumpun farmer groups in accordance with the policy directions set by the members of the farmer groups themselves. Therefore, a discussion group forum was held and the signing of a cooperation agreement regarding the study of the prospects for producing tortilla chips which would be carried out by the aur allied farmer groups. The development of food product production of trotilla chips is an independent initiative from farmer groups that can collaborate with academics in the Department of Agricultural Product Technology, Andalas University. It was agreed from the discussion group forum that the head of the farmer group would conduct a study and socialize to other members of the farmer group regarding alternative product diversification of the commonly produced corn commodity. Further evaluation of the prospects for the implementation of the tortilla chips production process will be carried out next year.

Abstract

Pangan merupakan suatu kebutuhan pokok manusia yang harus dipenuhi sebagai sumber energi agar mampu melakukan aktivitas sehari-hari. Kebutuhan manusia akan pangan tidak terbatas hanya pada karbohidrat, protein, lemak dan mineral saja, tetapi baik kualitas maupun mutu pangan juga harus dapat dipenuhi karena status kesehatan manusia dipengaruhi oleh makanan yang dikonsumsinya. GMP merupakan prosedur produksi yang dilaksanakan dengan tujuan untuk memenuhi tuntutan konsumen dalam mendapatkan produk dengan keamanan dan mutu yang terstandar. Produk akhir yang dihasilkan dari UMKM ini berupa produk makanan ringan ekstrudat ikan bilih dengan bahan dasar tepung beras cisokan, pati jagung, dan tepung ikan bilih. Secara umum produk akhir tersebut telah memenuhi kriteria persyaratan mutu dan ketetapan manajemen. Dengan diberikannya pelatihan dan praktek proses produksi makanan ringan ekstrudat terstandar di lokasi mitra, mitra menjadi lebih menguasai dan paham sehingga mitra dapat memproduksi makanan ringan ekstrudat. Melalui kerjasama tim matching fund dengan UMKM UBerrr ini juga dapat menghasilkan produk terstandar yang dilengkapi dengan dokumen mutu sesuai SNI yang berlaku serta penerapannya dalam proses produksi. Kata kunci: ekstrudat, GMP, mutu, pangan, UMKM, terstandar ABSTRACT Food is a basic human need that must be met as a source of energy to be able to carry out daily activities. Human needs for food are not limited to carbohydrates, proteins, fats, and minerals, but both the quality and quality of food must also be met because human health status is affected by the food they consume. GMP is a production procedure that is carried out to fulfil consumer demands in obtaining products with standardized safety and quality. The final product produced from this MSME is in the form of a bilih fish extrudate snack product with the basic ingredients of cisokan rice flour, corn starch, and bilih fish flour. In general, the final product has met the criteria for quality requirements and management's stipulations. By providing training and practice in the production process of standardized extruded snacks at partner locations, partners become more knowledgeable and knowledgeable so that partners can produce extruded snacks. Through the collaboration of the matching fund team with UMKM, UBerrr can also produce standardized products equipped with quality documents according to the applicable SNI and its application in the production process. Abstract

Suhu penyimpanan ASI dapat mempengaruhi total koloni Bakteri Asam Laktat, total koloni bakteri aerob dan keasaman di dalam ASI. Jenis penelitian ini merupakan penelitian observasional dengan desain cross sectional comparatif. Populasi penelitian ini adalah ASI yang didapatkan dari ibu-ibu yang menitipkan anaknya di TPA kelurahan Koto Tangah Padang. Sampel pada penelitian ini adalah semua populasi yang memenuhi kriteria inklusi dan eksklusif. Hasil penelitian ini menyimpulkan bahwa Suhu penyimpanan ASI mempengaruhi total koloni Bakteri Asam Laktat (BAL), tetapi tidak ada pengaruh suhu penyimpanan ASI terhadap total koloni bakteri aerob dan keasaman di dalam ASI.

Abstract

An unbalanced diet can have a negative impact on people's nutritional status. Therefore, nutrition training is considered an effective intervention strategy to improve diet and nutritional status. This research aims to evaluate the effect of nutrition training on people's eating patterns and nutritional status through an intervention study. This research method uses an intervention approach with a pre-test and post-test design involving people randomly selected from a certain area. Nutrition training is held with a focus on understanding balanced nutrition and implementing healthy eating patterns. Dietary pattern data was collected through questionnaires, and nutritional status analysis was carried out by measuring nutritional and anthropometric parameters before and after the intervention. The research results showed a significant increase in people's understanding of balanced nutrition and positive changes in their eating patterns after attending nutrition training. Apart from that, there have been substantial improvements in people's nutritional status, such as increasing body mass index (BMI) and optimal nutritional levels. This research concludes that nutrition training is effective in improving healthy eating patterns and the nutritional status of the community. This shows the importance of a focused intervention approach to increase nutritional awareness and behaviour in an effort to improve overall community health. This research makes an important contribution to the development of nutritional intervention strategies that can be widely applied to enhance community welfare. Therefore, it is recommended to pursue further research with a focus on the long-term effects of nutrition training and increasing accessibility to nutrition resources.

Abstract

The elderly patient population is vulnerable to various chronic diseases and has limited levels of access to health information. Effective health promotion programs can improve the quality of life of this group and prevent disease. A health promotion program is a series of activities aimed at increasing awareness, knowledge and healthy behaviour in a population or community. This study aims to evaluate the effectiveness of a health promotion program implemented with elderly patients in clinical practice in improving their knowledge, healthy living behaviour and health outcomes. This research method was carried out using a quasi-experimental design using a sample of elderly patients who participated in a six-month health promotion program at a community health clinic. Data collection was carried out through pre- and post-intervention questionnaires, and data analysis was carried out using descriptive statistics and hypothesis testing. The results of this study show an increase in patient knowledge about healthy eating patterns, physical activity, and stress management after participating in the health promotion program. In addition, there have been positive changes in healthy lifestyle behaviour and a reduction in the number of visits to health facilities due to diseases related to unhealthy lifestyles. The conclusion of this research is that health promotion programs for elderly patients in clinical practice are effective in increasing knowledge, improving healthy living behaviour, and reducing the risk of chronic disease. The recommendations of this study are to expand the scope of health promotion programs in various clinical settings and continue to encourage the participation of elderly patients to achieve optimal health outcomes.

Abstract

This research aims to determine the formulation and characteristics of the best instant “teh talua” with the addition of red ginger and areca nut. In this study, 5 treatments were used, namely without addition (control), with the addition of red ginger juice (5% and 10%), and with the addition of areca nut extract (5% and 10%). The data obtained were subjected to statistical analysis using Analysis of Variant (ANOVA) and continued with Duncan's New Multiple Range Test (DNMRT) at a significance level of 5%. The results showed that each treatment had a significant effect on water content, ash content, protein content, fat content, carbohydrate content, water activity (Aw), and antioxidant activity. The best treatment is treatment B (with the addition of red ginger juice 5%) with a water content of 17.90%, ash content of 1.58%, protein content of 3.09%, fat content of 12.39%, carbohydrate content of 64.98%, water activity (Aw) 0.523%, and antioxidant activity 54.98%.

Abstract

This study aims to determine the antioxidant activity and physicochemical properties of dried noodles mixed with wheat flour and red bean flour with the addition of butterfly pea flower (Clitoria Ternatea L.) extract. The design used in this study used a completely randomized design (CRD) with 5 treatments and 3 replications. Data analysis using ANOVA and further test with Duncan's New Multiple Range Test (DNMRT) analysis at 5% level. The treatments used in this study were treatment A (20 ml water: 0 ml butterfly pea extract), B (15 ml water: 5 ml butterfly pea extract), C (10 ml water: 10 ml butterfly pea extract), D (water 5 ml: 15 ml butterfly pea extract), and E (0 ml of water: 20 ml of butterfly pea extract). The results of this study significantly affected the 5% level on the water content test, ash content, fat test, protein test, carbohydrates, antioxidant activity, and physical analysis of color. Based on the physical and chemical analysis of dried noodle products, the best treatment was in treatment C (addition of 10g telang flower extract) with a color test value of 232.98°Hue, an elasticity test of 26.50%, a moisture content of 6,36%, a ash 1.49%, fat content 2.14%, protein content 19.36%, carbohydrate content 70.63%, and antioxidant activity 33.32%.

Abstract

Purpose: This work aimed to analyze the profiles of amino acids in the ficin enzyme isolated from Ficus aurata (Miq.), and to determine the efficiency of these amino acid concentrations under two types of drying – solar drying and freeze drying. Methodology: The enzyme ficin was obtained from fig tree, and the presence of amino acids was determined by UPL chromatography. The applied methods of drying were solar and freeze. However, the primary objectives were aimed at investigating the influence of these treatments on the level of amino acids present in all the samples. Results: The findings indicated that freeze drying techniques retained more amino acids in figs than was observed in the case of solar drying. In particular, the amount of L-glutamic acid in freeze drying was 2.39 mg/g, while that of solar drying was 1.43 mg/g. Similar results were observed in L-lysine and L-aspartic acid, which were relatively higher in freeze drying than solar drying, with concentrations of 2.43 mg/g and 2.55 mg/g, respectively, as opposed to 0.99 mg/g and 1.76 mg/g in solar drying. Besides, freeze drying showed better L-serine, L-phenylalanine, and L-histidine preservation. Findings: It was observed that freeze drying gave the best opportunity to reduce the loss of amino acid of the ficin enzyme. The drying method, in particular, resulted in a concentration of some important amino acids like L-glutamic acid, L-lysine, L-aspartic acid, L-serine and L-phenylalanine, and L-histidine as compared to solar drying. Novelty: This study focused on different types of solar energy and freeze energy economic systems in enzymatic activities in the ficin enzyme extracted from Ficus aurata (Miq.). The novel contribution of this research lies in its objective, which is to show how the drying methods used affected the retention of the most influential and critical amino acids in the enzymatic processes. Originality: The novel aspect of the study was the attachment of ultra vortices to different drying techniques, such as solar drying and freeze drying in select ficin enzymes from Ficus aurata. It opens up a new perspective toward the development of drying parameters for the enhancement of important enzymatic characters from this particular variety. Conclusion: This research considers the changes in amino acid content during the drying of ficin enzyme from Ficus aurata through different drying methods. It is shown that freeze drying enhances the retention of critical amino acids and is thus one of the most efficient methods for the enzymatic processing of this plant species.
