Abstract

This study aimed to optimize learning effectiveness in the Food and Nutrition Data Analysis course through the development of literacy-oriented teaching materials with a Quantum Teaching approach. The research employed a Research and Development (R&D) method using the 4D model: Define, Design, Develop, and Disseminate. The Define stage involved a needs analysis of 60 nutrition students, revealing that 88.5% required interactive teaching materials with step-by-step practical guidance. In the Develop stage, the teaching materials were validated by content and media experts, yielding scores of 91.25% and 89.50%, respectively, which fall into the “very feasible” category. The Disseminate stage involved limited implementation in one class, showing an increase in average student engagement scores from 73.40 to 88.20 and comprehension test scores from 71.85 to 87.45. These findings demonstrate that the developed materials effectively enhance student participation and mastery of data analysis concepts. This innovation addresses the gap in practical-oriented learning resources for nutrition students, aligning with curriculum demands and 21st-century learning skills. The developed materials are expected to improve competence in analyzing food and nutrition data, thereby supporting academic success and professional readiness.

Abstract

Background: Football is a sport that combines aerobic and anaerobic endurance during training and matches. Physical fitness can support blood circulation function and heart work and increase muscle strength, speed, agility, and explosiveness. Muscle fatigue can be affected by various internal and external factors, including physiological, nutritional, exercise, psychological, environmental, and health factors. One of the nutritional factors that can affect muscle fatigue is micronutrients such as potassium. Potassium and vitamin C deficiency can lead to muscle weakness and fatigue. Objective: The purpose of this study is to determine the difference in the effect of giving isotonic drinks and sweet orange juice on the fatigue level of North Sumatra PPLP football athletes. Method: The research design is true experimental, with the post-test only with a control group design. The subjects consisted of 24 athletes who were selected using systematic random sampling. The level of fatigue is known through the RAST test. Bivariate analysis uses an independent sample t-test to determine the difference in influence between each variable. Results: As a result of this study, there was a significant difference in fatigue levels in the two groups. The average fatigue level value in the treatment group was 4.61±1.42, while the control group was 6.62±2.33 or the Sig. p<0.05 value was p = 0.01. Conclusion: This showed a significant difference in the mean level of athlete fatigue between the treatment group and the control group.

Abstract

Plant-based yogurt made from coconut milk has potential as an alternative to dairy yogurt for individuals with lactose intolerance while promoting the utilization of local food resources. This study aimed to evaluate the physicochemical, microbiological, and antioxidant characteristics of coconut milk yogurt supplemented with nipa palm fruit (Nypa fruticans) puree. An experimental study was conducted using a Completely Randomized Design with three puree concentrations (20%, 25%, and 30%). Parameters analyzed included fat content, non-fat solids, protein, ash content, pH, titratable acidity, viscosity, Total Plate Count (TPC), and antioxidant activity using the DPPH method. Data were analyzed using one-way ANOVA followed by Duncan’s New Multiple Range Test at a 5% significance level. The addition of nipa palm fruit puree did not significantly affect fat, non-fat solids, protein, ash, pH, or acidity, but significantly influenced viscosity, TPC, and antioxidant activity. Increasing puree concentration tended to enhance viscosity and antioxidant activity; however, TPC values did not meet the national yogurt standard. Coconut milk yogurt enriched with nipa palm fruit puree shows potential as a functional food product based on local ingredients.

Abstract

Background: Stunting constitutes a protracted alimentary dysregulation precipitating irrevocable diminutions in corporeal architecture, cognitive faculty, and prospective productivity. Numerous stratagems subsist to forestall stunting, among which the participatory stewardship of Posyandu cadres and mothers of toddlers is particularly consequential, especially through the augmentation of epistemic comprehension and dispositional orientation via pedagogic instruments, namely E-Booklets. Objectives: This study evaluates the effectiveness of an E-Booklet in optimizing the knowledge and attitudes of cadres and mothers of toddlers within the Kampung Baru Health Center working area. Methods: A quasi-experimental investigation employing a pre-test and post-test schema was undertaken in Medan from May to July 2025. By means of purposive sampling, 60 participants (30 cadres and 30 mothers) were enlisted. Empirical datasets were elicited through standardized questionnaires. The interventional procedure comprised the circulation of an educational E-Booklet via WhatsApp, subsequently accompanied by virtual deliberative sessions spanning a biweekly interval. The compiled data were examined utilizing paired t-tests at a significance criterion of 0.05. Results: The results showed that the use of E-Booklets significantly increased the knowledge of cadres and mothers of toddlers regarding stunting, but did not significantly affect attitudes. The knowledge score also showed a prominent spike (n=30); the results rose from 83.58±9.70 to 89.91±9.77, summarizing the mean slightly at 6.33±6.97 (p-value<0.001). In mothers of toddlers (n=30), there was no such increase in the metric, which went from 74.58 to 79.41, an average rise of 4.8±7.30 (p-value=0.001). Conclusions: The utilization of E-Booklets substantially augments knowledge pertaining to stunting, yet does not exert a statistically significant influence upon the attitudes of cadres or mothers.

Abstract

Background: University students, as late adolescents transitioning into young adulthood, require adequate nutritional intake to achieve optimal nutritional status. Nutritional knowledge and attitudes play an essential role in shaping healthy eating behaviors; however, previous studies indicate that the majority of students (>70%) still have a limited understanding of daily nutritional requirements. The use of digital-based educational media, such as e-booklets, is considered a promising strategy due to its accessibility, flexibility, and interactive features. Objectives: To analyze the effect of e-booklet based nutrition education on students’ knowledge and attitudes regarding nutritional requirements. Methods: A quasi experimental study with a one-group pre test and post test design was conducted among 60 active undergraduate students from the Fashion Design Study Program at Universitas Negeri Medan, selected using stratified random sampling. Data were collected using pre test and post test questionnaires and analyzed using the paired sample t test and the Wilcoxon test. Results: The results showed an increase in mean knowledge scores by 20.58 points and attitude scores by 7.91 points after the intervention, with a statistically significant effect (p-value = 0.000). These findings indicate that e-booklet based nutrition education significantly improved students’ knowledge and attitudes toward nutritional requirements. Conclusions: E-booklet educational media is effective in enhancing students’ knowledge and attitudes toward nutrition. This approach can be recommended as an innovative alternative in nutrition education and as a practical health promotion strategy for adolescents and young adults. E-booklets can be integrated into school curricula as a more engaging and interactive method of nutrition instruction.
