Abstract

Stunting remains a prevalent health issue among children under two years old in Indonesia. The nutritional status of newborns, indicated by birth weight and length, is crucial for neonatal development. Malnutrition in neonates can lead to increased mortality rates, neurological and cognitive impairments, and stunting. This study aims to identify the risk factors associated with stunting among children aged 9-23 months in Indonesia, utilizing data from the 2018 Basic Health Research. The study design was cross-sectional. This study examined a sample of 7,396 children within the specified age group. The study reveals a stunting prevalence of 30.4% among children aged 9-23 months. Logistic regression analysis indicates that low birth weight (LBW) (AOR 1.854; 95% CI 1.50-2.30), birth length (AOR 1.550; 95% CI 1.37-1.74), and male gender (AOR 1.272; 95% CI 1.15-1.41) are significant risk factors associated with stunting in this age group. Therefore, addressing these factors is crucial for combating stunting among children under two years old in Indonesia.

Abstract

One approach taken to reduce the prevalence of stunting is by providing additional recovery food to malnourished toddlers. The Rumah Pelita supplementary food program has been running in Kedung Banteng District since 2020. In the implementation of the Rumah Pelita Program, there are still existing cases of stunting and the nutritional status of targets and there has never been an evaluation of the Rumah Pelita program. The aim of the research is to determine the evaluation of the supplementary feeding program made from local food in Kedungbanteng District, Tegal Regency in terms of input, process and output aspects. This research method is qualitative research which is descriptive and evaluative in nature. The research period is January-March 2023. The research was conducted in 5 villages in the Kedungbanteng Community Health Center area. The main informants were 1 nutrition officer and 5 village midwives, and triangulation informants were 5 Rumah Pelita cadres and 5 mothers of toddlers. Data collection used in-depth interviews, while the source triangulation method was used to validate the data. Research data analysis is data reduction, data presentation and drawing conclusions. The results of the research show that the number of cadres is still insufficient, and there are still villages that have not budgeted for equipment rental and transportation for cadres, there are deficiencies in reporting and recording and there are still toddlers who experience stunting. There needs to be integration of central and regional government policies regarding handling stunting in toddlers, so that there is a division of the budget for handling stunting. and it is recommended that health workers provide health education about stunting prevention and routinely monitor the development of toddlers.  Keyword: Stunting, Policy, Nutrition, Provision of supplementary food, Toddler

Abstract

Introduction: Iron deficiency anemia is one of the major health issues that significantly impacts pregnant women, both in developing and developed countries. Interventions through health education, particularly digital-based education, are increasingly being used to improve compliance with iron supplementation. However, little is known about how global research trends on this topic have evolved over time. This study aims to analyze global research trends in scientific literature related to digital health education and mHealth interventions for iron supplementation and anemia prevention in pregnant women. To achieve this, a bibliometric analysis was conducted to map publication growth, collaboration networks, and emerging themes in the field. Methods: Data retrieval was conducted through the PubMed database using relevant keywords “Iron” AND “Anemia” AND ‘Pregnancy’ AND (“Health education” OR “Mobile health” OR “Digital health”). Articles published between 2010 and 2025 were selected. Bibliometric analysis was conducted using the VOSviewer tool to map keywords, author collaborations, and publication trends. Results: A total of 78 relevant publications were identified, with a significant increase in the past decade. Ethiopia, the USA, China, Egypt, and Indonesia were among the countries with the highest contributions. Dominant themes included mHealth and app-based approaches. Network mapping revealed major thematic clusters in technology-based interventions, compliance behavior, and pregnancy outcomes. Conclusion: Research trends indicate growing interest in the use of digital platforms to educate pregnant women about iron supplementation and anemia prevention. This reflects a paradigm shift toward more personalized and technology-based interventions. Further studies are needed to evaluate the effectiveness and sustainability of various digital intervention models.

Abstract

Abstract

Eggs are a rich source of high-quality protein and essential nutrients, but their limited shelf life and processing-induced nutrient loss pose challenges. Addressing these limitations through fermentation could enhance their nutritional and functional properties. This study aimed to address these limitations by exploring fermentation as a strategy to enhance the nutritional and functional properties of egg-based products. Specifically, the research investigated the effects of Saccharomyces cerevisiae fermentation on the nutritional value, protein digestibility, and shelf life of egg flour, to achieve this, liquid eggs were inoculated with S. cerevisiae and subjected to fermentation at 30°C for 48 hours. The fermented product was then dried at 50°C to obtain egg flour. Nutritional improvements were assessed through in vitro protein digestibility tests, while shelf life was evaluated using the Accelerated Shelf Life Testing (ASLT) method, applying the Arrhenius equation under different storage temperatures. Flour Liquid eggs were inoculated with fermipan and fermented at 30°C for 48 hours, followed by drying at 50°C to produce egg flour. In vitro protein digestibility was analyzed, and the Accelerated Shelf Life Testing (ASLT) method with the Arrhenius equation was used to estimate shelf life under varying storage conditions. Fermentation improved protein digestibility significantly, increasing from 42.60% in unfermented samples to 77.48%. Shelf life analysis showed that fermented egg flour had a stability of 30 days at 30°C, 24 days at 40°C, and 19 days at 50°C.
