Abstract

Generally, the type of orange used in marmalade production is Sunkist oranges.  In this study, Madu Susu Oranges (Citrus reticulata), a local orange variety typically consumed fresh and rarely processed into products, were used as the raw material for making marmalade. Additionally, sucrose is a key ingredient that can influence the balance between pectin and water in marmalade, affecting its characteristics and making it a valuable topic for further research. The main objective of this research was to determine the best sucrose concentration in the Madu Susu Orange marmalade formulation based on its physicochemical and organoleptic characteristics. The research design used was a Randomized Block Design, one factor of the sucrose concentration level (75%, 80%, 85%, 90%, and 95%) in 5 repetitions. The data were analyzed using ANOVA and further tested with the HSD test at a 5% significance level. The determination of the best treatment was conducted using the effectiveness index method. The results showed that the best treatment was at a 95% sucrose concentration with a 0.77 treatment value (TTV). The physicochemical and sensory characteristics of the Madu Susu Orange marmalade at 95% sucrose concentration were: total acidity of 0.52%, pH 5.82, total soluble solids of 68.00%, moisture content of 20.87%, and color values L* 29.94, a* 9.87, b* 49.90. Sensory test results for the best treatment were color 3.80 (liked), texture 3.67 (liked), and taste 4.17 (very liked).

Abstract

Pendahuluan: Jumlah anak stunting di Desa Paspan, Banyuwangi, masih mengalami peningkatan, sehingga diperlukan optimalisasi upaya pencegahan untuk menghindari dampak negatif terhadap kehidupan anak. Pengetahuan dan persepsi ibu mengenai stunting merupakan faktor penting dalam upaya pencegahan kondisi ini. Tujuan penelitian mengkaji hubungan antara pengetahuan ibu tentang stunting dengan persepsi keluarga terhadap stunting pada ibu yang memiliki anak dengan stunting di Desa Paspan, Banyuwangi. Metode: Penelitian kuantitatif cross-sectional dilakukan di Desa Paspan, Banyuwangi, pada bulan Desember 2022. Kriteria inklusi dan eksklusi digunakan dan didapatkan 26 responden dari 32 populasi ibu anak dengan stunting. Data dikumpulkan melalui kuesioner yang terdiri atas sepuluh pertanyaan tentang pengetahuan mengenai stunting dan sebelas pertanyaan tentang persepsi keluarga mengenai stunting. Uji korelasi gamma, dengan tingkat signifikansi 0,05, digunakan untuk mengkaji hubungan antara dua variabel.  Hasil: Mayoritas responden memiliki tingkat pengetahuan yang baik mengenai stunting (96%), sementara 84,6% memiliki persepsi yang cukup terhadap stunting. Hasil analisis uji korelasi gamma menunjukkan bahwa tidak terdapat hubungan yang signifikan antara pengetahuan ibu tentang stunting dengan persepsi keluarga terhadap stunting (p = 0,340; r = 1,000). Kesimpulan: Pengetahuan ibu mengenai stunting tidak selalu berkorelasi dengan persepsi keluarga terhadap stunting. Oleh karena itu, upaya pencegahan stunting memerlukan pendekatan holistik yang mempertimbangkan faktor sosial, budaya, dan lingkungan guna meningkatkan pemahaman serta mendorong perubahan perilaku masyarakat.

Abstract

Stunting is a significant nutritional issue that hinders children's ability to reach their full growth potential. In Indonesia, it remains a national priority, with Muncar District in Banyuwangi Regency having the highest prevalence of stunting, a situation worsened by the COVID-19 pandemic. The primary contributing factors include a widespread lack of awareness of proper nutrition and a misalignment between community needs and the intervention strategies implemented by the Banyuwangi Regency government. Additionally, the Banyuwangi Regency is one of Indonesia's largest sources of migrant workers, exacerbating stunting vulnerabilities among left-behind children due to parental absence and limited knowledge of nutrition and parenting. To address this gap, the initiative aimed to enhance migrant parents' awareness and understanding of proper nutritional practices, thereby supporting their children's growth and development. This community service program was conducted in collaboration with the Banyuwangi Regency Manpower, Transmigration and Industry Service, Banyuwangi College of Health Sciences, and Muncar District Government. It comprised three core sessions: education on Clean and Healthy Lifestyle Behavior (CHLB); Nutritious, Diverse, Balanced, and Safe (B2SA) food; and a workshop on utilizing local ingredients to create stunting-preventive meals. The program yielded significant outcomes, with 20 parents participating and demonstrating an improved understanding of CHLB and B2SA foods, along with practical skills in preparing nutritious meals using local ingredients. This initiative serves as a foundational strategy for reducing stunting in the Muncar District and contributes to Indonesia’s broader efforts to mitigate this nutritional issue.

Abstract

Salah satu permasalahan yang sering terjadi dalam kesehatan pada generasi muda yakni tingginya prevalensi stunting di Indonesia. Stunting sendiri merupakan suatu kondisi dimana pertumbuhan bayi tidak memenuhi standar pertumbuhan bayi normal dan dapat berdampak buruk pada perkembangan intelektual dan psikologis bayi. Pola makan juga mempengaruhi terjadinya stunting. Sebagian besar ibu yang memiliki anak kecil dan responden memberikan makanan yang tidak memenuhi kebutuhan gizi anaknya. Laporan layanan ini merupakan program yang mengkaji kebutuhan gizi anak kecil yang rentan mengalami stunting. Jumlah responden pada pengabdian masyarakat ini sebanyak 20 orang ibu yang memiliki bayi stunting sebagai key informan, serta 1 orang eksekutif dan 1 orang ahli gizi untuk triangulasi data. Hasil dari pengabdian masyarakat ini menujukkan bahwa adanya peningkatan dalam pemenuhan kebutuhan gizi yang ditunjukkan dalam bertambahnya TB/U selama program ini dilakukan. Data grafik hasil yang didapatkan menunjukkan bahwa, pentingnya program edukasi gizi untuk memulihkan status gizi balita di wilayah Puskesmas Jeruk.
