Abstract

Soy milk yogurt is a functional food that has health benefits. To improve the nutritional (vitamin) and functional (antioxidant) properties of yogurt, purslane leaves are added. This study aims to determine the relationship between vitamins C, E and iron on antioxidant activity (AA) in soy milk yogurt substituted with purslane. This research method uses random group 1 factor with a ratio of soy milk: purslane (100:0; 92.5:7.5; 85:15; 77.5:22.5; 70:30). Data were analyzed using correlation-regression. The results showed that the higher the purslane enrichment, the higher the vitamin E and vitamin C and each had a strong positive correlation with AA with an influence of 88.97% and 89.16% respectively. On the other hand, the higher the addition of purslane, the lower the iron content, causing AA to increase, with an Fe effect of 91.54% and a strong negative correlation. Thus, enriching yogurt with purslane leaves only increases vitamins C and E which have a positive impact on its antioxidant activity.

Abstract

Indonesia has a lot of large forests with a diversity of plant species. That diversity of plants can potentially be used as medicinal plants. Indonesians have long identified many plants with medicinal benefits as an effort to overcome various health problems, one of the plant is the kratom (Mitragyna speciosa). Kratom leaves are consumed as tea by brewing it with hot water. Some Kapuas Hulu people use sweeteners such as honey, to reduce the bitterness of kratom. The mixture of kratom herbal tea added with sweet honey is expected to produce sensory and functional attribute which will affect consumers in choosing products. This experiment used a Randomized Block Design (RBD). Statistical analysis of research data using ANOVA (Analysis of Variance) test with a rate of 5%. The results of the sensory research of kratom herbal tea showed a significant effect on taste, but no significant effect on aroma and color, namely the color value of 2.08, aroma 2.28 and taste 2.25. The addition of honey variations to kratom herbal tea included vitamin C, flavonoids, alkaloids, and antioxidants, which was vitamin C content ranges from 8.9-13.5 mg/100 g, flavonoids 15.2-27.56 mg QE/ml, alkaloids 53.1-55.4% and antioxidant activity 39.1-80.1%.

Abstract

Tea is one of the nutritious drinks that are popular with the Indonesian people. Recently, researchers have developed various new types of tea beyond the traditional tea plant (Camelia sinensis). One potential ingredient for tea development is melinjo peel, particularly the yellow melinjo peel, due to its strong antioxidant activity and superior α-glucosidase inhibitory activity. This study aims to investigate the influence of the powder form and sample weight on the acceptability of yellow melinjo (Gnetum gnemon L.) peel tea. The research employed an experimental method with a factorial completely randomized design (CRD) involving two factors. The first factor was the powder form of the tea (fine, semi-fine, and coarse), and the second factor was the sample weight (2.5 grams, 3 grams, and 5 grams). A hedonic test was conducted to assess the acceptability of yellow melinjo peel tea, involving 40 semi-trained panelists using a scale from 1 to 7 (strongly dislike to very much like). Data were analized using IBM SPSS 25.0 Statistics for Windows, with Kruskal-Wallis and Mann-Whitney tests at a significance level of P < 0.05. The results showed that both the powder form and sample weight of yellow melinjo peel tea significantly affected (P<0.05) taste, aroma, clarity, intensity, astringency, flavor, and overall acceptability, but did not significantly affect (P > 0.05) color and taste intensity. The most preferred formulation by panelists was yellow melinjo peel tea with a sample weight of 2.5 grams and a fine powder form, with an average score of 4.23 (like slightly).

Abstract

This study aims to know the effectiveness of leaflets and video educational media in the knowledge of type 2 diabetes mellitus patients in the inpatient room of RSUD Beriman Balikpapan. The methodology used is a quasi-experimental study with a pretest and posttest research design with control group. The intervention group used video media and the control group used leaflet media. The results obtained were that the average patient knowledge increased in the experimental group, which was 50.90, ± 8,228 SD before the intervention, increasing to 81.37, ± 9,615 SD after the intervention. In the control group, the mean knowledge of patients before the intervention was 55.75, ± 7,036 SD, increasing after the intervention to 84.18, ± 9,895 SD. The P-Value value is 0.000 < 0.05 from the results of the analysis of the difference in knowledge between the experimental group and the control group after the intervention shows that there is a significant difference between the two; so that H0 is rejected and Ha is accepted. This means that nutritional counseling using video and leaflet media can increase knowledge about Diabetes Mellitus and video media is more effective than leaflet media. The providing nutritional counseling using video media was more effective than using leaflet media in increasing the knowledge of Diabetes Mellitus patients in the inpatient ward of the Beriman Balikpapan Regional Hospital.

Abstract

The primary objective of this research is to observe and analyze the preparedness of Labschool Middle School students in Palu City for Disaster Risk Reduction. The population in this study consisted of all students at Palu City Labschool Middle School, using a total sampling technique, resulting in a sample size of 100 students. Data was collected using structured questionnaires that were directly filled out by the students. The questionnaires were designed to cover all aspects of the research variables and provide a comprehensive assessment of the student's preparedness. Data processing in this study utilized a computerized system via MS Excel. Knowledge: 95% of respondents rated their knowledge on the subject as not good. This indicates that the majority of respondents have a poor understanding of the topic. Early Warning System: 57% of respondents rated the early warning system as not good. Resource Mobilization: 73% of respondents rated resource mobilization as not good. This indicates significant issues in resource mobilization, with the majority of respondents feeling that improvements are needed in this area. The findings indicate a significant gap in disaster preparedness among Labschool Middle School students. The majority lack basic knowledge about natural disasters and have minimal exposure to disaster-related training or education. Despite the availability of disaster warning tools in schools, awareness and understanding of their use remain limited. An effective early warning system is crucial for community safety, yet many students exhibit low awareness and preparedness levels

Abstract

This study employed a cross-sectional design to investigate the association between dietary patterns and the occurrence of overweight status in urban adolescents. A total of 124 respondents were recruited using purposive sampling. Data collection involved anthropometric measurements and completion of the Semi Quantitative Food Frequency Questionnaire (SQ-FFQ) using a self-administered questionnaire method. The study findings revealed that 29% of adolescents experience overweight status. Most frequent food consumption occurs in staple foods (82.3%), animal protein (73.4%), plant-based protein (63.7%), fats (82.3%), and vegetables (50.8%). Conversely, infrequent consumption was observed for fruits (58.9%), snacks (68.5%), fast food (71.8%), and beverages (55.6%). Furthermore, deficits are prevalent in energy (44.4%), protein (46.8%), and carbohydrates (60.5%), while excess intake is seen in fats (57.3%). Respondents exhibit predominantly low physical activity (66.9%). Chi-square tests indicate significant associations between consumption frequency in the plant-based protein and vegetable groups (p ≤ 0.05) and between energy intake and macronutrients (p ≤ 0.05) with overweight status.

Abstract

Children under two years old are a critical period in child development, characterized by rapid growth and development. One nutritional issue, stunting, can arise from inappropriate feeding practices and leads to impaired brain development, intelligence, physical growth, and metabolic function. To address this, we implemented Emotional Demonstration education on baby and child feeding schedules for young mothers. This study aimed to analyze the impact of Emotional Demonstration education on mothers’ knowledge and attitudes regarding toddler feeding practices at Dahlia Posyandu, Pabuaran Village, Bogor Regency. A Pre-Experimental One Group Pre-Test Post-Test design was employed involving 32 young women from the Bojonggede Community Health Center. Data were collected through pre-test and post-test questionnaires, analyzed using the Wilcoxon test. Results indicate a significant improvement in mothers’ knowledge following Emotional Demonstration education. However, no significant change was observed in their attitudes. In conclusion, Emotional Demonstration education effectively enhances maternal knowledge about baby and child feeding schedules but does not influence their attitudes

Abstract

This study investigates the impact of substituting red bean flour and red spinach flour on the organoleptic properties and nutritional value of fried meatballs (Basreng). Three treatments were tested: P1 (5% red bean flour and 5% red spinach flour), P2 (10% red bean flour and 10% red spinach flour), and P3 (15% red bean flour and 15% red spinach flour). Fifty third-semester nutrition students evaluated taste, texture, aroma, and color using a 5-point hedonic scale. Statistical analysis included normality tests, ANOVA for normally distributed data, and Kruskal-Wallis tests for non-normally distributed data, followed by Duncan or Mann-Whitney tests for significant differences. Results indicated that P1 was most favored in all sensory aspects. Increasing concentrations of red bean and red spinach flours resulted in a stronger taste and aroma of these ingredients, which overshadowed the chicken flavor. P3, though less preferred organoleptically, provided the highest nutritional value with 0.06 mg of iron per slice. This study highlights the balance between sensory acceptance and nutritional enhancement using local ingredients. While P1 is optimal for consumer preference, P3 offers significant nutritional benefits. The findings suggest that red bean and red spinach flours have potential in improving the health benefits of traditional snacks like Basreng

Abstract

This study aims to investigate the effect of biscuits made from haruan fish flour and yellow pumpkin on the nutritional status of toddlers in the working area of Puskesmas Mangkupalas. A quasi-experimental pre-post test with control group design was employed, with a single-blind approach. The study was conducted from September to November 2021. A total of 22 toddlers were selected using purposive sampling. Respondents were divided into two groups: the intervention group, which received biscuits made from haruan fish and yellow pumpkin flour, and the control group, which received government-provided biscuits. Data on energy and protein intake were collected using a Food Recall, and nutritional status was assessed based on Weight-for-Age index using anthropometric measurements. In the control group, the average Z-score before the intervention was -1.4345 (normal nutritional status), which increased to -1.3536 post-intervention (still normal). The intervention group had an average Z-score of -2.0009 before the intervention, which decreased to -2.1691 (indicating moderate malnutrition). The control group's average energy intake was 956.864 kcal before the intervention and 792.564 kcal during the intervention. In the intervention group, energy intake was 1010.891 kcal before and 793.109 kcal during the intervention. Protein intake in the control group was 34.436 g before the intervention and decreased to 31.691 g during the intervention. The intervention group saw an increase from 38.164 g to 58.75 g. The intervention with biscuits made from haruan fish flour and yellow pumpkin flour did not significantly affect the nutritional status or energy and protein intake of the toddlers.

Abstract

Obesity is a chronic disease characterized by excess body fat, increasing the risk of type 2 diabetes, heart disease, bone disorders, reproductive issues, and cancer, while also affecting quality of life, including sleep and mobility. According to WHO, the prevalence of overweight children and adolescents aged 5–19 years increased from 8% in 1990 to 20% in 2022. Recent data from the Ministry of Health in 2023 shows a high prevalence of central obesity among those aged 15–24 years, with 8.3-9.2% in males and 23.4-24.7% in females. This quantitative research employs an observational analytic design with a cross-sectional approach, using SPSS with the Chi-Square test to identify the relationship between dietary patterns and physical activity with the incidence of obesity among MTS students in Gowa Regency. Results indicate no significant relationship between dietary patterns (FFQ and IDDS) and obesity incidence, with p-values of 0.895 and 0.066, respectively. Similarly, physical activity showed no significant relationship with BMI, with a p-value of 0.056. Future studies should consider expanding variables to include factors influencing students' dietary patterns and physical activity, and conduct in-depth analyses using multiple regression.
