Abstract

Research on coconut flour and desiccated coconut substitution cookies has been conducted by several researchers, but variations of desiccated coconut crispy cookies have not been widely developed. The nutritional content of desiccated coconut can be used as a source of fiber when substituted in crispy cookies products. The purpose of this study was to determine the effect of desiccated coconut substitution in making crispy cookies on physicochemical and organoleptic characteristics, and obtain the best desiccated coconut substitution. This study used a Complete Randomized Design (RAL) with one factor, namely the ratio of the percentage of desiccated coconut and wheat flour with 6 treatment levels (0:100), (25:75), (50:50), (75:25), (85:15), and (100:0) with 3 repeats. The data obtained were analyzed using the ANOVA test (α=5%). If the effect is significant (Sig < 0.05), then proceed with the Honest Real Difference Test (BNJ) with a test level of 5%. Analysis of sensory characteristics data using the Kruskal Wallis test. The best treatment is tested using an effectiveness index test. This study obtained the best sensory and physicochemical characteristics of desiccated coconut crispy cookies in treatment (25%: 75%). The physicochemical characteristics produced are crude fiber content of 2.73%, fat content of 30.43%, ash content of 1.52%, water content of 16.86%, carbohydrate content of 51.11%, and protein content of 0.08%. The resulting sensory characteristics are taste 4.36 (prefer), aroma 4.13 (prefer), color 3.97 (like), and texture 4.26 (prefer).

Abstract

Stunting is a condition of impaired growth in toddlers due to prolonged nutritional deficiencies. This issue is a significant global nutritional problem, particularly in poor and developing countries, including Indonesia. This study aims to examine the relationship between macronutrient intake, food security at the household level, and nutrition-related knowledge on the incidence of stunting among toddlers in the working area of Cimarga Health Center. This study employed a cross-sectional design. The sample size consisted of 99 toddlers from 11 villages within the Cimarga Health Center's jurisdiction. Analysis was conducted using the Chi-Square test. The findings reveal a stunting prevalence of 34.3% among toddlers. There is a significant relationship between household food security (p=0.014) and the incidence of stunting (OR=1.630; 95% CI=1.381-1.923). However, no significant relationships were found between energy intake (p=0.140), carbohydrate intake (p=0.544), protein intake (p=0.607), fat intake (p=0.439), and maternal nutrition knowledge (p=0.411) with the incidence of stunting in toddlers in the Cimarga Health Center area. This study underscores the importance of enhancing household food security as a primary strategy to reduce stunting despite the lack of significant relationships between macro-nutrient intake and maternal nutrition knowledge

Abstract

Hemoglobin levels are a parameter that measures respiratory pigment in red blood cells. A decrease in hemoglobin levels can lead to anemia. Factors contributing to hemoglobin levels include inadequate nutrient intake, particularly iron and protein, as well as the effect of inhibitors on iron absorption such as calcium. This study aims to assess the intake of energy, protein, iron, and calcium in relation to hemoglobin levels among pregnant women. This research employs a Cross-Sectional study design. The sample consisted of 55 pregnant women selected through purposive sampling. Data collection on energy, protein, iron, and calcium intake was done using the SQ-FFQ questionnaire, while hemoglobin levels were measured using an Hb meter (EasyTouch GCHb), and data were analyzed using Spearman’s Rank Correlation test. The results showed that pregnant women had adequate energy intake (41.8%), excess protein intake (40%), adequate iron intake (89.1%), and adequate calcium intake (80%). Abnormal hemoglobin levels were observed in the third trimester of pregnancy (16.3%), whereas normal hemoglobin levels were found in the second trimester (34.5%). Statistical tests revealed no significant relationship between energy intake (p = 0.223), protein (p = 0.201), iron (p = 0.327), and calcium (p = 0.641) with hemoglobin levels. The conclusion of this study is that there is no significant relationship between energy, protein, iron, and calcium intake and hemoglobin levels among pregnant women in Parung Panjang District, Bogor Regency. Pregnant women should regularly consume calcium supplements and iron tablets to meet their iron and calcium needs, which can help prevent anemia.

Abstract

The increasing cases of overweight and obesity are caused by nutritional imbalances. Other factors such as screen time for 2 hours or more every day are studied to increase the risk of obesity by 23%. The mukbang phenomenon has also been shown to change eating behavior in a negative direction, thus risking health problems. This study aims to determine the relationship between the intensity of gadget use, eating patterns, mukbang watching habits and changes in eating behavior with the incidence of overweight in adolescents at SMA Negeri 4 Palu. This study uses a quantitative method with a cross-sectional research design. The population in this study was 392 and a sample of 195 respondents using the proportional random sampling technique. Data collection was carried out using a gadget use intensity questionnaire, FFQ and a mukbang watching habit questionnaire. Data analysis used the chi square statistical test. The results showed that 74 respondents had overweight status (37.9%) and 121 respondents had normal nutritional status (62.1%). Based on the chi square test, the variables that had a relationship with the incidence of overweight were eating patterns (p = 0.006) and mukbang watching habits (p = 0.007). Meanwhile, variables that have no relationship with overweight incidence are the intensity of gadget use (p = 0.324) and changes in eating behavior (p = 0.346). For adolescents, it is expected to avoid sedentary lifestyle habits and apply a diet according to the principles of balanced nutrition.

Abstract

Local foods in East Nusa Tenggara (NTT) Province are highly diverse, yet they remain underutilized for promoting health. Sorghum and anchovies, abundant in this region, present alternative sources for enhancing local nutrition, especially for toddler snacks. This study aimed to develop biscuits using local ingredients (sorghum and anchovies) as a potential snack for toddlers. The research employed an experimental design with a completely randomized design (CRD) consisting of four treatment levels: P0 (0% sorghum flour: 0% anchovy flour), P1 (30% sorghum flour: 10% anchovy flour), P2 (20% sorghum flour: 15% anchovy flour), and P3 (10% sorghum flour: 20% anchovy flour). The study occurred from January to May 2024 at the Nutrition Laboratory of Poltekkes Kemenkes Kupang. The results showed that the panellists’ preference for biscuit colour ranged from 3.82 to 4.04 (like), with P3 being the most preferred (4.04). The aroma scores ranged from 3.4 to 3.48 (somewhat like), with P2 receiving the highest score (3.48). Texture preference ranged from 3.9 to 4.1 (like), with P1 being the most preferred (4.1). Taste preferences ranged from 3.5 to 3.76 (like), with P3 scoring highest (3.76). In conclusion, biscuits with 20% sorghum flour and 10% anchovy flour (P3) were the most favoured overall, containing 1,111.6 Kcal of energy, 41.75 g of protein, 50.74 g of fat, and 123.51 g of carbohydrates. These findings suggest that locally sourced ingredients can be effectively used to create nutritious and appealing snacks for toddlers.

Abstract

One of the functional food preparations which is soft formulated and made from hydrocolloid ingredients which include agar, gum, carrageenan, pectin and gelatin is jelly candy. In the formulation and preparation of jelly candy, which aims to increase its functional value, in this research, bioactive compounds are added which function to improve the health aspects of consuming it. In this research, jelly candy is made from butterfly pea flower kombucha because it contains organic acid compounds, polyphenols, vitamins, amino acids, so it is good for body health. Kombucha is made from butterfly pea flowers because previous research results have been proven to be antibacterial, antifungal, antioxidant, antifungal, anticholesterol and anticancer. Telang flowers contain secondary metabolite compounds which are divided into alkaloids, flavonoids, saponins, terpenoids, acetogenin which are cytotoxic for the growth of cancer cells and are efficacious as a source of antioxidants. The jelly candy product produced has been tested to meet the SNI 3547.2-2008 quality standard where the water content produced is 16.25%. ash content 0.35%. And pH 4.57. Jelly candy preparations made from the active ingredient telang flower kombucha which are designed as food and pharmaceutical biotechnology products have biochemical characteristics in warding off free radicals which refer to an IC50 value of 62.848 μg/mL

Abstract

Multiple myeloma (MM) is a malignancy of plasma cells, often preceded by an asymptomatic condition known as the precursor state of monoclonal gammopathy of undetermined significance (MGUS). The diagnosis of multiple myeloma is typically confirmed using the CRAB criteria, which include hypercalcemia, renal impairment characterized by elevated serum urea and creatinine levels, anemia, and bone abnormalities. We report a rare case of multiple myeloma in a 63-year-old male patient who presented with pain in his left hand following a fall against a wall. Clinical and radiological examinations revealed findings consistent with multiple myeloma, with a differential diagnosis including metabolic bone disease and metastatic bone disease

Abstract

This study aimed to assess the accuracy of the party receiving information and giving consent in the hospital. This type of research is observational and was conducted at Public Hospital of Banten Province (RSUD Banten) and Dr. Drajat Prawiranegara Public Hospital in 2024. The minimum sample size used was 94 samples taken using consecutive sampling methods. This study used a checklist as a record to check the completeness of the informed consent form and approval sheet by the SOP and applicable legal basis. Data analysis is descriptive of the accuracy of the party receiving information and giving consent. The study observed 28 pieces of information and consent being received and given by the right party, while the wrong party signed 66 (70.2%) consents for medical procedures. The study's focus on the accuracy of the party receiving information and giving consent in the hospital is a contribution to a monitor process of informed consent in hospital according to principles of patient’s competency

Abstract

In the context of self-development, leaders capable of guiding organizations towards their objectives are essential. Effective leadership requires the application of diverse leadership styles in different situations, rather than relying on a single approach for all scenarios. Employees within a company can be motivated by fulfilling their needs and desires. However, providing work motivation can be challenging as what is considered important to one individual may not be equally significant to another. The head of the Kamonji Community Health Center employs a situational leadership style. The leadership of the health center head demonstrates limited communication and control, with interactions primarily occurring when employees submit reports to the head. This study aims to investigate the relationship between situational leadership style and motivation with employee performance at the Kamonji Community Health Center in West Palu District, Palu City. The research design employed is a cross-sectional study. The population comprises employees with civil servant status, with a sample size of 54 individuals selected using total sampling technique. Data analysis was conducted descriptively, including univariate and bivariate analyses, at a 95% confidence level (p<0.05). Fisher's Exact test results indicate that situational leadership style is associated with employee performance (ρ=0.039), and motivation is related to employee performance (ρ=0.028). Higher levels of situational leadership style and motivation provided correspond to improved employee performance, and vice versa. It is recommended that the head of the Community Health Center pay attention to behavioral aspects, particularly in motivating employees.

Abstract

Non-Hodgkin's lymphoma (NHL) is a type of lymphoproliferative disorder primarily involving lymph nodes but can extend to extranodal sites like the spleen. When NHL originates in the spleen, it is classified as primary splenic NHL. Due to its unusual presentation, it may resemble other splenic conditions in clinical appearance. In this Journal we report a rare case of splenic lymphoma in a 67-year-old female with symptoms of abdominal pain in the left quadrant of the abdomen. Multislice Computerized Tomography (MSCT) scan of the abdomen to axial pelvis section showed splenomegaly with solid mass et causa suspect splenic lymphoma. The diagnosis of malignant splenic non-Hodgkin lymphoma can be made after splenectomy and histopathology examination which is consistent with clinical and radiologic examination found in the Patient.
