Abstract

Penelitian ini bertujuan untuk menganalisis mutu sensori dan daya terima konsumen terhadap produk kue putri salju tepung talas bogor dengan tiga perlakuan persentase lemak yang berbeda, yaitu sebesar 75%, 85%, dan 95% dari total tepung yang digunakan. Selain itu, penelitian ini juga bertujuan untuk mengetahui potensi produk sebagai rintisan usaha. Penelitian dilaksanakan pada bulan Februari - Juli 2025 di Laboratorium Pastry dan Bakery, Program Studi Tata Boga, Fakultas Teknik, Universitas Negeri Jakarta. Metode penelitian yang digunakan adalah metode eksperimen dengan teknik analisis deskripsi kuantitatif. Pengumpulan data dilakukan dengan uji mutu sensori dan uji daya terima konsumen, yang melibatkan 10 panelis terbatas dan 100 panelis konsumen. Aspek yang dinilai meliputi warna bagian atas dan warna bagian bawah, aroma talas bogor dan aroma butter, rasa talas bogor dan rasa manis, serta kerapuhan produk. Berdasarkan hasil keseluruhan aspek, kue putri salju tepung talas bogor dengan persentase lemak 95% merupakan produk terbaik menurut penilaian panelis terbatas dan panelis konsumen. Produk ini selanjutnya dikembangkan menjadi rintisan usaha dengan merek “Snowkiro”, yang dijual dengan harga Rp. 50.000,- per 280 gram. Hasil dari penjualan “Snowkiro” selama satu bulan mampu meraih total omset sebesar Rp. 3.850.000,-. dengan laba bersih yang diperoleh mencapai Rp. 1.098.795,-. Temuan kue putri salju tepung talas bogor ini dapat diaplikasikan untuk mendukung pemanfaatan pangan lokal dan membuka peluang usaha kue kering bebas gluten.

Abstract

Pseudomonas aeruginosa is an opportunistic pathogenic bacterium commonly associated with nosocomial infections, particularly in immunocompromised patients. Inappropriate use of antibiotics can lead to resistance, highlighting the need for safer and more effective alternative treatments. Green betel leaf (Piper betle L.) contains active compounds such as flavonoids, tannins, and saponins that exhibit antibacterial properties. This study aims to evaluate the effectiveness of an ethanol extract gel formulation of green betel leaves against the growth of Pseudomonas aeruginosa. The methods included ethanol extraction of betel leaves through maceration, formulation of gels with varying extract concentrations, and antibacterial activity testing using the disk diffusion method. The results showed that the ethanol extract gel was able to inhibit the growth of P. aeruginosa, with inhibition zones increasing along with higher extract concentrations. In conclusion, the ethanol extract gel of green betel leaves has potential as a natural antibacterial agent against Pseudomonas aeruginosa.

Abstract

Penelitian ini mendeskripsikan pola evaluasi dalam aktivitas pembelajaran santri guna meningkatkan kualitas pada dayah Darussa’adah Cot Bada Peusangan Bireuen”. Rumusan masalah penelitian, yaitu: bagaimana evaluasi ranah kognitif pembelajaran santri dalam meningkatkan kualitas Dayah Darussa’adah Cot Bada Peusangan Bireuen?, bagaimana evaluasi ranah afektif pembelajaran santri dalam meningkatkan kualitas Dayah?, dan bagaimana evaluasi ranah psikomotorik pembelajaran santri dalam meningkatkan kualitas Dayah?. Peneliti menggunakan jenis penelitian deskriptif dengan pendekatan kualitatif. Hasil penelitian, yaitu: Pertama, evaluasi ranah kognitif pembelajaran santri dalam meningkatkan kualitas Dayah Darussa’adah Cot Bada Peusangan Bireuen. Evaluasi materi tauhid, nahwu dan fiqh mendapatkan hasil sangat baik. Pelaksana evaluasi yaitu pengajar/guru bidang studi tauhid, nahwu dan fiqh sudah medapatkan nilai yang baik. Teknik evaluasi dengan memberikan soal dan memberikan PR adalah teknik yang mendukung pembelajaran. Kedua, evaluasi ranah afektif. Evaluasi materi akhlak diaplikasikan secara baik dan memberikan respon positif saat materi fiqh dan tauhid. Pelaksana evaluasi adalah guru bidang studi akhlak, fiqh dan tauhid. teknik evaluasi dengan menilai sikap, baik di dalam dan luar ruang belajar, santri menunjukkan sikap yang baik. Ketiga, evaluasi ranah psikomotorik. Materi evaluasi adalah materi praktik ibadah, kesenian dan keterampilan khat mendapatkan hasil sangat baik. Pelaksana adalah pendidik/guru materi praktik ibadah, kesenian dan keterampilan khat. Menggunakan teknik dengan melihat langsung praktik ibadah, kesenian dan keterampilan khat. Rekomendasi yang peneliti berikan, dari hasil evaluasi Pembelajaran Santri dalam Meningkatkan Kualitas Dayah Darussa’adah Cot Bada Peusangan Bireuen, sebagai pimpinan dayah untuk terus memonitoring guru dan mengevaluasi hasil pembelajaran santri agar dikembangkan untuk meningkatkan kualitas dayah.

Abstract

Diarrhea is the occurrence of defecation with a more liquid consistency than usual and may be accompanied by liquid mucus or blood with a frequency of three times or more within 24 hours. Salak pondoh contains chemical compounds consisting of flavonoids, saponins, phenols, tannins, alkaloids, chlorogenic acid, ferulic acid, and protocatechuic acid. The bacteria Escherichia coli and Salmonella typhi cause diarrhea and fever due to tissue damage. Based on the above description, this study will test the effectiveness of the inhibitory power of the ethanol extract of salak pondoh fruit skin (Salacca zalacca (Gaertn.) Voss) against Escherichia coli and Salmonella typhi bacteria. This research method uses an experimental agar diffusion method to test the antibacterial activity of salak pondoh fruit skin with concentrations of 20%, 40%, 60%, and 80%. The results of this study show that the concentrations of 20%, 40%, 60%, and 80%, and the positive control (chloramphenicol) of salak pondoh fruit skin have antibacterial inhibitory power against the growth of Escherichia coli bacteria, as indicated by inhibition diameters of 4.81 ± 22.74 mm, 7.81 ± 22.74 mm, 10.15 ± 06.65 mm, 15.07 ± 19.00 mm, and 27.56 ± 48.58 mm, respectively. For Salmonella typhi, the antibacterial inhibitory power was 2.22 ± 18.19 mm, 3.48 ± 23.30 mm, 7.32 ± 67.41 mm, 11.68 ± 112.07 mm, and 24.14 ± 77.77 mm, respectively. The conclusion from the results of this study is that the effectiveness test of the ethanol extract of salak pondoh fruit skin (Salacca zalacca (Gaertn.) Voss) can inhibit the growth of Escherichia coli and Salmonella typhi bacteria, and the concentration that can significantly affect bacterial growth inhibition is 80%.

Abstract

Indonesia dikenal sebagai negara dengan keanekaragaman hayati terbesar di dunia, salah satunya adalah tanaman biofarmaka yang memiliki potensi besar dalam pengembangan obat-obatan alami. Kalimantan Barat merupakan salah satu provinsi yang kaya akan keanekaragaman hayati, terutama terkait tanaman biofarmaka. Namun, produksi tanaman biofarmaka di provinsi ini mengalami fluktuasi setiap tahunnya, yang dapat memengaruhi kesejahteraan petani dan ketersediaan obat tradisional bagi masyarakat. Penelitian ini bertujuan untuk memprediksi produktivitas tanaman biofarmaka di Kalimantan Barat menggunakan algoritma backpropagation. Berbagai model jaringan saraf tiruan diuji untuk mengidentifikasi model yang paling akurat dalam memprediksi produktivitas tanaman biofarmaka dari tahun 2024 hingga 2028. Hasilnya menunjukkan bahwa model arsitektur 9-20-1 adalah yang terbaik, dengan nilai mean squared error (MSE) sebesar 0,00269169 dan akurasi 85,7%. Prediksi menunjukkan bahwa jahe dan kunyit mengalami peningkatan umum meskipun ada fluktuasi, kencur tumbuh konsisten, laos/lengkuas mengalami penurunan bertahap, mahkota dewa terus meningkat setiap tahun, mengkudu fluktuatif, dan temulawak tumbuh stabil dengan peningkatan konsisten hingga 2028.

Abstract

Wounds occur when there is damage or loss of body tissue due to factors that interfere with the body's protective system and cause infection caused by Staphylococcus aureus and Staphylococcus epidermidis.Noni leaf (Morinda citrifolia L.) has strong potential as an antibacterial, so researchers are interested in formulating ethanol extract of noni leaf (EEDM) into a patch preparation. Objective: Knowing that EEDM can be formulated as a patch preparation, as well as knowing its antibacterial activity. Methods: Four formulas were made with variations in extract concentration, namely F0 (blank); FI : 5%; FII: 10%; and FIII: 15%. Antibacterial testing using disc paper diffusion method. Results: A clear patch preparation was produced in F0, while in FI, FII and FIII the gel was blackish green with a distinctive smell of EEDM. The results of the antibacterial activity test against Staphylococcus aureus in each formula are FI: 2.58 mm; FII: 2.35 mm; FIII: 2.41 mm, while against Staphylococcus epidermidis, FI: 1.46; FII: 2.28; FIII: 3.33. Conclusion: EEDM can be formulated into patch preparations. The antibacterial potential of the three formulas is in the weak category.

Abstract

Cardamom leaves (Amomum cardamomum (L.) Cardamom is a plant that is commonly used as a cooking spice and is also believed to have properties for treating various diseases, one of which is disease caused by fungi. The aim of this research is to determine the antifungal activity of ethanol extract of cardamom leaves against fungi Candida albicans and Pythyrovorum ovale to determine the effective inhibitory concentration of the ethanol extract of kitolod leaves in inhibiting it as an antifungal. The samples were extracted by the maceration method using 96% ethanol solvent. The antifungal activity test was carried out by the agar diffusion method using a paper backer. This experiment  consisted of three times Mixtures with respective concentrations of 20%, 40%, 80%, DMSO 10% as a negative control and Ketoconazole as a positive control. The results of the antifungal activity test showed that the ethanol extract of cardamom leaves was against Candida albicans fungi with concentrations of 20%, 40%, 80%. % respectively had an inhibition zone of (16.67 mm), (16.77 mm), (18.09 mm), positive control ketoconazole (21.40 mm), negative control 10% DMSO (0 mm). Meanwhile, the fungus Pythyrovorum ovale with concentrations of 20%, 40%, 80% respectively had an inhibition zone of (13.78 mm), (14.35 mm), (16.18 mm), positive control ketoconazole (19.86 mm), 10% DMSO negative control (0 mm). The results of the study showed that the ethanol extract of cardamom leaves had antifungal activity against Candida albicans and Pythyrovorum ovale.

Abstract

Kajian ini memiliki tujuan guna mengkaji bagaimana komitmen organisasi, keterlibatan digital (digital engagement), serta employer branding memengaruhi perilaku Organizational Citizenship Behavior (OCB) pada karyawan di industri kreatif. Dengan menerapkan pendekatan kuantitatif, data dikumpulkan dengan survei yang diberikan kepada 200 responden yang ditentukan menerapkan teknik purposive sampling. Analisis dilaksanakan dengan regresi linear berganda, disertai pengujian validitas, reliabilitas, serta asumsi klasik untuk memastikan kelayakan model. Perolehan studi ini mengindikasikan bahwasanya baik secara simultan maupun parsial, ketiga variable independent tersebut memiliki pengaruh positif dan signifikan pada OCB. Komitmen organisasi terbukti mendorong munculnya loyalitas dan keterikatan emosional yang memotivasi karyawan untuk berkontribusi secara sukarela. Sementara itu, keterlibatan digital memperkuat partisipasi, mendorong kolaborasi, dan menciptakan rasa keterhubungan antar karyawan. Di sisi lain, employer branding yang kuat menumbuhkan rasa bangga dan identitas positif terhadap perusahaan, yang mendorong karyawan untuk memberikan kontribusi melebihi peran formal mereka. Temuan ini menegaskan pentingnya bagi organisasi di sektor industri kreatif untuk secara aktif memperkuat ketiga aspek tersebut. Dengan begitu, mereka dapat menciptakan lingkungan kerja yang mendukung tumbuhnya perilaku OCB, sekaligus meningkatkan produktivitas dan membentuk budaya kerja yang sehat dan berkelanjutan.

Abstract

Purpose. This study aims to examine the implementation of disaster management information systems in improving work productivity at the Regional Disaster Management Agency (BPBD) of Palangka Raya City. The research focuses on how integrated organizational structures and the use of supporting technologies contribute to more effective disaster response and coordination. Materials and Methods. A qualitative approach was employed using data collection techniques including interviews, observations, and documentation. The study involved key informants from BPBD and utilized triangulation to ensure the validity of findings. Results. The findings indicate that the integrated structure of BPBD, supported by technologies such as the PERISAI application and the 112-emergency call centre service, has significantly improved data management and disaster response coordination. However, challenges remain in the form of limited human resources and low public awareness regarding the disaster information system. These limitations hinder the optimal utilization of the system and its potential benefits in disaster mitigation and response. Conclusions. Continuous staff training and intensive public outreach are needed to enhance understanding and participation in disaster mitigation efforts. The study highlights the importance of developing adaptive disaster information systems, strengthening human resource capacity, and increasing community education as key elements for effective disaster management at the regional government level

Abstract

The transformation of education in the digital era demands a learning design that is not only adaptive but also innovative and aligned with technological advancements. This paper aims to examine the characteristics of effective digital learning design, explore innovative technologies that can be integrated, and identify presentation strategies that ensure optimal understanding and implementation. The method used is a descriptive-analytical literature review, drawing from recent publications in digital education and educational technology. Effective digital learning is characterized by flexibility, interactivity, personalization, and the support of adaptive technologies such as Learning Management Systems (LMS), Artificial Intelligence (AI), and interactive multimedia. Furthermore, technologies such as Augmented Reality (AR), Virtual Reality (VR), and gamification enhance the learning experience by making it more contextual and engaging. To ensure successful implementation, the presentation of digital learning design must be systematic, communicative, and user-centered. The use of visual media, live demonstrations, supplementary materials, and continuous training are essential elements of an effective presentation strategy. The findings of this study are expected to serve as a reference for educators, curriculum developers, and policymakers in designing and implementing transformative digital learning aligned with the demands of the 21st century.
