Abstract

Usia anak sekolah adalah usia emas yang mejadi bibit yang menentukan bagi masa depan bangsa, oleh sebab itu pada anak sekolah dasar khususnya harus diberikan pemahaman kepada anak dan orang tua agar tidak menyebabkan atau mengalami asupan gizi yang kurang dan seimbang pada usia sekolah. Konsumsi makanan jajanan pada usia anak sekolah merupakan suatu kebiasaan yang hampir terjadi diseluruh dunia. Analisis situasi yang dilakukan didapatkan bahwa permasalah konsumsi jajanan yang kurang sehat masih dijumpai di mitra pengabdian masyarakat. Kegiatan yang dilaksanakan adalah (1) edukasi dengan materi makanan sehat dan makanan tidak sehat,serta potensi bahaya apa saja yang bisa timbul jika berlebihan dalam konsumsi makanan tidak sehat khususnya bagi anak-anak (2) pelatihan pembuatan camilan sehat dengan memanfaatkan bahan pangan lokal. Pelaksanaan kegiatan pengabdian masyarakat di TKIT Harum, Keputih, Surabaya dengan pemberian materi edukasi dapat meningkatkan pemahaman mitra terkait konsep makanan sehat, aman, dan bergizi untuk anak. Tanggapan mitra dalam hal ini adalah ibu wali siswa terhadap program yang dilaksanakan sangat baik

Abstract

ABSTRACT Hyperglycemia is a carbohydrate metabolism disorder causing diabetes. The difference in glycemic index (GI) in red rice and white rice causes different effects on blood glucose. Precooked rice processing causes starch retrogradation which can form Resistant Starch (RS) thereby lowering the GI of rice. Resistant starch is fermented into Short Chain Fatty Acids (SCFAs) and affects the colonic microbiota population. This study aims to determine the effect of precooked red rice and precooked white rice consumption on fasting blood glucose concentration, Ferric Reducing Ability on Plasma (FRAP) concentration, Escherichia coli, and Lactobacillus populations, and SCFAs digesta in hyperglycemic Wistar rats. This study was conducted using 24 male Wistar rats aged 8 weeks with a bodyweight of 200-220 grams. The rats were divided into 4 treatment groups: healthy (S), hyperglycemic (H), a hyperglycemic diet of precooked red rice (H+BMP), and hyperglycemic rats of precooked white rice diet (H+BPP). Consumption of precooked red rice (BMP) for 6 weeks was shown to reduce fasting blood glucose concentration (57.95%), while consumption of cooked white rice (BPP) actually increased fasting blood glucose concentration (4.16%) in hyperglycemic rats. Consumption of BMP also resulted in higher blood antioxidant capacity than BPP. However, consumption of BMP and BPP had no significant effect on the E. coli population, Lactobacillus population, and SCFAs digesta levels. ABSTRAK Hiperglikemia adalah suatu tanda gangguan metabolisme karbohidrat yang menyebabkan penyakit diabetes. Perbedaan Indeks Glikemik (IG) pada beras merah dan beras putih menyebabkan perbedaan efek pada glukosa darah. Pengolahan beras secara pratanak menyebabkan retrogradasi pati yang dapat membentuk Resistant Starch (RS) sehingga menurunkan IG pada beras. Resistant starch difermentasi menjadi Short Chain Fatty Acids (SCFAs) dan mempengaruhi populasi mikrobiota di kolon. Penelitian ini bertujuan untuk mengetahui pengaruh konsumsi beras merah dan beras putih precooked terhadap konsentrasi glukosa darah puasa, konsentrasi Ferric Reducing Ability on Plasma (FRAP), populasi Escherichia coli dan Lactobacillus, serta SCFAs digesta tikus Wistar hiperglikemia. Penelitian ini dilakukan menggunakan 24 ekor tikus putih Wistar jantan berumur 8 minggu dengan berat badan 200-220 gram. Tikus dibagi menjadi 4 kelompok perlakuan: sehat (S), hiperglikemia (H), hiperglikemia diet beras merah pratanak (H+BMP), dan tikus hiperglikemia diet beras putih pratanak (H+BPP). Konsumsi beras merah pratanak (BMP) selama 6 minggu terbukti menurunkan konsentrasi glukosa darah puasa (57.95%), sedangkan konsumsi beras putih pratanak (BPP) justru meningkatkan konsentrasi glukosa darah puasa (4.16%) pada tikus hiperglikemia. Konsumsi BMP juga menghasilkan kapasitas antioksidan darah yang lebih tinggi dibandingkan BPP. Namun, konsumsi BMP dan BPP tidak berpengaruh nyata terhadap populasi E. coli, populasi Lactobacillus, dan kadar SCFAs digesta. [Penel Gizi Makan 2021, 44(2):93-104]

Abstract

Kurangnya asupan vitamin B12 dapat memengaruhi jaringan saraf karena vitamin B12 berperan penting dalam sistem saraf. Kejadian hipertensi berhubungan dengan fungsi kognitif lansia yang disebabkan oleh proses penuaan yang memicu perubahan tertentu pada lansia, salah satunya adalah penurunan fungsi kognitif. Tujuan penelitian ini adalah untuk menganalisis hubungan antara asupan vitamin B12 dan tekanan darah dengan kejadian demensia pada lansia di Dinas Sosial UPT Pelayanan Sosial Tresna Werdha Jombang. Penelitian ini merupakan penelitian observational analytic dengan desain penelitian cross sectional. Jumlah sampel pada penelitian adalah 53 responden yang dihitung menggunakan teknik purposive sampling. Instrumen yang digunakan dalam penelitian ini adalah kuesioner MMSE (Mini Mental State Examination) untuk mengukur tingkat demensia, form Food Weighing untuk mengukur asupan vitamin B12, dan Sphygmomanometer untuk mengukur tekanan darah. Analisis data dilakukan dengan menggunakan uji Rank Spearman. Hasil penelitian menunjukkan bahwa sebagian besar responden (77,4%) memiliki asupan vitamin B12 yang tergolong kurang, sebanyak 41,1% mengalami hipertensi, dan sebanyak 37,7% responden mengalami probable gangguan demensia. Hasil uji statistik Rank Spearman menunjukan bahwa terdapat hubungan yang signifikan antara asupan vitamin B12 dengan kejadian demensia (p=0,002) dan terdapat hubungan yang signifikan antara tekanan darah dengan kejadian demensia (p=0,000).

Abstract

Gaya hidup, pola makan, stres, dan aktivitas fisik seperti olahraga sangat berdampak pada masalah kesehatan Indonesia saat ini. Prevalensi penyakit degeneratif meningkat sebagai akibat dari perubahan gaya hidup. Penyakit degeneratif meliputi hipertensi, diabetes melitus, stroke, dan gagal ginjal kronis semakin banyak dijumpai di Indonesia setiap tahunnya. Program pengabdian ini dilakukan bertujuan untuk melakukan pemeriksaan kesehatan sebagai tindakan preventif penyakit degeneratif bagi masyarakat Desa Banjaran, Gresik. Pemeriksaan kesehatan yang dilakukan antara lain pemeriksaan tekanan darah, kadar glukosa darah, kadar kolesterol total, dan kadar asam urat. Pemeriksaan kesehatan dilakukan di Balai Desa Banjaran, Gresik dan diikuti sebanyak 23 responden. Pemeriksaan dilakukan menggunakan tensimeter untuk mengukur tekanan darah, sedangkan untuk kadar glukosa darah, kadar kolesterol total, dan kadar asam urat dilakukan menggunakan alat Point of Care Test (POCT) merk Accucheck. Dari hasil pemeriksaan tekanan darah, 44% responden memiliki tekanan darah normal, 17% pre-hipertensi, dan 39% hipertensi. Hasil pemeriksaan glukosa darah sewaktu diketahui 4% responden dengan kadar glukosa darah tinggi, sedangkan 96% responden memiliki kadar glukosa darah normal. Data hasil pemeriksaan kesehatan kadar kolesterol total sebanyak 48% responden memiliki kadar kolesterol total normal sedangkan 52% responden memiliki kadar kolesterol total tinggi. Hasil pemeriksaan kadar asam urat diketahui sebesar 74% responden memiliki kadar asam urat normal dan 26% responden memiliki kadar asam urat tinggi. Hasil pemeriksaan digunakan sebagai bahan konsultasi sebagai bentuk edukasi pentingnya melakukan pemeriksaan kesehatan. Dari hasil edukasi diketahui tingkat pemahaman masyarakat meningkat sebesar 52,17%. Dapat disimpulkan bahwa kegiatan pengabdian ini memberikan dampak positif bagi kesehatan masyarakat Desa Banjaran, Gresik. Lifestyle, diet, stress, and physical activity such as exercise have a significant impact on Indonesia's current health problems. The prevalence of degenerative diseases is increasing as a result of lifestyle changes, especially in big cities. Degenerative diseases including hypertension, diabetes mellitus, stroke, and chronic kidney failure are increasingly found in Indonesia every year. This community service program aims to conduct health checks as a preventive measure for degenerative diseases for the people of Banjaran Village, Gresik. The health checks carried out include blood pressure, blood glucose levels, total cholesterol levels, and uric acid levels. Health checks are carried out using a tensiometer to measure blood pressure, while for blood glucose levels, total cholesterol levels, and uric acid levels, they are carried out using the Accucheck brand Point of Care Test (POCT) tool. The results of the examination are used as consultation material as a form of education on the importance of conducting health checks. From the results of the education, it is known that the level of public understanding has increased by 52.17%. This proves that this community service activity has a positive impact on the health of the people of Banjaran Village, Gresik.

Abstract

Diabetes mellitus (DM) is one of the global health threats, and in Indonesia, the prevalence of DM continues to increase every year. The risk factors for DM that are currently challenging are an unbalanced lifestyle, including the habit of consuming snacks high in sugar. Situation analysis shows that students at Islamic boarding schools have limited knowledge about diabetes and often enjoy snacks without considering their sugar content. On the other hand, sweet potatoes grow abundantly in the environment of the Al-Hikam Bangkalan Islamic boarding school. Sweet potatoes are known to have a low glycemic index and are high in fiber, making them a healthy snack alternative to prevent the risk of diabetes. The purpose of this community service is to introduce healthy snacks for diabetes to prevent the early risk of diabetes among students at PP. Al-Hikam Bangkalan. This community service used an observational analytical method in processing questionnaire data. Activities included counseling on the dangers of DM and healthy anti-diabetic snacks. The Participants consisted of 51 male and female students at PP. Al-Hikam Bangkalan, which began with a pre-test, continued with the delivery of material, and ended with a post-test as an evaluation. The results of the Wilcoxon signed rank test showed an increase in the knowledge of the participants, with a pre-test average score of 31 and a post-test average score of 64, representing a significant increase (P <0.001). The conclusion is that students were able to understand diabetes mellitus and recognize healthy anti-diabetic snacks after receiving counseling, so it is hoped that students can maintain a balanced diet and make healthy snacks as an alternative to snacks so that they can prevent diabetes early on.

Abstract

This research investigates the determinant factors influencing the purchasing decisions of Indonesian students in Taiwan regarding uncertified halal food products. Despite the growing demand for halal products globally, the uncertainty surrounding the halal status of certain food items poses challenges, particularly for Muslim consumers. This study focuses on Indonesian students in Taiwan due to their unique position as international students residing in a country where halal certification may be less prevalent compared to their home country. Data was collected via structured questionnaires distributed among Indonesian students in various universities across Taiwan through a quantitative approach. The study employed multiple regression analysis to examine the relationships between several key variables, including trust, halal awareness, perceived behavioral control, subjective norms, religiousness and attitudes toward purchasing uncertified halal food products. The findings reveal significant insights into the factors influencing purchasing decisions in this context. Trust emerges as a crucial factor, indicating that consumers' confidence in the halal status of products, despite lacking certification, significantly influences their purchasing attitudes. Furthermore, perceived behavioral control plays a significant role, reflecting individuals' perceived ability to access and acquire uncertified halal products. Subjective norms also demonstrate a notable impact, reflecting the influence of social expectations and support from important reference groups. Interestingly, religiousness does not emerge as a significant determinant, suggesting that other factors may overshadow its influence in this context. Trust and perceived behavioral control significantly influence purchasing attitudes and decisions toward uncertified halal food products. In contrast, religiosity and halal awareness have less impact, suggesting the need for further research into additional factors that shape consumer behavior.
