Abstract

Sponge makin banyak menarik perhatian para ilmuwan di seluruh dunia bukan karena potensi bioekologisnya saja tetapi juga karena potensi kosmetik dan biomedis dari molekul-molekul bioaktif maupun biomaterial sponge. Sangat disayangkan, pengetahuan tentang diversitas sponge di wilayah dengan biodiversitas tertinggi di dunia seperti Sulawesi Utara dan Wallacea pun masih sangat miskin dengan sebagian informasi diversitas sponge wilayah-wilayah ini tersebar dalam literatur-literatur ilmiah yang sudah usang dan terfragmentasi. Studi ini bertujuan untuk meningkatkan pengetahuan taksonomi dasar sponge di Sulawesi Utara khusunya di perairan Tahuna Kepulauan Sangihe sekaligus memberikan gambaran umum tentang distribusi dan potensi farmakologis dari sponges yang umum ditemukan di perairan Tahuna. Menggunakan metode acid digestion dan kombinasi mikroskop cahaya dan Corel Draw, kami mengidentifikasi tujuh spesies umum di terumbu karang Tahuna yaitu Agelas nakamurai, Clathria reindwardtii, Ircinia strobilina, Melophus sarasinorum, Speciospohongia vagabunda dan Xestospongia testudinaria. Selain menyentil tentang molekul-molekul bioaktif, tulisan ini juga secara singkat membahas tentang penyebaran ketujuh jenis sponge itu terutama di kawasan Asia Tenggara, selatan Jepang dan Australia untuk memperlihatkan sebaran sekaligus potensi kandungan bioaktif dan biomaterial dari sumberdaya laut amat berharga tetapi terabaikan dalam berbagai program monitoring dan konservasi terumbu karang di Indonesia ini. Sementara M. sarasinorum, S. vagabunda C. reinwardti, dan X. testudinaria terlihat memiliki distribusi sangat luas di wilayah Indo Pasifik, Agelas nakamurai dan I. strobilina sejauh ini baru dilaporkan di perairan Okinawa, Asia Tenggara dan Wallacea meskipun spesies serupa dari kedua genus itu terdistribusi hampir di seluruh Australia. Artikel ini mewakili laporan pertama tentang diversitas, kandungan molekul dan sebaran geografis sponge umum dari perairan Kabupaten Sangihe. Sponges have attracted considerable attention not only because of their bioecological but also due to cosmetical and medical potentials of bioactive compounds and biomaterials from sponges. Unfortunately, the basic knowledge of this impressive marine invertebrate, even in rich biodiversity region such as North Sulawesi, remains poorly known with such information scattered in old and fragmented literatures. This research aimed to increase the basic taxonomic knowledge and medical potential of seven sponges in Tahuna’s coral reefs Sangihe Islands as an step to encourage monitoring and concervation of this key species in coral reef in Sangihe Islands. Using acid digestion method and combination of light microscope and Corel Draw, we identified seven common species in Tahuna’s coral reefs namely reinwardti, Ircinia strobilina, Melophus sarasinorum, Speciospongia vagabunda and Xestospongia testudinaria. In addition to providing a quick review on the distribution of these species especially in South East Asia, southern Japan and Australia, the authors also touched on bioactive compounds produced by these animal isolated by one of the authors either from Sangihe Island’s sponges or sponges from other locations to give an overview of the bioactive potential and geographical distributions of the impressive but ignored marine resource in coral reefs’ monitoring and conservation programs in Indonesia. While sepecies such as M. sarasinorum, S. vagabunda C. reinwardti, and X. testudinaria seem to well distributed in Indopasific, A. nakamurai and I. strobilina are distributed only in south Japan and Wallacea regions although the sibling species of the two sponges have been well reported throughout Australia. This article represents the first report on biodiversity, distribution and bioactive molecules of sponges from Sangihe Islands.

Abstract

Metode pelaksanaan kegiatan ini meliputi tahapan Survei, mengindentifikasi masalah yang ditemui oleh masyarakat nelayan Desa Tawoali dan melakukan pelatihan dan penyuluhan kepada masyarakat nelayan. Selanjutnya diberikan bantuan kepada masyarakat untuk mempermudah kegiatan penanganan di atas kapal dan tahapan terakhir adalah monitoring dan evaluasi pasca pelaksanaan kegiatan pengabdian. Pencapaian hasil kegiatan ini adalah 1) Masyarakat nelayan Desa Tawoali mampu melakukan teknik penanganan yang baik dan benar 2) masyarakat nelayan Desa Tawoali mampu melakukan cara pengesan yang baik dan benar 3) masyarakat nelayan Desa Tawoali mampu melakukan penerapan sanitasi higienis selamam penanganan ikan.

Abstract

Masyarakat Kelurahan Santiago Kecamatan Tahuna Kepulauan Sangihe merupakan daerah yang penduduknya mayoritas bermata pencaharian sebagai nelayan. Kurangnya pengetahuan tentang penanganan hasil perikanan secara efektif dan efisien membuat hasil tangkapan masyarakat nelayan kelurahan Santiago mengalami penurunan kualitas dan itu sangat berpengaruh pada penurunan harga jual. Akibatnya pendapatan dan tingkat kesejahteraan menurun. Kegiatan ini bertujuan untuk memberikan pengetahuan kepada masyarakat nelayan dalam menemukan pemecahan masalah di kelurahan Santiago Kecamatan Tahuna Kepulauan Sangihe. Nelayan harus dibekali dengan pengetahuan bagaimana menangani hasil-hasil tangkapan agar memperolah nilai jual yang relatif tinggi. Salah satu usaha agar produk hasil tangkapan tetap berkualitas adalah penanganan dengan sistem rantai dingin (Cold Chain System) mulai dari pasca panen sampai pada konsumen. Metode yang dilakukan yaitu pelatihan melalui ceramah dan diskusi memberikan pandangan kepada masyarakat akan pentingnya penanganan pasca tangkap untuk mempertahankan mutu dalam keadaan dingin sehingga tidak mudah busuk.

Abstract

Kelompok pengolah Soa dan kelompok pengolah Sahabe berada di Desa Kendahe Kecamatan Kendahe Kabupaten Kepulauan Sangihe Sulawesi Utara. Kelompok mitra pernah mengolah amplang ikan berbahan dasar ikan Tenggiri. Permasalahannya muncul pada saat bahan baku amplang ikan (ikan tenggiri) sulit ditemukan. Oleh karena itu perlu adanya alternatif dari bahan baku lain. Permasalahn lainnya adalah kemasan amplang ikan yang digunakan oleh mitra belum layak karena kemasan yang digunakan hanyakemasan plastik biasa. Metode pelaksanaan kegiatan ini meliputi tahapan survey, dilakukan untuk mengetahui berbagai persoalan kelompok pengolahan amplang Soa dan kelompok pengolahan amplang Sahabe. Penyuluhan, pengolaha amplang ikan dilakukan kepada kelompok pengolahan ikan Soa dan kelompok pengolahan Sahabe.Tahapan pelatihan, dilakukan pelatihan pengolahan cara berproduksi yang baik dan benar untuk memberikan pemahaman kepada pengolahan amplang ikan dalam meningkatkan kualitas produk yang dihasilkan serta pemberian bantuan alat pengolahan. Tahapan monitoring dan evaluasi, dilakukan pendampingan berupa monitoring dan evaluasi dari pelaksanaan pasca kegiatan pengabdian. Pencapaian hasil kegiatan ini adalah 1) kelompok pengolahan Soa dan Sahabe memperoleh pengalaman dan pengetahuan tentang pengolahan amplang ikan dan diversifikasi hasil perikanan lainnya 2) kelompok pengolahan Soa dan Sahabe cukup menerapkan Good Manufacturing Practice dan sanitasi dan hygeine dalam mengolah produk sehingga diperoleh produk yang sesuai standar nasional indonesia 3) kelompok pengolahan Soa dan Sahabe mendapat pengetahuan dan ketrampilan dalam proses pengemasan secara vacum namun belum mampu mengaplikasikannya 4) kelompok pengolahan Soa dan Sahabe belum mampu melakukan kewirausahaan secara mandiri.

Abstract

Kolam terpal merupakan wadah budidaya ikan yang tepat untuk pembesaran ikan nila karena berbagai keunggulannya seperti kemudahan memindahkan, keramahan terhadap konstruksi tanah, kesesuaian dengan karakteristik ikan nila, kemudahan membersihkan kolam dan memanen ikan. Kegiatan pengabdian kemitraan masyarakat ini menyasar kelompok-kelompok masyarakat di Kampung Tariang Lama, Kecamatan Kendahe yang masyarakatnya sulit mendapatkan ikan disaat cuaca buruk di laut. Pengabdian kepada masyarakat ini mencakup kunjungan lapangan (survei), penyuluhan, pelatihan, evaluasi, dan pemantauan pasca penyuluhan dan pelatihan. Sejauh ini, kelompok masyarakat sasaran pengabdian di Kampung Tariang Lama sudah mampu merancang, membuat sendiri kolam, dan mampu membudidayakan ikan nila menggunakan kolam terpal. Selanjutnya, hasil evaluasi dan pemantuan menunjukan bahwa masyarakat Tariang Lama tidak menghadapi kendala berarti dalam membudidayakan ikan di kolam terpal. Sebagian dari mereka bahkan berusaha merancang dan membangun sendiri kolam terpal secara mandiri hal ini merupakan indikasi kuat dari keterbukaan dan penerimaan masyarakat Tariang Lama terhadap penerapan teknologi budidaya ikan yang masih relatif baru untuk masyarakat Tariang Lama ini. Tarp-typed pond or tarpaulin pond is an appropriate medium for cultivation of Nile tilapia because of its many advantages including (1) easily moved from one place to another,(2) friendly toward soil construction, (3) suitable with tilapia’s characteristics and (4) very convenient forcleaning and harvesting. This community service focused on societal groups in Tariang Lama Village, Kendahe district whose society normally have difficulty in obtaining fish during stormy sea. This community service consisted of (1) field survey, (2) mentoring, (3) training and (4) evaluation/monitoring. The targeted societal groups in Tariang Lama were already capable of designing, building their own tarp-typed pool and cultivating Nile tilapia with tarpaulin pond. In addition, evaluation and monitoring showed that the people of Tariang Lama had no problem in adopting fish cultivation technique with tarpaulin pond. Many of them even designed and built their own tarp-typed pond, strongly suggesting the openness and acceptance of the people of Taring Lama towards the implementation of the relatively new fish farming technique.

Abstract

By product that rich in protein such as fish roes are potential as raw material for protein concentrate. This research aimed to utilize skipjack roes to produce protein concentrate and to characterize its functional properties. The method used to extract protein was defatting method using isopropyl alcohol and ethanol with extraction times of 1, 2, and 3 hours.  The results showed that skipjack roes contained 19.81% of protein, 3.41% of fat, 71.32% of moisture, 2.04% of ash, and 1.53% of carbohydrate (by difference). Defatting method using isopropyl alcohol for 3 hours produced the best roe protein concentrate (RPC).  The product meets to the quality requirements of fish protein concentrate type B, contained protein and fat of 71.79% and 2.78%, respectively. This product also had functional properties as follows: water absorption capacity (1.57 ml/g), oil absorption capacity (1.82 g/g), emulsion capacity (81.65%), bulk density (0.51 g/ml), foaming capacity (1.90 ml), foaming stability (0.22 ml) and protein digestibility (95.86%).  Lysine and leucine became the major essential amino acid of RPC, with values were 70.76 and 64.91 mg/g protein, respectively. The composition of amino acids of RPC skipjack consisted of 8 essentials amino acids, 5 non-essentials amino acids and 2 semi-essentials amino acids. Abstract

Squid (Loligo sp.) is one of fisheries commodities export in Indonesia. Squid has cartilage that can be utilized in the food and non-food sectors. The inner skin of the squid cartilage contains chemical compounds are chitin and chitosan. The objectives of this research are to produce chitosan from squid cartilage and tested the antibacterial effectiveness of chitosan in bacteria Staphylococcus aureus and Escherichia coli. The research method was carried out in twophase; the manufacturing phase of chitosan from squid cartilage and the testing phase for the antibacterial activity of chitosan. The results of the first phase of this study indicate that the chitosan produced meets the quality standards of chitosan with water content 7.82% (bk), ash content 0.57% (bk), nitrogen content 3.18% (bk) and degree of deacetylation 87.43%. Further more the results obtained in the second phase showed that the higher of chitosan concentration, the greater of inhibition zone in the tested bacteria. The best antibacterial activity was found at 0.8% chitosan concentration, with an inhibition zone of 12.8 ± 0.06 mm in E. coli and 11.1 ± 0.12 mm in S. aureus. At a concentration of 0.8% showed a greater inhibitory value when compared to 70% alcohol.

Abstract

Solar dryer is a device that use solar energy to try substances. Using a solar dryer is more hygiene than drying directly into the sun. This experiment aims to construct a solar dryer device and to examine product water content. There are some steps in this experiment which are constructing a solar dryer device and examination of the product water content of two different solar device construction. Products that examined are mackerel tuna dried with salt and without salt. Water content examination is established every 4 hours and 12 hours. All data are examined descriptively. Results showed that temperature in device type 1 are between 40-45 0C dan device type 2 are between 44-45 0C. Results for water content in salted dry fish showed a score of 37.99% in device type 1 and 30.27% in device type 2. For water content in non-salted dry fish showed a score of 38.4% in device type 1 and 27.35% in device type 2. Base on this it can be concluded that device type 2 able to lower water content in products better than device type 1.

Abstract

Calcium is one of the important minerals in the physiological regulation of the immune system. Until now, tuna bone waste has not been widely used to fulfill human health needs. This study aims to obtained a high calcium sago cookies formulation by utilizing local resources, like seaweed (Caulerpa sp.) and tuna bone. Research methods include 1). Production of tuna bone porridge; 2). Production of lahe (Caulerpa sp.) porridge; 3). Production of sago flour; 4). Production of sago cookies; and 5). We were testing the chemical and physical quality of sago cookies. The univariate analysis showed that formula 1 sago cookies was preferred by the panelists and was close to the control formula. The chemicals analysis of the formula 1 sago cookies showed carbohydrates (57.95 ± 0.06%); water (5.09 ± 0.04%); fat (25.93 ± 0.08%); ash (5.90 ± 0.04%); protein (5.14 ± 0.10%); total energy (485.67 ± 0.05 kcal/100 g); energy from fat (233.33 ± 0.70 kcal/100 g); insoluble dietary fiber (20.29 ± 0.01 %); calcium (998.64 ± 8.60 mg/100 g); and phosphorus (5765.35 ± 40.36 mg/kg). The present findings confirm that panelists prefer the formula 1 sago cookies with a chemical composition according to quality requirements Indonesia National Standard (SNI 2973:2011) and nutritional adequacy recommended for Indonesian people (AKG 2019). In addition, the chemical composition contained in prototype sago cookies of formula 1 has the potential to become a high-calcium snack.

Abstract

ABSTRAKSemi Refined Carrageenan merupakan salah satu produk carrageenan dengan tingkat kemurnian lebih rendah dibandingkan dengan refined carrageenan. Semi Refined Carrageenan merupakan tepung hasil ekstraksi rumput laut jenis Kappaphycus alvarezii berwarna putih kekuningan, dapat membentuk gel sehingga sangat berperan dalam industri makanan dan obat-obatan. Tujuan penelitian untuk mendapatkan konsentrasi pelarut KOH dan NaOH yang tepat dalam proses ekstraksi tepung Semi Refined Carrageenan rumput laut Kappaphycus alvarezii. Metode yang digunakan dalam penelitian ini adalah metode eksperimental, yaitu mengekstraksi Kappaphycus alvarezii menggunakan larutan alkali KOH dan NaOH yang direndam selama 4 menit. Hasil yang diperoleh menunjukkan bahwa rendemen tertinggi terdapat pada larutan KOH 5% (56,10%) dan larutan NaOH 3% (42,29%), kadar air pada larutan KOH 5% (15,45%) dan larutan NaOH 1% (16,50%), kadar abu larutan KOH  4% (4,85%) dan larutan NaOH 2% (3,50%), nilai pH terbaik terdapat larutan KOH 3% (8,14) dan larutan NaOH 3% (8,01) dan viskositas laju alir pada larutan KOH 3% (36,50 mL/detik) dan larutan NaOH 3% (38,10 mL/detik). Dari hasil penelitian dapat disimpulkan bahwa rendemen tertinggi terdapat pada larutan KOH 5% dan larutan NaOH 3%.Kata Kunci: alkali, carrageenan, KOH, Kappaphycus alvarezii, NaOHABSTRACTSemi Refined Carrageenan is a carrageenan product with a lower level of purity compared to refined carrageenan. Semi Refined Carrageenan is flour extracted from Kappaphycus alvarezii type of seaweed, yellowish white in color, can form a gel so that it plays a very important role in the food and medicine industry. The aim of the study was to obtain the correct concentration of KOH and NaOH solvents in the extraction process of Kappaphycus alvarezii seaweed Semi Refined Carrageenan flour. The method used in this study is an experimental method, namely extracting Kappaphycus alvarezii using an alkaline solution of KOH and NaOH soaked for 4 minutes. The results obtained showed that the highest yield was found in 5% KOH solution (56.10%) and 3% NaOH solution (42.29%), water content in 5% KOH solution (15.45%) and 1% NaOH solution ( 16.50%), ash content of 4% KOH solution (4.85%) and 2% NaOH solution (3.50%), the best pH values were 3% KOH solution (8.14) and 3% NaOH solution (8 0.01) and the viscosity of the flow rate in 3% KOH solution (36.50 mL/second) and 3% NaOH solution (38.10 mL/second). From the results of the study, it can be concluded that the highest yield is found in 5% KOH solution and 3% NaOH solution.Keywords : alkali, carrageenan, KOH, Kappaphycus alvarezii, NaOH
