Abstract

Chitosan has gained high interest in recent times to extend the shelf-life of fish product due to its nontoxicity, biodegradability, biocompatible and antibacterial activity. This research was aimed to determine the antibacterial effect of chitosan on the shelf-life of tilapia fillets at room temperature storage (25-27 oC). This study used a actorial randomized design (RAF) with two factors, namely antibacterial treatment consisting of 3 levels (positive control with distilled water immersion on tilapia fillets, immersion of tilapia fillets with 0.8% chitosan and negative control with 10 ppm chlorine immersion in tilapia fillet) and observation time consisted of 3 levels (0 hours, 6 hours and 12 hours observations). Antibacterial treatment consisted of  3 levels, namely. Each treatment was carried out in three replications. The data were analyzed using analysis of variance (ANOVA) and the duncan multiple range test (DMRT) at a 95% confidence level. The results of the research showed that chitosan was able to suppress bacterial growth and suppress the increase in TVB values at room temperature storage for 12 hours, indicated by the significant difference in the total number of bacteria and TVB values with chlorine and controls (p<0.05). These indicated that chitosan has a function as a natural antibacterial to replace chlorine in the shelf-life extension of tilapia fillets.

Abstract

The tebiyama is an alternative for producing wooden fish in the islands such as ’Nusa Utara’ which is abundant in the production of small pelagic fish, especially Decapterus sp. and Euthynnus affinis. The purpose of this study was to see the chemical quality of wooden fish produced using by tebiyama. The stages consist of the preparation stages including weighing, cutting, washing, boiling, removing the bones, drying 1 and drying 2. Furthermore, the fish is smoked using a tebiyama for 30 hours at 60-65oC, every 10 hours the fish is rested for 24 hours. The wooden fish was calculated yield and proximate. The yield results were obtained for Decapterus sp. by 35,9% and Euthynnus affinis by 42,9%. The proximate (moisture, protein, fat and ash) showed that the wooden fish from Decapterus sp. had a moisture content of 16.16%, a fat content of 7.81%, a protein content of 70.02% and an ash content of 2.31% while the wooden fish from Euthynnus affinis had a moisture content of 16.06. %, fat content 10.12%, protein content 70.72% and ash content 2.5%. The moisture content of wooden fish produced with the tebiyama meets SNI 2691.1-2009.

Abstract

Mangrove memainkan peran sangat krusial bukan saja sebagai pelindung pesisir pantai tetapi juga sebagai tempat perkembangbiakan dan hunian beragam organisme dan sebagai sumber berbagai bahan bioaktif berpotensi medis. Kerusakan vegetasi mangrove di Kampung Salurang Kabupaten Sangihe yang merupakan daerah hilir akibat aktivitas tambang di daerah hulu menyebabkan penurunan drastis hasil tangkapan ikan di kampung Salurang dan musnahnya berbagai sumber bahan bioaktif potential. Kegiatan pengabdian masyarakat ini bertujuan memulihkan vegetasi mangrove yang telah rusak di kampung Salurang. Tahapan kegiatan pengabdian meliputi (1) survei dan konsultasi dengan pemerintah kampung untuk menentukan lokasi penanaman dan tanggal pemberian materi penyuluhan, (2) pendampingan untuk pembibitan mangrove oleh tim kepada masyarakat, (3) pelaksanaan kegiatan mencakup pemberian materi kepada masyarakat termasuk pemuda dan siswa sekolah menengah pertama dan penanaman mangrove bersama masyarakat. Hingga saat ini, sekitar 76% dari 95% mangrove yang ditanam tumbuh dengan baik dan pertumbuhannya masih terus dipantau. Kegiatan ini memiliki implikasi penting bukan saja untuk lingkungan dan kehidupan masyarakat pesisir tetapi juga untuk melindungi organisme simbion mangrove maupun mangrove itu sendiri sebagai sumber berbagai bahan bioaktif potensial.

Abstract

Konsentrat protein ikan (KPI) adalah bentuk protein kering yang diekstrak dari daging ikan menggunakan pelarut organik seperti etanol. Tujuan penelitian ini adalah mengekstraksi KPI dari daging ikan sunglir dengan menggunakan pelarut etanol dan menentukan kualitas sesuai standar mutu KPI serta menganalisis asam aminonya. Bahan utama yang digunakan dalam penelitian ini adalah daging ikan sunglir dan pelarut etanol teknis. Tahapan penelitian meliputi (1) ekstraksi KPI dan (2) menentukan standar mutu KPI ikan sunglir dan analisis asam amino. Data yang diperoleh dibahas secara deskriptif. Hasil penelitian menunjukkan bahwa nilai rata-rata rendemen KPI berkisar 20%. Karakteristik sesuai standar FAO 1976 meliputi kadar protein (85,34%), kadar lemak (3,28%), bau (2,11 : bau ikan kuat) dan derajat putih (53,54%) sehingga tergolong KPI tipe B. Analisis kadar air (6,34%), kadar abu (7,47%), sifat fungsional : daya serap minyak (2,48 g/g) dan daya serap air (2.02 ml/g). KPI mengandung 9 asam amino esensial dan 6 asam amino non esensial.

Abstract

Bebalang Village is located in South Manganitu District, Sangihe Islands Regency, North Sulawesi. Bebalang Village is surrounded by the sea, so there are many coral reefs as a place for fish to live. Bebalang Village has huge fisheries potential, especially for pelagic fish such as flying fish (Decapterus sp.) with the local name malalugis. Generally, fishermen in Bebalang Village process malalugis fish into salted fish. However, salted fish processing in Bebalang Village still needs to be improved due to a lack of infrastructure, technology, and inadequate knowledge. In addition, sanitation and hygiene during processing could be more optimal, affecting the quality and safety of processed products. This study aims to evaluate the quality of salted fish produced by fishermen in Bebalang Village. The method used in this research is descriptive quantitative. Salted fish test parameters are proximate, salt level, total bacteria and total fungi. Based on the test results of Kampung Bebalang salted fish, the moisture content ranged from 37.31-41.23%; protein ranged from 46.82-50.13%; salt level ranged from 10.66-15.58%; ash content from 12.25-13.58%; total bacteria between 2.6-4.8×103 CFU/gram; and total fungi which ranged from 5.2-9.5×102 CFU/gram.

Abstract

Together with bacterial and viral infection, fungal infection represents the world's top ten killer diseases, desperately requiring new antifungal drugs. This research aimed to evaluate the antifungal activity of the sponge Styllisa flabelliformis against the pathogenic fungi Aspergillus flavus and Aspergillus parasiticus by the standard agar diffusion technique. Three concentrations (1, 10, and 10 mg/mL) for the extract and 0.5 mg/mL for ketoconazole and fluconazole were prepared and evaluated in triplicate against the tested fungi. Whereas ketoconazole poorly inhibited A. parasiticus and fluconazole weakly inhibited A. flavus, the extract of S. flabelliformis exerted antifungal activity against A. parasiticus (6.8 ± 1.8; 8.3 ± 3.2; and 9.5 ± 2.1) mm and A. flavus (6.8 ± 1.1; 11.5 ± 1.4; and 14.3 ± 1.1) mm 1, 10 and 100 mg/mL respectively. PASS analysis showed jasplakinolide as a promising antifungal agent with potential activity (Pa) of 0.736. STITCH analysis further confirmed that jasplakinolide worked by inhibiting the expression of cytoskeleton genes that prevented fungi from synthesizing chitin and inhibiting the formation of the fungi’s cell walls and hyphae, different from the ergosterol synthesis inhibition in ketoconazole and fluconazole, implying the potential of jasplakinolide as an antifungal agent.

Abstract

Dry noodles, commonly produced from wheat flour, have been associated with health issues, including obesity, when consumed in excess. Moreover, reliance on imported wheat flour requires local alternatives to enhance its acceptability within the community. This study aimed to evaluate the physical characteristics of dry noodles incorporating a blend of wheat flour, sago flour, and seagrape flour (Caulerpa racemosa). The study involved experimental treatment with varying amounts of added seagrape flour (0, 5, 10, 15, and 20 g). Additionally, the study evaluated the proximate composition of seagrape and sago flour was sourced from Sangihe Islands. The physical attributes analysed in the combined dry noodles included the moisture content, water absorption, cooking loss, and cooking time. Proximate analysis of seagrape flour revealed carbohydrate content of 47.83%, protein 19.78%, ash 17.83%, moisture 12.37%, and fat 2.19%. Sago flour had a proximate content of 87.45% carbohydrates, 11.7% moisture, 0.42% protein, 0.32% ash, and 0.11% fat. The moisture content of the combined dry noodles ranged from 6.83 to 7.83%, water absorption from 72.73 to 90.27%, cooking loss from 8.23 to 13.27%, and cooking time from 7.00 to 7.09 minutes. In conclusion, seagrape flour in the formulation influenced the water absorption and cooking loss of dry noodles prepared from wheat and sago flours. However, the combined dry noodles had no significant impact on the moisture content and cooking time.

Abstract

Sea bamboo (Isis hippuris) is one of the octocorallia which is reported to produce unique biological activity and is beneficial for pharmaceutical development. Evaluation of the bioactive compounds of sea bamboo collected from Sulawesi (Celebes) waters has never been reported. Gas chromatography and mass spectrometry (GC-MS) are convenient methods for evaluating bioactive compounds. This study aims to evaluate bioactive compounds from extracts of sea bamboo from Sulawesi by GC-MS method and predict their activity computationally. Samples of sea bamboo were collected from Kabonga Besar Coast, Palu Bay, Central Sulawesi, Indonesia. Samples were extracted by maceration method using methanol: dichloromethane solvent. GC-MS evaluated bioactive compounds from sea bamboo extracts. The antioxidant activity was determined by the DPPH scavenging method, compared with Vitamin E. The biological activity of Celebes sea bamboo extracts was predicted with PASS prediction. GC-MS evaluation identified nine alkaloid-derived and phenolic-derived compounds, namely tetramethyldiaminoethane; dimethylisopropanolamine; crotonic acid, (E)-; 2,4-dimethylpyrrole; 1-(carboxymethyl)pyridinium chloride; pyridine, 3,4-dimethyl-; 3,5-dithiahexanol 5,5-dioxide; N-Nitroso-2-methylthiazolidine; and (-)-cis-carveol. The Celebes sea bamboo extracts have strong antioxidant activity. These compounds are predicted to have antioxidant abilities, closely related to their role as NADPH-oxidase inhibitors.

Abstract

Stunting is a health problem that still receives serious attention from the government. Stunting has a negative impact on children's cognitive and physical development and can increase the risk of morbidity in adulthood. One of the community organizations that helps prevent stunting in the family environment is the Family Health Empowerment Group (PKK). According to the results of interviews with PKK administrators, education about stunting has been carried out in the Tahuna District. However, they still do not understand the explanation of stunting prevention. Therefore, stunting prevention education needs to be carried out in Tahuna Subdistrict, especially Soataloara 1, Mahena, and Santiago Villages. This community service activity aims to provide prevention education to prevent stunting in PKK women's groups in Tahuna District, Sangihe Islands Regency. The method of implementing this activity includes the stages of initial survey, preparation, and implementation. Before attending the stunting prevention counseling, the average value of knowledge of PKK mothers was only 68. However, after attending the counseling, the average value increased to 85. Stunting prevention education is presented in the form of PowerPoint presentations and videos. This is very effective in helping individuals understand difficult concepts and encourage them to learn more. This community service activity can increase the knowledge of PKK mothers about stunting prevention.

Abstract

The quality of workers' health will decrease when there is no protection of occupational safety and health (K3). The decreasing quality of health will certainly have an impact on worker productivity, decreased job satisfaction and even increased the risk of work accidents. K3 counseling for members of the Sangihe Mang Sunaung Cooperative, namely to provide knowledge and skills for cooperative members in implementing a safe and healthy work environment and behavior. This activity is carried out in several stages, namely initial exploration and observation, coordination and determination of implementation, implementation and evaluation. The evaluation results showed an increase in participant knowledge after the K3 counseling was carried out. The post-test scores of participants were higher than the pre-test scores. This shows that the K3 counseling activities can be well understood and have a positive impact on increasing the knowledge of Sangihe Mang Sunaung cooperative members about occupational safety and health (K3)
