The nutritional status of under-five children in Indonesia remains low, including in North Maluku province. Based on the results of the 2021 SSGI, the prevalence of stunting among under-five children in this province is 27.5%. This figure is higher than the national prevalence of 24.4%. North Maluku has abundant potential for tuna fish that can be utilized in the development of local food that supports nutritional interventions for children. The recent study reported that as many as 86.7% of children aged 12 – 24 months consumed processed foods like nuggets, sausages, and meatballs. Most consumers (98.67%) also showed a high interest in consuming nuggets that contain higher protein and mineral content. The addition of moringa leaf vegetables and carrots to nuggets will increase the nutritional content of nuggets which can increase nutritional intake for children. This study was an experimental study that aimed to determine the shelf life of tuna fish nuggets substituted with moringa leaves and carrots using the Extended Storage Studies (SES) method. SES method was used to determine the shelf life of tuna fish nuggets substituted with moringa leaves and carrots by looking at the organoleptic quality which includes aroma, color and texture. Observations were made in February-March 2021 for 60 days at the Laboratory of Food Science, Poltekkes Ternate. Changes in quality began to occur on the 35th day of observation, namely the texture of the nuggets began to not be crunchy. While the observation of color and aroma did not change until the 60th day of observation. In conclusion, the shelf life of tuna fish nuggets substituted with Moringa leaves and carrots is up to 30 days.

Posyandu cadres play an important role in assisting Public Health Center in carrying out the functions of implementing health efforts and have a strategic position to prevent stunting problems, especially in time the Covid-19 pandemic. This study aimed to describe the implementation of Integrated Health Post (Posyandu) in the working area of ​​the Campalagian Health Center during the Covid-19 pandemic in 2020. This study qualitative used a phenomenology approach which was carried out in the working area of ​​the Campalagian Health Center in July - September 2020. A total of 10 Posyandu cadres were the main informants. Data were collected through in-depth interviews for 60 – 90 minutes conducted at the homes of Posyandu cadres while still paying attention to health protocols. Cadres did not carry out Posyandu in April and May 2020 following local government regulations or in certain months when there was an increase in cases of Covid-19 in the area. In implementing the Posyandu during the pandemic, cadres made several innovations such as setting up emergency handwashing facilities, arranging visit schedules, and the distance of waiting chairs at the Posyandu, requiring them to bring their own sharoong from home for weighing toddlers and disinfecting the Posyandu room. In conclusion, cadres make innovations in the implementation of Posyandu during the pandemic such as preparing emergency hand washing facilities, arranging visit schedules and waiting chair spacing at Posyandu, requiring them to bring their own gloves and disinfecting the Posyandu room. The implementation of Posyandu during the Covid-19 pandemic can prevent an increase in nutritional problems in mothers and stunting problems in toddlers. Therefore, the local government is expected to support the implementation of Posyandu routinely such as ensuring the availability of PPE for posyandu cadres, mothers and toddlers. So that Posyandu can still be implemented while still observing health protocols.

Persentase ASI eksklusif di Puskesmas Botania selama 3 tahun terakhir masih belum mencapai target. Penelitian ini bertujuan untuk mengetahui faktor determinan pemberian ASI eksklusif di wilayah kerja Puskesmas Botania, Kota Batam. Penelitian ini adalah penelitian kuantitatif dengan pendekatan cross-sectional. Populasi adalah ibu yang memiliki anak usia 6-12 bulan yang berjumlah 469 ibu. Teknik pengambilan sampel menggunakan simple random sampling dengan jumlah sampel sebanyak 87 ibu. Analisis data dilakukan secara univariat, bivariat dengan uji chi-square dilanjutkan dengan uji multivariat menggunakan regresi logistik berganda dengan bantuan perangkat lunak SPSS 16.0. Hasil studi menunjukkan proporsi anak dengan ASI eksklusif sebesar 46%. Variabel yang berhubungan dengan ASI eksklusif adalah pengetahuan (AOR=3,89; 95%CI 1,50-10,02) dan dukungan petugas kesehatan (AOR=2,97; 95%CI 1,13-1,77). Analisis multivariat menunjukkan pengetahuan merupakan faktor dominan. Penelitian ini menyimpulkan bahwa ada hubungan pengetahuan ibu dan dukungan petugas kesehatan terhadap pemberian ASI eksklusif. Pengetahuan merupakan faktor dominan yang berhubungan dengan perilaku pemberian ASI eksklusif pada anak sehingga diperlukan pelatihan sebagai upaya meningkatkan pengetahuan ibu tentang ASI eksklusif. Selain itu, kunjungan petugas kesehatan kepada ibu penting dalam memotivasi ibu untuk memberikan ASI eksklusif kepada anaknya

Case Detection Rate (CDR) for TB cases in Mamuju Regency continues to increase every year. Data shows that in 2013 it was 110.63%, in 2014 it was 110.8%, in 2015 it was 147.02%, and 117.24% in 2016. In the incidence of pulmonary TB, the house is a factor that is widely studied because the house is thought to have a risk factor that influences the incidence of pulmonary TB in humans. This community service is carried out in the form of counseling and education about the management of the physical home environment for patients with pulmonary TB. This activity aimed to improve the abilities and skills of the trainees in managing the physical home environment for pulmonary TB patients. The extension method was in the form of lectures, discussions, and demonstrations of measuring light, humidity, and room temperature. A total of 25 participants were involved in this activity. The evaluation was carried out in the form of pre and post-test which contained 10 questions. Based on the post-test results, it was found that there was an increase in knowledge of 38.8%. Health workers need to provide regular assistance to families of TB patients so that there is a sustainable change in behavior related to the management of the household's physical environment. ABSTRAK Case Detection Rate (CDR) untuk kasus TB di Kabupaten Mamuju terus mengalami peningkatan setiap tahunnya. Data 2013 sebesar 110.63%, tahun 2014 tercacat 110.8%, tahun 2015 sebesar 147.02% dan 117.24% pada tahun 2016. Pada kejadian TB paru, rumah merupakan faktor yang banyak diteliti karena rumah diduga mempunyai faktor risiko yang berpengaruh besar terhadap kejadian TB paru pada manusia. Pengabdian masyarakat ini dilakukan dalam bentuk penyuluhan dan edukasi tentang pengelolaan lingkungan fisik rumah pada penderita TB Paru. Kegiatan ini bertujuan untuk meningkatkan kemampuan dan ketrampilan peserta pelatihan dalam pengelolaan lingkungan fisik rumah pada pasien TB Paru. Metode penyuluhan dalam bentuk ceramah, diskusi dan demonstrasi pengukuran cahaya, kelembaban udara dan suhu ruangan. Sebanyak 25 peserta terlibat dalam kegiatan ini. Evaluasi dilakukan dalam bentuk pre dan post-test yang berisi 10 pertanyaan. Berdasarkan hasil post-test diperoleh bahwa terjadi peningkatan pengetahuan sebanyak 38,8%. Petugas kesehatan perlu melakukan pendampingan secara rutin pada keluarga penderita TB agar terjadi perubahan perilaku yang berkelanjutan terkait pengelolaan lingkungan fisik rumah tangga.

The coverage of exclusive breastfeeding in the working area of the Hiang Health Center is still low. Family support and support from health workers such as midwives are very influential in the breastfeeding practice. Therefore, this study aimed to examine the relationship between family support and support from health workers in exclusive breastfeeding. This research was an analytical observation with a cross-sectional approach which was carried out in the working area of the Hiang Health Center, Kerinci Regency, Jambi in April-May 2021. Data processing was carried out with univariate and bivariate analysis using the chi-square test. The results showed that lack of family support, especially in-laws was 4,07 times at risk (95% CI: 1,81-9,12) and lack of support from health workers was 3,46 times at risk (95% CI: 1,50-7,96). These two factors were inhibiting factors in exclusive breastfeeding. Health workers need to improve breastfeeding education and counseling services and involve husbands and in-laws in these activities so that they will support mothers in the practice of exclusive breastfeeding.

Stunting masalah gizi utama pada anak di Indonesia dan pemberian makanan prelakteal pada bayi adalah salah satu faktor risikonya. Berdasarkan laporan SDKI tahun 2012 bahwa sebanyak 60,3% bayi mendapatkan makanan prelakteal. Kepercayaan, tradisi, adat, dan budaya pada suatu masyarakat adat dapat mempengaruhi praktik pemberian prelakteal pada suatu kelompok masyarakat. Penelitian ini bertujuan untuk menggali informasi tentang pemberian makanan prelakteal di masyarakat adat Kaluppini. Dengan pendekatan kualitatif, sebanyak 67 ibu balita yang terlibat sebagai informan. Pengumpulan data dilakukan dalam bentuk wawancara mendalam dan FGD yang direkam dan ditranskripsi verbatim. Analisis data dilakukan mulai dari proses pengkodean data lalu dikategorisasi hingga menjadi sebuah tema. Penelitian ini dilakukan pada bulan Januari – Mei 2018 di masyarakat adat Kaluppini yang terletak di Kabupaten Enrekang, Provinsi Sulawesi Selatan. Dari penelitian ini diperoleh bahwa praktik pemberian prelakteal masih banyak dilakukan oleh para. Dukun anak dan tradisi yang kental pada masyarakat tersebut menjadi salah satu faktor banyak ibu yang memberikan prelakteal. Sebagian besar ibu memberikan air putih, air kelapa, air tajin, madu, dan kopi pada tiga hari pertama kelahiran bayi. Masyarakat adat Kaluppini percaya bahwa dengan memberikan madu di awal kelahiran dapat memperkuat daya tahan tubuh bayi dan tetap sehat hingga dewasa. Hal ini menjadi tantangan tersendiri dalam upaya meningkatkan cakupan ASI eksklusif dalam upaya pencegahan stunting. Sehingga diperlukan pendekatan yang lebih inovatif dalam melakukan konseling menyusui dan pemberian makanan pada bayi dan dengan tetap memperhatikan kearifan lokal yang ada pada masyarakat.

Abstrak: Angka kejadian stunting masih cukup tinggi di Sulawesi Barat yaitu sebesar 40,38% dan menempatkan provinsi ini menjadi provinsi tertinggi kedua di Indonesia yang memiliki balita stunting. Salah satu intervensi sensitif pada upaya pencegahan stunting adalah konseling menyusui yang dapat meningkatkan cakupan pemberian ASI Eksklusif. Tujuan kegiatan untuk meningkatkan keterampilan konseling pada kader Posyandu di daerah lokus stunting. Kegiatan ini dilaksanakan di Desa Laliko sebagai salah satu desa lokus stunting di Kecamatan Campalagian, Kabupaten Polewali Mandar, Sulawesi Barat. Mitra pada kegiatan ini adalah 12 kader Posyandu dan 22 ibu baduta. Adapun metode yang digunakan yaitu penyuluhan dalam bentuk ceramah, diskusi dan role-play . Materi yang diberikan tentang manfaat ASI Eksklusif dan keterampilan konseling dan disampaikan oleh tim Pengabdian Masyarakat Jurusan Gizi Poltekkes Kemenkes Mamuju. Kader dilatih dan melakukan identifikasi masalah dan role-play konseling secara langsung pada ibu balita. Pengabdian masyarakat ini berhasil meningkatkan pengetahuan dan keterampilan konseling pada kader serta meningkatkan rasa percaya diri mereka .Abstract: The prevalence of stunting is still quite high in West Sulawesi, which is 40.38%. It places this province as the second-highest province in Indonesia with stunted children. One of the sensitive interventions in stunting prevention is breastfeeding counseling which can increase the coverage of exclusive breastfeeding. The purpose of the activity was to improve counseling skills for Posyandu cadres in the stunting locus area. This activity was carried out in Laliko Village as one of the stunting locus villages in Campalagian District, Polewali Mandar Regency, West Sulawesi. The subjects of this activity were 12 Posyandu cadres and 22 under-two mothers. The methods used were lectures, discussions, and role-play. The material provided was about the benefits of exclusive breastfeeding and counseling skills and delivered by the Community Service Team of the Nutrition Department, Mamuju Health Polytechnic. Cadres were trained and carried out problem identification and role-play counseling directly to under-five mothers. This community service had succeeded in increasing the knowledge and counseling skills of cadres and increasing their self-confidence.

Abstrak: Masa balita merupakan periode growth spurth dimana pertumbuhan dan perkembangan otak pada balita terbentuk secara yang optimal. Masalah gizi pada balita akan menghambat growth spurth. Kekurangan gizi pada masa balita akan dapat menyebabkan gangguan serius bagi perkembangan otak yang mengakibatkan tingkat kecerdasan anak terhambat. Kegiatan pengabdian ini bertujuan untuk meningkatkan pengetahuan dan keterampilan kader Posyandu dan ibu balita dalam mengolah bahan pangan lokal dalam pengolahan pangan lokal tersebut untuk memperbaiki status gizi balita. Metode yang digunakan adalah ceramah, diskusi dan demonstrasi pembuatan makanan berbasis ikan tuna, sebagai salah satu pangan lokal khas Kota Ternate. Kader lalu melakukan pendampingan pada keluarga balita gizi kurang sebagai salah satu bentuk evaluasi. sebanyak 51,07% balita mengalami penambahan berat badan. Balita yang tidak mengalami penambahan atau penurunan berat badan perlu mendapatkan pendampingan oleh Kelompok Peduli Gizi yang telah dibentuk pada kegiatan ini.Abstract : Under-five children is a period of growth spurt where body growth and brain development are formed optimally. Malnutrition in Under-five children will inhibit the growth spurt. Malnutrition can cause serious disturbances in brain development which results in the child's intelligence level being hampered. This community service activity aimed to increase the knowledge and skills of Posyandu cadres and under-five mothers in processing local food ingredients to improve the nutritional status of children. The method used is lectures, discussions, and demonstrations of making tuna-based food, as one of the local foods of Ternate City. The Posyandu cadres then provide assistance to families of undernourished children under five as a form of evaluation. as much as 51.07% of children under five experienced weight gain. Children who do not experience weight gain or loss need to get assistance from the Nutrition Care Group that has been formed in this activity.
Prevalence and Factors Associated to Household Food Insecurity During COVID-19 Outbreak

COVID-19 outbreak added unprecedented threatens to the food system worldwide. The enactment of social restriction regulation by several provinces in Indonesia may give an impact to household food security. Economical access to food might be compromised since the application of work from home policy, particularly for those who earn income from informal sector jobs. This study aims to determine the proportion of household food insecurity during the COVID-19 pandemic, identify the associated factors, and the strongest predictor of household food insecurity. This cross-sectional study design was carried out in Java and Sulawesi. A Self-administered Google Form Questionnaire was filled out by 191 women of reproductive age as the household food gatekeeper. Household food insecurity was evaluated using the Food Insecurity Experience Scale (FIES) Questionnaire by FAO that consisted of eight gradual questions. Data analysis was performed using statistical software for univariate, bivariate (chi-square), and multivariate (logistic regression). The proportion of food insecurity in the study was 29.8%, encompassed 19.9% mild food insecure, 7.3% moderate food insecure, and 2.6% severe food insecure. Food insecurity was significantly associated with place of residence, family income, and education. Living in urban areas was among the robust predictor of household food insecurity (OR 5.59, CI 95%), meaning living in urban was a risk factor of household food insecurity during the COVID-19 pandemic. Urban living was highly dependent on routine salary since they might not occupy with some sort of alternative source for income like in the rural areas, however, there was income reduction during the crisis. Food insecurity might be a sting in the tail of the COVID-19 pandemic, food policy regarding this matter is urgently required.

Based on the data of SSGI 2021, the prevalence of stunting among under-five children in West Sulawesi is still quite high, namely 40.38%. Disturbances in the food and health systems caused by the Covid-19 pandemic have the potential to further exacerbate nutritional problems among children. One form of social support to the community is to maximize family resources through increasing knowledge related to preventing stunting problems during the Covid-19 pandemic. This community service activity aimed to provide 2P education, namely the provision of balanced nutrition and the Provision of honey. Educational materials are provided in the form of video slides sent via WhatsApp Group. The main targets were 15 participants that consist of cadres and mothers of under five children in the working area of the Tinambung Health Center. Evaluation was carried out in the form of questions and answers and discussions with participants. Health workers need to be more innovative in promoting health and nutrition during the pandemic, such as regularly spreading nutrition messages through WhatsApp messages. ABSTRAK Berdasarkan hasil SSGI 2021 menunjukkan bahwa prevalensi balita stunting di Sulawesi Barat masih cukup tinggi yaitu 33,8%. Gangguan pada sistem pangan dan kesehatan yang diakibatkan oleh pandemi Covid-19 berpotensi semakin memperburuk masalah gizi balita. Salah satu bentuk dukungan sosial kepada masyarakat adalah dengan memaksimalkan sumber daya keluarga melalui peningkatan pengetahuan terkait pencegahan masalah stunting di masa pandemi Covid-19. Kegiatan pengabdian masyarakat ini bertujuan memberikan edukasi 2P yaitu pemenuhan gizi seimbang dan pemberian madu. Materi edukasi diberikan dalam bentuk video slides melalui WhatsApp Group. Sasaran utama kegiatan ini adalah 15 peserta yang terdiri dari kader dan ibu balita yang ada di wilayah kerja Puskesmas Tinambung. Evaluasi dilakukan dalam bentuk tanya jawab dan diskusi dengan peserta. Petugas kesehatan perlu lebih inovatif dalam melakukan promosi kesehatan dan gizi selama masa pandemi seperti rutin menyebarkan pesan gizi melalui pesan WhatsApp.
