Abstract

Thermal processing is a technique for sterilizing foods through heating at high temperatures. Thermal processing plays a significant role in preserving foods economically, efficiently, reliably, and safely. Control in thermal processing of foods is necessary to avoid any decrease in food quality, i.e., color change, reduced content, sensory quality, and nutrition. Artificial Neural Network (ANN) has been developed as a computing method in research and developments on thermal processing methods to discover one suitable for food processing without damaging food quality. To this date, ANN has been used in food industries for modeling many processes. The paper aims to identify the latest trend in intelligent neural network control for the thermal processing of foods. The paper conducted a systematic literature review with five research questions using Preferred Reporting Items for Systematic Review (PRISMA). According to screening results and article selection, 240 potential articles have fulfilled the inclusion criteria. Then, each article was explored to identify the advantage and the advance of intelligent network control in thermal food processing. It can be concluded that the technology in information and computations of food processing has rapidly developed and advanced through the utilization of a combination of ANN with fuzzy logic and/or genetic algorithms.

Abstract

Kelompok anak sekolah merupakan kelompok rentan gizi. Kelompok ini berhubungan dengan perkembangan yang cepat dalam proses intelektualnya dan keterampilan serta mulai mempunyai kegiatan fisik yang aktif, yang memerlukan zat gizi dengan jumlah besar. Pemberian gizi dengan kualitas dan kuantitas yang baik dan benar sangat mempengaruhi tumbuh kembang anak usia sekolah. Sarapan pagi merupakan faktor yang mempengaruhi konsentrasi belajar anak di sekolah. Sarapan pagi mempunyai peranan penting dalam memenuhi kebutuhan energi anak sekolah, dengan sarapan pagi dapat meningkatkan konsentrasi belajar dan memudahkan menyerap pelajaran di sekolah, sehingga prestasi belajar menjadi baik. Prakteknya banyak anak yang tidak sarapan pagi sebelum ke sekolah. Mengabaikan sarapan pagi dapat menurunkan prestasi belajar, tubuh tidak mendapatkan asupan zat gizi yang cukup sehingga menurunkan status gizi. Tujuan pengabdian kepada masyarakat ini adalah untuk meningkatkan pengetahuan anak dan orangtua tentang pentingnya sarapan pagi. Jumlah peserta sebanyak 30 yang terdiri dari 15 siswa dan 15 orangtua Hasil pengabdian diperoleh bahwa hasil pretest yang telah dilakukan sebelum pelaksanaan edukasi gizi, rerata nilai pengetahuan peserta dalam kategori cukup dengan hasil skor 60,2. Sedangkan hasil post-test, rerata nilai pengetahuan peserta dalam kategori baikdengan hasil skor 78,4. Rerata nilai sesudah pemberian pendidikan/edukasi gizi (post test) lebih tinggi dibanding dengan nilai sebelum pemberian pendidikan/edukasi gizi (pre test) dengan peningkatan nilai sebesar 18,2. Kesimpulannya adalah pendidikan/edukasi tentang sarapan pagi dengan media booklet dapat meningkatkan pengetahuan anak sekolah dan orangtua tentang pentingnya sarapan pagi

Abstract

Stunting merupakan sebuah masalah kurang gizi kronis yang disebabkan oleh kurangnya asupan gizi dalam waktu yang cukup lama. Faktor yang mempengaruhi stunting diantaranya asupan makan, riwayat ASI eksklusif, riwayat pemberian MP ASI (Makanan Pendamping Air Susu Ibu), pendidikan ibu, status pekerjaan ibu, dll . Tujuan penelitian ini mengetahui perbedaan pendidikan ibu, status pekerjaan ibu, dan riwayat pemberian MP ASI pada balita stunting dan non stunting di Puskesmas Trucuk II Klaten. Metode penelitian: penelitian ini menggunakan metode observasional analitik dengan desain case control. Teknik pengambilan sampel dengan simple random sampling dengan jumlah 31 balita stunting dan 31 balita non stunting yang berusia 24- 36 bulan. Data stunting dan non stunting diperoleh dengan pengukuran tinggi badan dan berat badan balita. Data pendidikan ibu, status pekerjaan ibu, dan riwayat pemberian MP ASI diperoleh dari hasil wawancara dengan ibu balita. Analisis data perbedaan pendidikan ibu, status pekerjaan ibu, dan riwayat pemberian MP ASI menggunakan uji Chi Square. Hasil penelitian: menunjukkan perbedaan pendidikan ibu pada balita stunting dan non stunting diperoleh nilai p=0,181, perbedaan status pekerjaan ibu pada balita stunting dan non stunting diperoleh nilai p=0,000 dengan Odd Ratio (OR) sebesar 21,6, dan riwayat pemberian MP ASI pada balita stunting dan non stunting diperoleh nilai p=0,001 dengan Odd Ratio (OR) sebesar 75,4. Kesimpulan: tidak ada perbedaan pendidikan ibu pada balita stunting dan non stunting di Puskesmas Trucuk II, ada perbedaan status pekerjaan ibu dan riwayat pemberian MP ASI pada balita stunting dan non stunting di Puskesmas Trucuk II.

Abstract

Faktor yang mempengaruhi terjadinya stunting antara lain berat badan, Fe dan zinc dikarenakan hal-hal tersebut berkaitan dengan pertumbuhan. Tujuan penelitian ini untuk mengetahui perbedaan berat badan, asupan Fe dan zinc antara balita stunting dan non stunting di Puskesmas Gilingan Surakarta. Metode penelitian menggunakan desain cross sectional dan sebanyak 32 sampel dari masing-masing kelompok diukur berat badan serta dilakukan wawancara food recall 24 jam untuk menganalisis asupan Fe dan zinc. Analisis data menggunakan uji Independent t test dan Mann Whitney. Hasil penelitan menunjukkan kelompok balita stunting memiliki rerata berat badan, asupan Fe dan zinc lebih rendah daripada balita non stunting. Perbedaan berat badan (p=0,000), asupan Fe (0,019), dan asupan zinc (p=0,014) antara balita stunting dan non stunting. Kesimpulan dalam penelitian ini ada perbedaan berat badan, asupan Fe dan zinc antara balita stunting dan non stunting Di Puskesmas Gilingan Surakarta.

Abstract

Diabetes Mellitus adalah suatu penyakit kronis yang ditandai dengan tingginya kadar gula darah disertai dengan gangguan metabolisme karbohidrat, lipid, dan protein sebagai akibat tidak berfungsi atau kekurangan insulin. Hal tersebut dapat dipengaruhi oleh beberapa faktor seperti asupan makanan salah satunya asupan niasin serta status gizi baik obesitas ataupun obesitas sentral yang dapat dilihat melalui pengukuran RLPP. Penelitian ini bertujuan untuk mengetahui hubungan rasio lingkar pinggang panggul (RLPP) dan asupan niasin dengan kadar gula darah pasien diabetes mellitus tipe II di RSUD Ibu Fatmawati Soekarno Surakarta yang memenuhi kriteria inklusi dan eksklusi dengan menggunakan desain Analitik Observasional dengan pendekatan Cross Sectional. Sampel penelitian adalah seluruh pasien Diabetes Mellitus Tipe II rawat jalan di RSUD Ibu Fatmawati Soekarno Surakarta. Teknik sampling yang digunakan adalah purposive sampling. RLPP diperoleh dari hasil pengukuran lingkar pinggang dan panggul dan data asupan niasin diperoleh dari hasil wawancara semi FFQ sampel. Analisa data menggunakan uji Rank Spearman. Hasil penelitian menunjukkan sebagian besar RLPP sampel kategori obesitas Abdominal (76,9%) dan asupan niasin sampel kategori kurang (73,1%). Hasil uji statistik hubungan RLPP dengan kadar gula darah diperoleh nilai p 0,435 dan uji statistik hubungan asupan niasin dengan kadar gula darah diperoleh nilai p 0,007. Kesimpulan : tidak ada hubungan antara RLPP dengan kadar gula darah pasien Diabetes Mellitus Tipe II di RSUD Ibu Fatmawati Soekarno Surakarta dan ada hubungan antara asupan niasin dengan kadar gula darah pasien Diabetes Mellitus Tipe II di RSUD Ibu Fatmawati Soekarno Surakarta.

Abstract

Personal hygiene merupakan perilaku bersih, aman dan sehat penjamah makanan untuk mencegah terjadinya kontaminasi pada makanan mulai dari persiapan bahan makanan sampai penyajian makanan. Salah satu faktor yang mempengaruhi personal hygiene adalah perilaku dan pengetahuan. Tujuan: mengetahui pengaruh edukasi personal hygiene terhadap pengetahuan dan perilaku penjamah makanan. Metode penelitian: menggunakan metode two groups pre-test post-test. Teknik sampling penelitian yaitu sampel jenuh. Sebanyak 30 orang sampel penelitian yang dibagi menjadi 2 kelompok. Data pengetahuan diperoleh dengan kuesioner pengetahuan personal hygiene. Data perilaku diperoleh dengan lembar observasi personal hygiene. Analisa data yang digunakan yaitu menggunakan uji Wilcoxon dan uji Mann-Whitney. Hasil: Perbedaan pengetahuan sebelum dan sesudah edukasi dengan media leaflet (p=0,001). Perbedaan perilaku sebelum dan sesudah edukasi dengan media leaflet (p=0,009). Perbedaan pengetahuan sebelum dan sesudah edukasi tanpa media (p=0,000). Perbedaan perilaku sebelum dan sesudah edukasi tanpa media (p=0,144). Perbedaanpengetahuan sebelum edukasi dengan media leaflet dan tanpa media (p=0,488). Perbedaan perilaku sebelum edukasi dengan media leaflet dan tanpa media (p=0,041). Perbedaan pengetahuan sesudah edukasi dengan media leaflet dan tanpa media (p=0,540). Perbedaan perilaku sesudah edukasi dengan media leaflet dan tanpa media (p=0,685). Perbedaan selisih pengetahuan antara kelompok edukasi media leaflet dan tanpa media (p=0,041). Perbedaan selisih perilaku antara kelompok edukasi media leaflet dan tanpa media (p=0,048). Kesimpulan: ada pengaruh edukasi personal hygiene terhadap pengetahuan dan perilaku penjamah makanan di PPMI Assalaam Sukoharjo.

Abstract

Based on the situation analysis obtained from the Nutrition Program Planning of the ITS PKU Muhammadiyah Surakarta Undergraduate Nutrition Program Students in 2021 in Jebol village RT 02 RW 01 Ngrombo Village, Baki District, Sukoharjo Regency, there is a problem that is still low awareness of clean and healthy living behavior (PHBS). In increasing awareness of the clean and healthy living behavior (PHBS) of the community in the broken village, it is necessary to carry out activities through counseling. The location of this service activity is in Jebol Village, RT 02 RW 01, Ngrombo Village, Baki District, Sukoharjo Regency. The target of this service activity is 23 PKK women. The stages of this service activity include preparing service locations and coordination, preparing anthropometric tools, preparing leaflets and power point materials about PHBS and hand washing properly, preparing pretest and posttest questions, measuring nutritional status, PHBS counseling and correct hand washing counseling. The result of this service is that most of the PKK mothers belong to the class I obesity category of 11 people (47.8%) and there is an increase in PHBS knowledge and hand washing in PKK mothers after being given nutrition education of 1.7 scores. Based on this, the conclusion that can be drawn is that participants in community service activities understand that clean and healthy living behavior and proper hand washing are very important to prevent various diseases.

Abstract

During the Covid-19 pandemic, learning that was originally carried out with an offline system turned into an online system. Online learning is the right solution in maintaining health from transmission of the Covid-19 virus. Both online and offline learning have their own strengths and weaknesses. The purpose of this study was to analyze the comparison of online and offline theoretical lectures for students of the Undergraduate Nutrition Program at ITS PKU Muhammadiyah Surakarta during the Covid 19 pandemic. in the form of accidental sampling. The results showed that there are weaknesses and strengths of learning with online and offline methods. The weaknesses of the online method mostly mention that the quota is wasteful and if the signal is constrained, the learning material becomes less than the maximum, respectively by 37.1%, while the advantages of the online method mostly state that learning can be done anytime and anywhere by 57.3%. The weaknesses of the offline method mostly state that learning starts sometimes not ontime by 24.7%, the advantages of the offline method mostly state that if there is material that is not understood, you can immediately ask and get examples directly by 35.9%. The results in general, students prefer theory lectures to be carried out offline by 70.8%. The conclusion of this study is that the ITS PKU Muhammadiyah Surakarta S1 Nutrition students prefer theoretical lectures to be carried out offline during the Covid-19 pandemic.

Abstract

Iron deficiency anemia is an anemia due to iron deficiency which results in impaired hemoglobin synthesis. Young women are prone to anemia due to menstruation every month. Efforts to increase hemoglobin levels can be done by supplementing vitamin C and giving foods that are high in iron such as Ambon banana. The aim of this research is to determine the effectiveness of vitamin C supplementation and Ambon banana on hemoglobin levels in anemia young women. Pretest posttest two groups design with 18 subjects each group. Subjects were anemic young women. Group I was given vitamin C supplemen and Ambon banana while group II was given Ambon banana. Treatment is given twice a day for 8 days. Hemoglobin level data was taken by taking blood at the fingertips. In group I there were differences in hemoglobin levels before and after vitamin C supplementation and Ambon banana (p = 0,000). In group II there were also differences in hemoglobin levels before and after administration of Ambon banana (p = 0.001). Group I had an increase in average hemoglobin level of 1.5 ± 1.0 g /dl while group II had an increase in average hemoglobin level of 1.2 ± 1.2 g/dl. The conclusion is Vitamin C supplementation and Ambon banana are effectively increased hemoglobin levels in anemic young women.

Abstract

Introduction: Elderly is an advanced stage of a life process which is characterized by a decrease in the body's ability. One of the diseases that often affects the elderly is diabetes mellitus. Blood glucose levels in patients with diabetes mellitus must be controlled to prevent complications. In addition to diet and drug use, nutritional status also plays a role in maintaining blood sugar. Objective: The purpose of this study was to determine the relationship between nutritional status and blood glucose levels in the elderly. Method:  The research method was cross sectional, with a sample of elderly people in the Gambirsari Surakarta health center area in August 2023, totaling 99 elderly people with an age range of 48 – 82 years. The variables studied were nutritional status and current blood glucose (GDS). Primary data collection method by measuring weight and height as well as examining the GDS. Data were analyzed with Spearman's rho. Result: The research results showed that the majority were female (73.7%), the age range was 48 – 82 years with an average age of 61.31 ± 6.77 years, an average nutritional status of 25.56 ± 4.85 kg/ m2 category, mostly fat, 54 people (54.5%), the average blood sugar level was 135.13 ± 63.26 mg/dL with the normal category 88.9%, abnormal 11.1%, correlation test results nutritional status with random blood sugar levels (p=0.012). Conclusion: The conclusion of the study is that there is a relationship between nutritional status and blood sugar levels during.
