Abstract

Ikan asap merupakan salah satu produk olahan perikanan yang digemari karena rasanya khas dan aromanya yang sedap spesifik. Proses pengasapan menggunakan teknik konvensional memiliki umur simpan yang lebih pendek. Penjualan ikan asap tanpa pengemasan memungkinkan terpaparnya mikrob dan kapang kontaminan yang dapat memengaruhi mutunya. Pengemasan dengan metode modified atmosphere packaging (MAP) dan pengemasan plastik vakum merupakan upaya memperpanjang umur simpan dan mempertahankan mutu ikan asap. Tujuan penelitian ini, yaitu menentukan metode pengemasan dan lama waktu penyimpanan terbaik ikan tongkol (Euthynus affinis) asap yang disimpan pada suhu ruang. Metode eksperimen rancangan acak lengkap faktorial (RALF) dilakukan pada penelitian ini dengan variabel perlakuan metode pengemasan plastik nonvakum, vakum, dan MAP) serta lama waktu penyimpanan (hari ke-0, 1, 2, dan 3). Hasil uji mutu ikan asap yang diproduksi pada sentra pengasapan ikan bengkorok bakteri (Salmonella spp., S. aureus, E. coli) dan benzo[a]piren memenuhi standar SNI 2725:2013. Hasil analisis histamin pada setiap perlakuan selama penyimpanan sesuai standar SNI ikan asap, yaitu ≤100 mg/kg dengan nilai terendah pada metode pengemasan MAP, yaitu 52,32 mg/kg. Hasil analisis kimia dan mikrob pada pengemasan MAP dan plastik vakum hingga hari terakhir penyimpanan memenuhi standar SNI 2725:2013, kadar air < 60%, log total mikrob < 4,7 log CFU/g, dan log total kapang < 2 log CFU/g.

Abstract

Ikan nila memiliki daging yang berwarna putih sehingga sangat baik digunakan dalam pembuatan surimi. Dari segi tekstur surimi ikan nila memiliki tekstur daging yang agak padat yang menjadikan hasil akhir kamabokonya agak keras. Oleh sebab itu, perlu dilakukan penambahan enzim pada surimi ikan nila sehingga mendapatkan tekstur kamaboko lebih lembut. Penelitian ini bertujuan untuk menganalisis karakteristik surimi ikan nila merah dengan penambahan enzim tripsin yang diekstrak dari usus ikan. Metode yang digunakan yaitu rancangan percobaan sederhana dengan penambahan enzim tripsin 0%, 1%, 2%, 3% dan 4%. Parameter yang diamati yaitu analisis proksimat, protein larut garam (PLG), pH, derajat putih, particle size analysis (PSA), texture profile analysis (TPA), water holding capacity (WHC) dan analisis sensori. Berdasarkan hasil analisis, penambahan enzim tripsin mampu meningkatkan karakteristik dari surimi ikan nila merah. Hal tersebut dapat dilihat dari hasil parameter yang diukur yaitu pada chewiness, hardness, gummines, uji lipat dan uji gigit yang menunjukkan bahwa tekstur dari surimi ikan nila menjadi lebih baik serta lebih lembut.

Abstract

Tuna eye oil is a source of omega-3 fatty acids, particularly docosahexaenoic acid (DHA); however, its application in food products remains limited because of its strong fishy odor and high susceptibility to oxidation. This study aimed to determine the most effective masking treatment for tuna eye oil to reduce fishy odor and improve oxidative stability and sensory acceptance in fortified lokum. The study was conducted in three stages: (1) extraction of tuna eye oil using centrifugation, (2) oil masking with lemon or ginger oil at concentrations of 12.5, 25, and 37.5%, and (3) formulation of fortified lokum using the selected masked oil. The extracted oil exhibited a free fatty acid (FFA) content of 0.42%, peroxide value (PV) of 7.44 meq/kg, anisidine value (AnV) of 9.98 meq/kg, and total oxidation (TOTOX) value of 24.84 meq/kg. Masking with lemon oil or ginger oil at 37.5% reduced oxidation parameters (FFA 0.12–0.28%; PV 4.49–6.61 meq/kg; p-AnV 3.08–3.75 meq/kg; TOTOX 12.06–16.96 meq/kg), enhanced antioxidant activity (IC₅₀ 140.76–166.41), and preserved the fatty acid profile, with DHA accounting for 29–30% of the total fatty acids. Fortification of lokum with masked tuna eye oil increased fat, EPA, and DHA levels, accompanied by measurable reductions in hardness and chewiness. Overall, masking tuna eye oil with 37.5 % %lemon and ginger oils effectively improved oxidative stability, with lemon oil showing the most balanced performance in terms of oxidation parameters, antioxidant activity, and sensory acceptance of fortified lokum.

Abstract

Water pollution remains a critical global concern, with heavy metals such as lead (Pb) and cadmium (Cd) posing serious health and environmental risks. Adsorption using biobased materials has emerged as a sustainable solution for mitigating heavy metal contamination in water. Among various bioadsorbents, chitosan and seaweed (Ulva sp.) are notable for their abundance, environmental friendliness, and effectiveness in removing toxic metals. While chitosan and Ulva have been studied individually for their adsorption properties, research on their combined use in hydrogel beads is limited, especially when their compositional ratios are systematically varied. The present study seeks to address this gap by evaluating how the incorporation and proportion of Ulva affect the structural, functional, and adsorptive properties of chitosan-based hydrogel beads, with a specific focus on the simultaneous removal of Pb and Cd from water. Hydrogel beads were synthesized with different chitosan-to-Ulva ratios (U1 [1:0], U2 [1:0.1], and U3 [1:0.5]) and characterized for swelling behavior, gel fraction, and heavy metal adsorption capacity. Results show that adding Ulva to the chitosan matrix significantly enhances the bioadsorbent’s performance, especially at the highest tested ratio (U3), which achieved an average bead diameter of 3.7 ± 0.01 mm, high swelling, and stable gel fraction. Most importantly, U3 beads demonstrated superior removal efficiencies for both Pb and Cd, highlighting the synergistic effect of combining chitosan and Ulva. These findings suggest that chitosan–Ulva hydrogel beads are promising, eco-friendly bioadsorbents for remediating heavy metal-contaminated water and could play an important role in sustainable water treatment technologies.
