Abstract

Sago is one of plants that produce carbohydrate and has important role for Indonesia daily diet after rice, corn, and cassavas. Konawe Regency is one of the potential to grow sago in Indonesia, with the largest area covered 40,06 percent from the total of the land of sago in the Province of Southeast Sulawesi 5.024 ha. The purposes of the study were to analyze the supporting power of the land of sago in Konawe Regency; analyze the ratio of employeent absorbtion; analyze the income of the farmers of sago processor. The study was conducted in Besulutu Sub-District Konawe Regency. The population was the farmers and the owner of sago involved intoo sago enterpreneurship. The technique of sample was determined by using purposive sampling method. The data was analyzed by using descriptive analysis. Results of the research shown that the supporting power of sago plantation based on actual income to fulfill the need of the farmers was about 9 person/hectare/year. In general, the absorbtion of the employement in sago entrepreneurship was about 4 HKP/cycle of the production with the averages number 892 HOK/hectare/year, while the optimalization of the employement total absorbed was 1.784 HOK/hectare/year. Abstract

Penelitian ini bertujuan untuk mengetahui strategi pengembangan produk virgin coconut oil pada IKM Al Huda 45 di Kelurahan Kontumolepe Kecamatan Tongkuno kabupaten Muna. Metode penelitian yang digunakan adalah Analisis SWOT, Matriks Evaluasi Faktor Eksternal (Eksternal Factor Evaluation- EFE Matrix), Matriks This study aims to determine the strategy for developing virgin coconut oil products at IKM Al Huda 45 in Kontumolepe Village, Tongkuno District, Muna Regency. The research method used is the SWOT analysis, External Factor Evaluation Matrix (EFE Matrix), and Internal Factor Evaluation Matrix (IFE Matrix). Data was collected using a questionnaire, interview, documentation and observation methods. The results showed that the analysis of the development strategy showed the results on the Internal Factor Evaluation (IFE) matrix with a total weight score owned by the Al Huda 45 business of 2.75, which indicated that the position of the Al Huda 45 IKM had an internal position that was above the average. Meanwhile, the total score for External Factor Evaluation (EFE) is 3.00, which indicates that the business position is relatively high in IKM Al Huda 45 in dealing with external dynamics. Strength development strategies take advantage of existing opportunities by (1) maintaining the quality of virgin coconut oil products made from coconut to meet product demand, (2) increasing the amount of production and quality of virgin coconut oil to meet market demand, (3) increasing promotions and (4) utilizing government assistance in reducing production costs. From the analysis of the Al Huda 45 IKM development strategy, it is feasible to be developed.

Abstract

This study aims to analyze the inventory control of soybean raw materials in tempeh products using the EOQ (Economic Order Quantity) method in Jaya Satu Home Industry, Konda District, Konawe Selatan Regency. The determination of the research location was carried out purposefully. Data collection was carried out through observation, interview, and documentation methods. The analytical method used is EOQ (Economic Order Quantity). The results showed that the minimum order quantity of rice (economic order quantity) in month 1 was 6.73 tons and continued to increase monthly.In contrast, in the 12th month, the minimum order was 7.83 tons. The safety stock in month 1 of 2023 is 1,210 kg/week and continues to increase until month 12, when the safety stock of soybean raw materials is 1,404 kg/week. The maximum inventory in the 1st month of the year is 7.94 tons and continues to increase every month, whereas, in the 12th month, it is 9.23 tons. The number of reorder points in the 1st month was 2.94 tons and continued to increase every month, whereas, in the 12th month, it was 3.41 tons.

Abstract

This study aims to analyze superior plantation commodities using the AHP (Analytical Hierarchy Process) method in West Muna Regency. This research was conducted from October to December 2022 on superior plantation commodities in West Muna Regency. Data collection was carried out using interviews, questionnaires, and documentation. The results showed that the priority criteria for superior plantations in the development of superior plantation commodities in West Muna Regency included land suitability (KL) of 0.076, market orientation (OP) of 0.152, added value (NT) of 0.022, local government policy (KPD) of 0.118, environmentally friendly (RL) of 0.036, contribution to community income (KTPM) of 0.222, and feasibility for business development (LBPB) of 0.304. The leading plantation commodities in West Muna Regency had the highest weights, showing coconut (0.466), cashew (0.282), and cocoa (0.251).

Abstract

This research aims to analyze the institutional system of coconut agro-industry businesses in Konawe Islands Regency, Southeast Sulawesi Province. The scope of this research is the institutional processing business, namely institutional form, raw material requirements, institutional structure, capital, decision making, data collection techniques through interviews, FGD and expert questionnaires (ISM). Based on the research results, it shows that: The key elements of the palaku coconut processing business development system in Konawe Islands Regency are coconut farmers and consumers of processed coconut products. The key elements needed by players in the coconut processing business development system are easy access and guaranteed marketing of processed products, the need for rehabilitation, intensification and extensification of coconut plants. Sustainability of institutional development of coconut processing businesses requires assistance from universities (PTN-PTS) whose role is to connect between parties which have been an obstacle for farmers and coconut processors.

Abstract

This research aims to evaluate the Chocolate Drink Processing Process of Halal Product Guarantees (Case Study: CV. Sultan Agro Maritim Industri in Kendari City). The research was designed using a case study method with a qualitative approach. Data collection was carried out using interviews, observation, and recording tape studies. The research results show that there are 3 research focus points, including (a) halal ingredients, (b) production facilities, and (c) products found in the chocolate drink processing process. Types of raw materials used (cocoa powder), cocoa beans, production facilities (supply of ingredients, processing, storage, packaging, sales), and products (chocolate drinks). Several factors influence the guarantee of halal products in the process of making chocolate drinks, including ingredients, products, and production facilities. The materials used are halal in terms of their substances, how to obtain the materials, and how they are processed. There are no products produced with brands or names that lead to haram, and sensory characteristics such as smell and taste are avoided in haram products. The same thing also applies to the production facilities used in making chocolate drinks, which are protected from haram ingredients, maintain cleanliness and purity, and ensure that there is no contamination from haram materials or products.

Abstract

This study aimed to analyze the feasibility of processing clove leaf waste into clove leaf oil in Lede District, Taliabu Island Regency. The analysis in this study uses financial feasibility analysis. The results showed that clove leaves contain antibacterial compounds such as flavonoids, phenolics, triterpenoids, tannins, phenolics, eucalyptol, α-cardinal, caryophyllene, and limonene. Dried fallen leaves are the primary raw material used to produce clove leaf oil. The results showed that the analysis of the financial feasibility aspect of clove leaf oil refining carried out in Balohang Village, Lede District, Taliabu Island Regency, was declared feasible for development with a positive NPV feasibility value of 1,345,940,035 for five years of operation, an IRR of 169.93%, a Net B/C of 1.2, a PBP = 0.58, an ROI of 88%, and production of BEP 685.45 at a BEP price of IDR 106,4455. Based on the analysis of non-financial descriptive aspects, namely the estimation of market and technical aspects, the clove leaf oil refining business in Balohang Village has adequate opportunities to run.

Abstract

This study aims to (1) determine the process of processing chicken meatball products and (2) determine the process of developing chicken meatball products using the QFD (Quality Function Deployment) method in the Hasnia Chicken Meatball Business in Rahandouna Village, Poasia District, Kendari City. The determination of the sample is done by purposive sampling. The results showed that the process of producing chicken meatballs in the Hasnia Chicken Meatball business contained eight stages, which were in accordance with the literature. The eight stages were: raw material preparation, chicken cleaning, chicken meat crushing, dough making, dough forming, cooking, product cooling, and product packaging. Hasnia Chicken Meatball product development obtained 26 attributes, obtained 6 main priority attributes in fulfilling needs with the highest value of each type of attribute, (1) include the expiration date with a value of 16.28 (7.23%), (2) delicious aroma of chicken meatballs and appetizing with a value of 8.57 (3.81%), (3) chicken meatball products have a superior taste compared to other places with a value of 8.14 (3.61%), (4) chicken meatball products sold are superior to other products with a value of 7.71 (3.42) %), (5) the price of chicken meatballs corresponds to the price with a value of 7.33 (3.26%), (6) the texture attribute of the chicken meatballs is chewy with a value of 7.26 (3.22%).

Abstract

This research aims to identify the risks of tofu production in the Tofu Ainul business, find out the prioritized risks, and determine the priority of alternative risk mitigation strategies for tofu production in the Tofu Ainul business in Taliabu Island Regency using the Failure Mode and Effect Analysis (FMEA) method to determine the highest risks and the Analytical Hierarchy Process (AHP) method to determine alternative risk mitigation strategies. The results of this research show that there are 16 types of risks, with the highest RPN in the raw material variable, namely the risk of fluctuating soybean raw material prices with an RPN of 194.7; in the production process variable, the risk of dust and foreign object contamination with an RPN of 56.6; and in the finished product variable, the risk of late delivery of tofu with an RPN of 120.0. The results of calculating alternative risk mitigation strategies for tofu production at the Ainul Tofu Business using the AHP method obtained 3 alternative strategy recommendations for reducing risks in tofu production. The alternative mitigation strategies are establishing cooperation (contact arrangement) with soybean farmer groups for the raw material variable with a weight of 0.470, improving sanitation in the tofu processing production area for the risk of the production process variable with the highest weight of 0.372, and choosing a reliable and timely delivery service for the risk of the finished product variable with the highest weight of 0.547.
