Abstract

Telah dilakukan penelitian yang bertujuan untuk mendapatkan fraksi massa metil ester asam oleat tertinggi dari rasio minyak biji kelor/metanol (v/v) serta waktu reaksi dalam proses metanolisis minyak biji kelor serta komposisi dari metil ester asam oleat. Penelitian ini dilakukan dengan menggunakan Rancangan Acak Lengkap (RAL) dengan variasi rasio minyak biji kelor/metanol 1:3, 1:4, 1:5, 1:6 dan 1:7 (v/v) serta variasi waktu reaksi 30 menit, 60 menit, 90 menit, 120 menit dan 150 menit. Hasil yang diperoleh menunjukkan bahwa peningkatan rasio minyak biji kelor/metanol  meningkatkan fraksi massa metil ester asam oleat dengan fraksi massa maksimum (72.61%) terdapat pada penggunaan rasio minyak biji kelor/metanol 1:7 (v/v). Demikian pula pada pengaruh waktu reaksi yang menunjukkan bahwa peningkatan waktu reaksi meningkatkan fraksi massa metil ester asam oleat dengan fraksi massa maksimum (78.75%) terdapat pada penggunaan waktu reaksi 150 menit. Berdasarkan hasil analisis GC-MS diperoleh senyawa dominan penyusun metil ester tersebut adalah metil oleat persentase sebesar 48.25%, kemudian metil stearat dengan persentase sebesar 7.67%, selanjutnya metil palmitat dengan persentase sebesar 5.14 dan senyawa yang belum diketahui secara pasti dengan persentase sebesar 38.94%Kata Kunci: Minyak biji kelor, metil oleat,metanolisis

Abstract

Penelitian tentang potensi ubi banggai (Dioscorea bulbifera var celebica Burkill)  sebagai pewarna alami makanan dan minuman yang ditinjau dari stabilitas pH dan paparan sinar matahari telah dilaksanakan. Tujuan dari penelitian ini adalah mengetahui kestabilan ekstrak ubi banggai terhadap pengaruh pH dan terhadap paparan sinar matahari selama masa penyimpanan. Waktu yang digunakan adalah 10 hari untuk penyimpanan terhadap pengaruh pH dan 5 jam untuk paparan sinar matahari. Hasil penelitian menunjukan zat warna ekstrak ubi banggai stabil pada pH 2 setelah masa penyimpanan 10 hari dengan presentasi degradasi 37.38 % sementara pengaruh paparan sinar matahari menghasilkan degradasi terendah pada botol gelap yaitu 36,91 % dibandingkan dengan botol bening 41,96 %.Kata Kunci : Zat warna, stabilitas ubi banggai, degradasi

Abstract

Research about the retention of red spinach leaves extract (Alternanthera amoena Voss) as a natural coloring and preservative in wet noodles has been done. The study aim is to determine the anthocyanin retention of red spinach leaves extract in the processing of wet noodles and determine the organoleptic quality of wet noodles by adding pigment red spinach leaves extract. The extraction method used the maceration method by ethanol solvent. Anthocyanin levels on an extract that obtained by using a UV-Vis spectrophotometer were 33.34%. Anthocyanin retention of red spinach leaves extract on wet noodle processing at storage times of 0, 6, 12, 18, 24, 30, 36, 42, and 48 hours was 100%, 75.87%, 75.37%, 74.95%, 74.62%, 74.12%, 73.28%, 71.70%, and 70.61%. Organoleptic quality of wet noodles that was added with extract has “like” to “really like” grade with score detail of the best color of 4.37 at 18 hours storage, whereas the odor, texture, and taste for 0 hours storage have the highest score of 4.63, 4.63, and 4.57, respectively. Abstract

This research was conducted by making VCO-based liquid soap with the addition of ethanol extract from Moringa leaves (Moringa oleifera). The purpose of this research was to determine the mass ratio of ethanol extracts of Moringa leaves and Virgin Coconut Oil (VCO) which produces soap with the highest antibacterial activity against tested bacteria. The other purpose is to determine the effect of the mass ratio against the viscosity of liquid soap. The research design used was a Completely Randomized Design (CRD) with the independent variables being the mass ratio of Moringa leaf ethanol extract and VCO which consists of five levels of 0:75 (F1), 1.5:73.5 (F2), 3:72(F3), and 4.5:70.5(F4) (w/w). The soap produced was tested for antibacterial activity againts Staphylococcus aureus, Escherichia coli, and Staphylococcus epidermidis using agar diffusion method as well as viscosity tests. The results showed that the antibacterial activity of liquid soap tends to be higher with increasing levels of ethanol extract of Moringa leaves. The liquid soap formula with the ratio of Moringa leaf ethanol extract: VCO of 3:72 (w/w) (Formula F3) had relatively higher antibacterial activity against the three tested bacteria. The inhibition zones against Staphylococcus aureus, Escherichia coli, and Staphylococcus epidermidis were 22.302 mm, 33.230 mm, and 36.490 mm, respectively, while the viscosity value of liquid soap was 47.433 cP.

Abstract

A stigmasterol glycoside (stigmast-5,22-dien-3-O-β-D-glucopyranoside) has been isolated from the chloroform fraction of root wood of Melochia umbellata (Houtt) Stapf var. degrabrata K. The compound structure was determined on spectroscopic evidences including IR, 1D and 2D NMR and compared to previous data. The isolate was also active against Aspergillus niger.

Abstract

This study was aimed to prepare polyeugenol with high molecular weight and to evaluate its antibacterial and antioxidant activities. First, polyeugenol was synthesized from eugenol in the presence of H2SO4-CH3COOH (4:1) as catalyst. The synthesized polyeugenol was weighed by using viscometer, revealing its high molecular weight of (7.76–21.9) × 105 g/mol. Furthermore, the antibacterial activity of the polyeugenol was conducted against Staphylococcus aureus and Escherichia coli bacteria. It was conducted by applying well diffusion method at 1, 2, 3, 4 and 5% concentrations to observe inhibition zones, in which the tests showed that the antibacterial activity of the polyeugenol against S. aureus were 17.42, 17.76, 18.79, 21.42 and 22.55 mm, while those against E. coli were 15.87, 17.23, 17.56, 18.24 and 19.21 mm, respectively. In short, these results indicated a strong antibacterial activity. Then, tests on antioxidant activity against free radical DPPH (2,2-diphenyl-1-pycrylhydrazyl) gave the IC50 value of 80.47 µg/mL, indicating a strong antioxidant activity. Therefore, the polymer synthesized in this work has a high potential to be applied in various biomedical applications.

Abstract

Desa Bale merupakan salah satu daerah yang terletak di Kabupaten Donggala, Sulawesi Tengah. Penduduk di Desa Bale umumnya sebagai petani kelapa. Pembuatan produk olahan kelapa yang inovatif masih sangat kurang di Desa Bale. Minuman isotonik dan susu coklat santan kelapa dapat menjadi produk olahan baru bagi masyarakat setempat. Tujuan kegiatan ini adalah untuk menambah keterampilan masyarakat di desa Bale dalam mengolah air kelapa tua dan santan kelapa menjadi produk yang menarik dan memiliki nilai jual yang menjanjikan. Metode yang digunakan pada kegiatan ini adalah penyuluhan yang diikuti dengan demonstrasi. Hasil dari kegiatan yang dilakukan adalah keterampilan masyarakat mitra di desa Bale bertambah dalam membuat minuman isotonik dan susu coklat santan kelapa dengan menggunakan metode yang sederhana dan murah. Hasil pengukuran tingkat kepuasan menunjukkan bahwa 80% peserta atau mitra sangat puas terhadap pelaksanaan kegiatan pengabdian. Masyarakat mitra siap untuk mengembangkan produk olahan hasil pelatihan dalam bentuk produk yang siap dipasarkan.

Abstract

Johar plant is a type of plant from the Fabaceae family which is widely used in traditional medicine such as malaria, itching and diabetes medicine. This study aims to determine the antibacterial activity of Johar stem bark extract with different levels of solvent polarity on the growth of Staphylococcus aureus and Escherichia coli bacteria and to determine the active compound class by TLC-Bioautography. The extraction of active compounds used a multilevel maceration method starting with n-hexane (non polar), followed by ethyl acetate (semi-polar) and ethanol (polar) solvents. Antibacterial activity testing was carried out by diffusion well method with a concentration variant of 25% and 50%. The results showed that n-hexane, ethyl acetate, and ethanol extract had antibacterial activity against the two test bacteria. Ethyl acetate and ethanol extract from Johar stem bark at a concentration of 50% were classified as very strong antibacterials with inhibition zone diameters against S. aureus, which were 22.02±0.84 mm and 20.16±0.23 mm, respectively. The results of the TLC-Bioautography test showed that the three test extracts had strong antibacterial activity against S. aureus and E. coli. In the n-hexane extract with n-hexane: ethyl acetate (9:1) eluent using Lieberman-Burchard spray reagent, it was suspected that triterpenoid compounds were present. In ethyl acetate extract with n-hexane: ethyl acetate (6:4) eluent and ethanol extract with chloroform: methanol (8:2) eluent using FeCl3 1% spray reagent, it was suspected that the tannin compound was present in both extracts.

Abstract

Enzim bromelin memiliki aktivitas proteolitik yang dapat dimanfaatkan padapembuatan Virgin Coconut Oil (VCO). Stabilitas bromelin dapat ditingkatkan denganmenggunakan teknik imobilisasi. Bromelin terimobilisasi alginat dapat digunakan secaraberulang sehingga sangat efektif dan efisien pada pembuatan VCO. Tujuan penelitianyang dilakukan adalah untuk mendapatkan waktu inkubasi terbaik pada produksi VCOmemanfaatkan bromelin dari bonggol nanas terimobilisasi alginat. Imobilisasi bromelinmenggunakan metode entrapment dan pembuatan VCO dilakukan secara enzimatispada suhu ruang dengan variasi waktu inkubasi 24, 36, 48 dan 60 jam. Rendemen VCOtertinggi adalah 36,8% pada waktu inkubasi 48 jam. Kadar asam lemak bebas dan kadarair produk VCO yang diperoleh masih lebih tinggi dari 0,2% atau melebihi batasmaksimum yang dipersyaratkan SNI 7381:2008, tetapi bilangan peroksida VCO telahmemenuhi SNI, yaitu maksimum 2 mg ek/kg. Pembuatan VCO secara enzimatik dapatmenggunakan bromelin terimobilisasi alginat dengan waktu inkubasi optimum 48 jamyang perlu dilanjutkan dengan pemurnian VCO.

Abstract

The local Palu shallot (Allium cepa L. var. aggregatum) plant is one of the leading products in the Central Sulawesi region. Shallots can experience a decrease in quality if they are contaminated with heavy metals, such as cadmium (Cd) in amounts that exceed the threshold. This study aims to determine the effect of planting age on cadmium levels in local Palu shallots cultivated in Oloboju Village and Solove Village, Biromaru District, Sigi Regency. The research variables used were the planting age which consisted of 4 levels (age 40, 50, 60, and 70 days), and the planting location which consisted of 2 levels (Solove Village and Oloboju Village). Cd levels were analyzed using an Atomic Absorption Spectrophotometer (AAS). Cadmium levels in shallot roots at two planting locations decreased with increasing planting age, from 101.34 - 107.18 mg/kg at 40 days of age to 1.68-3.78 mg/kg at 70 days of age. Shallot bulbs at two locations had lower cadmium levels than roots, namely 0.01-0.04 mg/kg. The results of the study found that planting time had a significant effect on cadmium levels in the roots of shallots, but planting age and planting location had no significant effect on cadmium levels in local Palu shallot bulbs with levels that met the SNI (Indonesian national standard) quality requirements
